Mycotoxin contamination in the Arab world: Highlighting the main knowledge gaps and the current legislation.

Since the discovery of aflatoxins in the 1960s, knowledge in the mycotoxin research field has increased dramatically. Hundreds of review articles have been published summarizing many different aspects, including mycotoxin contamination per country or region. However, mycotoxin contamination in the Arab world, which includes 22 countries in Africa and Asia, has not yet been specifically reviewed. To this end, the contamination of mycotoxins in the Arab world was reviewed not only to profile the pervasiveness of the problem in this region but also to identify the main knowledge gaps imperiling the safety of food and feed in the future. To the best of our knowledge, 306 (non-)indexed publications in English, Arabic, or French were published from 1977 to 2021, focusing on the natural occurrence of mycotoxins in matrices of 14 different categories. Characteristic factors (e.g., detected mycotoxins, concentrations, and detection methods) were extracted, processed, and visualized. The main results are summarized as follows: (i) research on mycotoxin contamination has increased over the years. However, the accumulated data on their occurrences are scarce to non-existent in some countries; (ii) the state-of-the-art technologies on mycotoxin detection are not broadly implemented neither are contemporary multi-mycotoxin detection strategies, thus showing a need for capacity-building initiatives; and (iii) mycotoxin profiles differ among food and feed categories, as well as between human biofluids. Furthermore, the present work highlights contemporary legislation in the Arab countries and provides future perspectives to mitigate mycotoxins, enhance food and feed safety, and protect the consumer public. Concluding, research initiatives to boost mycotoxin research among Arab countries are strongly recommended.

Abstract Mycotoxins are among the most alarming food and feed contaminants threatening human and animal health. Since the discovery of aflatoxins in the 1960s, the body of knowledge in the field of mycotoxins increased dramatically: biological syntheses have been unraveled; myriad analytical detection methods were developed; surveys in different matrices were conducted; investigations into toxicities took place; several methods for control have been tested; and legislative debates to protect the public from their toxic effects continue. Based on that, hundreds of review articles were published to summarize different areas in the mycotoxin field, including their contamination per country or per region. However, mycotoxin contamination in the Arab world, which includes 22 countries in Africa and Asia, have not been specifically reviewed. To this end, this work has been conducted to review the contamination of mycotoxins in the Arab world to identify the main knowledge gaps needed to enhance the safety of food and feed. Our search, using several keywords, covered all the (non-)indexed publications written in English or Arabic or French. To the best of our knowledge, a total number of 306 papers were published between 1977 and 2021, focusing on the natural occurrence of mycotoxins in different matrices, which fall under one of 14 different categories (animal feed; animal products; baby food; cereals; cereal by-products; dairy products; legumes and pulses; nuts; spices; fruits and vegetables; juices and drinks; biomarkers; oils; and others). The relevant information (e.g., detected mycotoxins; number of samples; concentrations; method of detection) were extracted, processed and visualized using Microsoft Excel, R, GraphPad Prism, and RAWGraphs. The main results are summarized as follows: (i) research on mycotoxins has increased over the years, however the accumulated data on their occurrences are scarce to non-existent in some countries and regions; (ii) state-of-the-art technologies on mycotoxin detection are not well implemented; neither are contemporary multi-mycotoxin detection strategies in the Arab world, showing the need for capacity-building initiatives; (iii) mycotoxin profiles differ among food and feed categories, as well as between human biofluids. Furthermore, the present work highlights the current legislations in the Arab countries and provides future perspectives in order to mitigate mycotoxins, enhance the safety of food and feed and protect the consumers. Among these perspectives, we suggest some research initiatives to boost mycotoxin research among the Arab countries.

Natural Occurrence of Mycotoxins in Maize in North China.

Mycotoxins seriously threaten the quality of maize seriously around the world. A total of 426 samples of maize kernel from northeast and northwest China were analyzed in this study. Ultra-performance liquid chromatography–tandem mass spectrometry (UPLC–MS/MS) was performed to analyze the mycotoxin contamination of maize samples. The results showed that it was contaminated by mycotoxins in maize. The average contamination levels of fumonisins, deoxynivalenol, aflatoxins, zearalenone, ochratoxin A, T-2 and HT-2 were 937, 431, 22, 27, 2 and 12 μg/kg, respectively. Concentration of mycotoxins in some samples exceeded their limit, but most were still at safe levels. The contamination level of FBs and DON were most significative. The proportion of mycotoxins exceeding the maximum limit standard was in the following order: 8.0%, 8.0%, 7.0%, 1.6%, 1.4% and 0.0%. The contamination of mycotoxins in maize varies from region to region.

Alternaria mycotoxins in food commodities marketed through e-commerce stores in China: Occurrence and risk assessment

The natural occurrence of mycotoxins like Alternaria mycotoxins in food commodities is concerning in terms of health risks for humans. Currently, detailed investigations of Alternaria mycotoxins, such as alternariol (AOH), alternariol methyl ether (AME), tenuazonic acid (TeA), tentoxin (TEN), and altenuene (ALT) in food commodities marketed through e-commerce stores in China remains scarce. In addition, not many studies have focused on the associated dietary risk of these mycotoxins. This study conducted a survey (486 samples) for five Alternaria mycotoxins using ultra performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) methods. Among five Alternaria mycotoxins, TeA had the highest occurrence rate (51.0%) and concentration (average concentration of 40.6 μg/kg) in food commodities, followed by TEN, AOH, AME, and ALT. Millet and tomato products were contaminated with higher levels of TeA than other types of food commodities. The combination of TeA + TEN and AME + TeA + TEN were the predominant two contamination patterns detected in cereal and fruit products. Chronic dietary exposures to Alternaria mycotoxins were performed by the threshold of toxicological concern (TTC) approach. The mean and 95th percentile chronic dietary exposures to AOH and AME indicated different risk levels for consumers in China, with the highest exposure observed in the 2–7 years group, indicating potential dietary health concern. The mean chronic dietary exposures to TeA and ALT did not indicate a risk for the consumers, but the exposure to TeA through cereal product consumption exceeded the TTC value in the 2–12 years group at 95th percentile evaluation. Therefore, strategies should be continuously adopted to decrease or eliminate the occurrence of Alternaria mycotoxins in food commodities in order to reduce the dietary risks for humans.

Toxigenic fungal species and natural occurrence of mycotoxins in crops harvested in Argentina

Mycotoxins are secondary metabolites produced by fungal species that mainly belong to Aspergillus, Fusarium, Penicillium and Alternaria, which can grow in a variety of crops including cereals, oilseeds and fruits. Consequently, their prevalence in foods and by-products not only affects human and animal health but also causes important losses in both domestic and international markets. This review provides data about toxigenic fungal species and mycotoxin occurrence in different crops commonly grown in Argentina. This information will be relevant to establish adequate management strategies to reduce the impact of mycotoxins on human food and animal feed chains and to implement future legislation on the maximum permitted levels of these fungal metabolites.

Survey of Mycotoxin in Brazilian Corn by NIR Spectroscopy-Year 2019

Corn is commonly attacked by fungi and mycotoxins. The negative impacts caused by these toxic metabolites justify the use tools that enable constant monitoring and provide a quick feedback. The natural occurrence of mycotoxins, fumonisins B1+B2 (FUM), Aflatoxin B1 (AFB1), Deoxynivalenol (DON) and Zearalenone (ZEN) was investigated through Near Infrared Spectroscopy (NIR) in 3,069 spectra of corn samples from several Brazilian states throughout 2019. FUM was the most prevalent (98.2%) mycotoxin found in this study, followed by AFB1 (20.3%), DON (9.6%) and ZEN (5.9%). The annual average of FUM (B1+B2) was 2,092 μg kg^-1 and the average in positive samples was 2,130 μg kg-1, with variations in some periods of the year. The annual mean of AFB1 was low, 1.8 μg kg-1, and the average in positive samples was 8.9 μg kg-1. As well as the prevalence, the concentrations of DON and ZEN were relatively low: 39 and 6 μg kg-1, respectively. These findings show the importance of mycotoxicological monitoring to avoid economic losses and to spare animal health. The use of rapid diagnostic tools, such as NIR, allows decision making in an agile and efficient way.

Natural occurrence of mycotoxins in maize and sorghum in Togo.

Mycotoxins are fungal secondary metabolites frequently affecting agronomical crops and consequently imposing a major challenge for food safety and public health. In this study, a total of 67 raw cereals (55 maize and 12 sorghum) were collected from the market of Togo. The samples were investigated on the occurrence of 21 mycotoxins using state-of-the-art high-performance liquid chromatography coupled to tandem mass spectrometry (HPLC-MS/MS). The most frequent occurring mycotoxins were fumonisins (88 and 67% for maize and sorghum respectively) with concentrations ranging from 101 to 1838μg/kg for maize and 81.5 to 361μg/kg for sorghum, respectively. Aflatoxin B1 was detected in 38% of the maize samples with maximum contamination levels of 256μg/kg, and 25% of the sorghum samples (range 6-16μg/kg). The concentrations of aflatoxins were high in maize, with some cases exceeding the maximum legislative limits (EU) for unprocessed maize placed on the market. In addition to these high contamination levels, the co-occurrence of three classes of mycotoxins (i.e., aflatoxins, fumonisins, and trichothecenes) was observed in this study. For the first time, the multi-mycotoxins occurrence in agronomical crops in Togo was reported.

Survey on fungi contamination and natural occurrence of mycotoxins in 94 corn feed ingredients collected from China

Objective: To investigate fungi contamination and the natural occurrence of mycotoxins in corn feed ingredients collected from China. Methods: A total of 94 corn feed ingredient samples were collected from 8 Chinese provinces(i.e., Anhui, Hebei, Heilongjiang, Jilin, Jiangsu, Liaoning, Inner Mongolia, and Shandong)in February 2014. A tandem ultra-performance liquid chromatographymass spectrometry method was used for simultaneous detection of twelve kinds of mycotoxins, including aflatoxin(AF), type A and type B tricothecenes, and zearalenone(ZEN). Contaminated fungi were also identified and counted. Results: AF was detected in 36.2%(34/94)of samples; the concentration of AFB1 was the highest in the four AFs with the range: 0.3~181.3 μg/kg; and then followed by AFB2(range: 1.0-74.3 μg/kg). There were 7 samples(7.5%)with AFB1 concentrations higher than the tolerance limit of 50 μg/kg. The concentration of type A tricothecenes in all samples was lower(0.1-10.5 μg/kg). DON had the most serious contamination than other kind of type B tricothecenes(range: 0.7-606.6 μg/kg; median: 66.3 μg/kg). The DON concentration in all samples was below the tolerance limit of 1 000 μg/kg. ZEN was detected in 76.6%(72/ 94)of samples(median: 36.9 μg/kg), with 3 samples having ZEN concentrations higher than the tolerance limit of 500 μg/kg. The survey on fungi contamination showed that all samples were contaminated by fungi(range: 5.0-1.4×105 CFU/g). There were 18 and 3 samples with quantities of fungi higher than the tolerance and forbidden limits, respectively. The Aspergillus, Penicillium, Fusarium, Trichoderma and Mucor genuses were the predominant fungi in corn feed ingredients, with detection rates of 71.3%(67), 60.6%(57), 71.3%(67), 27.7%(26), and 24.5%(23), respectively. The detection rate of Fusarium moniliforme, 73.4%(69/94)was higher than that of Aspergillus flavus, 41.5%(39/94). Conclusion: In this survey, the corn feed ingredients were not seriously contaminated by AF and type A tricothecenes but mainly contaminated by type B trichothecenes, including DON and its derivatives, as well as ZEN. They were also contaminated by fungi such as Aspergillus, Penicillium, and Fusarium.

Natural occurrence of mycotoxins and toxigenic capacity of Alternaria strains from mouldy peppers

Sweet pepper (Capsicum annuum) is an important crop cultivated worldwide, with Argentina being one of the major producers in South America. The fruit is susceptible to several fungal diseases, leading to severe economic losses for producers. In this study, Alternaria was found as the prevalent genus in mouldy peppers (50% fruits infected). Morphological identification revealed that all 64 Alternaria isolates belonged to small-spored species, most of them corresponding to A. tenuissima, A. arborescens and A. alternata species-groups. Their secondary metabolite profile was evaluated in vitro; alternariols were synthesized by most of the isolates (91% for alternariol and 92% for alternariol monomethyl ether). A high number of Alternaria spp. also produced tenuazonic acid (64%), altenuene (84%) and tentoxin (72%). In addition, damaged pepper fruits were analysed for the presence of tenuazonic acid and alternariols. A total 32 out of 48 spoiled pepper fruits were contaminated with at least one of these metabolites. Half of the samples were positive for tenuazonic acid (range 8–11,422μg/kg), while alternariol and its monomethyl ether were less frequently detected (21 and 29%, respectively) and at lower concentrations. This is the first report on the natural occurrence of Alternaria mycotoxins in Argentinean sweet pepper, and highlights a consumer risk when mouldy fruits are used in industrialized products because these compounds are not destroyed by conventional heat treatments.

Natural Occurrence of Mycotoxins in Food and Feed: Pakistan Perspective.

Fungi are commonly present in the environment and can grow under favorable conditions on an extensive variety of substrates. During harvesting, handling, storage, and distribution, agricultural commodities are subjected to infection by toxigenic molds, which may cause spoilage and produce toxic metabolites called mycotoxins. Fungal contamination of various food commodities with consequent exposure of the community to mycotoxins is a hazard that may exist depending on environmental factors, crop health, and soil conditions. Mycotoxins represent serious consequences due to substantial economic loss and risk to health. The environmental conditions of Pakistan with its mostly warm temperature are conducive to growth of toxigenic fungi resulting in mycotoxin production in different food items. Moreover, the poor conditions of storage and deficiency in regulatory measures in food quality control worsen the situation in the country. This review encompasses mycotoxin contamination of food and feed in Pakistan. High concentrations of mycotoxins are found in some commodities that are used on a daily basis in Pakistan, which may be a concern depending on dietary variety and health conditions of individuals in the population. Therefore, the mycotoxin contamination of foodstuff with exceeding levels represents a serious health hazard for the local population. There is a need to conduct more studies to analyze mycotoxin occurrence in all types of food commodities throughout the country. For consumer safety and the country's economy, the regulatory authorities should take into account this issue of contamination, and control strategies should be implemented and the quality control system of food improved.

Natural occurrence of mycotoxins in forage maize during crop growth in Japan: case study.

We investigated concentrations of mycotoxins during the growth of four cultivars of forage maize (Zea mays L.) in Nasushiobara, Tochigi prefecture, and their distribution in ears of maize grown in Morioka, Iwate prefecture, Japan. In experiment 1, we measured concentrations of naturally occurring fumonisin, nivalenol, deoxynivalenol and zearalenone at progressive crop growth stages. Concentrations of fumonisin in stems+leaves remained very low or not detectable, but those in ears became detectable at 40 days after heading and increased rapidly after 50 days after heading (DAH) (fumonisin B1+B2<3260 μg/kg; mean value at 50-74 days after heading). Concentrations varied widely within cultivars on the same day. Concentrations of nivalenol, deoxynivalenol and zearalenone in stems+leaves and in ears were low or not detectable throughout the experiment. In experiment 2, we collected three ears of each cultivar at the late yellow-ripe stage that showed extreme symptoms of Fusarium ear rot. Concentrations of fumonisin were extremely high in the upper half of ears in all cultivars (fumonisin B1+B2 18,000-25,900 μg/kg) but low in the lower half and bracts. Concentrations of nivalenol, deoxynivalenol and zearalenone were extremely low or not detectable. These results show that fumonisin concentrations in ears increased rapidly after 50 DAH, they were extremely high in ears of all cultivars with symptoms of Fusarium ear rot, and fumonisin was the most common contaminant. These results will help reduce mycotoxin contamination.

Natural occurrence of mycotoxins and their masked forms in food and feed products

A total of 174 cereal-based food products, 67 compound feeds and 19 feed raw materials were analysed for the occurrence of deoxynivalenol, 3-acetyldeoxynivalenol, 15-acetyldeoxynivalenol, zearalenone, α-zearalenol, β-zearalenol, and their respective masked forms, including deoxynivalenol-3-glucoside, zearalenone-4-glucoside, α-zearalenol-4-glucoside, β-zearalenol-4-glucoside and zearalenone-4-sulfate. Fibre-enriched bread, bran-enriched bread, cornflakes, popcorn and oatmeal were collected in Belgian supermarkets from April 2010 to October 2011. All food samples analysed were contaminated with an average of 2 to 6 mycotoxins, including 1 to 3 masked forms. Feed raw materials that were used in the analysed compound feeds were collected by the manufacturer. Feed raw materials included were beet pulp, sunflower seed meal, soy bean, soy peel, oats, barley, maize germs, maize gluten feed, maize, wheat gluten feed, wheat bran pellets, wheat bran and wheat. Beet pulp, sunflower seed meal, soy bean and soy peel were hardly contaminated. The feed raw materials that were mostly infected with deoxynivalenol, zearalenone and derivatives were maize and its by-products. Also, the glucosylated and sulfated forms occurred in substantial amounts. As well, wheat and its by-products were contaminated with α-zearalenol (wheat gluten feed and wheat bran) and zearalenone (wheat). The contamination pattern and level of feed raw materials were reflected in the corresponding compound feeds.

Natural occurrence of mycotoxins in peanut cake from Nigeria

The spectrum of mycotoxins and other fungal metabolites was evaluated by a liquid chromatography/electrospray ionization-tandem mass spectrometric (LC/ESI-MS/MS) technique in 29 peanut cake samples collected from markets in five states of Nigeria. A total of 20 fungal metabolites were detected at concentrations up to 7400 μg/kg in case of kojic acid. Metabolites produced by Aspergillus species were the most prevalent toxins. As considers mycotoxins addressed by regulations, aflatoxins exceeded the USDA maximum limit of 20 μg/kg in about 90% samples. Seven fungal metabolites reported in this study have to our knowledge never been found previously to occur in naturally contaminated grains, nuts and oil seeds or their products. Possible health effects of the observed concentrations of fungal metabolites were discussed based on toxicological data from literature.

Mycotoxins occurrence in Argentina’s maize (Zea mays L.), from 1999 to 2010

The natural occurrence of mycotoxins in maize in Argentina, from 1999 to 2010 was analysed. Total aflatoxins, deoxynivalenol and zearalenone, were detected and quantified by TLC. Each aflatoxins and fumonisins was quantified by HPLC. A total of 3246 samples for freshly harvested (1655) and storage (1591) was obtained from different regions, from 1999 to 2010. Except for 2003 year in harvest, and for 2007 in storage, aflatoxins levels were low. Average values of aflatoxin B1 for freshly harvested samples were between 0.38 and 2.54 μg kg−1 and for storage samples were between 0.22 and 4.5 μg kg−1. The average values and frequency of contamination for zearalenone and deoxynivalenol, were low for all years. The average zearalenone contamination in samples of freshly harvested, showed values from no detected up to 83 μg kg−1, and in storage samples, from no detected to 17 μg kg−1. The average deoxynivalenol contamination of freshly harvested, showed values from no detected up to 140 μg kg−1, and for storage samples showed values from no detected to 14 μg kg−1. The percentage of maize samples contaminated by fumonisins was between 90 and 100% for all years studied; the average levels were from 1773 to 9093 μg kg−1 for freshly harvested maize and for storage from 2525 to 11,528 μg kg−1.Co-occurrence of aflatoxins and fumonisin was the most frequent (8.4%), followed by zearalenone and fumonisins (2%).

国内で起きるカビ毒汚染の実態と防御―パツリンを中心として

一般に，国内では，一部の地域を除きアフラトキシン汚染が起きる可能性は低いと考えられているが，ペニシリウム属のカビが産生するパツリンやフザリウム属のカビが産生するデオキシニバレノール等は，我が国の気候条件でも産生される．近年，これらのカビ毒の国内での汚染が注目され，詳細な汚染実態の把握と，防御対策の開発が急務となっている．今回は，国内で起きているカビ毒汚染の状況と，リンゴ等のパツリン汚染について，その汚染の傾向から防御の対策について述べる．国内での自然汚染が確実に普遍的に起きているカビ毒は，麦中のデオキシニバレノールとニバレノールとリンゴ中のパツリンである．国内で汚染が起きている可能性が高いものに，麦中のゼアラレノン，ブドウ中のパツリン，黒糖中のアフラトキシンがある．また，穀類等のオクラトキシン汚染も国内で起きている可能性がある．国産リンゴを原料として使用するジュース製造工場から腐敗・傷害のため廃棄されたリンゴについてパツリン汚染調査を行った結果，一部に高濃度のパツリンの自然汚染が起きていることが判明し，低温保存でも保存期間が長くなるとパツリン汚染が進む傾向が認められた．リンゴのパツリン汚染を防止するには，汚染が起きている場所を特定し，菌の排除を行うこと，傷の付いたリンゴは長期間保存せず，早く加工してしまうことも効果的であると考えられる．

Spices Mycobiota and Mycotoxins Available in Saudi Arabia and Their Abilities to Inhibit Growth of Some Toxigenic Fungi

The prevalence and population density of the mycobiota of 50 samples belonging to 10 kinds of spices (anise, black pepper, red pepper, black cumin, peppermint, cardamom, clove, cumin, ginger and marjoram) which collected from different places in Jeddah Governorate were studied. The natural occurrence of mycotoxins in those samples was also investigated. Fifteen genera and thirty – one species of fungi in addition to one species variety were isolated and identified during this study. The most common genera were Aspergillus, Penicillium and Fusarium. Ailatoxins (12~40 μg/kg) were detected in the extract of 5 samples of each of anise seeds and black pepper fruits; three samples of black cumin seeds and on sample only of each of peppermint and marjoram leaves out of 5 samples tested of each. Sterigmatocystin (15~20 μg/kg) was detected in some samples of red pepper, cumin and marjoram. The inhibitory effects of 10 kinds of powdered spices were tested against 3 toxigenic isolates of fungi (Aspergillus flavus, A. versicolor and Penicillium citrinum). Clove proved to be antimycotic compounds. It inhibited the growth of the tested toxigenic fungi. Black pepper, peppermint, cardamom, cumin and marjoram completely inhibited aflatoxins production, while black pepper and cardamom also completely inhibited sterigmatocystin production.

Frequency of toxigenic Fusarium species and fusariotoxins in wheat grain in Serbia

A total of 88 and 40 wheat samples collected immediately prior to harvest in 2005 and 2006, respectively, under different agroecological conditions, were studied in respect to the occurrence of Fusarium spp. and the production of fusariotoxins. The greatest number of samples was infected with species of the genera Fusarium (81.8 and 65.0%), and Alternaria (36.3 and 17.5%) with the intensity ranging from 9.4 to 84.0% in 2005 and from 23.4 to 80.6% in 2006. Out of 13 identified species belonging to the genus Fusarium, F. graminearum had the highest frequency (35.2 and 12.5%) and the intensity up to 67.2%, and 21.9%, in 2005 and 2006, respectively, followed by F. poae but only in 2005 (20.4%), and F. proliferatum in 2006 (19.7%). The natural occurrence of mycotoxins in positive samples varied from 37 to 331 ppb for zearalenone and from 31 to 125 ppb for diacetoxyscirpenol (DAS) and T-2 toxin. The concentration of mycotoxins amounted, on average, to 133.4, 61.0 and 45.7 ppb for zearelenone, DAS and T-2 toxin, respectively.

Natural Occurrence of Mycotoxins in Staple Cereals from Ethiopia

The occurrence of mycotoxins in barley, sorghum, teff (Eragrostis tef) and wheat from Ethiopia has been studied. Samples were analyzed for aflatoxin B(1) (AFB1), ochratoxin A (OTA), deoxynivalenol (DON), nivalenol (NIV) and zearalenone (ZEN) using high performance liquid chromatography (HPLC) and for fumonisins (FUM) using enzyme linked immunosorbent assay (ELISA). AFB1 and OTA were detected in samples of all the four crops. AFB1 was detected in 8.8% of the 352 samples analyzed at concentrations ranging from trace to 26 microg kg(-1). OTA occurred in 24.3% of 321 samples at a mean concentration of 54.1 microg kg(-1) and a maximum of 2106 microg kg(-1). DON occurred in barley, sorghum and wheat at 40-2340 microg kg(-1) with an overall incidence of 48.8% among the 84 mainly 'suspect' samples analyzed; NIV was co-analyzed with DON and was detected at 40 microg kg(-1) in a wheat sample and at 50, 380, and 490 microg kg(-1) in three sorghum samples. FUM and ZEN occurred only in sorghum samples with low frequencies at concentrations reaching 2117 and 32 microg kg(-1), respectively. The analytical results indicate higher mycotoxin contamination in sorghum, which could be related to the widespread storage of sorghum grain in underground pits leading to elevated seed moisture contents. This is the first report on the occurrence of OTA in teff.

Natural occurrence of mycotoxins in cereals and spices commercialized in Morocco

Sixty samples of cereals (20 of corn, 20 of barley, and 20 of wheat) and 55 samples of spices (14 of paprika, 12 of ginger, 14 of cumin, and 15 of pepper) purchased from popular markets of Rabat and Salé in Morocco were analyzed for mycotoxins. Cereals samples were all analyzed for ochratoxin A (OTA). The average levels of contamination were 1.08, 0.42, and 0.17 μg/kg for corn, wheat, and barley, respectively. Samples of corn were also analyzed for zearalenone (ZEA) and fumonisin B 1 (FB 1) the average contaminations were 14 and 1930 μg/kg, respectively. Co-occurrence of OTA, FB 1, and ZEA was also checked. Spices samples were analyzed only for aflatoxins (AFs) and the average contaminations found for aflatoxin B 1 (AFB 1) were 0.09, 0.63, 2.88 and 0.03 μg/kg for black pepper, ginger, red paprika and cumin, respectively. The higher level of contamination was found in red paprika (9.68 μg/kg). The present report is the first one ever drafted on the natural co-occurrence of OTA, FB 1 and ZEA in cereals and on the occurrence of AFs in spices from Morocco.
