Abstract
Geospatial modelling is increasingly used as a tool to aid verification of the geographical origin of food. Since geospatial modelling is a relatively new approach in the field of food authentication, this chapter focuses on the conceptual framework and provides suggestions related to the technical and practical aspects of model building as well as the application of these models for food authenticity testing. The geospatial modelling approach as described in this chapter provides a unique framework for geographical provenancing of food, which is equally relevant for other fields of science including forensics, archaeology and animal migration studies.
