Abstract

Food is lost or wasted throughout the supply chain, from initial agricultural production down to final household consumption. Reducing food waste is one of the prominent goals in the current research, which has also been set by the United Nations to achieve a more sustainable world by 2030. Given that previous studies mainly examined causes for food waste generation related to consumers, this chapter aims to provide an overview on losses in the food industry. In the first part, food losses in the upstream and downstream supply chain are discussed. In the second part of this chapter the different ways to reduce food losses by optimizing supply chains are discussed. Solutions at supply chain entity level as well as supply chain network level are provided.
