Abstract
Semi-finished products are an indispensable element in the diet of modern humans. Beef semi-finished products can be assigned to the traditional and popular assortment that is in a high demand among consumers in the retail chain, HoReCa segment and home cuisine. The new interstate standard (GOST 34982-2023) comes into force from January 1, 2024. This will allow meat processing enterprises to produce 39 names of meat semi-finished products in pieces from beef (including high-quality). With that, such products will correspond to the requirements of the regulatory acts being in force on the territory of the states that are members of the Eurasian Council for Standardization, Metrology and Certification.
