Abstract
Small starch granules are hydrolysed better than large granules by barley α-amylase isoenzymes. The major isoenzyme in barley is less active against both types of granules than the minor isoenzyme. Molecular weight distribution analysis of the hydrolysates shows that the action pattern of the two enzymes is almost identical. Though minor differences in the intermediate products are obtained, the major product from both starches is dextrins with a degree of polymerisation of 6–8.
