Abstract

Organic acids are traditional products of food- and bio-technology. However, at the same time organic acids are among the most promising future products of industrial microbiology, owing to their possible use as building block chemicals. Considerable knowledge about microbial production processes on an industrial scale has been gained in producing organic acids. While strain and process development were previously based on classical methods, modern technologies like systems biotechnology and metabolic engineering are becoming crucial in this fast moving field of biotechnology. This chapter focuses on the respective microbial cell factories: natural producers and recombinant microorganisms, fungi and bacteria.
