Abstract

Best management practices that focus on sustainability of natural resources and proper handling during harvest, post-harvest and processing are described for pond culture of crustaceans. Harvest of a high-quality product is principally dependent on proper selection and use of land and water resources and maintaining appropriate levels of dissolved oxygen and pH of the culture water to minimize stress. Practices for organic fertilization of production ponds and for biofloc production are recommended to optimize growth through provision of live prey organisms with or without the feeding of a formulated feed. Provision of substrate within the water column also contributes to higher growth rates. Prescribed post-harvest handling and processing to maintain a high quality product begin with a rapid chill kill and transfer to the processing area. Sanitation regulations during processing combined with comprehensive and rigorous plans for monitoring, traceability, and food security are described to ensure product safety, and thereby establish consumer acceptance of and continued confidence in the product.
