Abstract

This work aimed to identify and locate the dairy products of great and small size of Our Lady of Glory as well as the productive capacity of milk and whey. For that, a diagnosis was made by means of a questionnaire, allied to observation in loco. It was verified a daily average production of 315,400 liters of milk and 141,200 liters of whey produced in the period from October to January of 2016. The main contributors to the use of whey in animal feed as well as the use of whey in the elaboration of whey, ricotta and whey concentrate. The industries produce 37% of acid whey which makes difficult the processing of dairy products because of the high acidity reduces the quality of these products, but 63% of sweet whey is produced, which makes it possible to process by-products.
