Effect of portulaca (Portulaca oleracea L.) extract on the quality and physicochemical attributes of vacuum-packed seasoned steaks during chilled storage.

Vacuum packaging has the ability to reduce oxidative deterioration and microbial-induced spoilage of meat. However, in an oxygen-free environment, it can lead to the development of an unappealing purplish-red color and a decrease in the water-holding capacity of meat, thereby impacting the overall meat quality. Portulaca oleracea L. (POL) is a homology of medicine and food known for its exceptional antioxidant and antimicrobial properties. The aim of our present study was to investigate the antioxidant and antimicrobial ability of n-butanol phase extract of POL and the effect of POL extract incorporation on the quality (water-holding capacity, shear force, color, and texture) and physicochemical (pH, total volatile base nitrogen, and total viable counts) attributes of vacuum-packed seasoned steaks at 4 °C over a 15-day period. Results showed that the POL extract had excellent antioxidant and antimicrobial capacity. Furthermore, the addition of POL extract significantly inhibited protein oxidation and microbial growth of steaks (P < 0.05), and improved the water-holding capacity, color properties, and tenderness (P < 0.05). Moreover, there were no significant differences (P > 0.05) in the color, water-holding capacity, or tenderness between the 0.5and 1 g kg-1 POL extract treatment groups compared to the sodium nitrite control group. These results indicate that POL extract had the potential to replace sodium nitrite due to its ability to hinder protein oxidation and microbial growth of vacuum-packed seasoned steaks, while enhancing the color, water-holding capacity, and tenderness of seasoned steaks. © 2024 Society of Chemical Industry.

Growth performance, plasma metabolites, meat quality, and meat and lipid health indices of New Zealand White rabbits as affected by dietary dried tomato pomace powder supplementation during the summer season.

One hundred and twenty New Zealand White rabbits (NZW) (5-week-old; 735.27 ± 27.23 g) were kept in an open-sided house during the summer season. The experiment aims to evaluate the impacts of dried tomato pomace powder (DTPP) supplementation on rabbits' performance, blood metabolites, carcass traits, meat quality, and lipid and health indices of NZW rabbits during 5-13 weeks of age. The four treatments were a standard rabbit feed (control) and the control diet supplemented with 0.5, 1.0, and 1.5% DTPP, respectively. Rabbits fed a diet containing 1.5% DTPP showed the highest growth rate through weeks 9-13 of age despite having the lowest feed intake spanning 5-13 weeks. The best feed conversion ratio (FCR) was recorded in rabbits fed with 1.5% DTPP-supplemented diet for 5-13 weeks. Diets supplemented with 0.5 or 1.0% DTPP enhanced markedly dressing %, total edible flesh, saturated (SFAs), monounsaturated (MUFAs), and polyunsaturated fatty acid (PUFAs) contents, as well as the ∑n - 6/∑n - 3 ratio and the total n - 6 of meat. Dietary supplementation with DTPP decreased kidney, abdominal, and back fat. Diets supplemented with DTTP decreased total cholesterol, triglycerides, and very low-density lipoprotein (vLDL) concentrations. The greatest levels of linoleic acid, arachidonic and water-holding capacity in meat were observed in rabbits fed 1.5% DTPP-supplemented diets. Diets containing 1 and 1.5% DTPP improved meats' atherogenic and thrombogenic indices, meat lipid quality desired fatty acids/undesired fatty acids ratio, and meat health index. Conclusively, DTPP up to 1.5% maintained the growth performance of rabbits, boosted meat quality through increasing vitamin E, reduced fat deposition, modified fatty acid composition, and improved atherogenic, thrombogenic, and hypocholesterolemic indices of rabbit meat.

Use of cinnamon and Bacillus subtilis probiotics in the diet of broiler chickens

The present study was carried out to evaluate the effect of cinnamon and Bacillus subtilis on the growth, meat characteristics, and lipid profiles of broiler chickens. In experiments 1 and 2, a total of 320 day-old broiler chicks were assigned to D1 (control), D2 (4 g cinnamon/kg), D3 (6 g cinnamon/kg), D4 (8 g cinnamon/kg) with four replicates, and D1 (control), D2 (0.4 g B. subtilis (BS)/kg), D3 (0.6 g BS/kg), D4 (0.8 g BS/kg), D5 (6 g cinnamon/kg) with three replicates, and 10 chicks/replication for 35 and 30 days, respectively. In experiment 1, no significant difference was observed among diets for growth and meat yield. However, test diets performed better than the control diet in terms of water-holding capacity of meat (WHCM), cooking loss of meat (CLM), blood lipids profiles (BLP), sensory quality score (SQS) ( p &gt; 0.05), and flavor ( p &lt; 0.05). In experiment 2, there was no significant difference among diets for growth, meat yield, WHCM, CLM, and BLP of the bird ( p &gt; 0.05), except for SQS ( p &lt; 0.001). Notwithstanding, the D5 tended to increase growth, meat yield, WHCM, and SQS, and decrease CLM and BLP. Thigh meat showed higher SQS than breast meat in both experiments. Therefore, the 6 g cinnamon/kg diet may be used for producing a safe, quality, and cost-effective broiler.

Effect of transportation distance on the physiological condition and carcass traits of kampong chickens

This research aimed to investigate the effect of transportation distance on the physiological conditions and carcass traits of kampong chickens. Two hundred and twenty-five male kampong chickens were transported for distances of 30 km, 60 km, and 90 km, departing from three villages. Their physiological conditions were observed for up to 12 hours after having reached the final destination, and they were slaughtered after 45 minutes of lairage. The results showed that the transportation distance had a minor influence on the male kampong chickens' physiological conditions on arrival and on resulting carcass traits. Decreased oxygen consumption and metabolism rates were observable only eight hours after the rest period, without further effects on body temperature, tonic immobility, and blood triglyceride levels. There were no significant changes in live shrink, liveability, and carcass production from various transportation distances. However, a significant percentage increase in live shrink, accompanied by a significant decrease in visceral weight, was noted after transportation distances above 60 km. There was a significant decrease in the percentage of drumstick weight and a minor decrease in overall carcass quality, derived from bruising on the thighs. No significant changes were noted in graded carcass quality, meat water-holding capacity, pH, lactic acid, or water content. It was concluded that transportation distances up to 90 km were physiologically tolerable to kampong chickens, imposing minor negative impact on carcass traits.

Water-holding and water-holding capacity of meat and methods of its determination

The considered topic is of great interest for researchers and practitioners engaged in the development of technology and the production of meat food. In the review, the authors focus on theoretical aspects of the meat capacity to bind and hold water. The characteristic of the forms and strength of the water-to-meat bonds is given. The influence of the structural elements of muscle tissue on the meat capacity to bind and hold water is shown. The different opinions of the specialists are given in regard to the terms “water-binding” (WBC) and “water-holding” (WHC) capacity of meat, and the authors of this research expressed their own opinion. Basing on the analysis of publications, a characteristic is given to forms of water-to-meat bonds strength from the point of view of technological practice: there is tightly bound water, loosely bound available water ( immobilized ), and loosely bound excessive water ( free ). The article summarizes the material on the methods of determination of water-holding (water-binding) capacity of meat. It is shown that up to date there is no unequivocal answer about the choice of WHC determination method. To define WHC, it is recommended to subtract the WBC value obtained by one of the gravimetric methods from the value of the indicator obtained by one of the methods of external pressure. This problem requires further research, discussion of issues and methods for determination of water-holding capacity.

Phenotypic correlations between feed efficiency, growth, and meat quality of slow-growing chickens

ABSTRACT 1. Korat (KR) chicken is a new meat-type chicken breed established with the purpose of developing Small and Micro Community Enterprise Production. This slow-growing chicken has been recognised for its good texture and flavour, but its low feed efficiency is associated with high cost of production which can hamper the development of local production. This has highlighted the importance of studying the trade-off between feed efficiency and meat quality in KR chicken. 2. This study investigated the phenotypic correlations between feed efficiency, growth performance, and meat quality in KR chicken. Individual body weight and feed intake were recorded weekly for 75 male KR chickens for the calculation of feed conversion ratio (FCR) and residual feed intake (RFI). The growth curve was modelled by Gompertz function and meat quality evaluated at 10 weeks of age, through the measurement of pH (pHu), water-holding capacity (WHC) and drip loss (DL) in breast and thigh muscle. 3. Faster growth rate at young age appeared favourable, regarding feed efficiency, since a moderate negative correlation was found between FCR and initial growth rate. Chickens with a higher initial growth and maturation rates were characterised by lower water-holding capacity in meat. This was not associated with acidic meat, since a higher speed of growth (especially in the first weeks) was positively associated with final pH in breast meat. Relationships between RFI and meat quality traits appeared to be weak. While better FCR could be achieved by increased initial growth rate, this seemed to negatively impact water-holding capacity of the meat. 4. RFI appeared as an interesting alternative as a compromise between FCR and meat quality.

Performance, gut morphology, and meat characteristics of broilers housed at a high-density pen and provided with fermented Averrhoa bilimbi fruit filtrate.

This study assessed the impact of fermented Averrhoa bilimbi fruit filtrate (FF) on growth, gut morphology, and meat traits of high-stocked broilers. A 2 × 2 factorial trial with stocking densities (9 or 18 birds/m2) and drinking 2% FF or plain water was conducted using 378 14-day-old broiler chicks. On day 35, samples were obtained and analyzed. FF improved feed efficiency and income over the feed cost of high-stocked broilers by about 7.63% and 10%, respectively, compared to high-stocked broilers receiving only water. FF decreased duodenal crypt depth and meat water-holding capacity. Meats from high-stocked broilers receiving FF showed lower cholesterol than other meats. Lower cholesterol/high-density lipoprotein (HDL) and higher HDL/low-density lipoprotein were found in meats from broilers receiving FF. Total unsaturated fatty acid (UFA) was higher in meats of high-stocked broilers receiving FF than others. The UFA/saturated fatty acid was lower in meats of high-stocked broilers receiving plain water. High-stocked broilers given FF had higher meat n-3 polyunsaturated fatty acid (PUFA). FF enhanced meat n-6 PUFA levels. The n-3/n-6 PUFA increased with high density and drinking FF. Drinking FF improved gut morphology and meat qualities of broilers housed in high-density pens. FF may be an excellent alternative to improve the growth and meat qualities of broilers raised in high-density houses.

Review in the Effect and Mechanism of Cytokeleton Proteins on Water Holding Capacity of Meat

Water-holding capacity (WHC) is an important quality attribute of meat, which affects the color, juiciness and tenderness of meat. Drip loss is often used as a measure of WHC. Excessive drip loss after slaughter causes a certain amount of economic losses to the meat industry. Therefore, studies on WHC of meat are important for the meat industry. As the main component of muscle cells, cytoskeleton proteins plays a critical role in maintaining the integrity of cell structures and functions, which has effect on the WHC of meat. In this paper, the physiological and biochemical properties of recently identified cytoskeleton proteins and their effects on meat WHC were reviewed. This study further discussed the factors and mechanisms affecting degradation of cytoskeleton proteins in order to provide theoretical reference for the control of WHC of meat.

Supplementation of pomegranate processing waste and waste soybean cooking oil as an alternative feed resource with vitamin E in broiler nutrition: effects on productive performance, meat quality and meat fatty acid composition

ABSTRACT This research aimed to determine the effect of dietary supplementation of pomegranate peels powder and waste soybean cooking oil on the performance and meat quality of male Ross 308 broiler chickens. Before start of the experiment, the metabolisable energy of pomegranate peels and other nutritive and chemical contents of pomegranate peels were measured. Also, peroxidation indices and fatty acids profiles of experimental oils were analysed. The experiment was designed as a 3 × 3 × 2 factorial arrangement of treatments including i) pomegranate peels (0, 4 and 8%), ii) waste soybean cooking oil (0, 2 and 4%) and iii) vitamin E (0 and 200 mg/kg diet). Supplementation of 8% pomegranate peels significantly decreased growth performance of broiler chickens (p < 0.05). The supplementation of 4% waste cooking oil significantly reduced body weight gain during the grower and whole experimental period (p < 0.05). Pomegranate peels supplementation decreased peroxide value (PV) and thiobarbituric acid (TBA) and increased pH of meat (p < 0.05). Supplementation of 4% waste cooking oil increased PV and TBA and reduced crude protein, water holding capacity (WHC), and pH of meat (p < 0.05). Vitamin E supplementation significantly decreased TBA and increased WHC of meat (p < 0.05). Supplementation of pomegranate peels decreased saturated fatty acids (SFA) and increased polyunsaturated fatty acids (PUFA) of meat (p < 0.05). Broilers fed diets with 4% waste cooking oil showed higher SFA and lower PUFA contents in meat (p < 0.05). So it can be concluded that 4% pomegranate peels could be used as an alternative feed ingredient and a source of antioxidants in broiler diets, and also 2% waste soybean cooking oil can be included as feed ingredient in broiler diets without adversely affecting performance.

The water-holding capacity of meat: A reference analytical method

The water-holding capacity (WHC) of meat affects its characteristics and is a crucial criterion for assessing meat quality. However, there is no precise analytical method for determining meat WHC. This study aimed to develop a precise and widely applicable method to determine the WHC of turkey and pork samples. A filter-paper press method was used to present WHC as water content (%) before and after pressing (WHC1) or water content (%) after pressing relative to the fat-free dry matter components of the tested meat (WHC3). In cases where pressing released both fat and muscle juice, procedures to calculate WHC2 or WHC4 were applied. This increased the precision of WHC values calculated using formulas 1 and 3 (for WHC1 and WHC3 values, respectively). Expressing WHC as WHC3 ensured absolute precision in determining WHC. This study successfully developed a reference analytical method for accurately determining meat WHC.

UBXN1 is a strong candidate gene in regulation of pork water-holding capacity.

The UBX domain containing protein 1-like gene (UBXN1) promotes the degradation of myofibrillar proteins during meat maturation, which affects meat water-holding capacity (WHC). This study aims to identify functional mutations in UBXN1 promoter region, which affects the transcription activity and therefore the WHC. Firstly, we confirmed that the UBXN1 expression level was positively associated with WHC. Individuals with high and low WHC ( per group) were selected from 168 Duroc Large White Yorkshire (D L Y) crossbred pigs. The UBXN1 promoter region was comparatively sequenced using DNA pools from these two groups, and a mutation ca. 379T G was revealed that had reverse allele distribution. The single nucleotide polymorphism (SNP) was then genotyped in the abovementioned population. TT genotype individuals exhibited higher UBXN1 mRNA level and higher WHC compared with GG genotype ones. Further luciferase assay confirmed that TT genotype promoter had higher activity. Moreover, the degradation of cytoskeletal framework proteins of muscle cells like desmin, synemin, dystrophin, and vinculin was higher in TT genotype individuals than GG ones. In conclusion, we identified a SNP in the UBXN1 gene promoter that contributes to WHC improvement and pork quality. And UBXN1 is a strong candidate gene in regulation of pork WHC.

Correlation among serum biochemical indices and slaughter traits, texture characteristics and water-holding capacity of Tan sheep

This study was conducted to determine the correlation among serum biochemical indices, slaughter traits, texture characteristics and water-holding capacity in Tan sheep. Eighty Tan sheep aged 4–6 months were selected. Blood samples were collected from live animals to analyse serum biochemical indices. The slaughter traits, texture characteristics and water-holding capacity of meat were assessed after slaughter. There were highly significant correlations (p<.01) and high linear regression R values among serum biochemical indices, slaughter traits, meat texture characteristics and water-holding capacity in Tan sheep. Therefore, this study has demonstrated that the meat qualities of Tan mutton may be evaluated by the serum biochemical indices of live Tan sheep. Highlights This study was conducted to determine the correlation among serum biochemical indices, slaughter traits, texture characteristics and water-holding capacity in Tan sheep. This study has demonstrated that meat qualities of Tan mutton may be assessed by the serum biochemical indices of live Tan sheep. It is necessary to determine slaughter traits, meat texture characteristics and water-holding capacity of meat, which are major indicators for assessing meat and meat products by consumers.

Association of a polymorphism in exon 3 of the IGF1R gene with growth, body size, slaughter and meat quality traits in Colored Polish Merino sheep

This study aimed to genotype the polymorphism (c.654G > A) in the exon 3 of the insulin-like growth factor 1 receptor gene (IGF1R) and to analyze its association with growth, body size, slaughter and meat quality traits in Colored Polish Merino sheep. In total, 67 traits were analyzed. The IGF1R polymorphism was genotyped using the polymerase chain reaction single-strand conformation polymorphism (PCR-SSCP) method. The MIXED procedure of the SAS software was used to assess the genotypic effects of the polymorphism (c.654G > A) on production traits of interest. The IGF1R c.654G > A genotypes were found to have a significant effect on the average daily gain between the 56th and 78th day of life, cold carcass, leg part, leg cut, fore shank, and kidney weights, as well as eye of loin depth, intramuscular fat content, and water-holding capacity of meat. The results suggest that the studied polymorphism may provide useful information for marker-assisted selection for increased meat performance in Colored Polish Merino sheep.

Expressible fluid measurements of broiler breast meat affected by emerging muscle abnormalities

Effects of emerging myopathies, spaghetti meat (SM), wooden breast (WB), and white striping/WB (WS/WB), on meat water-holding capacity (WHC) were investigated using expressible fluid (EF). Broiler breast meat (Pectoralis major) was collected from a commercial plant and sorted into normal (NORM), SM, WB, and WS/WB categories. The filter paper method was used to measure EF of fresh, frozen, and cooked meat samples with myopathies. Ratios of the total wet area over meat area were used to estimate EF. There were no differences in EF ratios between NORM and bone (dorsal) side of WB and WS/WB meat regardless of raw meat state and between NORM and SM meat regardless of SM location and meat state. There were no differences in EF ratios between NORM, SM, WB, WS/WB for cooked meat except for the samples from discolored area of cooked WB and WS/WB meat. Meat from skin (ventral) side of raw WB and WS/WB showed greater (P < 0.05) EF values (>4.01) than that of NORM (<3.30). The EF values (<3.89) from discolored area of cooked WB and WS/WB were lower than that of NORM (5.01). Effects of myopathies on EF/WHC vary with locations in abnormal broiler Pectoralis major.

Quality and Physicochemical Traits of Carcasses and Meat from Geese Fed with Lupin-Rich Feed.

Simple SummaryIn the past, lupin seeds were not used in poultry feeding because of their alkaloid content, which affected the growth performance, producing negative results. Nowadays, new cultivars of lupins have reduced the anti-nutrition content and have been characterized by a high level of protein, similar to the level in soybean meal. Goose production is not popular and, generally, should be done by an extensive or semi-intensive system, which is corelated with small costs of feeds. Lupins can be used for crops where it is not possible to produce soybean (environmental conditions). Our study indicated that it is possible to produce goose meat with a good quality, where the feeding was based on various cultivars of lupins. Yellow, as well as white, lupin-rich feed had a positive effect on the meat traits and meat quality. Narrow-leaved lupin worsens the growth performance.The aim of the study was to analyze the quality of geese meat receiving feed with soybean meal (group 1), yellow lupin (group 2), narrow-leaved lupin (group 3), or white lupin (group 4). In total, 400 male White Kołuda® geese were randomly assigned to four groups, with 10 replicates and 10 birds each, during the 77-day rearing period. After the end of the rearing period, 10 birds from each group were slaughtered and dissected. Meat quality traits were measured. Based on the production results, it can be concluded that geese use fodder with yellow and white lupin to the same degree as in the case of the control group and higher body weight gain was recorded in the first rearing period. In contrast, the use of narrow-leaved lupin in mixtures for geese worsened the feed used. Meat traits were similar in all groups, including the content of muscles and fat in the carcass (p > 0.05), excluding abdominal fat. The weight of abdominal fat and its proportion in the carcass were higher (p < 0.05) in geese from group 4. A higher (p < 0.05) pH was found in group 1. The protein and intramuscular fat content in breast muscles was highest (p < 0.05) in geese from group 4, and a higher water content was found in group 1. The protein content in leg muscles was higher in group 3, and the fat content was higher in group 4 (p < 0.05). The color and water-holding capacity of meat were comparable in all groups (p > 0.05). The analysis revealed a positive effect of replacing soybean meal with alternative protein sources, especially yellow and white lupin, on the growth performance and quality of goose meat.

Effect of freezing/irradiation/thawing processes and subsequent aging on tenderness, color, and oxidative properties of beef

This study evaluated the use of gamma irradiation (3, 6 and 9 kGy) in frozen vacuum-packed beef and subsequent thawing and aging for up to 14 days. The effects on tenderness, color, and oxidative properties were determined and compared to non-irradiated controls for frozen/thawed and chilled vacuum-packed beef. The combined irradiation and freezing/thawing processes increased total exudate loss and reduced the meat water-holding capacity, regardless of the dose used. Myofibrillar fragmentation was favored by the freezing/thawing processes and negatively affected by irradiation. Lower shear force values were observed in the non-irradiated frozen/thawed samples. Frozen samples irradiated at 9 kGy had a higher percentage of soluble collagen, lipid peroxidation, and a more reddish color tone. The meat reducing capacity and oxygen consumption were reduced by freezing and further by irradiation, which also included accumulation of metmyoglobin. It was concluded that irradiation of frozen meat and its subsequent thawing and aging does not confer any additional advantages for beef technological quality.

Effects of dietary supplementation of Quillaja saponin on growth performance, nutrient digestibility, fecal gas emissions, and meat quality in finishing pigs

ABSTRACT We evaluated the effects of Quillaja saponin (400 mg/kg) on growth performance, nutrient digestibility, fecal gas emissions, and meat quality in pigs when used as a supplement in a finishing pig diet. In total, 80 finishing pigs [(Yorkshire × Landrace) × Duroc] with an average initial body weight of 61.53 ± 4.41 kg were used in a 61-day study. Pigs were allotted to one of two treatments according to initial body weight with 10 replicate pens per treatment and four pigs (two barrows and two gilts) per pen. The dietary treatments consisted of (1) a basal diet (CON), or (2) a CON + 400 mg/kg Quillaja saponin (QS) diet. The growth performance and nutrient digestibility were not affected by supplementing the diet with QS. The ammonia emissions were decreased by Quillaja saponin supplementation (P < 0.05). Pigs consuming the QS diet had a higher meat water-holding capacity (WHC) (P < 0.05) and a lower meat drip loss on day 7 (P < 0.05) compared to pigs consuming the CON diet. Our results indicate that a diet supplemented with 400 mg/kg Quillaja saponin can improve the meat WHC and drip loss, and reduced fecal ammonia emission.

The effect of polyphenols and vitamin E on the antioxidant status and meat quality of broiler chickens fed diets naturally contaminated with ochratoxin A

ABSTRACTThe aim of this study was to determine the effect of a polyphenol product (PP) (Proviox) and vitamin E on the antioxidant status and meat quality of broiler chickens fed diets contaminated with ochratoxin A (OTA). One hundred and twenty ROSS 308 broiler chickens were randomly divided into six groups (10 replications, 2 birds per replication). Group I received an uncontaminated and unsupplemented diet, diets of groups II to VI were contaminated with OTA at 172 µg and 200 µg/kg for the starter and grower period, respectively. Furthermore, diets of groups III, IV and V were supplemented with vitamin E at 100, 200 and 100 mg, respectively, and to diets of groups V and VI additionally 100 and 2200 mg PP was added, respectively. Supplementation with PP and vitamin E had no significant effects on the growth performance, dressing percentage or carcass trait parameters of broiler chickens. In chickens exposed to stress, dietary supplementation with vitamin E and/or PP improved the total antioxidant status (p ≤ 0.05), enhanced the blood activity of antioxidant enzymes (p ≤ 0.01) and increased the concentrations of non-enzymatic antioxidants (p ≤ 0.01) in the liver and breast muscles. Regardless of the administered antioxidants, chickens fed diets contaminated with OTA were characterised by lower dressing percentage (p ≤ 0.01), a higher proportion of the liver in the carcass (p ≤ 0.01), lower carcass fat content (p ≤ 0.01), and longer small intestines (p ≤ 0.01) and caeca (p ≤ 0.01). Dietary supplementation with PP improved the water-holding capacity of meat (p ≤ 0.01). The breast muscles of chickens fed diets supplemented with PP and vitamin E were characterised by higher (p ≤ 0.05) concentrations of eicosapentaenoic acid (C20:5). It was concluded that PP can be an insufficient component of diets for broiler chickens to improve growth performance and mitigate the negative effects of high dose of OTA in diets.

The effect of carcase conformation and fat cover scores (EUROP system) on the quality of meat from young bulls

The EUROP classification system includes only a small number of indicators to characterise beef carcases, none of which directly describes meat quality. Therefore, beef producers show limited interest in improving meat quality parameters. The aim of this study was to evaluate whether conformation and fat cover, as assessed in the EUROP classification system, can be reliable descriptors of the qualitative characteristics of beef carcases and meat quality. A total of 198 carcases of young bulls were analysed. Meat samples were collected from the longissimus thoracis (LT) muscle. It was found that the muscle content of three-rib cuts was higher in better-conformed carcases. Conformation class was inversely related to intramuscular fat (IMF) content, the fat content of three-rib cuts and meat juiciness. Meat quality was better characterised by fat class than conformation class. The fat cover had a positive influence on shear force values, the water-holding capacity and tenderness of meat. The water-holding capacity of meat and shear force values can be used in addition to EUROP scores to more accurately characterise beef carcases.HighlightsBetter conformed carcases have lower intramuscular fat content, lower fat content of three-rib cuts, higher shear force values and lower juiciness scores;Fat cover is a more reliable indicator of meat quality than carcase conformation;Water-holding capacity and shear force can be used in addition to EUROP scores.

The effect of high ultimate pH on the quality of three muscles from farm-raised fallow deer (Dama dama)

Muscles (m. supraspinatus, SP; m. longissimus thoracis et lumborum, LTL; m. semimembranosus, SM) of 16 farm-raised fallow deer were analysed to study the effect of normal and high pH on the quality of venison. While 60% of analysed SP muscles were characterised with an ultimate pH (pHu) of ≥6.0, the pHu of LTL and SM was of a normal level (pH ≤ 6.0) for most of the analysed fallow deer. The SP with a normal and high pH had the highest pHu among the analysed muscles (P = 0.009). High pHu resulted in redder meat (P = 0.004). LTL and SM with a high pHu were characterised with the lowest value of H° (P = 0.006). The drip loss and the percentage of total water were higher for SP than for the other analysed muscles (P = 0.001 and P &amp;lt; 0.0001). The free water and the free-water share in total water were most affected by the pHu (P = 0.001) among the analysed traits related to water-holding capacity of meat, and were lower for venison with a high pHu than for that with a normal pHu. The high-pHu venison was related to a lower cooking loss (P = 0.002) and a slightly higher meat plasticity (P = 0.027) than was the meat with a normal pHu. The proximal chemical composition of the fallow deer muscles was not influenced by the pHu (P = 0.817–0.983) nor by the carcass weight (P = 0.121–0.964). From the present results, it can be concluded that high-pH and normal-pH venison have different qualities. This also means different culinary and technological characteristics depending on the pHu value. The incidence of high pHu was the highest in the SP.
