Abstract
The lack of dietary fiber (roughage) in modern diets of Russians dictates the necessi-ty to create and introduce products containing these functional ingredients into daily nutri-tion. The simplest way is to change traditional formulation of the product by introducing the required substances in quantities that give the product the desired properties. The article presents the results of the study of the possibility of using dietary fibers from earth apple flour in the technology of chopped poultry meat products.
