Abstract

In the recent years, the supercritical fluid technology has proven to be a viable alternative in promoting sustainable food industry, with many industries producing valuable products by supercritical fluid technology around the world. This fact has driven several scientific studies focusing on developing new applications. This chapter presents the main supercritical fluid technologies used for food processing, including extraction, transformation, and food preservation. The specific process parameters involved in each process and the influencing factors are discussed, in addition to the upscaling and environmental impact of the supercritical fluid technologies. The recent applications of these technologies in foods are also overviewed including the main industrial applications of them. Finally, the future trends and necessities for the supercritical technology establishment are discussed.
