Oat-based milk alternatives: the influence of physical and chemical properties on the sensory profile.

Oat-based milk alternatives (OMAs) have become increasingly popular, perhaps due to their low allergenicity and preferred sensory attributes when compared to other milk alternatives. They may also provide health benefits from unique compounds; avenanthramides, avenacosides, and the dietary fibre beta-glucan. This has led to a variety of commercial options becoming available. Being a fairly new product, in comparison to other plant-based milk alternatives (PBMAs), means little research has been undertaken on the sensory profile, and how it is influenced by the physical and chemical properties. This study investigated the sensory, physical and chemical profiles of current commercially available OMAs, that varied in fortification, use of stabilisers, and oat content. The volatile compounds and their respective aromas were analysed using solid phase microextraction followed by gas chromatography mass spectrometry (GC-MS) and gas chromatography-olfactometry (GC-O). Liquid chromatography mass spectrometry (LC-MS) was used for identification of avenanthramides and avenacosides. Particle size and polydispersity index (PDI) were analysed using a Mastersizer and Zetasizer, respectively, with colour analysis carried out using a colourimeter, and viscosity measurements using a rheometer. Descriptive sensory profiling was used to assess the impact on the sensory characteristics of the different samples and the sensory data acquired were correlated with the instrumental data. Samples with smaller particle size appeared whiter-both instrumentally and perceptually. The only clear plastic packaged product differed substantially in volatile profile from all other products, with a higher abundance of many volatile compounds, and high overall perceived aroma. Avenanthramides and avenacosides were present in all samples, but differed significantly in abundance between them. The results suggested smaller particle size leads to whiter colour, whilst differences in processing and packaging may contribute to significant differences in aroma. Astringency did not differ significantly between samples, suggesting that the variation in the concentrations of avenacosides and avenanthramides were below noticeable differences.

Noodles are generally made from wheat flour which is only high in carbohydrates. Meanwhile, noodle products are needed sholud have others nutritional compound that can be used as daily needs consumption. One of them is the utilization of soybean husk which has been only discardes or used as animal feed. The utilazation of soybean husk waste has not been widely used for the food products. Noodles product can be susbtituted for carrots which are rich ini vitamins and carotenoids. Between of them can be substituted into noodle product proccesed. The purpose of this study was to analyze dry noodle products on the effect of soybean epidermis and carrot flour addition on physicochemical and sensory properties. These dry noodles could be used for a healthy menu as an alternative to carbohydrates in rice. There are some previous study about the effect of soybean husk added to the making of biscuit and cookies products that increase status of nutrition, however it was rarely utilized to substitute on the noodle making. Hence, the aim of this study were to utilize of the soybean husk and to analyze dry noodle products on the effect of soybean husk and carrot flour addition on physicochemical and sensory properties. The method of this study was carried out using quantitatve descriptive with prameters analyzed were moisture content, rehydration power, swelling power, and elasticity as well assensory. While the sensory data were examined by the Kruskal Wallis test. The physicochemical analysis properties test results showed that significant differences in rehydration power, swelling power, and water content, while the product elasticity showed no significant difference. The rehydration power, swelling power, elasticity,and water content showed that 86.67-133.34%;10-20%; 29.80-48.21% and1.19-1.95%, respectively. Furthermore, the sensory test results showed that there were significant differences in aroma and taste, while no significant differences in color and texture. The evaluation sensory of color and texture showed sig>α (0.88>0.05; 0.62>0.05), it mean that there was no difference, while in aroma and taste there were differences with sig<α (0.01<0.05). It can be concluded that the addition of soybean husk and carrot flour had an effect on the chemicals and organoleptic properties of dry noodle. To distguise the aroma of soybean husk other ingredients such as ginger or can be added. Hence,, the further research was necessary conducted in order to obtain strongly attractive color and aroma in dry noodle and to get rid of the unpleasant aroma optimally.

The Additions Of Telang Flower Extraxtc Towards Quality Of Goat Milk Ice Cream

The background of this research is that the telang flower extract is not optimal for use in food processing. Telang flower extract can be an alternative as an additive in making ice cream. This study aims to analyze the effect of adding telang flower extract with a treatment of 0%, 20%, 30%, 40%. Regarding the quality of color, aroma, texture and taste. This type of research is a pure experiment using a completely randomized design method. Three repetitions were carried out with 3 expert panelists in the Culinary Workshop of the Department of IKK, FPP, UNP. The dependent variable (Y) is the quality of the ice cream. The instrument used was an organoleptic test through a level test, using ANOVA statistics and if it was significantly different it was continued with Duncan's test. The results showed that there was a significant effect on color quality. Meanwhile, there is no significant difference in aroma, taste and soft texture. It can be concluded that the best percentage is found in the addition of 40% telang flower extract to the quality of goat's milk ice cream.

SYNBIOTIC FUNCTIONAL DRINK FROM COW MILK FERMENTED WITH KEFIR AND SUPPLEMENTED WITH INULIN

Increasing awareness on health has increased demand for healthy food confirmed by raising market sales of functional food. This study aims to develop a new synergetic drink from cow milk fermented by kefir grains and supplemented by inulin. Firstly, the inulin was isolated from dahlia flower tuber while fresh cow milk was incubated with kefir grains to produce kefir probiotic drink. Next, inulin with different concentrations was added to the probiotic drink and was fermented for 48 hours at room temperature generating a symbiotic functional drink. Analysis of antimicrobial properties revealed that synbiotic drinks have antimicrobial activity and the colony unit bacteria was met the standard to be claimed as a probiotic supplement. The microbiology and physicochemical properties of kefir synbiotic drink were analyzed and the result showed better properties than the control. There was no significant difference in taste between control and kefir enriched inulin drink assessed by the panelist. Only kefir synbiotic drink supplemented by inulin of 3 and 5% determined has a significant difference in aroma. Based on that kefir enriched inulin drink has the potency to be used as a functional drink that has a synergistic combination of prebiotics and probiotics.

Production and Quality Evaluation of Biscuits from Blends of Wheat, Millet and Sesame Seeds Composites: Physical and Sensory Properties

Millet and sesame were processed into flours and mixed with wheat flour at different proportion (100:0:0, 90:5:5, 85:10:5, 80:15:5 and 75:20:5) to produce biscuits. Biscuits produced were analysed for physical properties, and sensory attributes. Sensory evaluation of the biscuits samples was carried out with a team of thirty (30) panellists. The hedonic scale of nine was used, and the panellists were instructed to evaluate the coded samples for appearance, taste, aroma, texture, and Overall acceptability with a reference sample A. Biscuit samples were evaluated for weight (g), diameter (cm), thickness (cm) and spread ratio. Six biscuits edge-to-edge were used for the evaluation and the average was noted. The weight was measured using an electronic scale; diameter and thickness were measured using a Vernier Caliper. The Spread ratio was calculated by dividing diameter by thickness. There was a significant difference in weight, diameter, and spread ratio. Furthermore, there was a general decrease in the weight of the biscuits, with values ranging from 10.950g to 9.600 g with increase in the proportion of millet flour. However, there was an increase in diameter and spread factor as well as a decrease in thickness with increase in millet flour, with values ranging from 4.312 to 4.733 cm, 4.288 to 4.729 and 1.006 to 1.001 cm respectively. The sensory evaluation of the biscuits revealed that there were no significant differences in aroma and taste between the treatments whereas there was a significant difference in appearance, texture and general acceptability. Sensory results showed that all biscuits samples were accepted by panelists.

Extraction and Characterization of Pectin from Snot Apple (Azanza garckeana) Fruits with Potential Use in Zimbabwe

ABSTRACT Azanza garckeana (snot apple) is an underutilized indigenous fruit of southern Africa. The study was aimed at determining the functional characteristics and potential use of extracted pectin from A. garckeana (snot apple) fruits from Zimbabwe. A. garckeana (snot apple) fruits were collected from a semi-arid communal area of Nhema, Zimbabwe. Pectin properties were determined using standard methods. Fruit jam was formulated with 53% (w/v) U. kirkiana fruit pulp, 45% (w/v) sugar, 1.5% (w/v) A. garckeana pectin, 0.5% (w/v) citric acid. The optimum extraction conditions were 90°C for 90 minutes at pH 3. Pectin yield was 9.21 ± 0.1% to 18.1 ± 0.1% and 10.1 ± 0.1 to 20.2 ± 0.2% for dried and fresh A. garckeana fruits respectively. Physicochemical properties of the pectin were (% w/w) degree of esterification (DE) 72.1–80.3, methoxyl content 6.1–6.8, anhydrouronic acid (AUA) content 60.3–67.6, moisture content 3.1–2.2, ash content 0.9–0.7 for dried and fresh fruits. Equivalent weight range was 816.7–848.2 mg/mol. Jam had total soluble solids (68.2 ± 0.1%), total titratable acid (2.1 ± 0.2 g/L), moisture content (32.6 ± 1.3%) and pH (3.4 ± 0.1). Jam’s overall acceptance score was 6. There was no significant difference in aroma, spreadability, taste, and texture of both jams at P < 0 .05. Pectin extracted from A. garckeana (snot apple) fruits has good functionality properties with potential for applications in food processing, especially in jam production.

Application of Pretreatments on Banana Slices for Improving Drying Characteristics

The banana slices were subjected to pretreatment solutions for improving drying, physico-chemical and sensory characteristics. The pretreatments were applied with four different solutions including ascorbic acid, lemon juice, sodium chloride and honey. The banana slices were cut into 5 mm and 7 mm in size, about 120 g banana slice samples were dip in each pretreatment solution for ten min. The banana slice samples were dehydrated in dehydration chamber and dried at temperatures of 60 °C for 12 to 16 hrs. Each sample was observed for physico chemical characteristics such as pH, TSS, vitamin C, total sugar and ash % and sensory analysis of their color, aroma, taste, texture and overall acceptability were observed. The results obtained showed that the banana slices treated with ascorbic acid and honey solution has the highest value of vitamin C. The results obtained for sensory analysis showed the significant difference in aroma, taste, texture and overall acceptability scores recorded for the samples pretreated with honey solutions for ten min. It is concluded from the present study that pretreatment solutions have important role in determining the final quality characteristics of dried banana slices and it has great potential application in food industries. Physico-chemical and sensory properties of a cheese-like product from the blend of soymilk and almond milk

In this study, the possibility of producing a cheese-like product from the partial substitution of soy milk with almond milk was investigated. The extracted almond milk was mixed with soy milk in a variable proportion of 10:90, 20:80, 30:70, 40:60, 50:50, and the control is soya milk alone (0:100) to produce a cheese-like product. Control and partially substituted cheese-like samples were stored in a refrigerator at a temperature of 4oC and examined for proximate, total titrable acidity, pH, total solid and sensory properties. The total titrable acidity of the cheese was between 0.23% and 0.33%, representing a significant increase in total titrable acidity from 0.23% to 0.33%. The pH increased with increase in the almond milk in the cheese, which varied between 6.45 and 6.90. The proximate composition ranged from 25.67%-29.97% for protein, 22.79%-26.45% for moisture, 30.58%-36.99% for fat, 7.02%-14.61% for carbohydrate, 1.20%-1.79% for ash, and 0.90%-2.03% for fibre. Protein and fat contents increased with increase in almond milk substitution, while carbohydrate and ash content decrease with increasing almond milk substitution. Sensory evaluation revealed a significant difference (p &lt;0.05) in colour, taste, texture and overall acceptability, influenced by the varying proportions of added almond milk. However, there is no significant difference in aroma. The blend with 30% almond milk and 70% soy milk was most acceptable to panelists. Quality evaluation of composite bread produced from wheat, water yam and brown hamburger bean flours

Bread was produced from wheat, water yam and brown hamburger bean. Five samples (A-E) were produced in the following ratios A=(100:0:0), B=(70:20:10), C=(65:20:15), D=(60:20:20), E=(55:20:25). Wheat flour (100%) served as the control. Proximate composition, physical properties, vitamin composition, mineral composition and sensory attributes of the bread were evaluated. The proximate composition of the bread showed significant increase at (P<0.05) in protein, crude fibre, fat, ash, and caloric value which ranged between 8.93-14.47%, 1.88-3.66%, 2.37-3.24%, 1.09-1.99%, and 286.39-305.16% and a significant decrease (P<0.05) in moisture content (22.11-28.44%) and carbohydrate (54.53-57.29%) respectively. The result of the physical properties showed that the constant amount of 20% water yam flour and incremental addition of brown hamburger bean flour led to increase in the loaf weight, decrease in loaf volume, specific volume and loaf height which ranged from 213.80-232.60 g, 555.00-605.00 cm3, 2.38-2.83 cm3/g and 3.65-7.45 cm, respectively. The vitamin and mineral contents showed increase in vitamin A, vitamin C, iron, magnesium, calcium and phosphorus which ranged from 1.75-1.97 mg/100 g, 0.09-0.23 mg/100 g, 1.76-4.01 mg/100 g, 62.46-65.28 mg/100 g, 16.34-21.02 mg/100 g, 83.35-95.98 mg/100 g, respectively. The sensory attributes of the bread showed significant differences in aroma, taste, crust appearance, crumb texture, crumb colour and general acceptability. All the samples (A-E) were generally accepted according on the 9 point hedonic scale except sample E (55% wheat, 20% water yam, 25% brown hamburger bean) which scored below 5point the minimum acceptable value on the scale. Therefore sample A, B, C and D can be used in the production of bread depending on nutritional needs.

DAYA TERIMA DAN KANDUNGAN GIZI (ENERGI, PROTEIN) GYOZA YANG DISUBSTITUSI KEONG SAWAH (Pila ampullacea) DAN PUREE KELOR (Moringa oleifera)

Snail and moringa are the example of food that contain several nutrition such as energy, protein, calcium needed by stunted children. The purpose of this study was to analyze the effect of snail (Pila ampullacea) and puree moringa (Moringa oleifera) substitution toward the acceptance and nutritional value (energy and protein) of gyoza as an healthy snack alternative. This study was an experimental with complete random design study. Untrained panelists were 30 students of grade five student in elementary school Komplek Kenjeran II 506. Elementary school Based on scoring by panelist formula F3 is the best treatment formula, because it is better in color and texture aspect but it has no significant difference in aroma and taste compared with treatment formula. The Friedman Test showed there were significant differences in color, aroma, texture and taste (p&lt;0.05). Result of Wilcoxon Signed Rank Test showed that overall test of control formulas and treatment formulas were having differences but the result between treatment formulas were not having significant differences. The highest energy and protein content were F3 224.8 g and 12.75 g/100 g gyoza. Based on the best acceptance value and the highest energy content, it was conclude that the optimization formula was F3 (75 g snail and 20 g moringa) as an alternative healthy snack for school-children.

Effect of postmortem aging time on flavor profile of stewed pork rib broth

ABSTRACTThe objective of this study was to investigate changes in flavor components in broth prepared by pork ribs that were aged for 1 d, 3 d, and 7 d. The contents of free amino acids (FAAs), nucleic acid-related compounds, organic acids, and volatile compounds in broth were measured. The overall taste and aroma profiles were evaluated by electronic tongue, electronic nose, and sensory panelists. The results showed that the FAAs and succinic acid contents increased, while the 5ʹ-guanosine monophosphate, 5ʹ-inosine monophosphate, and 5ʹ-adenosine monophosphate contents decreased as the aging time increased. These changes led to the taste characteristics of broth being more savory. However, the results of gas chromatography-mass spectrometry, electronic nose, and sensory test all showed that there were no significant differences in aroma among the samples, where the main volatile compounds of broth were aldehydes, including hexanal, nonanal, octanal, heptanal, (Z)-2-heptanal, and (E)-2-decenal. Hence, postmortem aging affected the taste rather than the aroma of pork rib broth, and extending aging time can improve the taste of broth.

Assessing the Sensory Profiles of Sparkling Wine over Time

Sparkling wine sensory properties are driven by many factors, including the amount of CO₂ and pressure in the bottle. We were interested in characterizing the sensory attributes of California blanc de blanc sparkling wine and the sensory impact of various effervescence conditions, such as artificial nucleation points, on the aroma and flavor. Beginning with the effect of effervescence conditions on the aroma and flavor intensity, three different nucleation treatments (air-dried glasses, paper towel-dried glasses, and glasses with an etched nucleation point) were compared. Thirty-three panelists assessed overall aroma and flavor intensity for each treatment in triplicate. No statistically significant differences in aroma and flavor intensity were found. Following this, the sensory profiles of eight Californian blanc de blanc sparkling wines were determined using a generic descriptive analysis. Eleven trained judges used visual, aroma, taste, mouthfeel, and bubble descriptors to characterize the sensory differences among the sparkling wines. The characterization was done at both 1 and 5 min after pouring, using the same descriptors, to assess temporal variation. In addition, the atmospheric pressure of each wine bottle was measured to determine the influence of pressure on taste and aroma over time. Sparkling wines assessed at 1 and 5 min showed a significant difference in all wines. This difference was characterized by a decrease in bubble size and concentration and allowed for greater differences within the sample set; thus, at 5 min there was a greater differentiation among the wines. No correlations between bottle pressure and sensory attributes were found.

SENSORY EVAeLUATION AND STALING OF BREAD PRODUCED BY MIXED STARTER OF Saccharomyces Cerevisiae and L.plantarum

Impact of processed conditions and type of starter cultivars on characteristics of wheat dough bread by using mixed starter cultivars of Sacch. cerevisiae and L. plantarum was estimated. L. plantarum seemed to be more effective in combination with Sacch. cerevisiae on the dough volume. Dough produced by starter containing L. plantarum characterized with lower PH and higher total titratable acidity (TTA) and moisture content, in comparison with control treatment. Highly significant differences in aroma and crumb texture were recorded with bread produced by starter culture containing L. plantarum. The obtained results also revealed significant differences in bread firmness which reflected the staling and its rate among the tested treatments after 1, 3, 5 and 6 days during storage time at room temperature. Data also confirmed a processing technique using L. planturium mixed with Sacch.cerevisia to enhance organoleptic properties of produced bread.

Chemical and Sensory Parameters of Heat-treated Vacuum-packaged Broiler and Hen Fillet Products The heat treatment of vacuum-packaged products - Sous vide processing method - that offers convenience and storage stability, combined with poultry meat marinating was used in the current study. The aim of this research was to evaluate the effect of a fruit-vegetable additive on chemical and sensory parameters of heat-treated vacuum-packaged poultry meat products made from broiler or hen fillets. The skinless fillets and other ingredients were packaged in polyamide/polyethylene (PA/PE) pouches, vacuum sealed, marinated, heat treated, and chilled rapidly. The following parameters were evaluated: moisture content (LVS ISO 1442:197), protein content (LVS ISO 937:1978), fat content (LVS ISO 1443:1973), ash content (ISO 936:996), degree of liking, and intensity of sensory properties (ISO 4121: 2003). The smallest changes in moisture content among the studied samples were observed in those prepared with the fruit-vegetable additive if compared to a raw fillet. In the process of heat treatment, the protein content in dry matter of broiler and hen fillet decreased (p&lt;0.05), whereas fat content decreased in broiler fillet but increased in hen fillet (p&lt;0.05). Sensory evaluation results showed that panellists preferred broiler fillet (6.6) and hen fillet (5.8) products which were prepared without the fruit-vegetable additive. Evaluation of the intensity of sensory properties showed that there do not exist significant differences in aroma, colour, flavour, and aftertaste of heat-treated vacuum-packaged hen and broiler fillet (p&gt;0.05), but texture of broiler fillet products is more tender than texture of samples made from hen fillet.

떫은감 분말의 첨가에 따른 두부의 제조와 품질 특성

떫은감(청도반시) 분말을 첨가한 두부 제조법을 개발하기 위하여, 감 분말의 첨가 시기(응고제 첨가 직전과 직후)와 양(0, 3, 6, 9%)을 달리하여 두부를 제조하여 품질 특성을 조사하였다. 감의 첨가 시기가 응고제 첨가 직전인 경우가 직후인 경우보다 높은 두부 수율과 좋은 관능적 품질특성(외관, 조직감, 전체적인 기호도)을 보였다. 두부의 수율은 감 첨가구가 무첨가구보다 높은 결과를 보였으나 첨가량에 따른 유의적인 차이는 보이지 않았다. 감의 첨가량이 증가함에 따라 L값은 감소하였으나 a값과 b값은 큰 변화 경향을 보이지 않았다. 두부의 hardness, chewiness, crispness는 감 분말 6% 이상 첨가구에서 유의적으로 높게 나타났다. DPPH 유리기 소거능은 감의 첨가량이 증가함에 따라 증가하는 경향을 보였지만 3%와 6% 사이에 유의적인 차이는 보이지 않았다. 관능적 품질특성 중 외관과 색은 첨가구가 보다 나쁘게 평가되었으나 냄새, 콩비린내, 떫은맛 및 조직감은 첨가량에 따른 유의적인 차이를 보이지 않았고 전체적인 기호도는 9% 첨가구가 유의적으로 낮은 점수를 보였다. 따라서 떫은감 분말을 첨가하여 두부를 제조할 경우, 적합한 첨가 시기와 양은 응고제 첨가직전과 3-6% 정도인 것으로 확인되었다. Quality characteristics of tofu as affected by addition time (before or after coagulant) and the amount (0, 3, 6, and 9%) of astringent persimmon fruit (Diospyros kaki T. cv. Cheongdobansi) powder added were investigated. Yield and sensory acceptability were higher in tofu prepared by adding persimmon before than after adding the coagulant. The yield of tofu with added persimmon was higher than that of the control. The L value of the tofu decreased as the amount of added persimmon increased. Hardness, chewiness, and crispness of tofu made with 6% persimmon were higher than those of the others. DPPH radical scavenging activity tended to increase as persimmon concentration increased but no significant difference was observed between the 3% and 6% added persimmon treatments. A sensory evaluation showed no significant differences in aroma, beany, astringency, and texture. However, the 9% sample had the significantly lowest score for overall acceptability. Thus, astringent persimmon powder (3-6%, before coagulant addition) can be utilized as an additive during tofu processing.

Electronic Nose Analysis of Cabernet Sauvignon (Vitis viniferaL.) Grape and Wine Volatile Differences during Cold Soak and Postfermentation

Cold soak is a prefermentation maceration process at cold temperatures, traditionally used to enhance red wine color. This study monitored changes in Vitis vinifera L. cv. Cabernet Sauvignon volatiles using a commercial conducting polymer electronic nose (ENose) during a five-day cold soak and postfermentation. Principal component analysis (PCA) of juice volatiles detected by the ENose during cold soak showed PC1 accounted for 95.7% of the variation. Various volatile associations were made with specific ENose sensors. In comparison, PCA of must chemistries had 52.4% of the variation accounted for by PC1. The PCA of wine volatiles detected by GC-MS showed PC1 accounted for 97.1% of the variation between control and cold soak treatment, where control wine volatiles were associated with several ethyl esters, while cold soak wine volatiles were associated with diethyl succinate, isovaleric acid, benzyl alcohol, 3-methyl butanol, cis -3-hexenol, γ-nonalactone, benzaldehyde, 2-methyl propanol, phenethyl acetate, 1-octanol, β-damascenone, terpinene-4-ol, γ-butyrolactone, ethyl acetate, hexanoic acid, citronellol, phenethyl alcohol, and n -butanol. Comparatively, PC1 accounted for 100% of the total variance when using the ENose to measure volatile composition. Sensory evaluation did not demonstrate significant differences in aroma between control and cold soak wines. This study demonstrates differences in volatile chemistry between control and cold soak wines, as well as the ability to use a conducting polymer ENose as a simple tool for analysis of volatiles.

Exclusion of sunlight from Shiraz grapes alters wine colour, tannin and sensory properties

The aim of this study was to determine how changes in grape composition brought about by artificial shading (sunlight exclusion) influence wine properties including colour, flavonoid composition and sensory attributes. Prior to flowering, bunches of Shiraz grapes were enclosed in boxes designed to eliminate light without altering bunch temperature and humidity. This artificial bunch shading had little effect on berry ripening and accumulation of sugar but at harvest the shaded bunches had smaller berries and higher seed weight, juice pH and titratable acidity. The amount of anthocyanins in the fruit was not changed significantly but anthocyanin composition in the shaded berries was shifted towards dioxygenated anthocyanins (the glucosides of cyanidin and peonidin derivatives). Shaded fruit had increased seed tannins and decreased skin tannins but the largest relative change in flavonoids was a marked decrease in flavonols in the shaded fruit, similar to previous studies. Wines made from shaded fruit had lower wine colour density, total phenolics, anthocyanins and tannins when the wine was bottled and after ageing for up to three years. Analysis of potential flavour compounds following acid hydrolysis indicated that the wines made from shaded fruit had decreased levels of glycosides of β-damascenone and 1,1,6-trimethyl-1,2-dihydronaphthalene (TDN). Sensory analysis of the wines indicated no significant difference in aroma attributes but the wines made from shaded fruit were rated lower for astringency, fruit flavour and flavour persistence in-mouth sensory attributes. The results indicate that extreme shading of Shiraz fruit can decrease wine colour, anthocyanins and tannins as well as altering sensory attributes.

The Effect of Blood Removal on Oxidation and Shelf Life of Broiler Breast Meat

Blood components, especially hemoglobin, are powerful promoters of lipid oxidation and may decrease the shelf life of meat products. Therefore, this study examined different slaughter techniques to determine their effects on pH (24 h), color (L*a*b* values at 24 h), lipid oxidation, residual hemoglobin concentration (24 h), and sensory evaluation (d 1 and 4 postmortem; PM) in broiler breast fillets. The treatments included 1) CO(2) slaughter and not bled, 2) no stunning and bled, 3) electrical stunning (ES) and bled, 4) CO(2) stunning and bled, and 5) ES and decapitation. The birds were conventionally processed, and analyses were performed at 24 h PM except residual hemoglobin for which the samples were frozen (-80 degrees C) until analyses ( < 2 mo). There were no significant differences in pH or b* values at 24 h PM among any of the treatments. L* values were significantly higher, indicating lighter fillets in the ES and decapitated birds compared with the darker fillets from the CO(2) stunned and bled birds. The CO(2) slaughter and not bled birds had significantly higher a* values, indicating more red color, when compared with the ES and bled and decapitated birds. There were no significant differences in the residual hemoglobin contents in the broiler breast muscle when comparing all of the treatments except CO(2) slaughter and not bled, which was significantly (around 15%) greater. Overall TBA-reactive substances (TBARS; raw, cooked at 24 h, and cooked at 72 h PM) indicated that ES and bled birds had the lowest TBARS when compared with the remaining treatments. Consumer panels detected increased aroma (chicken meaty and warmed-over aromas) and flavor (chicken meaty and warmed-over flavors) in not bled samples at 24 h PM. By 72 h PM, however, there were no significant differences in aroma or flavor. Therefore, different slaughter and bleeding method may affect color and sensory properties of the broiler breast fillets, and the ES and decapitation method had the most favorable results for sensory quality.

SEASONAL VARIABILITY OF CHEDDAR CHEESE WHEY POWDER: A CASE STUDY

ABSTRACT Cheddar whey powder from one plant was evaluated for variations in quality parameters over 12 months. Representative samples were analyzed monthly for microbiological, physicochemical and sensory properties. The seasonal variability in the physicochemical properties was minor. Fall samples were higher in Hunter Lab parameter L* (lightness) and pH but lower in solubility index. Summer samples were high in solubility index and titratable acidity but low in L*. May production was significantly higher in standard plate count (SPC) and free moisture than the rest of the year. February production was significantly lower in SPC and free moisture content. There were no significant differences in aroma and flavor across the seasons. The flavor was generally bland, with the most intense attribute rating 5 on the 15‐point intensity scale. The order of intensity of the most intense attributes was cooked flavor and aroma &gt; sweetness &gt; caramelized flavor and aroma.

Perception of Melting and Flavor Release of Ice Cream Containing Different Types and Contents of Fat

Temporal effects of dairy and vegetable fats (0 to 18%) on perception of strawberry flavor release and melting of ice cream were studied using the time intensity sensory method. Also, aroma and flavor attributes of the ice cream samples were evaluated. Only slight effects of fat on the rate of flavor release and flavor intensity were perceived. A slightly faster flavor release from the vegetable fat compared with dairy fat was noticed. Polydextrose and maltodextrin as bodying agents in the fat-free ice cream significantly increased flavor release and melting rate of the ice cream. Increasing fat content slightly retarded melting of ice cream in the mouth. No significant effect of the fat quality on perceived melting was noticed. Significant differences in aroma and flavor attributes of the fat-free and other samples were perceived. Intensity and sharpness of the strawberry aroma and flavor were greater in fat-free samples and they were perceived as nontypical. Fattiness and creaminess were highly correlated. Maltodextrin and polydextrose increased perceived fattiness and creaminess of fat-free ice cream.
