Pomegranate Juice Clarification Using Ultrafiltration: Influence of the Type of Variety and Degree of Ripeness

Fruit consumption guarantees the supply of most of the necessary nutrients for a complete and balanced diet, as it is a relevant source of vitamins, minerals, and antioxidants. In particular, pomegranate has very interesting medicinal properties, such as an anti-inflammatory effect and the protection of the cardiovascular system, among others. During pomegranate juice production, it appears cloudy and must be clarified to remove suspended solids such as colloids and high-molecular weight tannins. The membrane clarification process is a cost-effective alternative to the conventional methods, resulting in a high-quality product. In this work, the clarification of pomegranate juice using the Triple System Model F1 membrane module was carried out for the Mollar and Wonderful varieties with early and late maturity. Three ultrafiltration membranes with different molecular weight cut-off and different chemical compositions were used. The rejection coefficient and permeate flux (which represent the selectivity of the membranes and the process efficiency, respectively) were measured. GR-40PP showed the best results in terms of membrane selectivity and process efficiency, achieving adequate physicochemical juice parameters. Regarding the comparison of the maturity degree, in general terms, the Mollar variety showed better results. Ripe pomegranates showed greater selectivity, while the process efficiency was higher for the early samples.

A comprehensive assessment of the environmental footprint of pomegranate juice production system by life cycle assessment approach

This groundbreaking research conducts the first comprehensive life cycle assessment of pomegranate juice production system, identifying key environmental hotspots, and offering valuable insights for improving environmental performance. This study employs the ReCiPe method within SimaPro software to assess the environmental impacts per pack of 160 g of juice. The findings indicated that a pack of pomegranate juice leads to 0.15 kg CO2 eq. Among all factors affecting global warming, natural gas used for juicing stood out as the most significant, responsible for over one-third of the impacts. In addition, the amount of human carcinogenic and non-carcinogenic toxicity impact categories was equal to 0.004 and 0.063 kg 1,4-DCB, respectively, mainly due to the pomegranate production in the orchard phase. Fruit production is also an environmental hotspot in other impact categories. The emissions from chemical fertilizers and manure application, fruit transportation toward the factory, and diesel fuel consumption by machinery were recognized to be the main hotspots in the orchard. Based on the weighted damage categories, the production of one pack of juice led to 3.64 mPt damage to the environment. The damage to human health contributed to 88% of the weighted environmental damage. The outcome of the sensitivity analysis indicated that natural gas in the juicing process is the most important parameter in damage to human health, ecosystems, and resource. In line with that, efforts for optimized consumption of natural gas and its replacement with eco-friendly alternatives can be a promising approach in pomegranate juice production from the environmental point of view.

Phenolic Compounds and Bioactivities from Pomegranate (Punica granatum L.) Peels.

Pomegranate peels, which are normally processed as the main byproduct of pomegranate juice production, are worthy of being researched and utilized for the aim of economic and environmental benefits. In a phytochemical investigation of the peels of Punica granatum L., 10 phenolic compounds containing a common hexahydroxy diphenol moiety were isolated. Three of them were identified for the first time and named as pomegranatins A-C, and from the other seven known ones, two of them were obtained from pomegranate peels for the first time. Their structures were determined via extensive spectroscopic analysis. Besides, for the sake of preliminarily comprehending their biological activities, in vitro antimicrobial, antioxidant, as well as antitumor assays were detected. In the DPPH antioxidant assay, six compounds presented significant free radical scavenging ability. Two compounds exhibited moderate antimicrobial activities against Candida albicans; one compound could inhibit the proliferation of both C. albicans and Escherichia coli within limits. Four compounds possessed weak antitumor activity toward the Hela cell line without taking into account the bioavailability of ellagitannins. Overall, these results provided further information on the structural diversity of bioactive compounds present in pomegranate peels, as well as on their biological activities.

Physical Properties of Chitosan Films Containing Pomegranate Peel Extracts Obtained by Deep Eutectic Solvents.

Pomegranate peel is a byproduct of pomegranate juice production, and is rich in polyphenol compounds. The objective of this study was to investigate the incorporation of pomegranate peel extract in chitosan films. Green deep eutectic solvents (DESs) were used as extraction solvents. Choline chloride (ChCl) and glycerol (Gly) were used as the hydrogen bond acceptor and hydrogen bond donor, respectively; the molar ratio of the DES ingredients, ChCl:Gly, was 1:11. The extraction process was optimized by deploying response surface methodology. Under the optimized conditions, the extraction yield in total polyphenols amounted to 272.98 mg of gallic acid equivalents per g of dry matter and, for total flavonoids, 20.12 mg of quercetin equivalents per g of dry matter, with a liquid to solid ratio of 47 mL g−1, time of 70 min, and 30% (v/v) water concentration in the DES. Afterwards, composite chitosan films were prepared by using five different formulations; the DES containing extract was incorporated as a plasticizer in the chitosan films. Specimens of every recipe were submitted to large deformation tensile testing in Texture Analyzer. Furthermore, water sorption behavior and color parameters of the films were determined.

Perspective of Membrane Technology in Pomegranate Juice Processing: A Review.

Pomegranate (Punica granatum L.) juice is well recognized for its high content of phytochemicals with proven health-promoting effects. Conventional processing techniques including clarification with fining agents, pasteurization and thermal concentration have significant influences on bioactive compounds and antioxidant activity of the juice. The growing consumers demand for high-quality pomegranate juice as well as the industrial interest for the production of functional foods, nutraceuticals, and cosmetics from its bioactive compounds have promoted the interest for minimal processing technologies. In this context, membrane-based operations represent an innovative approach to improve the overall quality of pomegranate juice production. This review focuses on the recent advances and developments related to the application of membrane technology in pomegranate juice processing. Conventional pressure-driven membrane operations and innovative membrane operations, such as osmotic distillation and pervaporation, are discussed in relation to their potential in juice clarification, fractionation, concentration and aroma recovery. Their implementation in integrated systems offer new opportunities to improve the healthiness and quality of the juice as well as to recover, purify and concentrate bioactive compounds for the formulation of functional ingredients.

Phytochemicals, Antioxidant Activity and Identification of Phenolic Compounds by HPLC of Pomegranate (Punica granatum L.) Peel Extracts

Pomegranate peel is food waste unfit to eat parts obtained during the production of pomegranate juice. The aim of this work is to study the effect of four different solvents (ethanol, isopropanol, hot and cold water) on phytochemicals screening, total phenolics content, total flavonoid content and antioxidants activity in pomegranate peels, as well as identification of phenolic compounds in extracts by HPLC. Phenolics, flavonoids, alkaloids, saponins, tannins, steroids and terpenoids were detected in all extracts. The highest total phenolics and total flavonoids were observed in ethanol extract of pomegranate peels (161.5 mg GAE/g and 70.65 mg Rutin/g), respectively. Furthermore, the ethanol extract of pomegranate peels showed the highest DPPH scavenging activity with the lowest IC50 value 14.6 μg/ml compared to other extracts. The high antioxidant activities may be due to the high contents of phenolics and flavonoids in pomegranate peel ethanol extract. HPLC analysis was used for the identification and quantitative determination of phenolic compounds in pomegranate peels extracts. The results revealed nine polyphenolic compounds including protocatechuic acid, p-coumaric acid, caffeic acid, ellagic acid, cinnamic acid, quinic acid, benzoic acid, syringic acid and iso-ferulic acid in pomegranate peels extracts. The obtained results confirmed that ethanol extract was the most abundant of phenolics compounds as compared to the other extracts. Finally, it can be concluded that pomegranate peel extracts can be used in various fields for being rich in natural antioxidants that have a medicinal and therapeutic impact.

During the industrial production of pomegranate juice, its peel is generated as a by-product. The aims of this work was to revalue these bu-product by green extraction of soluble antioxidants and recovery of insoluble Pomegranate by-product, once dried and ground was subjected to a water extraction process (65 ° C for 30 min), obtaining two fractions: one soluble and one insoluble. The insoluble fraction had a high fiber content (52.28 ± 2.99 g / 100 g) and the soluble fraction had a high total polyphenol content of 1049.98 ± 3.98 mg gallic acid / 100 g and an antioxidant capacity against ABTS radicals of 1486.57 ± 0.05 mol trolox / g. A jelly and a drink were formulated with the soluble fraction, while cookies and muffins were formulated with the insoluble fraction. All producto were formulated without sugar, and cookies and muffins so that they comply with the claim source of fiber. Acceptability was evaluated by consumers (n = 100), with cookies and muffins being the most accepted (7.0 and 6.3 respectively). Pomegranate by-product were revalued sustainably and at a low cost, obtaining new functional ingredients, representing this an opportunity for the industry.

Effect of different processing methods on the quality of obtained pomegranate juice

Pomegranate juice has many health properties as the fruits contain anticarcinogenic, antimicrobial and antiviral compounds. Its consumption has greatly increased throughout the world in recent years due to the potential of its different components, polyphenols and anthocyanins mostly. Many studies have been performed on the pomegranate juice yield demonstrating its influence on the organoleptic and physicochemical properties of the juice. Commercial pomegranate juice production involves pressing the fruits. As a consequence, there is a need to investigate the pressing machine types and adjustment in order to maximize juice yield and enhance its health properties. The aim of this study was to assess the influence of the pressing system on the pomegranate juice yield and properties. Pomegranate fruits of the 'Wonderful One' cultivar were manually harvested in November 2014 and mechanically processed to extract juice. Two different pressing systems were used. The first one was an hydraulic pressing machine where the fruits were put after being sliced in half; the second extraction method consisted in using a destemming machine for the entire fruit followed by a pneumatic press, typically applied in grape processing. The juices obtained with the two systems were analysed and compared in order to identify the best extraction technique.

Anti-Inflammatory Effects of Pomegranate Peel Extracts on In Vitro Human Intestinal Caco-2 Cells and Ex Vivo Porcine Colonic Tissue Explants.

The aim of this study was to determine the anti-inflammatory potential of pomegranate peel extracts (PPE) prepared from waste material of pomegranate juice production both in vitro on Caco-2 cells and ex vivo using porcine colonic tissue explants. Caco-2 cells were stimulated in vitro by TNF and colonic tissue explants were stimulated ex vivo with lipopolysaccharide (LPS). Both tissues were co-treated with PPE at 0, 1.0, 2.5, 5.0, 10 and 25 μg/mL. The secretion of CXCL8 in the supernatant of both experiments was determined by enzyme linked immunosorbent assay (ELISA) and the relative expression of inflammatory cytokines were evaluated in the colonic tissue by quantitative polymerase chain reaction (QPCR). The 2.5 to 25 μg/mL of PPE suppressed CXCL8 (p < 0.001) in the Caco-2 cells, whereas CXCL8 production was suppressed by only 5 and 25 μg/mL (p < 0.01) of PPE in the colonic explants. The 5 μg/mL of PPE also suppressed the expression of IL1A (p < 0.05), IL6 (p < 0.01) and CXCL8 (p < 0.05) in LPS challenged colonic tissues compared to controls. In conclusion, the 5 μg/mL of PPE consistently elicits strong anti-inflammatory activity. These results support the potential of bioactive compounds from the waste peel of pomegranate in terms of their anti-inflammatory activity in cells and tissues of the gastrointestinal tract.

Fermentative preparation of functional drink from Punica granatum using lactic acid bacteria and exploring its anti-tumor potential

In the present research work probiotic pomegranate juice production by fermentation was carried out using two different strains such as Lactobacillus plantarum VITES07 and Lactobacillus acidophilus NCIM2903 (Lactic acid bacteria). Fermented pomegranate juice was carried out at room temperature for 72h. During the fermentation period at regular intervals viable cells was determined. Efficiency of the fermented juice was analysed for 4 weeks under refrigerated condition at 4˚C. Total phenolics, sugar concentration, antioxidant potential, and antibacterial activity were determined. Organic acid concentration was determined by HPLC with retention time of a compound at 9.1 can be suspected to be Kaempferol hexoside and functional group was determined by FTIR also LCMS analysis was carried out to enumerate the chemical composition of the fermented juice.

Moderate Electric Treatment Applications on Pomegranate Juice Production: Yield and Physicochemical Properties

Moderate electric treatment (MET) is based on the growth of pores in cell membranes as a result of electric field applications. In this study, effects of MET applications on yield and quality of pomegranate juice production were investigated. MET was applied to whole pomegranate fruits between 10 and 60 V/cm voltage gradients for 15 s in a pilot scale continues drum-type MET system. Pomegranate juice yields were increased by 2.11–6.99% with electrical treatment. The highest total phenolics were determined at 60 V/cm applications and the highest anthocyanin, antioxidant capacity, ascorbic acid, a value and total color differences were determined at 10 V/cm applications. The electrical treatment significantly decreased the viscosity of juice. It was concluded that MET application could be applied as a pretreatment in pomegranate juice production. Practical Applications Juice extraction is a slow and highly energy-consuming step in the production of fruit juices; thus, various methods have been tried to improve efficiency. And there is an additional effect on juice yield caused by the electric current. Moderate electric treatment (MET) is effective in destroying cellular membranes and different types of electroporation units could be used for the structure of fruits or vegetables and also according to the production method. Through this study, a high potential of MET for the yield and functional improvement of pomegranate juices was found. The drum-type MET system which was used in the study can be used for whole materials without significant temperature increases. In addition, MET treatments can be used to increase the press yield as a nonthermal application and it will eliminate heat exposures, and also drum-type MET system can be adapted to the industrial production lines.

Pomegranate peel pectin films as affected by montmorillonite

The industrial production of pomegranate juice has been favored by its alleged health benefits derived from its antioxidant properties. The processing of pomegranate juice involves squeezing juice from the fruit with the seeds and the peels together, leaving a pomace consisting of approximately 73wt% peels. In this study, pectin was extracted from pomegranate peels, and used to produce films with different contents of montmorillonite (MMT) as a nanoreinforcement material. The nanoreinforcement improved the tensile strength and modulus of films when added at up to 6wt%, while the further addition of MMT (to 8wt%) reduced the reinforcement effect, probably because of dispersion problems. The elongation was decreased with increasing MMT concentrations. The water vapor permeability decreased with increasing MMT contents up to 8wt% MMT, indicating that the increased tortuosity of the permeant path was effective on barrier properties of the film.

Thin Layer Drying Kinetics of By-Products from Pomegranate Juice Processing

Drying of pomegranate by-products that are formed at the instance of pomegranate juice processing was studied at 50, 60, 70 and 80C while air velocity was 2 m/s. The results obtained show that moisture content of the by-product decreases with time and temperature. The drying process takes place mainly in the falling rate period. Several thin-layer drying models were selected to describe experimental drying kinetics data. The models were compared based on their coefficients of determination (R2), reduced chi-square (χ2) and root mean square error (RMSE) between experimental and predicted moisture ratios. Consequently, the Midilli et al. model was selected as the best mathematical model for describing the drying kinetics of the pomegranate by-products. The effective moisture diffusivity of pomegranate by-product varied from 1.22 × 10−10 m2/s to 4.29 × 10−10 m2/s. The activation energy was calculated as 39.66 kJ/mol using Arrhenius-type equation. Practical Applications Pomegranate is an important commercial fruit crop that is extensively cultivated all over the world in tropical, subtropical and temperate zones. It is mainly consumed as a raw staple food and used to mix in jams, jellies, teas, beverages, and concentrated in syrups and liqueurs. The process of pomegranate juice production remains large quantities of pomegranate by-products such as peels and seeds. The by-products due to high initial moisture content are very sensitive to microbial spoilage. Drying is one of the preservation methods applied to agricultural products. The basic objective in drying agricultural products is the removal of water in the solids up to a certain level, at which microbial spoilage and deterioration chemical reaction are greatly minimized. Besides, knowledge of drying characteristics is important in the design, simulation and optimization of drying process.

Evaluation of Pomegranate Peel Fortified Pan Bread on Body Weight Loss

Pomegranate (Punica granatum L.) peel is a nutritive, antioxidant rich by-product, easily available after production of pomegranate juice and ready to eat arils. The aim of present study was to utilize of pomegranate peel powder (PPP) as a good source of fiber ingredient and antioxidant bioactive compounds to produce value add bakery product based on pomegranate peel powder 2.5%, 5%, and 7.5% and investigation of weight loss activity in rats fed on high fat diet (HFD). Chemical composition, total phenols, total flavonoids and anti-oxidative activity (DPPH) of PPP and pan breads were determined. Texture profile analysis (TPA), sensory evaluation and physical properties of pan breads were investigated. Pan bread fortified with 2.5% and 5% PPP had higher score in overall acceptability and physical properties when compared to control pan bread and other various concentration (7.5%) of PPP. Thirty-six female albino adult rats with an average weight (180 ±5 g) were divided into six groups 6 rats for each. The first group (G1) fed on basal diet as a (negative control group). The other rats (30 rat) were divided as follow : (G2) fed on HFD as a positive control (PC), (G3) fed on HFD with PPP free pan bread , (G4) received HFD with 2.5% PPP fortified pan bread, (G5) received HFD with 5% PPP fortified pan bread and (G6) fed on HFD with 7.5% PPP fortified pan bread. Food intake, food efficiency, body weight, gain %, epididymal adipose tissue (g) and organs weight were recorded. Serum lipid profile and liver enzymes were analyzed. Our results showed that pomegranate peel powder 7.5% followed by 5% fortified breads reduced body weight by (47.61±1.27% and 40.65±1.11%) respectively, compared with PC group. Total lipid, triglycerides total cholesterol, LDL-C, VLDL-C and liver functions were decreased by increasing of PPP level in pan bread while HDL-C was increased .In conclusion, our results concluded that pomegranate peel powder fortified breads with high fiber and anti- oxidative activities is recommended to gain nutritional and healthy benefits to weight loss activity and the risk of obesity.

The effect of fruit processing and enzymatic treatments on pomegranate juice composition, antioxidant activity and polyphenols content

Pomegranate fruit and pomegranate juices have recently received great attention for their health benefits, mainly due to their high polyphenols content and the related antioxidant capacity. Nevertheless, the pomegranate processing and its effects on juice composition has been only little investigated. In this paper two important steps of pomegranate juice production, the separation of arils from peels (cleaning) and the enzymatic clarification of the juice, were considered, and the characterization (pH, acidity, total soluble solids, protein, polyphenols and antioxidant activity) of pomegranate juices obtained in different cleaning and clarification conditions was reported. Results showed that the cleaning procedures largely affect the juice composition and its organoleptic properties, and a significant positive correlation was found among peels content before pressing, total polyphenols, antioxidant capacity and perceived bitterness of the juice. Juice with endocarp and mesocarp content of 2 and 10 g/100 g and only mesocarp of 10 g/100 g showed a TEAC value of 14.1 and 13.1 mmol/L, respectively, significantly higher compared to juice with no peels (9.5 mmol/L). Treatment with pectolytic enzymes resulted in a better extraction of all the fruit components, as polyphenols (about 2-fold) and a decrease of turbidity (−40%).

Nutritional Composition of Detanninated and Fresh Pomegranate Peel Powder

Pomegranate (Punica granatum) peel is a nutritive, antioxidant rich byproduct, easily available after production of pomegranate juice and ready to eat arils. The present study is undertaken to know the nutritional importance of fresh and detanninated pomegranate peel powder. Fresh pomegranate peel collected after juice extraction from Bhagwa variety of pomegranate. Fresh peels were crushed fine through grinder and passed through 2 mm sieve to collect homogeneous and uniform sized pomegranate peel. The crushed peels were divided in to two equal parts in which one part used for detannination and other part used as fresh pomegranate peel. One part of fresh pomegranate peel percolated in equal amount of water for 12 hour. The whole material squeezed through a muslin cloth and find out the detanninated solid peel portion. The fresh and detanninated pomegranate peel were dried in hot air oven and crushed it to get fine powder. Both fresh and detanninated pomegranate peel powder were evaluated for its nutritional value (eg. ash, ether extract, crude protein, crude fiber, neutral detergent fiber, acid detergent fiber, lignin, nitrogen free extract, metabolized energy, vitamins and minerals) including total tannin content as tannic acid. The fresh pomegranate peel powder showed good nutritional composition with high tannin content but detanninated peel powder showed double benefit i.e. separated hydrolysable tannin/ellagitannin and detanninated pomegranate peel powder containing good amount of nutritional components with appropriate amount of tannin which can be recommended as novel cattle feed supplement.

Nutritive and Antioxidative Potential of Fresh and Stored Pomegranate Industrial Byproduct as a Novel Beef Cattle Feed

Pomegranate peel is a nutritive-rich byproduct whose amounts are extensively growing due to the exponential increase in the production of pomegranate juice and "ready to eat" arils. Pomegranate peel is a rich source for antioxidants and thus may serve in the prevention of cattle diseases and in the improvement of beef products, making it an attractive component in beef cattle diets. The present study aims to evaluate the effect of commonly used storage practices on the nutritive and antioxidative properties of pomegranate peel. In general, storage conditions preserved most antioxidant capacity. Ensiling ambivalently affected the nutritive values of the peel and promoted increased levels of antioxidative components. In addition to polyphenols, nonphenolic components, such as alpha- and gamma-tocopherols, contributed to the total antioxidative capacity, and several minerals found in the peel added to its nutritional value. Dietary supplementation with fresh peels promoted significant increases in feed intake and alpha-tocopherol concentration in the plasma, with positive tendency toward increased weight gain of bull calves. All in all, the nutritive value and the antioxidant capacity of pomegranate peel turn it into a favorable health-promoting constituent of feedlot beef cattle diet.
