Abstract
This chapter discusses the use of modified atmosphere packaging (MAP) and its integration with electron beam (eBeam) processing. The chapter describes the gases used in MAP and the effects of these gases on microorganisms, yeasts and moulds. MAP technology and specific MAP applications – i.e. for packaging of fresh red meat, fresh fruit and vegetables, and ready-to-eat foods – are also covered in detail. The chapter concludes with a section on the combination of MAP with eBeam technology.
