Abstract

A presente pesquisa teve como objetivo determinar as características físico-químicas dos méis das abelhas “guararaipo” (Melipona bicolor schencki) e “mandaçaia” (Melipona quadrifasciata quadrifasciata) provenientes de meliponários urbanos no município de Guarapuava, Paraná. Seis amostras de méis, foram retiradas com seringas descartáveis diretamente de potes de mel fechados pelas abelhas, de caixas que estavam há pelo menos 60 dias sem alimentação artificial. Os valores médios de Hidroximetilfurfural (HMF), umidade, reação de Fiehe, reação de Lund, pH e acidez, foram analisados e comparados com os padrões definidos pela legislação para mel de Apis. As abelhas criadas no ambiente urbano de Guarapuava-PR podem produzir mel que possuem características físico-químicas que os enquadram nos padrões definidos pela legislação para mel de Apis, sendo aptos ao consumo humano. Abstract The present research aimed to determine the physical-chemical characteristics of honey from “guararaipo” (Melipona bicolor schencki) and “mandaçaia” (Melipona quadrifasciata quadrifasciata) bees from urban meliponarias in the municipality of Guarapuava, Paraná. Six honey samples were taken with disposable syringes directly from jars of honey closed by the bees, from boxes that had been without artificial feeding for at least 60 days. The average values of Hydroxymethylfurfural (HMF), humidity, Fiehe reaction, Lund reaction, pH and acidity were analyzed and compared with the standards defined by legislation for Apis honey. Bees raised in the urban environment of Guarapuava-PR can produce honey that has physical-chemical characteristics that fit the standards defined by legislation for Apis honey, being suitable for human consumption.
