Abstract

An environmental chamber for measurements of mechanical properties of frozen foods was designed and constructed. This chamber consists of an insulated enclosure, an air circulation unit, a temperature control system, and a linear displacement measuring system. The chamber can maintain the stability of sample temperature within the range of 1C (1.8F). With this chamber installed on an Instron Universal Testing Machine, various compression or tensile tests can be conducted at any desired temperature (room temperature to 100C = 148F). Mechanical properties (modulus of elasticity and Poissons ratio) of Tylose gel at 22 (72), 20 (4), 60 (76), and 100C (148F) were determined to demonstrate the application of the chamber.
