Abstract

This article sought to discuss under the hospitality approach, the cultural importance of Quitanda, a delicacy served both at lunchtime [domestic environment] and at the Quitanda Festival in Congonhas, Minas Gerais [public environment]. The theoretical approach discussed studies that deal with the origin and characteristics of Minas Gerais food, gastronomic festivals and hospitality. For exploratory and qualitative research, bibliographical and documentary research and interviews were used. It was observed that the city or region where the festival takes place seeks a gastronomic element that reflects the cultural characteristics of its people. This highlight, in addition to strengthening traditions, also has the function of cooperating with the economic, cultural and social growth of the region where the gastronomic festivals take place.
