Curcumin-loaded food-grade nano-silica hybrid material exhibiting improved photodynamic effect and its application for the preservation of small yellow croaker (Larimichthys polyactis)

Two types of curcumin-loaded food-grade nano-silica (F-SiO2) hybrid materials were successfully synthesized using the rotary evaporation method (F-SiO2@Cur) and the adsorption method (Cur@F-SiO2). The microstructure and spectral analyses confirmed that the curcumin in F-SiO2@Cur was loaded within the nanopores in a non-aggregate form rather than being adsorbed onto the surface (Cur@F-SiO2). Additionally, F-SiO2@Cur exhibited remarkable water solubility (1510 ± 50.33 µg/mL) and photostability (a photodegradation ratio of only 59.22 %). Importantly, F-SiO2@Cur obtained a higher capacity for the generation of singlet oxygen (1O2) compared to control groups. Consequently, F-SiO2@Cur-mediated photodynamic inactivation (PDI) group attained the highest score in sensory evaluation and the best color protection effect in PDI experiment of small yellow croaker (Larimichthys polyactis) at 4 °C. Moreover, F-SiO2@Cur could effectively controlled total volatile basic nitrogen (TVB-N) content, pH, and total viable count (TVC), thereby prolonging the shelf life. Therefore, F-SiO2@Cur-mediated PDI is an effective fresh-keeping technology for aquatic products.

Novel colorimetric indicators based on alginate hydrogel beads containing anthocyanin for visual freshness monitoring of shrimp and minced chicken

Novel colorimetric indicators were developed by incorporating anthocyanins into alginate hydrogel beads through electrostatic extrusion for intelligent packaging. Two different sizes of hydrogel beads were produced and applied into shrimp and minced chicken packaging to visually detect freshness status during 4 °C storage. To assess the freshness of the products, the viable count of various types of bacteria (psychrotrophic, H2S-producing, mesophilic, and Pseudomonas spp.), total volatile basic nitrogen (TVB-N) content, pH, K-value, H-value, and biogenic amines level were analyzed. The indicators' color change (ΔE) was then correlated with these parameters. Color analysis of the indicators during storage indicated ΔE values below 10 and over 30 in the hydrogels incorporated into minced chicken and shrimp packaging, respectively. The color change of both indicators integrated into the shrimp package was strongly correlated with the change in viable counts, TVB-N, pH, K-value, and H-value (r ≥ 0.8, p < 0.016), as well as biogenic amines (r = 0.7, p < 0.05). The indicators applied to minced chicken packaging showed subtle color changes during storage, while those in shrimp packaging consistently reflected shelf-life variations. This innovative approach shows potential for improving food safety and quality monitoring, particularly in seafood packaging, where indicators have been effective in visually signaling product freshness.

The Effects of Four Different Thawing Methods on Quality Indicators of Amphioctopus neglectus.

Amphioctopus neglectus is a species of octopus that is favored by consumers due to its rich nutrient profile. To investigate the influence of different thawing methods on the quality of octopus meat, we employed four distinct thawing methods: air thawing (AT), hydrostatic thawing (HT), flowing water thawing (FWT), and microwave thawing (MT). We then explored the differences in texture, color, water retention, pH, total volatile basic nitrogen (TVB-N), total sulfhydryl content, Ca2+-ATPase activity, and myofibrillar protein, among other quality indicators in response to these methods, and used a low-field nuclear magnetic resonance analyzer to assess the water migration that occurred during the thawing process. The results revealed that AT had the longest thawing time, leading to oxidation-induced protein denaturation, myofibrillar protein damage, and a significant decrease in water retention. Additionally, when this method was utilized, the content of TVB-N was significantly higher than in the other three groups. HT, to a certain extent, isolated the oxygen in the meat and thus alleviated protein oxidation, allowing higher levels of Ca2+-ATPase activity, sulfhydryl content, and springiness to be maintained. However, HT had a longer duration: 2.95 times that of FWT, resulting in a 9.84% higher cooking loss and a 28.21% higher TVB-N content compared to FWT. MT had the shortest thawing time, yielding the lowest content of TVB-N. However, uneven heating and in some cases overcooking occurred, severely damaging the protein structure, with a concurrent increase in thawing loss, W value, hardness, and shear force. Meanwhile, FWT improved the L*, W* and b* values of octopus meat, enhancing its color and water retention. The myofibrillar protein (MP) concentration was also the highest after FWT, with clearer subunit bands in SDS-PAGE electrophoresis, indicating that less degradation occurred and allowing greater springiness, increased Ca2+-ATPase activity, and a higher sulfhydryl content to be maintained. This suggests that FWT has an inhibitory effect on oxidation, alleviating protein oxidation degradation and preserving the quality of the meat. In conclusion, FWT outperformed the other three thawing methods, effectively minimizing adverse changes during thawing and successfully maintaining the quality of octopus meat.

Exploring the potential of melittin peptide: Expression, purification, anti-pathogenic properties, and promising applications as a bio-preservative for beef slices

Melittin peptide is a short cationic linear peptide derived from honey bee venom with 26 amino acids, demonstrates potential in controlling and eliminating pathogens. In this study, the genetic sequence of melittin was inserted into the pcDNA3.1+ plasmid and expressed in HEK-293 cells with a His-tag. Purification was done through affinity chromatography and a nickel column. In this study, the antimicrobial effect of melittin in beef sirloin was first investigated, and the minimum inhibitory concentration (MIC) was determined. Then, the effect of combining it with nanochitosan (n-CH) coating, melittin (0.1% and 0.2%v/v), and nanochitosan alone on the physicochemical, microbiological, and sensory properties of beef was examined over a 9-day at 4 °C. At the end of the storage period, the coated samples effectively prevented an increase in pH (5.75 ± 0.06) and showed a significant decrease in the peroxide value (PV) (4.50 ± 0.07). The most favorable result was observed when using the n-CH+0.2%M, which led to malondialdehyde level of 0.44 ± 0.0.05 mg/kg in the amount of thiobarbituric acid reactant. Additionally, the total volatile base nitrogen content in the treatment involving 0.2%M and n-CH+0.2% and 0.1%M was deemed acceptable. Although the total viable count (TVC) of microorganisms in samples covered with melittin increased over time (7.88 ± 0.12 CFU/g), the microbial growth rate in these samples was lower than the control sample (12.10 ± 0.13 CFU/g). Therefore, the use of nanochitosan based edible coatings in combination with melittin in meat packaging reduces microbial population and increases its shelf life.

An intelligent indicating label using mulberry pigment, polylactic acid and rutile TiO2 nanoparticle for monitoring the freshness of cold fresh pork

The purpose of this work is to develop a new type of intelligent indicating label with high sensitivity to volatile bioamine, anti-ultraviolet light and anti-pigment leakage characteristics by electrospinning for real-time visual monitoring the freshness of cold fresh pork. By investigating pH discoloration sensitivity and light stability of plant pigments with different structures, mulberry pigment was selected as the indicator of indicating label. The content of label components (mulberry pigment, polylactic acid and TiO2 nanoparticle) significantly affected label performance (light stability, responsiveness to trimethylamine, and anti-leakage of mulberry pigment), and the optimal component content was determined to be 6.01% (w/w) of polylactic acid, 0.62% (w/w) of TiO2 nanoparticles and 0.29% (w/w) of mulberry pigment by response surface test based on label performance as response value. A close correlation (the correlation coefficient R values of 0.86–0.97) between the total color difference (ΔE) of the label and the freshness indexes (total plate count, total volatile basic nitrogen content, pH, thiobarbituric acid value and sensory score) of cold fresh pork during cold storage was revealed, and the freshness level of unknown pork samples could be well quantitatively predicted by partial least squares regression models with the determination coefficient (R2) values of 0.89–0.92, facilitating producers, dealers and consumers to know pork quality promptly.

Plasma-activated water in combination with coconut exocarp flavonoids emerge as promising preservation technique for golden pompano: Impact of the treatment sequence

In the current study, the preservation effect of plasma-activated water (PAW), coconut exocarp flavonoids (CF) and their combination on golden pompano fillets during refrigerated storage was investigated with emphasize on the treating sequence. PAW effectively inactivated spoilage bacteria and inhibited total volatile basic nitrogen (TVB-N) increase, while boosted the TBARS and carbonyl values. PAW+CF exerted synergistic effect on extending the period before total bacterial count and TVB-N content reaching acceptance limit than PAW or CF alone (P < 0.05). In addition, their combined treatment effectively reduced fillets discoloration and texture deterioration. Simultaneously, lipid and protein oxidation were significantly inhibited, which was comparable to CF. It was indicated that the treatment sequence of PAW and CF profoundly impact the preservation effect. Specifically, prior CF marinating followed by PAW was more effective than the opposite sequence. Thus, combination of CF followed by PAW served as promising technique for fish fillets preservation.

Relationships of quality indices with wooden breast myopathy severity in chicken breast meat under refrigerated storage

ABSTRACT 1. This study investigated the relationships of quality indices with the severity of wooden breast (WB) myopathy in chicken breast meat under refrigerated storage. The physicochemical properties, water-holding capacity (WHC), microbial quality and fatty acid profiles of normal chicken breast meat samples (NOR samples, n = 63), moderate WB (MWB, n = 63) myopathy and severe WB (SWB, n = 63) myopathy (MWB and SWB samples, respectively) were evaluated immediately after sampling and after 4 and 8 d of refrigerated storage at 4°C. 2. Total collagen, fat, saturated and monounsaturated fatty acid contents, redness and pH of the SWB and MWB samples were higher than the NOR samples. The SWB samples that were stored for 8 d had poor WHC, total viable counts (TVC) of higher than 7.0log colony-forming units, total volatile basic nitrogen (TVB-N) content of greater than 15 mg/100 g and a thiobarbituric acid – reactive substance level of higher than 1 mg/kg malondialdehyde. 3. No significant difference was observed in the TVB-N content and TVC of the MWB and NOR samples during storage. Polyunsaturated fatty acid content was lower in the SWB and MWB samples than in the NOR samples. The SWB samples were tougher than the MWB and NOR samples after 8 d of refrigeration. 4. In conclusion, the quality of chicken breast meat with SWB myopathy degraded considerably over time; thus, such meat should not be subjected to extended refrigeration for storage.

Non-destructive prediction of total volatile basic nitrogen (TVB-N) content of Litopenaeus vannamei using A bi-channel data acquisition of Colorimetric sensing array

The change of volatile organic compounds (VOCs) caused by spoilage bacteria are typical characteristics of seafood decay. This study investigated the freshness of shrimp (Litopenaeus vannamei) using a bi-channel data acquisition based on the colorimetric sensing array (CSA) technique. First, nine color-sensitive dyes were selected to capture VOCs changes during shrimp spoilage. Then, both image and spectral channel data from the CSA were used to predict the total volatile basic nitrogen (TVB-N) content and evaluate its prediction ability, respectively. The original full data from the spectral channel performs better than the image channel. Next, four optimization algorithms are tried to filter spectral feature variables. Finally, the variable combination global analysis-iterative retained information variables (VCPA-IRIV) algorithm combined with a partial least squares (PLS) model was determined for predicting the TVB-N of shrimp, achieving the best precision and robustness performance with the Rp2, RMSEP, and RPD were 0.9734, 1.54, and 6.14, respectively. Therefore, this study provides a new approach to evaluate shrimp freshness rapidly.

Anti-bacterial films developed by incorporating shikonin extracted from radix lithospermi and nano-ZnO into chitosan/polyvinyl alcohol for visual monitoring of shrimp freshness

In recent years, the utilization of smart colorimetric packaging films for monitoring food freshness has garnered significant concentration. However, their limited tensile strength, hydrophobicity, antioxidant, and antibacterial properties have been substantial barriers to widespread adoption. In this study, we harnessed the potential of biodegradable materials, specifically chitosan/polyvinyl alcohol, alongside shikonin extracted from Radix Lithospermi and ZnO nanoparticles, to create a novel colorimetric sensing film. This film boasts an impressive tensile strength of 82.36 ± 2.13 MPa, enhanced hydrophobic characteristics (exemplified by a final contact angle of 99.81°), and outstanding antioxidant and antibacterial properties. It is designed for real-time monitoring of shrimp freshness. Additionally, we verified the effectiveness of this sensing film in detecting shrimp freshness across varying temperature conditions, namely 25 °C and 4 °C was validated through the measurement of total volatile basic nitrogen (TVB-N). Visual inspection unequivocally revealed a transition in color from dark red to purple-light blue and finally to dark bluish providing a clear indication of shrimp spoilage, which demonstrated a strong correlation with the TVB-N content in shrimp measured through standard laboratory procedures. The colorimetric sensing film developed in this study holds great promise for creating smart labels with exceptional antioxidant and antibacterial properties, tailored for visual freshness monitoring of shrimp.

Dietary novel alkaline protease from Bacillus licheniformis improves broiler meat nutritional value and modulates intestinal microbiota and metabolites

BackgroundDifferent types of exogenous protease supplements have a positive impact on animal performance, but their effects on the nutritional value of meat and the gut microbial community of broilers have not been extensively studied. The objective of this investigation was to determine the impact of supplementation with a novel alkaline protease derived from Bacillus licheniformis (at doses of 0, 100, 200, 300, and 400 g/t) on the fatty acid and amino acid profiles, inosine monophosphate (IMP) levels, total volatile basic nitrogen (TVB-N) content found within the breast muscle, as well as the impact on the cecal microbiota and metabolites.ResultsSupplementation with 200–400 g/t of the novel protease resulted in a significant elevation in the concentration of essential amino acids (P < 0.001), flavor amino acids (P < 0.001), and total protein (P = 0.013) within the breast muscle. Results derived from the 16S rRNA sequencing and untargeted metabolomics analysis of the cecal content revealed that the novel protease reshaped the cecal microbial and metabolite profiles. In particular, it led to increased relative abundances of Bacteroides, Lactobacillus, Alistipes, and Eubacterium, while simultaneously causing a reduction in the metabolites of D-lactic acid and malonic acid. Moreover, correlation analyses unveiled significant relationships between distinct microbes and metabolites with the contents of IMP, fatty acids, and amino acids in the broiler's breast muscle.ConclusionIn summary, the novel protease regulated the intestinal microbial community and metabolism, thereby inducing changes in the compositions of fatty acids and amino acids profiles, as well as IMP levels in broiler meat. These alterations significantly contributed to the enhancement of the nutritional value and flavor of the meat.Graphical abstract

Application of colorimetric sensor array coupled with chemometric methods for monitoring the freshness of snakehead fillets

Total volatile basic nitrogen content (TVB-N) is an important index of freshness for snakehead. This paper attempted the feasibility of determining TVB-N content level in snakehead fillets by a colorimetric sensor array (CSA) composed of twelve porphyrin materials and eight pH indicators. The nine feature variables in RGB, HSV and CIE L*a*b* color spaces were obtained by differentiating the images of the CSA before and after exposure to the headspace-gas of the samples. Competitive adaptive reweighted sampling combined with partial least squares regression (CARS-PLS) was used to build the relationship between the TVB-N content and the feature variables of CSA, and to select meaningful color-sensitive materials. The results showed that CARS-PLS had a correlation coefficient of 0.9325 in the prediction set and selected 13 informative color-sensitive materials. This study demonstrated that the CSA with CARS-PLS algorithm could be used successfully to quantify and monitor the TVB-N in snakehead fillets.

Improving Shelf Life and Content of Unsaturated Fatty Acids in Meat of Lambs Fed a Diet Supplemented with Grape Dregs.

This study was conducted to evaluate the potential effects of dietary grape residue levels on the slaughter indicators, meat quality, meat shelf-life, unsaturated fatty acid content, and expression of fatty acid deposition genes in the muscle of lambs. Sixty 30-month-old male Dorper and Small-Tailed Han F1 hybrid lambs were assigned to a single factor complete randomized trial design and fed with four different diets including 0%, 8%, 16%, and 24% grape dregs, respectively. The findings regarding meat production efficacy in the lambs revealed substantial differences. The control group showed notably lower dressing percentage, carcass weight, net meat weight, meat percentage concerning carcass, meat-to-bone ratio, relative visceral and kidney fat mass, and rib eye area compared to the other groups (p < 0.05). Additionally, the meat shearing force of lambs fed a diet with 16% grape pomace (GP) was significantly higher than that of the 24% GP group (p < 0.05), while the 24 h meat color parameter a* value of the control group was notably higher than that of the 8% GP group (p < 0.05). In addition, compared to the control group, lambs fed with a diet containing 16% GP had higher levels of oleic acid (C18:1n-9c), linoleic acid (C18:2n-6c), behenic acid (C22:0), tricosanoic acid (C23:0), lignoceric acid (C24:0), and conjugated linoleic acid (CLA), at a ratio of ∑CLA/TFA, ∑n-6, ∑MUFA, and ∑PUFA in the longissimus dorsi muscle (p < 0.05), but the reverse case was applicable for Total Volatile Basic Nitrogen (TVB-N) content (p < 0.05). GP supplementation did not substantially affect the expression of stearoyl-CoA desaturase (SCD), peroxisome proliferator activated receptor alpha (PPARα), and peroxisome proliferator-activated receptor gamma (PPARγ) genes (p > 0.05). The findings indicated that incorporating grape dregs in the diets of fattening lambs leads to notable enhancements in meat production and the antioxidant capacity of lamb meat, and effectively extends the shelf life of the meat.

Non-destructive prediction of TVB-N using color-texture features of UV-induced fluorescence image for freeze-thaw treated frozen-whole-round tilapia.

The investigation of UV-induced fluorescence imaging coupled with machine learning was conducted to non-destructively detect the total volatile basic nitrogen (TVB-N) of frozen-whole-round tilapia (FWRT) during freezing and thawing. The UV-induced fluorescence images of FWRT at the wavelength of 365 nm were acquired by self-developed fluorescence image acquisition system. In total, 169 color and texture features based on RGB, hue-saturation-intensity and L*a*b* color spaces and gray level co-occurrence matrix were extracted, respectively. Successive projections algorithm (SPA) was employed to select the optimal 16 features to achieve feature dimension reduction modeling. With full and extracted features as input, the models of partial least squares regression (PLSR), least-squares support vector machine (LSSVM) and convolutional neural network (CNN) were established for TVB-N prediction. Results indicated that the full features-based CNN performed better than SPA based prediction models (SPA-PLSR and SPA-LSSVM). The CNN model was determined to be the optimal with an RP2 value of 0.9779, RMSEP value of 1.1502 × 10-2 g N kg-1 and RPD value of 6.721 for TVB-N content predictiin. The CNN method based on UV fluorescence imaging technology has potential for quality and safety detection of FWRT. © 2023 Society of Chemical Industry.

RETRACTED: Characterization, antioxidant activity and potential application fractionalized Szechuan pepper on fresh beef meat as natural preservative

The pericarp of Szechuan pepper is rich in phenols and alkylamides, making it a potential source of antioxidant compounds. Despite being recognized as the primary antioxidants in Szechuan pepper, there is still limited knowledge about their application in real food systems. This study aims to identify, separate, and apply polyphenol and alkylamide fractions derived from Szechuan extracts to beef meat. Using HPLC-MS2, we identified 5 phenols and 11 alkylamides in Szechuan extracts. The quality of the minced meat was evaluated based on color, thiobarbituric acid reactive substances (TBARS), conjugated dienes, carbonyl content, Sulfhydryl content, microbiological content, and total volatile basic nitrogen content (TVB-N). Compared to the polyphenol fraction (1.25 mg/mL), alkylamide fraction (25 mg/mL), and control samples, beef samples incorporated with the polyphenol fraction (6.25 mg/mL) significantly reduced carbonyl content, TBARS, and TVB-N values at the end of storage. Furthermore, they exhibited a significant slowdown in microbial development, improved meat color stability, and preserved pH. Therefore, the use of Szechuan pepper fractions as natural preservatives in meat and meat products is an important area of research and has the potential to enhance the safety and quality of meat products.

Olfactory imaging technology and detection platform for detecting pork meat freshness based on IoT

To achieve portable and intelligent pork meat freshness detection, this study combined olfactory imaging technology with the Internet of Things (IoT). By conducting reaction experiments and screening color-sensitive materials, a sensor array was developed by leveraging RGB differences, deviations, and principal component analysis (PCA). Physicochemical indicators such as spatial image data and total volatile basic nitrogen (TVB-N) content were also utilized. A predictive model was constructed using the partial least squares (PLS) algorithm (RC = 0.9846, RP = 0.9835, RMSEC = 0.4662, and RMSEP = 0.4988). The olfactory imaging device was transformed into an edge device using Raspberry Pi to further enhance its functionality. Additionally, user-friendly visualization software and an edge-cloud platform were created for algorithm sharing and cloud computing. Extensive testing confirmed the method's intelligence and effectiveness, offering a smart solution for pork meat freshness detection with potential for further development.

Applications of colorimetric sensors for non-destructive predicting total volatile basic nitrogen (TVB-N) content of Fujian oyster (Crassostrea angulata)

Total volatile basic nitrogen (TVB-N) content is one of the critical safety evaluation indexes in seafood. This study investigated the colorimetric sensing array (CSA) technique with two data collection blocks, imaging and visible near-infrared spectroscopy, for non-destructive prediction of TVB-N content in Fujian oysters. Three data fusion strategies coupled with variable selection approaches including variable combination population analysis (VCPA), ant colony optimization, and competitive adaptive reweighted sampling were applied to establish the partial least squares (PLS) model for predicting the TVB-N content of oysters. Better prediction performance was obtained using data fusion of two information blocks than using individual block data. The results showed that the high-level-VCPA strategy showed the best performance with the correlation coefficient of the prediction set (Rp) at 0.9128. This work demonstrates that the use of CSA has the potential for non-destructive monitoring of TVB-N content in Fujian oysters.

A Novel Indicator Based on Polyacrylamide Hydrogel and Bromocresol Green for Monitoring the Total Volatile Basic Nitrogen of Fish.

An intelligent indicator was developed by immobilizing bromocresol green (BCG) within the polyacrylamide (PAAm) hydrogel matrix to monitor the total volatile basic nitrogen (TVB-N) content of fish. The FTIR analysis indicated that BCG was effectively incorporated into the PAAm through the formation of intermolecular hydrogen bonds. A thermogravimetric analysis (TGA) showed that the PAAm/BCG indicator had a mere 0.0074% acrylamide monomer residue, meanwhile, the addition of BCG improved the thermal stability of the indicator. In vapor tests with various concentrations of trimethylamine, the indicator performed similarly at both 4 °C and 25 °C. The total color difference values (ΔE) exhibited a significant linear response to TVB-N levels ranging from 4.29 to 30.80 mg/100 g at 4 °C (R2 = 0.98). Therefore, the PAAm/BCG indicator demonstrated stable and sensitive color changes based on pH variations and could be employed in smart packaging for real-time assessment of fish freshness.

Effects of cold atmospheric plasma pre-treatment on maintaining the quality of ready-to-eat drunken red shrimp (Solenocera crassicornis) stored at chilled conditions

This present study investigated the effect of cold atmospheric plasma (CAP) pre-treatment on the quality of ready-to-eat drunken red shrimp (Solenocera crassicornis) during chilled storage. The shrimp were pre-treated with the CAP at 40 kV and 36 kH for 100 s in a plasma generating equipment before the drunken treatment and compared with an untreated control sample. The results showed that the CAP pre-treatment significantly inhibited the total viable count (TVC) values, total volatile basic nitrogen (TVB-N) content, and polyphenol oxidase (PPO) activity of the drunken shrimp compared to the control treatment. Furthermore, the CAP pre-treatment also significantly maintained the myofibrillar protein (MP) content, texture properties, and a more stable histological structure of muscle fibers compared to the control. High-throughput sequencing results confirmed that the CAP pre-treatment significantly reduced the diversity and abundance of several bacteria in the shrimp. Gas chromatography-ion mobility spectrometry (GC-IMS) analysis detected that the CAP pre-treatment effectively maintained the stability of volatile organic compounds (VOCs). These findings provide valuable theoretical support for the processing and storage of drunken shrimp.

Effect of gum tragacanth–sodium alginate coatings incorporated with epigallocatechin gallate on the quality and shelf life of large yellow croaker (Larimichthys crocea) during superchilling storage

Abstract The effect of gum tragacanth (GT) and sodium alginate (SA) active coatings incorporated with epigallocatechin gallate (EGCG; 0.16%, 0.32%, and 0.64%, respectively) on the quality of large yellow croaker fillets was evaluated during superchilling storage at –3 ˚C for 42 d. The results revealed that the GT-SA-EGCG active coatings delayed microbial spoilage by reducing the total viable counts of Pseudomonas spp. and psychrophile bacteria and retarded the degradation of the physical properties of water-holding capacity, cooking loss, color, odor and texture. GT-SA-EGCG coatings could also maintain fillet freshness by maintaining lower total volatile basic nitrogen, K value, and histidine content, inhibiting myofibrillar protein degradation during superchilling storage. These results suggested that the active coatings embedded with GT-SA-EGCG could be used as a preservative to enhance the quality of large yellow croaker and prolong the shelf life by 7–14 d during superchilling storage at –3 ˚C.

Fabrication Of Butterfly Pea Flower Anthocyanin-Incorporated Colorimetric Indicator Film Based On Gelatin/Pectin For Monitoring Fish Freshness

Novel visual intelligent pH-indicator film was prepared from the eggshell membrane- gelatin, pectin, and anthocyanin pigment from butterfly pea flower (BP) (Clitoria ternatea). It was used as a real-time pH indicator for predicting food freshness. Eggshells are useful biowaste, gelatin has been extracted from the eggshell membrane and was used for fabricating the film. The Anthocyanin content of BP extract was 198.3 mg g−1. The film's surface morphology and chemical nature were estimated using a Scanning electron microscope, Fourier transform infrared spectroscopy, and X-ray diffraction technique. The film was pH responsive and exhibited color variation ranging from shades of red, purple, blue, green, and yellow at different pH (1-13). The applicability of the developed pH- indicator film was studied on fresh Tilapia fish by monitoring its deterioration for a specific time period. The film showed a visible color change after seven days of storage at 4ºC from dark blue, bluish-grey to olive, and deep green. Change in the total volatile basic nitrogen (TVB-N) content and pH change had an effect on the color response of the film. The findings demonstrated that the fabricated pH indicator film proved to be pH sensitive and could be used to monitor fish freshness.
