Abstract

The results of the technological assessment of white Dagestan native technical grapevine varieties growing on the institute's ampelographic collection are presented: Gok Isum, Ghara Bakhin Tsibil, Latsu Kere, Hotsa Tsibil, from which natural table wine samples were prepared using classical technology. The studies were carried out in the laboratory of ampelography and technological evaluation of grapevine varieties in microwinemaking conditions. The mass of each batch of grapes was 10−20 kg. The main physical and chemical indicators of grapes, as well as glucoacidometric indicator and indicator of technical maturity, were determined. In the prepared samples of wines, chemical indicators were determined; an organoleptic assessment was carried out. Italian Riesling was taken as a control variety, which is included in the State Register of Breeding achievments approved for use in the Russian Federation. Based on the results of three years testing, conclusions were made about the feasibility of using varieties: Gok raisin, Ghara bakhin tsibil, Latsu kere, Hotsa tsibil in the production of dry high-quality white wines (tasting score 8.6−8.7 points)
