Abstract

The possibility of binding calcium and calcium succinate cations to sorbitol in an aqueous medium has investigated and proved with the aid of computer simulation. The descriptors of complexes describing the solubility of substances are calculated, including the heats of complexation and hydration and logP. Theoretical calculations are experimentally confirmed by determining the solubility of calcium succinate, calcium citrate, and calcium malate in sorbitol solutions. It is established that the solubility of indicated salts increases in sorbitol solutions. Based on these results, а technology of syrup containing calcium succinate on а combined sorbitol - fructose basis is developed.
