Comparative study on the quality of wild and ecologically farmed large yellow croaker through on-site synchronous sampling from the Nanji Archipelago in the East China Sea

With consumers demanding higher quality in fish products, ecologically farmed fish are increasingly favored due to their quality being close to that of wild fish. However, the differences between the ecologically farmed and wild fish remain largely unclear. In the present study, the wild and ecologically farmed large yellow croakers of the same size were captured simultaneously from the same marine area around Nanji islands (27.479°E, 121.052°N). Then, synchronous tests were conducted to evaluate quality to clarify the key quality parameters that differentiate between the wild and farmed fish. We obtained 49 quality parameters after orthogonal partial least squares discriminant analysis (OPLS-DA) with variable importance in projection (VIP) scores >1 and p < 0.05 using 307 indicators related to 121 length ratios, 4 body color indicators, 5 muscle fiber characteristic indicators, 87 nutrition quality parameters, 40 taste parameters, and 50 volatile compounds. Compared to the farmed fish, the wild fish exhibited a more yellow skin color, higher levels of carotenoids, and a more streamlined conical shape. Changes in histology and ultrastructure of muscle fibers were noted, including increased muscle fiber density and the ratio of fiber area to gap, as well as reduced I band width, observed in the wild fish. The wild fish had high nutritional value of fatty acids and minerals and low nutritional value of amino acids, as reflected by higher levels of C22: 6n3 (DHA), Σn-3 PUFA (polyunsaturated fatty acids), Σn-3/Σn-6 PUFA, Na (sodium), K (potassium), Fe (iron), and Se (selenium), and lower values of ΣMUFA (monosaturated fatty acids), Σn-6 PUFA, TI (thrombogenic index), amino acid and chemistry scores of isoleucine, ΣEAA/ΣTAA (essential amino acid/ total amino acid), and ΣTAA/ΣNEAA (total amino acid/non-essential amino acid) in the muscles of the wild fish. The wild fish muscle showed high levels of hydrolyzed glycine and proline and free methionine, and low levels of free glycine and proline, indicating a propensity for collagen synthesis. Despite significant differences in the contents of fourteen flavor substances of free amino acids, 5′-nucleotides, and volatile compounds, their concentrations were notably below the corresponding threshold and contributed minimally to flavor, suggesting that the wild and farmed fish shared similar flavor characteristics. In summary, this study reveals the quality differences between ecologically farmed and wild large yellow croaker based on on-site synchronous sampling, providing a theoretical foundation for further enhancing the quality of this species.

Nutritional composition of ghee of various animal origins produced in some silk road countries

This study aimed to investigate the fatty acids, vitamins, and minerals of ghee from various animal milk from different countries, such as India, Kazakhstan, Kyrgyzstan, Mongolia, and Turkey. Ghee consists of 98.9% of fat, irrespective of the animal source. Among the short- and medium-chain saturated fatty acids, all samples contain butyric (C4:0), caproic (C6:0), caprylic (C8:0), and capric acid (C10:0). Mare and goat ghee additionally contain undecanoic acid (C11:0). Major fatty acids were myristic acid (C14:0), palmitic acid (C16:0), stearic acid (C18:0), and monounsaturated fatty acid was oleic acid (C18:1 cis 9). Notably, camel and mare ghee have the highest values of polyunsaturated fatty acids. Regarding minerals, the average levels were 5.48 mg/100 g for calcium, 5.04 mg/100 g for potassium, and 23.6 mg/100 g for phosphorus. Ghee also contains β-carotene at an average of 392 µg/100 g, vitamin A at 606 µg/100 g, and vitamin E at 1650 µg/100 g. The aforementioned results underscore the variation in the nutritional composition of ghee according to its geographical origin and source.

Fatty Acid Composition of Commercial Smoked Salmon Products

In this study, the fatty acid composition of smoked salmon fillets sold in grocery stores in Türkiye was investigated. Gas chromatography (GC) was used to determine fatty acid composition from extracted lipid. The main saturated fatty acids observed in smoked salmon samples were myristic acid (C14:0), palmitic acid (C16:0) and stearic acid (C18:0); monounsaturated fatty acids were palmitoleic acid (C16:1), oleic acid (C18:1n9), and vaccenic acid (C18:1n7); polyunsaturated fatty acids (PUFA) were linoleic acid (C18:2n6), eicosapentaenoic acid (EPA, C20:5n3) and decosahexaenoic acid (DHA, C22:6n3). Among the monounsaturated fatty acids, oleic acid was found to be the fatty acid with the highest value. Oleic acid amounts were found to vary between 27.22% and 35.52%. PUFA values in smoked salmon fillet groups were determined as 27.77%, 27.49%, 32.94% and 30.62%. The highest EPA value was determined in F1 group with 4.29% and the lowest value was determined in F2 group with 2.07%. DHA amounts were between 11.74% and 6.22%. The ratio of Σn6/Σn3 was between 0.80 (F4 group) and 1.16 (F2 group). As a result, it was concluded that the smoked fish fillets examined had high nutritional quality in terms of fatty acids. Among the groups, especially F3 and F4 groups were found to have rich content in terms of PUFA and Σn3 values.

Morphometric traits, carcass characteristics and biochemical composition of meat between local and synthetic Algerian rabbit genotypes

The aim of this research was to study the genetic and sex effects on morphometric traits, carcass characteristics and biochemical composition of rabbit meat of two Algerian breeds, local population and synthetic line (ITELV2006). For this purpose, 60 animals (30 per group) from 90 d of age were used. The body weight and the morphometric traits recorded were determined using a digital weighing scale and flexible tape. At slaughter, carcass traits, and biochemical meat quality characteristics such us protein, fat, ash, moisture content and fatty acids composition were measured. The results obtained revealed that the synthetic line has higher values of morphometric measurements than the local breed. The sex factor and the interaction genotype X sex had a significant effect only on chest circumference (P &lt; 0.05). It is also observed, that the majority of carcass characteristics were more affected by genetic than by genetics. Which body weight at slaughter of males and females derived from synthetic lines were 41% and 22% higher than local rabbits respectively. Furthermore, the new line displayed a good meat yield (60%) with a higher mean value (+ 5%) of dressing out % rather than the local one. Regarding, the proximate biochemical composition of meat, the synthetic line has shown also the highest content of protein and fat (P &lt; 0.05). Concerning with fatty acids profile; the local breed exhibited the highest content of n3 and n6 polyunsaturated fatty acids (n3 and n6 PUFAs), consequently, the lower value of n-6: n-3 ratio (9.82) and the highest value of polyunsaturated fatty acids to saturated fatty acids (PUFAs/SFAs: 0.73). Finally, it should be emphasized that the relevant differences recorded in this experiment are assumed to be primarily genetic, thus, sex might be regarded as a minor factor. The synthetic showed better characteristics due to its genetic potential. Therefore, it is recommended to be used for Algerian meat production.

CONJUGATED LINOLEIC ACID AND FATTY ACID ISOMERS IN SELECTED COLD PRESSED OILS: ANALYSIS BY GC/FID TECHNIQUE

The conjugated linoleic acid (CLA) isomers in cold pressed oils [pomegranate seed oil (PGSO), linseed oil (LSO), black cumin seed oil (BCSO), nettle seed oil (NSO),grape seed oil (GSO), sesame seed oil (SSO),safflower oil (SFO), pumpkin seed oil (PSO), wheat germ oil (WGO), fig seed oil (FSO), coriander oil (CO), walnut oil (WO) and coconut oil (CNO)] extracted with lab–scale screw press machine were further subjected to gas chromatography/flame ionization detection (GC/FID) analysis. The composition of polyunsaturated fatty acids (PUFAs), monounsaturated fatty acids (MUFA) and saturated fatty acids (SFAs) of the samples was also determined. The five different positional and geometric isomers of CLA [cis–9, cis–11 CLA, cis–9, trans–11 CLA, trans–9, cis–11 CLA, trans–9, trans–11 CLA and trans–10, cis–12 CLA] were also well separated by a highly polar column (100m×0.2μm×0.25mm i.d; HP–88 cyanopropyl) and an applied GC temperature program. It was concluded that the samples were all rich in total CLA (∑CLA) and they were found between 0.14% for PSO and 2.11% for SSO. The most abundant CLA isomer was in general to be cis–9, trans–11 CLA form, which represented the content of isomer between 3.15% and 72.08% of ∑CLA. Besides, the ∑SFA values were detected between 2.43% and 93.14%, ∑MUFA values were between 4.60% and 71.11% and ∑PUFA values were between 1.79% and 87.59%. Therefore, this study might offer valuable information for the introduction of new food sources, as well as incorporation into medicinal purposes and food formulations which have the potential to be commercially valuable.

Comparative Fatty Acid Compositions of Tissues of Rainbow Trout (Oncorhynchus mykiss) with Different Ploidy and Sex

The purpose of this study was to evaluate the fatty acid contents in various tissues (fillet, liver, gonad) of different ploidy (triploid and diploid) and sex (female and male) rainbow trout (Oncorhynchus mykiss) in the breeding season. In the study, diploid and triploid rainbow trouts belonging to the same age group (3+) were used. Fish were fed with commercial feed containing 45% crude protein and 20% crude fat until satiation. At the end of the 75-day study, biometric measurements of the fish were made and the tissues were stored in a deep freezer until biochemical and fatty acid analysis. The first finding of this study identified that ploidy (triploid and diploid) affects the biochemical and fatty acid composition of rainbow trout. The second major finding was that the polyunsaturated fatty acid values were higher and the saturated fatty acid values were lower in all tissues (especially female gonads) than other fatty acids. The results also indicate that the comparative among the biochemical and fatty acid composition of the fillet, liver, and gonad of rainbow trout is further illuminated by these data.

Effect of storage temperature and high-pressure processing on the preservation of sliced Duroc vacuum-packed dry-cured ham

This study assesses the physicochemical and microbiological stability of Duroc ham slices over a long-term storage (8 months) under various conditions. Thus, three treatments were designed: T4ºC; refrigerated (4ºC ± 1) and non-pressurised vacuum packages; T20ºC; vacuum and not pressurised packages stored at 20ºC ± 2 and high hydrostatic pressure (HHP) + T20ºC; vacuum packages pressurized (600 MPa for 8 min) and stored at 20ºC ± 2. Storage at 20 °C led to higher decrease in lightness over time and lower γ-tocopherol and polyunsaturated fatty acid values from 3 months onwards. But, storage at 20ºC did not increase lipid oxidation or microbiological counts -except for mesophiles at 8 months of storage-, so visual appearance could be the limiting factor of the shelf life. The HHP treatment led to lipid oxidation and γ-tocopherol degradation.

A Comparative Study of the Nutritional Composition, Fatty Acid Profiles and Organoleptic Evaluation of Clarias gariepinus (African Catfish) and Oreochromis nilotius (Nile Tilapia) Raised under Wild and Pond-Cultured Systems

Clarias gariepinus and Oreochromis niloticus are two important fish species that are widely consumed in many parts of the world. This study investigated the nutritional composition, fatty acid profiles and organoleptic evaluation of these two fish species raised under wild and pond-cultured systems. Five samples each of the species were randomly collected from Ashaka Town, Delta State, Nigeria. The proximate composition was determined using standard AOAC methods. Fatty acid profiles were analyzed using gas chromatography, while organoleptic evaluation was conducted using twenty panelists. C. gariepinus exhibited significantly lower (p&lt;0.05) moisture content (77.76±0.45 and 79.06±0.36) and higher crude fat content (1.75±0.14 and 1.32±0.33) respectively in both wild and pond-cultured species compared to O. niloticus. C. gariepinus had higher protein content than O. niloticus in both wild and pond-cultured species. The carbohydrate content of O. niloticus was significantly higher (p&lt;0.05) than in C. gariepinus, while the ash content of C. gariepinus and O. niloticus was not significantly different (p&gt;0.05). Both species exhibited variations in their fatty acid profiles, with significant differences (p&lt;0.05) observed in the levels of saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs). All wild and pond- cultured fish species had the same pattern of fatty acid composition SFAs &gt; PUFAs &gt; MUFAs except wild C. gariepinus with SFAs &gt; MUFAs &gt; PUFAs pattern. Pond-cultured O. niloticus and C. gariepinus had higher total n-3 PUFAs and lower n-6 PUFAs values while wild O. niloticus and C. gariepinus had lower n-3 PUFAs and higher n-6 PUFAs values. This difference was statistically significant (p&lt;0.05). The results indicated significant organoleptic differences (p&lt;0.05) in consumer preference between wild and pond-cultured C. gariepinus, however, O. niloticus was found to be liked similarly regardless of its source (p&gt;0.05). These findings suggest that the type of habitat, fish species and diets have significant impacts on the proximate composition, fatty acid profiles and organoleptic attributes of fishes.

Role of serum n-6 polyunsaturated fatty acids in the development of acute coronary syndromes.

n-3 polyunsaturated fatty acids (PUFAs) have an inhibitory effect on the development of coronary artery disease (CAD). However, whether n-6 PUFAs, dihomo-gamma-linolenic acid (DGLA), and arachidonic acid (AA) play a role in the development of CAD remains unclear. This study investigated the association between PUFAs and the risk of developing acute coronary syndrome (ACS) using the lipid and PUFAs data of patients who received percutaneous coronary intervention (PCI) for either non-emergent conditions (staged group) or ACS (ACS group). We retrospectively evaluated 433 patients who underwent PCI between 2014 and 2021. The patients were divided into the ACS group (n = 18) and the staged group (n = 132). The lipid and PUFA values of each patient between the two groups were compared. Moreover, to investigate the correlation between n-6 PUFA levels and ACS, the effects of confounding factors such as the use of strong statins and low-density lipoprotein cholesterol (LDL-C) levels were adjusted. The ACS group had higher n-6 PUFAs levels than the staged group (DGLA: 36.8 µg/mL vs 29.6 µg/mL; AA: 203.3 µg/mL vs 145.8 µg/mL). Furthermore, the analysis of covariance adjusted for LDL-C levels showed a significant difference between the two groups in terms of DGLA and AA levels. The n-3 PUFA levels did not significantly differ between the staged and ACS groups. Moreover, the ACS group had higher DGLA and AA levels and lower n-3 PUFAs/AA ratios than the staged group. Therefore, excess n-6 PUFAs may be a risk factor for ACS.

Nutritional value of fish soup from cultured rainbow trout (Oncorhyncus mykiss, Walbaum, 1792)

This study represents new information on the nutritional value of soup prepared from cultured Rainbow trout (Oncorhyncus mykiss). The proximate contents of soup were represented by 87.56% moisture, 7.22% protein, 1.59% crude fat, 0.07% carbohydrate, 1.17% dietary fibre and 2.44% ash. The energy value was calculated as 48.0 kcal/100g. Amino acid values were in the range of 183.5-1128.5mg/100g while mineral contents were varied as 0.6µg/g-19.5mg/g. The value of polyunsaturated fatty acids (PUFA) was higher than saturated fatty acids (SFA). Total PUFA and eicosapentaenoic acid + docosahexaenoic acid (EPA+DHA) were observed as 37.2 and 7.2%, respectively. These values corresponded to the values of 673.3 and 123.2 mg/100g of the edible portion of the soup within the same respect. The results of this study demonstrated that a portion of trout soup would almost cover daily recommended n-3 PUFA intake, however, higher amounts are required for the necessary levels of EPA+DHA. The vitamin B12 content was well above the recommended levels. The values of α and β tocopherols were observed as 272.0 and 1131.0 µg/100g (wwb), respectively. This study indicates that trout soup has a good nutritional value for human consumption for a healthy diet.

Comparing the Growth Performance and Fatty Acid Profile of Brown Trout (Salmo trutta macrostigma) and Rainbow Trout (Oncorhynchus mykiss) Reared in Concrete Ponds and Net Cages

This study aimed to compare the growth performance and fatty acid profiles of rainbow trout (Oncorhynchus mykiss) and brown trout (Salmo trutta macrostigma) fry reared in concrete ponds and net cages. In the study, which lasted for 270 days under commercial production conditions, an initial live weight of 5.03 g per fish was used and placed in concrete ponds and net cages in two replications and equal numbers. The specific growth rate ranged between 1.78 and 1.81%, but there was no significant difference among the experimental groups (p >0.05). In the study, although the feed conversion ratio varied between 1.04 and 1.06, no significant difference was determined among the experimental groups (p >0.05). On the contrary, daily average weight gain was higher for both species in net cages and was significantly different from that of fish in the pond (p <0.05). As a result of the fatty acid analysis of the study, it was determined that the saturated fatty acid, monounsaturated fatty acid, and polyunsaturated fatty acid values were different among the groups (p <0.05). The results show that brown trout in fish farm conditions succeeded as an efficient aquaculture business at least as much as rainbow trout.

Barley β-glucan for conjugated linoleic acid (CLA) production by Bifidobacterium animalis subsp. Lactis: Fatty acid variation and bacterial viability study

In the present study, production of two isomers (cis-9, trans-11 and trans-10, cis-12) of conjugated linoleic acid (CLA) by Bifidobacterium animalis subsp. Lactis BB12 was investigated in organic and conventional milk in the presence of barley derived β-glucan. Fatty acid profile, acidification profile, cell enumeration and lactose content were determined for fermented conventional and organic milk, before and after 30 h fermentation in 30 °C. Viscometery and sensory evaluations were also performed. The results showed higher counts of Bifidobacterium animalis subsp. Lactis BB12, and viscosity in organic milk. Also, organic fermented milk offered higher CLA as well as polyunsaturated fatty acids values and a lower level of saturated fatty acids in comparison to conventional fermented milk. Cis-9, trans-11 CLA, trans-10, cis-12 CLA and polyunsaturated fatty acids values, bacterial count and viscosity in organic milk containing β-glucan were 28%, 39%, 33%, one log CFU/mL and 59% higher than the samples without β-glucan, respectively. Although these results were obtained for conventional milk, the variation percentage in the organic milk was significantly more than the conventional milk. In addition, the total lactose content in organic and conventional milk containing β-glucan was 19% and 12% lower than the samples without prebiotic.

The Green Microalga Coelastrella thermophila var. globulina (Scenedesmaceae, Chlorophyta) Isolated from an Algerian Hot Spring as a Potential Source of Fatty Acids.

Screening microalgae from extreme environments, including hot springs, is an important research topic that has lately emerged. A thermophilic green alga was isolated from a north-eastern Algerian hot spring at a temperature of 63 °C, and its fatty acid (FA) profile was explored. The strain was cultivated in BBM medium at 35 °C in a 16:8 h light/dark cycle and 75 μM photons m−2 s−1. The morphological studies combined with phylogenetic analysis revealed that the isolate was Coelastrella thermophila var. globulina Q. Wang, H. Song, X. Liu, G. Liu and Z. Hu. The monounsaturated fatty acid (MUFA) content was 51.12%. The saturated fatty acid (SFA) and polyunsaturated fatty acid (PUFA) content, respectively, accounted for 27.01% and 21.87%. The main FA was oleic acid (18:1n–9), whose value was 35.95%, followed in decreasing order by palmitic acid (16:0) with 21.45%, linoleic acid (18:2n–6) with 14.38% and α-linolenic acid (18:3n–3) with 04.22%. The FA profile exhibited high total n–6 and n–3 PUFA values (15.80% and 5.76%, respectively). Coelastrella thermophila var. globulina is particularly interesting for producing n-6 and n-3 PUFA and is likely suitable for other biotechnological purposes. This is the first time that this taxon has been reported in hot springs. Other species can be expected to be reported, which emphasises the importance of the biodiversity of extreme habitats.

Long-Chain Polyunsaturated Fatty Acid Status at Birth and Development of Childhood Allergy: A Systematic Review.

The associations of fetal fatty acids status to immune-related health parameters later in life are unclear. Our aim is to collect all available information on the relationship between fatty acid status at birth and allergy in childhood. Systematic literature search was performed on Ovid MEDLINE, Cochrane Library, and Embase. The search retrieved 897 articles without duplicates; 14 articles remained after excluding those that did not fit into our inclusion criteria. When the dichotomous parameter of suffering or not from allergic condition in childhood was analyzed, cord blood eicosapentaenoic acid (EPA) values proved to be significantly lower in allergic than non-allergic children in four comparisons from three studies. When the linear parameters of odds ratios and relative risks for allergy were taken into consideration, high cord blood EPA, but also high docosahexaenoic acid (DHA) and high total n-3 long-chain polyunsaturated fatty acid values were associated to clinically relevant reduction (at least 38%) in eight comparisons from five studies. Within the cord blood samples, higher EPA, docosapentaenoic acid, and DHA values were significantly and negatively associated in eight correlation analyses from three studies with laboratory parameters considered to reflect allergic trait. The data reported here may provide information for defining optimal fatty acid intakes for pregnant women.

The Role of Photo-Cycles in the Modulation of Growth and Biochemical Profile of Microalgae: Part I-Food Interest Compounds.

The objective of this work was to evaluate the effect of different photo-cycles on the growth and biochemical profile of Scenedesmus obliquus CPCC05, focusing on food interest compounds. The photo-cycle conditions were separated into three groups: long-term photo-cycles (24:0, 22:2, 20:4, 18:6, 12:12, and 10:14 (h:h)), frequency photo-cycles (2, 4, 8, 12, 24, and 48 times per day (t/d)), and short photo-cycles (0.91:0.09, 0.83:0.17, 0.75:0.25, and 0.50:0.50 (s:s)) of light:dark, respectively. The results showed these microalgae can store enough energy to support cell growth for continuous periods of up to 2 h in the dark, without affecting the productivity of the process. This 2 h, when divided into 2 cycles per day (2 t/d), showed the best growth condition (3700 mg L−1), generation time (14.40 h), and maximum biomass productivity (21.43 mg L h−1). This photo-cycle of 2 t/d was also the best condition for the production of total sterols. However, the values of polyunsaturated fatty acids, lipid content, and amino acids obtained higher yields in the short photo-cycle of 0.75:0.25. Thus, the modulation of light cycles becomes an important tool for boosting and directing the production of target molecules in phototrophic cultures of microalgae.

Growth Performance and Biochemical Composition of Tetradesmus obliquus in Media with Different Phosphorus Concentrations

In this study, the effects of phosphorus on culture growth and biochemical composition of Tetradesmus obliquus were investigated. T. obliquus was cultivated in medium with different P concentrations. Cell number, optical density and dry weight values were measured every other day and total protein and lipid content, amino acid and fatty acids profiles were detected. The highest cell number (2905x104), optical density (1.07) and dry weight (0.04 mgL-1) were observed in 75% P+ medium. 50% P- medium has the highest (47.7% of dry weight) protein amount and the maximum of total lipid content (17.08% of dry weight) was determined in 75% P- medium. 75% P+ medium has the highest total amino acid value (64.37 mgg-1 dry weight) and 75% P- medium has the lowest (55.22 mgg-1dry weight). The highest saturated fatty acids (23.57%) and mono-unsaturated fatty acids (19.97%) were observed in 50% P- medium. The second highest percentages of polyunsaturated fatty acids values were in the 75% P- medium (48.63 %). These results show that phosphorus limitation increases the total protein, lipid and fatty acid methyl esters amounts and restricts the cell division and anabolic reaction. An excess in phosphorus has an enhancing effect on amino acid synthesis.

Characterization of bioactive fatty acids and oxidative stability of microwave vacuum dried fish powder supplemented extruded product

This study was aimed to determine the retention of bioactive fatty acids and oxidative stability of fish powder (FP) supplemented extruded products. The Labeo rohita fish meat was minced, microwave vacuum dried, and extruded. Product formulations containing FP (0-25%) and semolina (75-100%) were optimized using response surface methodology. The maximum bioactive fatty acids retention was 94.84% in the final product. The highest values of polyunsaturated fatty acids (PUFAs) were 87.97% and 85.66% at 25 °C for 30 and 60 days. Maximum TBARS values were 0.42 and 0.44 mg MDA/kg at 25 °C for 0 and 30 days, respectively. The highest carbonyl contents were 6.02, 7.67, 9.37 nmol/mg protein for 0, 30, and 60 days of storage at 25 °C, respectively. The moderate barrel exit temperature (125 °C) and feed moisture contents (20%) and high screw speed (150 rpm), FP (25%) exhibit the highest retention of PUFAs in a product.

Development and characterization of wheat rusks supplemented with Chia (Salvia hispanica L.) flour with respect to physicochemical, rheological and sensory characteristics

Highly nutritional and functional properties of chia seeds would make it unique than other grains. Considering its known properties chia can be used as an important food ingredient. These are rich in fiber, ash, protein, polyunsaturated fatty acids (PUFA) and antioxidants. Higher proportion of protein having greater biological value with essential amino acids and high dietary fiber content prevents several metabolic disorders and obesity. It is also consist of PUFA helpful in lowering cardiovascular diseases. Rusks were supplemented with chia flour at a rate ranging 5 to 20% with the goal to modify the fiber content, nutritional contents and physicochemical properties. The obtained results were highly significant and showed increasing trend in dietary fiber and PUFA values. Texture values decreased significantly. Sensory evaluation showed significant (p<0.05) differences in color, flavor, texture and overall acceptability. Most acceptable treatment was with 5% chia flour supplementation with a mean score of 8.10. Hence, Chia flour-supplemented rusks up to 5% addition level could be utilized as a convenience food and vehicle of improved nutritional status with health beneficial bioactive compounds. Moreover, supplementation of chia flour led to improvement of functional properties of wheat rusks as a valuable source of dietary fiber and bioactive compounds.

Polyunsaturated fatty acids in cardiovascular diseases: uncertainty prevails.

In the late 1970s, a lower incidence of myocardial infarction and favorable hemostatic alterations were reported in Greenland Inuits. This observation prompted investigators worldwide to continue research on the role of a specific diet in this population and sparked an ongoing discussion about the potential use of polyunsaturated fatty acids (PUFAs) in the primary prevention of cardiovascular disease (VITAL), and the secondary prevention of primarily coronary artery disease (JELIS, REDUCE‑IT, OMEMI). However, the current evidence to support the preventive value of PUFAs is inconsistent. Seminal clinical trials such as the GISSI‑Prevenzione, JELIS, PREDIMED, or ASCEND differed in their approach to the assessment of cardiovascular effects of n-3 PUFAs and reported divergent results. The questions remain whether eicosapentaenoic acid is the only PUFA offering cardiovascular benefits, what is the importance of PUFA dosing, and, finally, who should receive n-3 PUFA treatment. This article discusses the latest insights into n-3 PUFA use in cardiovascular disease prevention.
