Abstract

This study aims to understand the formative characteristics of Vietnamese restaurants and provide information and knowledge necessary for the research and operation of Vietnamese food spaces. For this research purpose, 10 Vietnamese restaurants with high awareness and preference in Hanoi and Ho Chi Minh City were selected, visited, and investigated. The analysis was conducted through the photographs taken, prior research, and literature, and the following results were obtained. (1) Since the old small urban building is used as a single store, it is likely that the entire interior space can be configured in various ways. (2) Since the store usually uses the first floor, it is possible to form a more flexible store space by configuring the entry space and opening it with the upper floor. (3) It provides a spatial experience to communicate with the surrounding environment through various mediation spaces such as verandas, terraces, porches, and outdoor courts. (4) Although reinforced concrete structures are commonly used, handcrafted elements are used as construction auxiliary materials everywhere, showing the modern and traditional contrast and harmony between planes and lines. In recent years, the number of Vietnamese restaurants has been increasing in Korea, and the results of this study are expected to create many excellent food spaces that can fully show Vietnam's identity as well as Vietnamese food.
