This chapter provides a broad overview of the significance of persistent organic pollutants (POPs) in foods and illustrates how scientific evidence is used to formulate policy and implement regulations. It explains how analytical methodology and toxicological studies might influence decisions about further investigation. It also includes brief examples of how new scientific information might be used to revise a regulation and how the potential risks from new and emerging POPs might be addressed.
