Abstract

The textbook summarizes the main provisions of the state policy in the field of healthy nutrition, criteria for ensuring food security, and provides a description of the main regulatory documents regulating relations in the field of ensuring the quality and safety of food products. The characteristics of compounds of natural origin, chemical pollutants, superecotoxicants that pose a danger to humans when they are consumed with food are given, methods for their determination are considered. It is intended for students studying in the direction of 35.03.07 "Technology of production and processing of agricultural products".
