Abstract

The sugarcane quality, to alcohol industrial process, is a main factor to define the best development of the alcoholic fermentation process and of the general industrial process. Among factors, these that affect sugarcane quality, by other material except stalks, such as soil, stones, other plants, and compounds from microbiologic activity on sugar, are named extrinsic factors. The extrinsic factors are affected by mechanic stalks damage, insects and plants diseases occurrence, rain, air relative moisture, environment temperature, sugarcane harvest and transport systems. Therefore, in this paper, these factors will be analyzed in relation to the forms that affect raw matter and final products quality.
