Abstract
The article is devoted to the actual problem of spreading of psychrophilic fungi of certain genera in the refrigeration chambers of meat processing industry enterprises. The characteristics of the main genera of mold fungi that contaminate refrigeration chambers are given. Modern methods of combating mold fungi in refrigeration chambers are presented, ensuring the sanitary and hygienic requirements of auxiliary areas of food production, taking into account their efficiency and safety.
