Abstract

Рассмотрены основные особенности обработки, хранения и переработки злаковых и бобовых культур. Проанализированы проблемы на всех этапах – от первичной обработки до конечной переработки и даны рекомендации по улучшению технологии. The main features of finishing, storage and processing of cereals and legumes are considered. The problems at all stages – from primary processing to final processing - are analyzed and recommendations for improving the technology are given.
