Abstract

Algal toxins have been integrally linked with shellfish safety for many years. In this chapter the major toxins found in shellfish, their sources and the analytical techniques currently being used for their detection are reviewed. Toxins reviewed include paralytic shellfish poisoning (PSP) toxins, the neurotoxic shellfish poisoning (NSP) toxins, the diarrhetic shellfish poisoning (DSP) toxins, the azaspiracid shellfish poisoning (AZP) toxins and the amnesic shellfish poisoning (ASP) toxins.
