Parents' Modeling During the COVID-19 Pandemic: Influences on Family Members' Diet Quality and Satisfaction With-Food-Related Life in Dual-Earner Parents With Adolescent Children.

Reciprocal family influences in the food domain have been little explored, particularly during the COVID-19 pandemic. To fill in this gap, this study explored actor and partner effects between parents’ food modeling and parents’ and their adolescent children’s diet quality and satisfaction with food-related life (SWFoL); and the mediating role of diet quality between modeling and SWFoL. This study used a cross-sectional design. A sample of 430 different-sex dual-earner parents and one adolescent child were recruited in Rancagua, Chile, between March and June 2020. Parents answered the modeling dimension of the Comprehensive Feeding Practices Questionnaire. Parents and adolescents answered the Adapted Healthy Eating Index (AHEI) and the SWFoL Scale. Analyses were conducted using the Actor-Partner Interdependence Model and structural equation modeling. Results showed that one parent’s modeling enhanced diet quality for themselves, their partner, and the adolescents. Parents’ modeling was associated with their own SWFoL, directly and via their own diet quality. There were positive associations between mothers’ modeling and adolescents’ SWFoL; between mothers’ diet quality and fathers’ SWFoL; and between mothers’ modeling and fathers’ SWFoL via the fathers’ diet quality. Parents’ modeling can improve the three family members’ diet quality, while mothers’ modeling and diet quality showed to improve fathers’ and adolescents’ SWFoL.

In the Labyrinth of Dietary Patterns and Well-Being-When Eating Healthy Is Not Enough to Be Well.

This paper aims to identify the relation between food consumption and well-being, and the level of well-being depending on a diet followed. Moreover, we analyze whether people driven by single motives, such as the health, pleasure or social dimension of food declare the lower or higher level of well-being than those motivated by a larger number of factors. The survey was conducted online (CAWI, n = 1067). The following scales were used: Satisfaction With Life Scale (SWLS), Satisfaction with Food-related Life Scale (SWFL), Health Taste Attitude Scales (HTAS) and Social Dimension of Food Meaning. The data analysis was carried out with the application of one-way analysis of variance (ANOVA), partial eta squared, a t-Student’s test, the Hochberg test, the Games-Howell test, and Pearson’s correlation. Levels of Subjective Well-Being (SWB) and Food Well-Being (FWB) are strongly correlated with consumers’ dietary pattern. The frequency of consumption of organic food and following vegan, low salt, and low sugar diets leads to higher levels of SWB, while FWB is additionally affected by the regular consumption of low-fat products and foods that improve one’s mood. The level of well-being is linked with the motivation to follow specific diets and attentiveness related to dietary patterns. People paying attention to the health aspects, pleasure and social dimension of food meaning show higher level of FWB than people focusing exclusively on health aspects.

The effects of actor-partner’s meal production focus on satisfaction with food related life in cohabiting couples

This paper reports the estimation of an Actor-Partner Interdependence Model (APIM), examining how meal preparation focus – measured by taste, context, and thrift–affect actor’s and partner’s satisfaction with food-related life (SWFRL) in cohabiting couples. Questionnaires were administered to 187 different-sex couples in Denmark. Both members of the couple reported their degree of agreement with a set of statements regarding meal production focus and the SWFRL scale. Using the APIM and structural equation modeling, we found that the woman’s SWFRL was positively associated with her own focus on taste in meal production (actor effect), as wells as by her partner’s focus on taste (partner effect). Women’s SWFRL was also positively associated with their own focus on physical context in meal production, and negatively by their partner’s focus on physical context. The man’s SWFRL only was positively associated with his own focus on physical context (actor effect) and by his partner’s focus on thrift in meal production (partner effect). These results suggest that meal-preparation focus relationships between members of a couple, through by both actor and partner effects, can effectively contribute to increase both their satisfaction with food-related life, and their well-being.

Testing the Spillover-Crossover Model between Work-Life Balance and Satisfaction in Different Domains of Life in Dual-Earner Households

This study explored the spillover and crossover associations between work-life balance and satisfaction with life, food-related life and family life in dual-earner parents. Questionnaires were administered to 303 dual-earner couples with adolescent children in Temuco, Chile. Both members of the couples answered the Work-life Balance (WLB) scale, Satisfaction with Life Scale (SWLS), Satisfaction with Food-related Life scale (SWFoL) and the Satisfaction with Family Life scale (SWFaL). Using the actor-partner independence model and structural equation modeling and having controlled for the effects of age, number of children, number of family members and family socioeconomic status, we found that the man’s work-life balance was positively associated with his own levels of satisfaction with life, family life and food related life, as well as with his partner’s (the woman’s) levels of satisfaction with life, food related life and family life. Likewise, the woman’s work-life balance was positively associated with her own levels of satisfaction with life, family life and food related life, as well as with her partner’s (the man’s) levels of satisfaction with food related life and family life, but not with his level of life satisfaction. These findings suggest the need to improve work-life balance for employees of both genders in order to enhance their overall life satisfaction, as well as their satisfaction in the family and food domains.

The gender role in the relationship between food-related perceived resources and quality of life among ecuadorian elderly

Abstract Individuals not only have a set of personal resources to carry out their activities, they also have a perception with respect to the availability of these resources. As people age, personal food-related perceived resources (FPR) become increasingly important, and these influence their quality of life (QOL). Since men and women differ in aspects like education, consumption and pensions, this study seeks to identify the gender role in the relationship between FPR and QOL among Ecuadorian elderly. The sample included elderly people of both sexes in the city of Guayaquil, Ecuador, with the application of stratified random sampling. The instrument included: FPR scale, satisfaction with food-related life scale (SWFLS) and the satisfaction with life scale (SWLS). The results indicated that those men and women who have a better perceived satisfaction with their economic situation are in physically and mentally good health, assign greater importance to family, are more satisfied with their food-related life, and have a higher number of FPR and therefore a better QOL. A relevant conclusion is that SWFLS and FPR are predictors of QOL among Ecuadorian elderly and that gender helps to explain the sign and magnitude of the relationship between these variables.

The Mediating Role of Family and Food-Related Life Satisfaction in the Relationships between Family Support, Parent Work-Life Balance and Adolescent Life Satisfaction in Dual-Earner Families.

This study explored the associations between family support and satisfaction with life, food-related life and family life. It also assessed the associations between both parents’ work-life balance and satisfaction with life, food-related life and family life among adolescent children from dual-earner families. Questionnaires were administered to 303 dual-earner families with one child between 10 and 17 years in Temuco, Chile. Adolescents answered the Satisfaction with Life Scale (SWLS), Satisfaction with Food-related Life scale (SWFoL), Satisfaction with Family Life scale (SWFaL) and the Family subscale of the Multidimensional Scale of Perceived Social Support. Both parents answered the Work-life Balance (WLB) scale. Using structural equation modelling and having controlled for adolescents’ gender, age and socioeconomic status, we confirmed that adolescent life satisfaction is associated with satisfaction with family life and food-related life. Food-related life satisfaction and family life satisfaction had complete mediating roles between perceived family support and adolescents’ life satisfaction. Satisfaction with food-related life also had a complete mediating role between both parents’ WLB and adolescents’ life satisfaction. Satisfaction with family life had a complete mediating role between mothers’ WLB and adolescents’ life satisfaction. In addition, mothers’ WLB was positively associated with perceived family support among adolescents. These findings suggest the need to improve family support and work-life balance among mothers in order to enhance adolescents’ satisfaction with different domains of life in dual-earner families.

A latent class analysis of family eating habits in families with adolescents

The objectives of the present study were to identify adolescent classes based on perceptions of their family's eating habits and to determine whether these classes differ in terms of family meal frequency and source, parents and adolescent diet quality, nutritional status, satisfaction with life, family life and food-related life. Questionnaires were administered to a sample of 300 two-parent families with one child between 10 and 17 years in Chile. Questionnaires included the Satisfaction with Life Scale (SWLS), the Satisfaction with Food-related Life scale (SWFoL), the Satisfaction with Family Life scale (SWFaL) and the Adapted Healthy Eating Index (AHEI). Adolescents also answered the Family Eating Habits Questionnaire (FEHQ). Latent class (LC) analysis was used to estimate the number of classes associated with the adolescent's perceptions about their family's eating habits, based on the three factors detected in the FEHQ. The LC analysis yielded three classes: “medium cohesion around family meals/healthy food-related parenting practices” (Class 1, 50.4%), “high cohesion around family meals/healthy food-related parenting practices” (Class 2, 25.9%) and “high cohesion around family meals/unhealthy food-related parenting practices” (Class 3, 23.7%). Classes also differed in the adolescents AHEI score, frequency and source of family meals; body mass index, SWLS and SWFaL scores in mothers, fathers and adolescents, adolescent sex and household financial situation. These findings suggest that frequent and cohesive family meals improve the well-being in both parents and adolescents, but are not enough to achieve healthier diets and weight statuses in adolescents.

Life Satisfaction of University Students in Relation to Family and Food in a Developing Country.

Life satisfaction and satisfaction with food-related life (SWFoL) are associated with healthy eating habits, family interaction around eating and family support. The present study evaluates the relationship between SWFoL and satisfaction with family life (SWFaL), and their relationship with life satisfaction in university students. We identify the relationship of two different types of family support and student SWFaL and explore a moderator effect of gender. A questionnaire was applied to a non-probabilistic sample of 370 students of both genders (mean age 21 years) in Chile, including Satisfaction with Life Scale, SWFoL scale, SWFaL scale, and the Family Resources Scale. Using structural equation modeling, we found that students’ life satisfaction was related to SWFaL and food-related life. A high positive relationship was identified between intangible family support and students’ SWFaL, which would have a mediating role between intangible support and life satisfaction. Using multi-group analysis, a moderator effect of gender was not found. These findings suggest that improving SWFoL, SWFaL and intangible family support is important for both female and male students.

Cross-cultural measurement invariance in the satisfaction with food-related life scale in older adults from two developing countries

BackgroundNutrition is one of the major determinants of successful aging. The Satisfaction with Food-related Life (SWFL) scale measures a person’s overall assessment regarding their food and eating habits. The SWFL scale has been used in older adult samples across different countries in Europe, Asia and America, however, there are no studies that have evaluated the cross-cultural measurement invariance of the scale in older adult samples. Therefore, we evaluated the measurement invariance of the SWFL scale across older adults from Chile and Ecuador.MethodsStratified random sampling was used to recruit a sample of older adults of both genders from Chile (mean age = 71.38, SD = 6.48, range = 60–92) and from Ecuador (mean age = 73.70, SD = 7.45, range = 60–101). Participants reported their levels of satisfaction with food-related life by completing the SWFL scale, which consists of five items grouped into a single dimension. Confirmatory factor analysis (CFA) was used to examine cross-cultural measurement invariance of the SWFL scale.ResultsResults showed that the SWFL scale exhibited partial measurement invariance, with invariance of all factor loadings, invariance in all but one item’s threshold (item 1) and invariance in all items’ uniqueness (residuals), which leads us to conclude that there is a reasonable level of partial measurement invariance for the CFA model of the SWFL scale, when comparing the Chilean and Ecuadorian older adult samples. The lack of invariance in item 1 confirms previous studies with adults and emerging adults in Chile that suggest this item is culture-sensitive. We recommend revising the wording of the first item of the SWFL in order to relate the statement with the person’s life.ConclusionsThe SWFL scale shows partial measurement invariance across older adults from Chile and Ecuador. A 4-item version of the scale (excluding item 1) provides the basis for international comparisons of satisfaction with food-related life in older adults from developing countries in South America.

Longitudinal multigroup invariance analysis of the satisfaction with food-related life scale in university students

This study examined longitudinal measurement invariance in the Satisfaction with Food-related Life (SWFL) scale using follow-up data from university students. We examined this measure of the SWFL in different groups of students, separated by various characteristics. Through non-probabilistic longitudinal sampling, 114 university students (65.8% female, mean age: 22.5) completed the SWFL questionnaire three times, over intervals of approximately one year. Confirmatory factor analysis was used to examine longitudinal measurement invariance. Two types of analysis were conducted: first, a longitudinal invariance by time, and second, a multigroup longitudinal invariance by sex, age, socio-economic status and place of residence during the study period. Results showed that the 3-item version of the SWFL exhibited strong longitudinal invariance (equal factor loadings and equal indicator intercepts). Longitudinal multigroup invariance analysis also showed that the 3-item version of the SWFL displays strong invariance by socio-economic status and place of residence during the study period over time. Nevertheless, it was only possible to demonstrate equivalence of the longitudinal factor structure among students of both sexes, and among those older and younger than 22 years. Generally, these findings suggest that the SWFL scale has satisfactory psychometric properties for longitudinal measurement invariance in university students with similar characteristics as the students that participated in this research. It is also possible to suggest that satisfaction with food-related life is associated with sex and age.

Measurement invariance in the Satisfaction with Food-related Life scale: A comparison of Chilean and Spanish university students

Confirming that an assessment instrument evaluates the same construct in the same way across cultures is critical before comparing distinct samples. The factorial invariance of the Satisfaction with Food-related Life (SWFL) scale across university students from Chile and Spain was evaluated. Then, mean levels of the SWFL scores among these groups were compared. Through non-probabilistic sampling, 252 university students from Chile (61.5% women, mean age=22.9, SD=2.21) and 120 students from Spain (53.5% women; mean age=22.0, SD=2.5) completed the SWFL. Confirmatory factor analysis was used to examine cross-cultural measurement invariance. Results showed that the SWFL scale exhibited strict invariance (equal factor loadings, thresholds and residuals) when comparing the Chilean and Spanish student samples. Therefore, the similar structure of the SWFL scale across these samples provides the basis for meaningful international comparisons of Satisfaction with Food-related Life. This finding allows the creation of common policies that can improve food-related well-being and the quality of life of university students and for people during different stages of life. The Spanish sample had a significantly higher SWFL score than the Chilean sample, probably linked to the significantly higher mean score in the items related to pleasure, ideal food and life conditions associated with food of the SWFL scale. Limitations and suggestions for future research in measuring Satisfaction with Food related Life are discussed.

The relation between attitudes toward functional foods and satisfaction with food-related life

Purpose The purpose of this paper is to assess the effect of attitudes towards functional foods (AFF) on university students’ satisfaction with food-related life (SWFL) and to distinguish student typologies, considering that the AFF are not homogeneous among consumers. Design/methodology/approach A survey was applied to 372 university students (mean age=20.4 years, SD=2.4) in Southern Chile. The questionnaire included the AFF questionnaire and the SWFL scale, questions about consumption and knowledge about functional food (FF) and socio-demographic characteristics. Findings Using confirmatory factor analysis (CFA) and structural equation modelling, it was found that AFF directly and significantly influence students’ SWFL. A cluster analysis applied to the Z-scores from the factors obtained by the CFA classified three typologies: positive towards FF (36.3 per cent), moderately positive towards FF (43.0 per cent) and negative towards FF (20.7 per cent). The positive towards FF type had a significantly greater SWFL score than the negative towards FF type. The types differ according to consumption and knowledge about FF. Research limitations/implications This study was conducted in the context of only one country in South America. Originality/value This study is the first that assesses the effect of AFF on SWFL in a sample of university students. Fostering positive attitudes towards FF will allow for a growth in the degree of SWFL of university students with features similar to those of the study sample.

Dietary restraint and self-discrepancy in male university students

Self-discrepancy describes the distance between an ideal and the actual self. Research suggests that self-discrepancy and dietary restraint are related, causing a significant impact on the person's well-being. However, this relationship has been mostly reported in female and mixed populations. In order to further explore dietary behaviors and their relations to self-discrepancy and well-being-related variables in men, a survey was applied to a non-probabilistic sample of 119 male students from five Chilean state universities (mean age=21.8, SD=2.75). The questionnaire included the Revised Restraint Scale (RRS) with the subscales weight fluctuations (WF) and diet concern (DC), the Satisfaction with Life Scale (SWLS), the Satisfaction with Food-Related Life Scale (SWFL), the Nutrition Interest Scale (NIS), and the Self-discrepancy Index (SDI). Questions were asked about socio-demographic characteristics, eating and drinking habits, and approximate weight and height. A cluster analysis applied to the Z-scores of the RRS classified the following typologies: Group 1 (22.7%), men concerned about weight fluctuations; Group 2 (37.0%), men concerned about diet and weight fluctuations; Group 3 (40.3%), unconcerned about diet and weight fluctuations. The typologies differed in their SDI score, restriction on pastry consumption and reported body mass index (BMI). Students with higher DC and WF scores had a higher BMI, and tended to report high self-discrepancy not only on a physical level, but also on social, emotional, economic and personal levels. This study contributes to the literature on subjective well-being, dietary restraint and self-discrepancy in men from non-clinical samples.

Relationship between the domains of the Multidimensional Students' Life Satisfaction Scale, satisfaction with food-related life and happiness in university students.

To characterize types of university students based on satisfaction with life domains that affect eating habits, satisfaction with food-related life and subjective happiness. A questionnaire was applied to a nonrandom sample of 305 students of both genders in five universities in Chile. The questionnaire included the abbreviated Multidimensional Student's Life Satisfaction Scale (MSLSS), Satisfaction with Food-related Life Scale (SWFL) and the Subjective Happiness Scale (SHS). Eating habits, frequency of food consumption in and outside the place of residence, approximate height and weight and sociodemographic variables were measured. Using factor analysis, the five-domain structure of the MSLSS was confirmed with 26 of the 30 items of the abbreviated version: Family, Friends, Self, Environment and University. Using cluster analysis four types of students were distinguished that differ significantly in the MSLSS global and domain scores, SWFL and SHS scores, gender, ownership of a food allowance card funded by the Chilean government, importance attributed to food for well-being and socioeconomic status. Higher levels of life satisfaction and happiness are associated with greater satisfaction with food-related life. Other major life domains that affect students' subjective well-being are Family, Friends, University and Self. Greater satisfaction in some domains may counterbalance the lower satisfaction in others.

Eating habits and subjective well-being. A typology of students in Chilean state universities

The purpose of this study was to distinguish and characterize university student typologies according to their life satisfaction and satisfaction with their food-related life. An online survey was applied between June and August 2013 in five state universities in Chile, to 369 university students (mean age = 20.9 years, SD = 2.27). The survey included the Health-related Quality of Life Index-4 (HRQOL), Satisfaction with Life Scale (SWLS), Satisfaction with Food-related Life Scale (SWFL), as well as questions about the place of residence, importance of food for well-being, frequency of meals in the place of residence and the frequency of consumption of eight food groups. A cluster analysis was used to determine student typologies. Three typologies of students were distinguished with significant differences in the average scores of the SWLS and SWFL scales, self-perception of health, days with mental health problems, number of days of health-related incapacity, place of residence, socioeconomic status, importance of food for well-being, frequency of breakfast and dinner in the place of residence, frequency of consumption of meat, milk, fruits and vegetables. It was found that most students with higher levels of life satisfaction and satisfaction with food-related life live with their parents, eat at home more frequently, report fewer health problems, have healthful eating habits and consider food very important for their well-being. Although it is necessary to promote or improve the campaigns that foster healthful eating in the entire university population, these campaigns must be specifically targeted to students who do not receive direct support from their families.
