Abstract

The serious problem for food industry is seniors provision with palatable and beneficial foods especially if they have masticatory muscles function disturbed and/or they have dysphagia and need especial nutrition. Meat products are important components of human diet. However, they contain many fat and cholesterol and few polyunsaturated fatty acids and it may be the cause of obesity, cardiovascular diseases and hypercholesterinemia development. Therefore, the development of meat product technology with high nutritional and biological value and low fat content should be considered the actual task. The recipe has been developed and characteristics have been evaluated for meat pate enriched with plant components and linseed oil and destined for old men consuming.
