Abstract

At the current stage, the restaurant industry is one of the most profitable spheres of economic activity in the world. And although historically it is one of the oldest spheres of human activity, it is quite innovative. It should be noted that there is no reference model for the formation of the architectural environment of catering establishments. Changes in the social, economic, and cultural environment affect the restaurant industry. However, this area has its own patterns. The specificity of this type of activity, the insufficient study of ego development trends have significant practical significance.
 In this article, an analysis of the main trends in the development of public housing and their direct influence on the organization of the architectural environment of these objects is carried out. Trying to be competitive, domestic catering enterprises are engaged in the search for new market segments, widely use innovations in the architecture and design of the establishment, high technologies and modern trends. Such trends include the intellectualization of the artificial environment and its acquisition of interactive properties; automation and contactless interaction; environmental friendliness and care for the environment; creation of monoproduct-type food establishments; national style; novelty impressed.
 It is noted that the interior of the dining hall is of great importance when deciding on a catering establishment. It should satisfy the aesthetic needs of visitors, give them new impressions and emotions, carry a meaningful load in accordance with the price segment and concept of the establishment. The methods of functional zoning of the interior space of the dining hall are highlighted: functional, aesthetic, spatial. It is noted that those catering establishments that improve their format according to modern development trends and make a significant bet on novelty are promising. Today, we can note the powerful implementation of the latest technologies in the architectural space, efforts to partially or maximally automate processes, introduce contactless interaction, and give the space intellectualization and interactive properties.
