Water chestnut starch nanoparticle Pickering emulsion for enhanced apricot seed oil stability: A sustainable functionality approach

The usage of starch nanoparticles for Pickering emulsion stabilization has become more popular for various benefits. This work investigated the potential of nano reduced starch as stabilizer in Pickering emulsions. Two different concentrations of starch nanoparticles (2.5 % and 5 %) were used for stabilization of apricot seed oil-in-water Pickering emulsion. Emulsion stabilized by 5 % starch nanoparticles (PE (5 %)) displayed zeta potential of −46.92 mV and emulsions stabilized by 2.5 % starch nanoparticles (PE (2.5 %)) exhibited zeta potential of −15.33 mV. In PE (2.5 %) after 24 h, creaming index (CI) was 12 %. CI remained zero in PE (5 %) after 30 days of storage period.PE (2.5 %) and apricot oil (AO) showed higher peroxide value than PE (5 %). Malondialdehyde (MDA) content of AO was 156.02 mmol/kg oil after 30 day storage period at 45 °C. Comparatively, PE (5 %) possessed lower MDA content (36.02 mmol/kg oil). The findings revealed that starch nanoparticles can be used as stabilizer in Pickering emulsions for stabilization and preventing lipid oxidation in polyunsaturated fatty acid rich oils. This study introduces a sustainable approach to enhance the stability of apricot seed oil using underutilized starch nanoparticles.

In vitro digestion study comparing a predigested glycerolysis product versus long-chain polyunsaturated fatty acid-rich oils (LCPUFA) as a strategy for administering LCPUFA to preterm neonates

Background & aimsMaintaining an adequate supply of arachidonic acid (ARA) and docosahexaenoic acid (DHA) is essential for optimal growth of preterm infants. This study aims to evaluate and compare the digestibility and bioaccessibility of ARA and DHA oils compared to their predigested product through an in vitro digestion model. MethodsAn in vitro gastrointestinal digestion model was used in two stages: gastric digestion and intestinal digestion. Samples of two polyunsaturated rich oils (ARA and DHA oils) and their predigested product (2:1, ARA: DHA) produced by enzymatic glycerolysis have been digested for 120 min. The final digestion product obtained was composed of three phases: an upper oily phase (OP) containing the undigested species, an intermediate micellar phase (MP) containing digested and bioaccessible lipids, and a precipitate phase (PP) with insoluble compounds. The reaction was monitored by taking aliquots and their subsequent lipid extraction and analysis. ResultsPoorer digestibility for ARA and DHA oils was observed based on the percentage of the oily phase (26.7% and 20%, respectively) found compared to the glycerolysis product (GP) oily phase (13.9%). The highest micellar phase was found in the GP (approx. 83%). On the other hand, the monoglyceride (MAG) content was lower in the digestion product (DP) from ARA and DHA oils, 4.3% and 9.2%, respectively, compared to the MAG observed in the DP of GP (15%). ConclusionConsidering the percentage of oily phase, micellar phase, and the MAG content, it can be concluded that the GP is more digestible and ARA and DHA are more bioaccessible than in its precursor oils.

Pickering emulsion gel of polyunsaturated fatty acid-rich oils stabilized by zein-tannic acid green nanoparticles for storage and oxidation stability enhancement

HypothesisPoor storage stability and oxidative deterioration are the common drawbacks of edible oils rich in polyunsaturated fatty acids (PUFAs). We hypothesized that the natural zein/tannic acid self-assembly nanoparticles (ZT NPs) could be employed as stabilizers to anchor at the oil–water interface, thus constructing Pickering emulsion gel (PKEG) system for three types of PUFA-rich oils, soybean oil (SO), fish oil (FO) and cod liver oil (CLO), to improve the storage and oxidation stability. ExperimentsZT NPs were prepared by the anti-solvent coprecipitation method, and the three-phase contact angle, FT-IR, and XRD were mainly characterized. To observe the shell-core structure and oil–water interface details of SO/FO/CLO PKEGs by confocal laser scanning microscope and cryo-scanning electron microscope. Accelerated oxidation of FO was performed to assess the protective effect of PKEG on lipids. FindingsThe SO, FO, and CLO PKEGs stabilized by 2 % ZT NPs, with oil fraction (φ = 0.5–0.6), were obtained. PKEGs show high viscoelasticity, clear shell-core structure spatial network structure, and ideal storage stability. Under accelerated oxidation, the degree of oxidative rancidity of FO PKEG was obviously lower than that of free FO. Overall, this work opens up new possibilities for using natural PKEG to prevent oxidative deterioration and prolong the shelf-life of PUFA-rich oils.

PSIII-22 Substituting Palm Oil By Polyunsaturated Fatty Acid Rich Oils Reduces Methane Emissions at a Different Degree Depending on Concentrate Formula of Dairy Beef Calves: in Vitro Screening

Abstract In dairy beef calves fed high-concentrate diets even methane emissions may be lesser than calves fed high-roughage diets there is still room to improvement. Substituting palm oil, an ingredient that is questioned by the impact on deforestation of some regions, by polyunsaturated fatty acids (PUFA) may be a good strategy that needs to be tested. Therefore, the aim of this study was to evaluate the rumen in vitro methane gas production by substituting palm oil by different oils rich in polyunsaturated fatty acids in two different concentrates in T1 the main protein source was SBM (8%) and in T2 the main protein source was corn DDG (15%); the remaining concentrate ingredients were 50% corn, 15 to 13% barley, 15 to 16% wheat middlings, beet pulp (5.5% in T1), 1.8% calcium carbonate, 0.5% salt, 0.2% premix. Palm oil was substituted (4 or 3.5 % in T1 or T2, respectively) by canola oil (CO), sunflower oil (SU) or soybean meal oil (SO), so 8 treatments were tested (T1, T1-CO, T1-SU, T1-SO, T2, T2-CO, T2-SU, T2-SO), which are rich in polyunsaturated fatty acids in two. Samples were 1-mm grinded at 1-mm and used in an in vitro digestibility assay as described by [Goeser and Combs (2009)]. The rumen liquid, obtained from rumens at slaughterhouse of beef animals fed high-concentrate diets with a close formula to T1 and T2, was strained through a cheesecloth, collected into pre-warmed thermal flasks, and kept at 39ºC until being used. Two incubation sets were done in parallel and in triplicate: one lasted 48 hours to calculate the DM digestibility; the second lasted 12 days to monitor the methane gas production. A tendency (P = 0.10) in the interaction among basal diet and oil source was observed in total methane production corrected by blank methane production; numerically the same trend (P = 0.14) was observed in net volume of CH4 per degraded DM. After 12 days, the least methane production values were observed in T1-SO and T2-CO (30 and 29 mL ± 4.6, respectively), while the largest methane values were observed in T1-SU (45 ± 4.6 mL) being the remaining treatments intermediate values (42, 39, 31, 38, 41 ± 4.6 mL for T1, T1-CO, T2, T2-SU, T2-SO, respectively). In conclusion, depending on the concentrate formula (protein source used) the effect of fat source used to substitute palm oil and reduce methane emission may differ.

Valorization of mullet roe by‐products for the production of polyunsaturated fatty acids rich oils

AbstractThis work examines the potential valorization of mullet roe by‐products for the production of mullet roe oil using mild processes. Three different extraction methods with potential of scale‐up for the food industry, namely pressure (PE), supercritical fluid extraction (SFE), and solvent extraction (SE) are examined. Mild temperature conditions to prevent oil oxidation and (wherever applicable) food‐grade solvents are used. The oil yield, the composition of oils in fatty acids by GC‐FID, the level of oil oxidation (peroxide value (PV), p‐anisidine value (AV), K232 K268, TOTOX)) and the antioxidant activity (DPPH, ABTS) are determined. SE provided the highest oil recovery, followed by SFE and PE (68%, 28% and 10% respectively). The extracted oils had a high concentration of EPA and DHA and a total of 20.7%–24.3% of identified PUFAs among the fatty acids. Oxidation was the lowest in the SFE extracted oil followed by PE, PV was <2.5 meqO2, AV≤10 and TOTOX <15 in all examined oil samples. Further research is needed to optimize processing conditions for the increase in oil recovery.

Wood hemicelluloses as effective wall materials for spray-dried microcapsulation of polyunsaturated fatty acid-rich oils

The most commonly-used and effective wall materials (WMs) for spray-dried microencapsulation of bioactive compounds are either costly, or derived from unsustainable sources, which lead to an increasing demand for alternatives derived from sustainable and natural sources, with low calories and low cost. Wood hemicelluloses obtained from by-products of forest industries appear to be attractive alternatives as they have been reported to have good emulsifying properties, low viscosity at high concentrations, high heat stability and low heat transfer. Here, we investigated the applicability of spruce galactoglucomannans (GGM) and birch glucuronoxylans (GX), to encapsulate flaxseed oil (FO, polyunsaturated fatty acid-rich plant based oil) by spray drying; and the results were compared to those of the highly effective WM, gum Arabic (GA). It was found that depending on solid ratios of WM:FO (1:1, 3:1 and 5:1), encapsulation efficiency of GGM was 88–96%, and GX was 63–98%. At the same encapsulation ratio, both GGM and GX had higher encapsulation efficiency than GA (49–92%) due to their ability to produce feed emulsions with a smaller oil droplet size and higher physical stability. In addition, the presence of phenolic residues in GGM and GX powders enabled them to have a greater ability to protect oil from oxidation during spray drying than GA. Physiochemical properties of encapsulated powders including thermal properties, morphology, molecular structure, particle size and water adsorption intake are also investigated. The study has explored a new value-added proposition for wood hemicelluloses which can be used as effective WMs in the production of microcapsules of polyunsaturated fatty acid-rich oils for healthy and functional products in food, pharmaceutical and cosmetic industries.

Strategy to increase the lipid stability of the microbial oil produced by Umbelopsis isabellina for food purposes: Use of microencapsulation by external ionic gelation

Oleaginous microorganisms, including the fungus Umbelopsis isabellina, have emerged as a biotechnological alternative to obtain polyunsaturated fatty acid-rich oils, which are strongly linked to energy purposes (biofuel) than the food industry. Considering the composition of microbial oil and its use by the food industry, it is necessary to investigate strategies that increase its lipid stability. Ergo, this pioneering study aimed to microencapsulate the oil produced by Umbelopsis isabellina and evaluate its oxidative stability throughout the storage period against factors such as temperature and luminosity. The microbial oil was microencapsulated through the external ionic gelation technique, producing an encapsulation efficiency of 80% and proving to be a suitable method because it maintained oil composition. Combining microencapsulation and refrigerated storage led to the best effects on storage time, increasing the evaluated lipid stability through the peroxide values and conjugated diene formation. Moreover, saturated and monounsaturated fatty acid content increased, and polyunsaturated fatty acid content decreased during storage for both the free and microencapsulated oil, regardless of storage temperature, although microencapsulation reduced the changes. The results primarily demonstrate how microencapsulation prolongs the oxidative stability and unsaturated fatty acid content of the microbial oil by reducing its reactions to external environmental factors, thus facilitating its use in the food industry.

Encapsulation of potential probiotic and canola oil through emulsification and ionotropic gelation, using protein/polysaccharides Maillard conjugates as emulsifiers

Nowadays, functional foods are in increasing demand since they can improve human health. Some bioactive components, such as polyunsaturated fatty acids-rich oils, and healthy microorganisms can be affected by their incorporation into food systems or processing. To avoid this, several encapsulation techniques have been developed in the recent years. The aim of this study was to encapsulate a potential probiotic bacteria, Bifidobacterium animalis subsp. lactis INL1 (INL1) and canola oil through an emulsification/gelation process using whey proteins isolate (WPI)/dextran (DX) conjugate obtained by Maillard reaction as emulsifiers. WPI/DX conjugates with dextran of 6 and 100 kDa (WPI/DX6 and WPI/DX100, respectively) were obtained by controlled dry heating. WPI/DX conjugates emulsions showed smaller oil droplets and more stability against creaming than emulsions of WPI alone. This higher stability was correlated with a higher encapsulation efficiency of canola oil in WPI/DX conjugates emulsion-gel gel beads. The viability of INL1 was not affected by the synthesis process. However, the canola oil affected the viability during storage, which indicated that canola oil is not suitable for co-encapsulation of probiotics at long storage times.

Low‐Field Nuclear Magnetic Resonance Time Domain Characterization of Polyunsaturated Fatty Acid–Rich Linseed and Fish Oil Emulsions during Thermal Air Oxidation

AbstractLinseed contains high levels of polyunsaturated fatty acids (PUFA), such as α‐linolenic acid (> 50% ALA‐18:3), that are naturally protected against thermal oxidation by their encapsulation within linseed oil bodies (OB) by multiple components including antioxidant proteins and mucilage emulsifying agents. Linseed OB emulsions (LSE) can be produced by grinding linseed seeds, adding water, adjusting pH, and sonication. This is a process that can encapsulate externally added PUFA to minimize their thermal oxidation, as it does for the intrinsic ALA PUFA. Fish oil (FO) encapsulation into this LSE platform to form linseed fish oil emulsions (LSFE) offers the possibility of a nutritive delivery system of the biologically essential FO PUFA eicosapentaenoic acid and docosahexaenoic acid. In this study, 1H low‐field nuclear magnetic resonance (LF‐NMR) is used to characterize LSE's and LSFE's chemical and structural properties as well as their stability and changes under thermal oxidation (55 °C for 96 hours). 1H LF‐NMR data processing was developed to generate one‐dimensional (1D) T1 (spin–lattice), 1D T2 (spin–spin), and 2D (T1 vs. T2) relaxation time spectra that can characterize OB emulsions and monitor their time domain fingerprints (spectrum peaks) of chemical and structural changes during the oxidation process. The 1H LF‐NMR analysis were further supported and correlated with conventional peroxide value test, self‐diffusion, droplet size distribution, zeta potential estimation of surface stability, and gas chromatography–mass spectrometry analysis of fatty acid profile changes under thermal oxidation conditions. The 1D and 2D LF‐NMR relaxation spectra showed that the LSE and LSFE did not suffer intense oxidation process, due to PUFA assembly in OB oxidative protection. These results were further confirmed by the supportive analytical methodologies. The results of this study demonstrate the efficacy of 1H LF‐NMR methodology to monitor PUFA's rich oil and emulsion thermal oxidation.

Edible oil extracted from anchovies using supercritical CO 2 : Availability of fat‐soluble vitamins and comparison with commercial oils

In this study, oil was extracted from anchovies using supercritical carbon dioxide (SC-CO2). Additionally, a comparative experiment was conducted with organic solvent-extracted anchovy oil and commercial fish oil. Omega-3 fatty acid contents were found to be 32.10 ± 0.45 to 32.15 ± 0.38% for anchovy fish oil. The results of the acid value and the peroxide value, determinants of oil stability, were 11.06 ± 0.01 mg KOH/g, and 28.92 ± 0.19 meq/kg, respectively, using SC-CO2 for extraction. In the case of fat-soluble vitamins of anchovy oil extracted by SC-CO2, vitamins A, D, and E and coenzyme Q10 were found at high percentages 22.51 ± 0.28 µg/100 g, 4.32 ± 0.10 mg/100 g, 104.67 ± 4.75 and 2.04 ± 0.20 mg/100 g, respectively, which had a higher content of these vitamins compared with that of the hexane extraction. Therefore, SC-CO2 extracted anchovy oil is expected to be used as a functional material, which could lead to economic benefits through the high valorization of anchovies. Practical applications Anchovy is a low graded fishery raw materials can be turned as a very important source of polyunsaturated fatty acids (PUFA) rich oil containing with different fat-soluble vitamins like A, D, and E, and coenzyme Q10. Supercritical carbon dioxide extraction (SC-CO2) is one of the safe and environment-friendly lipid extraction system that can be used for extracting the PUFA enriched oil from anchovy. SC-CO2 could be an efficient valorization method of anchovy that could be an important source of human-grade food oil and contribute to the food and nutritional sector.

Chemical Compositional Changes in Over-Oxidized Fish Oils.

A recent study has reported that the administration during gestation of a highly rancid hoki liver oil, obtained by oxidation through sustained exposure to oxygen gas and incident light for 30 days, causes newborn mortality in rats. This effect was attributed to lipid hydroperoxides formed in the omega-3 long-chain polyunsaturated fatty acid-rich oil, while other chemical changes in the damaged oil were overlooked. In the present study, the oxidation condition employed to damage the hoki liver oil was replicated, and the extreme rancidity was confirmed. A detailed analysis of temporal chemical changes resulting from the sustained oxidative challenge involved measures of eicosapentaenoic acid/docosahexaenoic acid (EPA/DHA) omega-3 oil oxidative quality (peroxide value, para-anisidine value, total oxidation number, acid value, oligomers, antioxidant content, and induction time) as well as changes in fatty acid content, volatiles, isoprostanoids, and oxysterols. The chemical description was extended to refined anchovy oil, which is a more representative ingredient oil used in omega-3 finished products. The present study also analyzed the effects of a different oxidation method involving thermal exposure in the dark in contact with air, which is an oxidation condition that is more relevant to retail products. The two oils had different susceptibility to the oxidation conditions, resulting in distinct chemical oxidation signatures that were determined primarily by antioxidant protection as well as specific methodological aspects of the applied oxidative conditions. Unique isoprostanoids and oxysterols were formed in the over-oxidized fish oils, which are discussed in light of their potential biological activities.

Synthesis of MCFA and PUFA rich oils by enzymatic structuring of flax oil with single cell oils

Lipid structuring is chemical or enzymatic modification of any naturally occurring lipid using other lipids. The present study reports such designing of nutritionally fortified polyunsaturated fatty acid (PUFA) and medium chain fatty acid (MCFA) rich oils by enzymatic structuring of PUFA- α-linolenic acid (ALA) rich - flax oil (FO) with MCFA-caprylic acid (CA) catalysed by sn 1,3 specific Immobead 150 immobilized Thermomyces lanuginosus lipase (TLL). For the first time MO from oleaginous isolates Geotrichumcandidum- NBT-1 and Pichiakudriavzevii- NBT-13 predominantly rich in CA, were used as a non-synthetic MCFA source. The % incorporation of CA in the structured FO was 69.25% from NBT-1 oil and 47.35% from NBT-13 oil, in sufficient closeness to contemporary studies of C8:0 incorporation using synthetic sources. The structured FO by NBT-1 and NBT-13 oils also contained 23.45% of ALA with 30.62% unsaturation and 24.97% of ALA with 47.10% unsaturation respectively. Outcomes revealed balanced concentration of both MCFA and PUFA in structured FO, presenting it as a nutritionally explicit and potential candidate for nutritional and medical applications.

Effect of dietary n-3 polyunsaturated fatty acid supplementation on the expression of genes involved in progesterone biosynthesis in the corpus luteum of goat (Capra hircus).

Emerging evidence indicates that dietary n-3 polyunsaturated fatty acids (PUFA) alter the fatty acid composition of corpus luteum (CL) and directly affect the luteal function in the cow, which is independent of the inhibitory effect on the endometrial PGF2α production. The present study, thus, investigated the effects of n-3 PUFA rich fish oil (FO) supplementation on the transcriptional modulation of genes involved in the biosynthesis of progesterone (P4 ) in the CL collected during the luteolytic phase of oestrous cycle in the goat. On the day of synchronized oestrus, goats (n=6/group) were fed an isocaloric diet supplemented with either FO or palm oil (PO). The dose of oil supplementation was 0.6mlkg-1 body weight, and the duration was 55-57days. The FO provided 156mgkg-1 body weight of n-3 eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). The CL was collected by laparotomy on day 16 post-oestrus, and the relative abundance of P450 side-chain cleaving enzyme, steroid acute regulatory protein (StAR) and 3β-hydroxy steroid dehydrogenase (3β-HSD) genes was quantitated by real-time PCR. The results indicated that the dietary FO significantly upregulated the expression of 3β-HSD by 1.13-fold and downregulated StAR by ~2-fold as compared to PO group (p<.05). It is concluded that dietary FO differently affected the expression of genes involved in P4 synthesis in the CL during the luteolytic window of the oestrous cycle in the goat.

Maternal dietary deficiency of n-3 fatty acids affects metabolic and epigenetic phenotypes of the developing fetus

Polyunsaturated fatty acids (PUFAs) play multiple physiological roles. They regulate the structure and function of cell membranes and cell growth and proliferation, and apoptosis. In addition, PUFAs are involved in cellular signaling, gene expression and serve as precursors to second messengers such as eicosanoids, docosanoids etc. and regulate several physiological processes including placentation, inflammation, immunity, angiogenesis, platelet function, synaptic plasticity, neurogenesis, bone formation, energy homeostasis, pain sensitivity, stress, and cognitive functions. Linoleic acid, 18:2n-6 (LA) and alpha-linolenic acid, 18:3n-3 (ALA) are the two essential fatty acids obtained from the diets and subsequently their long-chain polyunsaturated fatty acids (LCPUFAs) are accumulated in the body. The maternal plasma LCPUFAs especially accumulated in larger amounts in the brain during the third trimester of pregnancy via the placenta and postnatally from mother's breast milk. Various studies, including ours, suggest PUFA's important role in placentation, as well as in growth and development of the offspring. However, intakes of maternal n-3 PUFAs during pregnancy and lactation are much lower in India compared with the Western population. In India, n-3 fatty acid status is further reduced by higher intake of n-6 PUFA rich oils and trans fats. More data on the impacts of long term maternal n-3 PUFA deficiency on placental structure and function, gene expression, epigenetic changes and resultant cognitive function of fetus & infants are emerging. This review summarizes the impacts of n-3 PUFA deficiency in utero on fetal growth and development, adiposity, energy metabolism, musculoskeletal development, and epigenetic changes in feto-placental axis from the recently available pre-clinical and clinical data.

Increasing the α-tocopherol content and lipid oxidative stability of meat through dietary Cistus ladanifer L. in lamb fed increasing levels of polyunsaturated fatty acid rich vegetable oils

The aim of this study was to evaluate the effect of the dietary inclusion of Cistus ladanifer L. and vegetable oils on intramuscular fat composition, muscle antioxidant status and lipid oxidative stability, and explore the mechanism by which dietary Cistus ladanifer limits the lipid oxidation. Lambs were assigned 9 diets, corresponding to 3 levels of Cistus ladanifer (50, 100 and 200 g/kg DM) and 3 levels of oil (0, 40 and 80 g/kg DM). Oil supplementation increased highly peroxidizable fatty acid content and the peroxidizability index (P < .05). Muscle phenolic content, reducing ability and radical scavenging ability were not affected by Cistus ladanifer (P > .05). The highest level of Cistus ladanifer enhanced muscle resistance to lipid oxidation (P = .006) and increased α-tocopherol content (P = .005), reducing meat lipid oxidation over 7 days of storage (P < .001). Results showed that Cistus ladanifer has a protective effect against lipid oxidation through increasing α-tocopherol concentration in the muscle.

Investigating the effects of varying wall materials and oil loading levels on stability and nutritional values of spray dried fish oil.

High oxidative capacity of polyunsaturated fatty acid rich oils is the main problem with their dietary application. The main objectives of this study were to determine the effects of different encapsulants and oil loading levels on nutritive value, fatty acid profile, and oxidative stability of microencapsulated fish oil powders. Four types of wall materials [glucose syrup and maltodextrin based Maillard reaction products (MRP) or equivalent non-reacted physical blends (Non-MRP)] were used along with the three levels of oil loadings (oil to wall ratio of 1:2; 1:1; 2:1 as low, medium and high oil loadings). Emulsions and resulting microencapsules were tested for fatty acid content and stability if fatty acids over time. Additionally, different oxidative parameters were used to assess the oxidative stability of the microencapsules. Results showed that high oil loading significantly increased the mean particle size of emulsions and resultant powders and concomitantly reduced microencapsulation efficiency (ME) and yield of capsules in all of the tested wall materials. However, MRP exhibited better performance. Maillard reaction products showed better protection efficiency against oil oxidation relative to non-MRP. Nevertheless, two types of MRP encapsulants showed different proficiency and glucose syrup-MRP, provided more protection than Maltodextrin-MRP. Maillard reaction had a positive correlation with the stability properties of emulsions and resulting microcapsules. Our results showed that microencapsulation with Maillard reaction products could be used as an efficient way to protect fish oil from oxidation.

Intake of Palm Olein and Lipid Status in Healthy Adults: A Meta-Analysis

It is not clear whether a saturated fatty acid-rich palm olein diet has any significant adverse effect on established surrogate lipid markers of cardiovascular disease (CVD) risk. We reviewed the effect of palm olein with other oils on serum lipid in healthy adults. We searched in MEDLINE and CENTRAL: Central Register of Controlled Trials from 1975 to January 2018 for randomized controlled trials of ≥2 wk intervention that compared the effects of palm olein (the liquid fraction of palm oil) with other oils such as coconut oil, lard, canola oil, high-oleic sunflower oil, olive oil, peanut oil, and soybean oil on changes in serum lipids. Nine studies were eligible and were included, with a total of 533 and 542 subjects on palm olein and other dietary oil diets, respectively. We extracted and compared all the data for serum lipids, such as total cholesterol (TC), LDL cholesterol, HDL cholesterol, triglyceride, and TC/HDL cholesterol ratio. When comparing palm olein with other dietary oils, the overall weighted mean differences for TC, LDL cholesterol, HDL cholesterol, triglycerides, and the TC/HDL cholesterol ratio were -0.10 (95% CI: -0.30, 0.10; P=0.34), -0.06 (95% CI: -0.29,0.16; P=0.59), 0.02 (95% CI: -0.01, 0.04; P=0.20), 0.01 (95% CI: -0.05, 0.06; P=0.85), and -0.15 (95% CI: -0.43, 0.14; P=0.32), respectively. Overall, there are no significant differences in the effects of palm olein intake on lipoprotein biomarkers (P>0.05) compared with other dietary oils. However, dietary palm olein was found to have effects comparable to those of other unsaturated dietary oils (monounsaturated fatty acid- and polyunsaturated fatty acid-rich oils) but differed from that of saturated fatty acid-rich oils with respect to the serum lipid profile in healthy adults.

Combination of Hydrophilic or Lipophilic Natural Compounds to Improve the Oxidative Stability of Flaxseed Oil

Oxidation of bulk oils involves radical molecules, transitions metals, and association colloids, among other factors. Combining mechanistically different antioxidants is one possible strategy to improve oxidative stability of polyunsaturated fatty acids rich oils. However, antioxidant polarity may play a critical role in the oxidative protection efficacy. Thus, the objective of this study is to formulate a hydrophilic mixture (HM) containing sinapic, ascorbic, and citric acid; and a lipophilic mixture (LM) composed of α‐tocopherol, ascorbyl palmitate, and citric acid; and apply these mixtures in crude, and stripped flaxseed oils. The oxidative stability of crude oil samples containing HM and LM is comparable to that of artificial compounds mixture (ethylenediamine tetraacetic acid [EDTA] and terc‐butyl hydroquinone [TBHQ]). HM is more effective than LM in crude oil, but not in stripped oil, suggesting a strong influence of minor components on antioxidant activity of natural compounds.Practical Applications: The increasing demand for foods containing polyunsaturated fatty acids (PUFA) brings the challenge of their chemical stabilization. Here, a strategic mixture of hydrophilic natural antioxidants is effective to stabilize flaxseed oil, with effectiveness comparable to that of artificial antioxidants. Therefore, this HM constitutes a feasible and efficient option to be applied by food producers, especially in formulations that present a health claim.

Physico-chemical Characterization, Profiling of Total Lipids and Triacylglycerol Molecular Species of Omega-3 Fatty Acid Rich &lt;i&gt;B. arvensis&lt;/i&gt; Seed Oil from India

Buglossoides arvensis is indigenous to India and its seed oil is rich in unique and nutritionally important omega-3 fatty acid namely, stearidonic acid (SDA). It is a non-conventional oil seed plant and needs to be agronomically adapt for commercial utilization. In the present study, oil extracted from the agronomically adapted high yielding cultivar of B. arvensis seeds was analyzed for its oil content, fatty acid (FA) composition, physico-chemical characteristics, total lipids and triacylglycerol molecular species. The oil content, peroxide, acid, iodine, p-anisidine values and tocopherol content of the oil were 18.53% (w/w), 2.06 meq of active oxygen / kg of oil, 2.55 mg KOH/g oil, 217.2 g I2/100g oil, 10.7 and 774.8 mg/kg oil respectively. Oxidative stability as determined by the induction period was found to be 3.1 h. Polyunsaturated fatty acid (PUFA) content of the oil was 81.3% (of total FA), comprising of α-linolenic acid (ALA; 48.5%), SDA (18.6%), linoleic acid (LA; 10.3%) and γ-linolenic acid (GLA; 3.9%). Profiling of lipid classes showed neutral lipids (89.3%, w/w) as most abundant lipid class followed by glycolipids (7.4%, w/w) and phospholipids (3.3%, w/w). High resolution mass spectrometric analysis of triacylglycerol (TAG) molecular species showed TAGs with C54 carbons in the acyl chain as most abundant. Positional distribution analysis showed GLA and SDA predominantly at the sn-2 position of triacylglycerol. FTIR analysis revealed common characteristics molecular features similar to PUFA rich oils. Overall, the results suggest that B. arvensis seed oil is an excellent ω3-ω6-ω3 or ALA-SDA-GLA source for food and nutraceutical industries.

Enhancement of thermal stability of soybean oil by blending with tea seed oil

Frying accelerates oil deterioration through several chemical reactions, particularly lipid oxidation. Soybean oil (SBO), the polyunsaturated fatty acid (PUFA) rich oil, is prone to thermal degradation. Nevertheless, tea seed oil (TSO), mainly consisting of monounsaturated fatty acids (MUFA), is quite stable. This work aimed to elucidate thermal stability of SBO as affected by TSO blending at varying volume ratios. After frying for several repeated cycles, SBO/TSO blends with the ratios of 70:30, 60:40 and 50:50 showed lower total oxidative degree than SBO alone. FTIR spectra suggested less cis C=C deformation of the SBO blended with TSO, and the 60:40 SBO/TSO blend contained the lowest secondary oxidation products. Along frying, less change in viscosity (color) was found for the 60:40 and 50:50 (60:40) SBO/TSO blends. Improved thermal stability of the blended oils was expected due to the decrease in PUFA and increase in phenolic content, and this study suggested that the 60:40 SBO/TSO blend showed the highest stability.
