Abstract

Quinoa is a pseudo-grain crop, an annual plant, a species of the genus Mar (Chenopodium) of the Amaranthaceae family. Quinoa is cultivated for both grain and green mass. Back in 1996, the FAO classified quinoa as one of the most promising crops for humans. For economically developed countries, quinoa in the 21st century serves to expand the range of nutritionally valuable crops. For Russia, quinoa is also promising for cultivation in connection with the "Strategy for improving the quality of food products" approved by the Government of the Russian Federation for the period up to 2030. Quinoa has a high nutritional value. Its adaptive potential and high ecological plasticity make it possible to grow quinoa in a wide range of agroecological conditions.
