Abstract

Many significant modifications and innovations have been seen in the beverage processing over the past few years as customers seek additional health benefits from beverages. Development of functional beverages with improved health benefits is considered as the most important benefit in this regard. The market of functional beverages has been rapidly growing with positioning strategies linked to several health benefits. Fruit-based functional beverages have been extensively manufactured around the globe by adding different bioactive components or by removing ingredients associated with certain health deteriorating problems. These functional beverages are claimed to have antihypertensive, antiinflammatory, hypolipidemic, cardioprotective, antiglycaemic, and anticarcinogenic effects. Consequently, this chapter will focus on market trends in the development of functional beverages, global regulations for developing fruit-based functional beverages, chemistry of functional fruit beverages, bioactive components present in different fruit juices, probiotic functional beverages, and role of fruit-based functional beverages in controlling various metabolic disorders. In addition, role of various functional ingredients in health-promoting functionality of these beverages will also be discussed in this chapter.
