Abstract

The chapter conveys the importance of biofilm study in the environment of the poultry production and processing industries. Implications for food safety and security are established for sites of occurrence and causes of biofilm formation in poultry environments. Regulations and testing methods that are incorporated into industrial sanitation systems are related to the pathogens involved in recalls of poultry products. The physical, chemical, and electrochemical methods used to treat microbial contamination in poultry facilities are compared, and a comparison of efficacy is tabulated. The types of sanitation products used in the processing environment are compared, and alternative interventions are reported. Future trends, including regulatory controls, predictive microbiology, and outsourcing are suggested.
