Abstract

The results of technological assessment of the Don native white wine varieties Bessergenev-sky No. 10, Bessergenevsky No. 1, Bes-sergenevsky No. 7 growing on the ampelo-graphic collection of the Institute are present-ed. Pukhlyakovsky white, included in the State Register of varieties approved for use in the Russian Federation, was taken as a control va-riety. Natural dry samples of white wines were prepared from the studied varieties according to the classical technology. The research was carried out in the laboratory of winemaking technology in microwinemaking conditions. The mass of each batch of grapes was 5‒10 kg. The main physical and chemical indicators of grapes, as well as glucoacidometric indicator and indicator of technical maturity, were de-termined. In the prepared samples of wines, chemical indicators were determined, an or-ganoleptic assessment was carried out. Based on the results of five years of testing, conclu-sions were made about the feasibility of using the studied varieties: Bessergenevsky No. 10, Bessergenevsky No. 1, Bessergenevsky No. 7 for the production of high-quality white wines.
