Abstract

ABSTRACT: Recovery of heat‐injured pathogens (Escherichia coli O157:H7, Listeria monocytogenes, Salmonella Typhimurium, and Yersinia enterocolitica) in ground beef samples was studied by the thin agar layer (TAL) and TAL = Oxyrase® (TALO) methods in conjunction with the ISO‐GRID® hydrophobic grid‐membrane filter (HGMF). This new combination using ISO‐GRID HGMFs with the TAL and TALO methods improved the efficiency (P < 0.05) of recovery of pathogens. In addition, the TALO method showed a higher percentage increase of recovery than the TAL method because of stimulation of Oxyrase in growth of pathogens. The combination allows the detection of very low numbers of pathogens in food.
