Assessing light spectrum impact on growth and antioxidant properties of basil family microgreens.

Understanding the influence of light spectra on plant growth and antioxidant activities is crucial for optimizing cultivation practices and enhancing crop quality. In this study, we investigated the effects of different light treatments on growth parameters and antioxidant activities in five plant species: peppermint, Thai basil, cumin, lemon basil, and green holy basil. Our results revealed distinct responses to varying light spectra, with green light consistently promoting taller plant heights across all species. Additionally, blue light induced notable increases in plant width for certain species. Analysis of antioxidant activities demonstrated dynamic fluctuations in Total Phenolic Content (TPC) and Flavonoid Content (TFC) among different light treatments and plant species. While white and red light generally promoted higher TPC levels, blue light unexpectedly exhibited the highest TPC levels at specific time points. Moreover, investigation into DPPH Radical Scavenging activity revealed diverse temporal responses to light spectra, with blue light demonstrating exceptional activity at early stages and white and red light showing heightened activity at later time points. These findings underscore the importance of tailored light regimes in optimizing growth parameters and enhancing antioxidant activities in cultivated plants, thereby offering promising avenues for sustainable agriculture and food production practices.

Effects of Different Packaging Types and Storage Periods on Physicochemical and Antioxidant Properties of Honeys

Preserving the nutritional value of honey without compromising its properties until consumption is crucial. However, different types of honey may respond differently to packaging and storage conditions. This study aimed to assess the effects of different packaging materials (tin cans, light-colored glass jars, and dark-colored glass jars) and storage durations (initial, 6 months, and 12 months) on the physicochemical and antioxidant properties of pine, flower, and thyme honey. Nine samples were collected to conduct study on the three different types of honey. Honey samples were packaged in these materials and analyzed at the start, after 6 months, and after 12 months. The results showed that the moisture, proline content, sugar, total oxidant status (TOS), and oxidative stress index (OSI) levels were unaffected by honey type. Over time, there was a decrease in moisture, pH, proline content, diastase number, sugar, total phenolic content (TPC), total antioxidant status (TAS), and catalase (CAT) activity, alongside an increase in the electrical conductivity, hydroxymethylfurfural (HMF), free acidity, TOS, and OSI levels. The packaging type did not influence the moisture, pH, electrical conductivity, proline content, diastase number, sugar, HMF, TPC, TAS, TOS, OSI, or CAT activity levels. The findings suggest that storing pine, flower, and thyme honey in light- or dark-colored glass jars or tin cans for 12 months does not significantly impact these properties. However, given the reduction in TPC and TAS across all honey types and packaging methods after 12 months, further studies are needed to explore ways to maintain honey quality in this regard.

Foliar Application of Methyl Jasmonate and Chitosan Improve Growth, Yield, and Quality of Guar (Cyamopsis tetragonoloba L.) Under Water-Deficit Stress.

Guar (Cyamopsis tetragonoloba L.), a summer legume, is becoming increasingly important as an industrial crop due to its high gum and viscosity content. This study investigated the effects of methyl jasmonate (MeJA), chitosan (CH), and their combination on the growth, yield, and quality of guar under irrigation regimes. A greenhouse experiment was conducted using a factorial design to evaluate the effect of foliar spraying with MeJA (5, 25, and 50 µM), CH (100, 150, and 200 mg/L), their combination (25 µM MeJA + 150 mg/L CH), and control on two commercial guar varieties (RGC-986 and BR-2017) under different irrigation regimes (100%, 70%, and 40% field capacity). The results showed that the exogenous application of MeJA and CH, individually and in combination, significantly enhanced various morphological traits and yield components in guar, including plant height, pod characteristics, seed yield, and root development. Additionally, the combination treatments improved seed quality parameters, such as gum percentage and viscosity content. Leaf analysis revealed increased levels of total phenolic content, total flavonoid, and anthocyanin contents. The BR-2017 variety showed superior performance in most morphological and qualitative traits, demonstrating greater resistance to irrigation regimes. It maintained yield and quality characteristics under water-deficit conditions, particularly when treated with 25 µM MeJA and 150 mg/L CH. The highest gum percentage (33.67%) and viscosity (4768.5 cP) were observed in the RGC-986 variety, along with enhanced levels of secondary metabolites. This study provides new insights into how MeJA, CH, and their combination can improve the yield and quality of guar under water deficit stress conditions. The results suggest that the use of these elicitors, especially in combination, represents an innovative strategy for improving guar production and quality, with potential variety-specific responses to water-deficit stress.

Unveiling the influences of P fertilization on bioactive compounds and antioxidant activity in grains of four sorghum cultivars.

Phosphorus is a critical nutrient in agriculture, influencing plant growth and nutritional quality. This study, uniquely designed to investigate the effects of phosphorus (P) fertilization levels, sorghum cultivars, and growing locations on phytochemical content and antioxidant activity in sorghum grains, employed four sorghum cultivars (Hakeka, P954063, Tabat, and Tetron) grown under three P levels (0P, 1P, 2P) in two locations (Gezira and White Nile) in Sudan. In this study, four sorghum cultivars were grown in two distinct locations in Sudan, employing a split-plot design with three (P) fertilization levels. P was applied as triple super phosphate directly with the seeds, and additional fertilization included urea applied in two split doses. At physiological maturity, representative sorghum panicles were harvested, processed, and analyzed for bioactive compounds and antioxidant activities using standard extraction and quantification techniques such as Folin-Ciocalteu for phenolics and colorimetric flavonoid assays. Antioxidant activities were assessed through various assays, including DPPH and FRAP. Statistical analyses were performed using a three-way ANOVA to examine the effects of cultivar, P level, and location on the measured parameters, supplemented by multivariate analysis to further elucidate the interactions between these factors. Significant interactions (p<0.001) were observed among cultivars, P levels, and locations for total phenolic content (TPC), total flavonoid content (TFC), carotenoids, tannins, and various antioxidant activity measures (DPPH, FRAP, ABTS, TRP, H2O2). P fertilization significantly increased all measured phytochemicals and antioxidant activities compared to non-treated cultivars, except for H2O2, which decreased with P application. Among cultivars, Hakeka consistently exhibited the highest TFC, carotenoid content, and antioxidant activities (DPPH, FRAP, TRP, ABTS), particularly at the 2P level. P954063 showed the highest TPC and tannin concentrations. Tetron generally had the lowest phytochemical and antioxidant levels. White Nile showed higher TPC, carotenoids, DPPH, FRAP, TRP, and ABTS levels, while Gezira had higher TFC, tannins, and H2O2 concentrations. The impact of phosphorus fertilization often varies between locations. Strong positive correlations were found between TPC and all antioxidant assays (r = 0.68-0.90) and total carotenoids and antioxidant activities (r = 0.73-0.93). This study recommended cultivating the Tabat variety with 2P doses in Gezira. In addition, the Hakeka cultivar showed the highest increases in total flavonoid content, carotenoids, and antioxidant activities, particularly under the highest P level (2P). The findings highlight that P plays a critical role in enhancing sorghum's nutritional and health-promoting qualities, which are essential for leveraging this staple crop for food and nutrition security strategies in semi-arid regions.

Chemical composition, physical properties, and sensory evaluation of wheat-based cookies enriched with different proportions of corn silk

Incorporating dried corn silk powder (CSP) into food products is considered beneficial for health and suitable for individuals of all ages. Thus, our study is designed to evaluate the effects of adding CSP to prepared cookies as a nontraditional source of dietary fiber and natural antioxidants, focusing on the chemical composition, physical properties, color attributes, antioxidant activity, and sensory properties of fortified cookies. Different CSP proportions (5%, 10%, 15%, and 20%) replaced wheat flour (WF) with a 72% extraction rate. The results revealed that CSP had significant levels of total phenolic content (TPC) and flavonoid content (TFC), measuring 86.42 mg GAE/g and 112.68 mg QE/g, respectively. CSP contained higher quantities of protein and fiber than WF, with values of 14.81 g and 15.21 g per 100 g of flour weight basis, respectively. The amounts of phenolic compounds in cookie samples increased proportionally with the increasing substitution of CSP, while total carbohydrates decreased. Adding CSP at concentrations of 5%, 10%, 15%, and 20% resulted in corresponding increases in crude fiber of 0.52, 1.2, 2.04, and 2.7 times compared to the control cookie samples. As the amount of CSP supplementation increased (0–20%), TPC and TFC in the cookies increased to 3.06 and 4.08 mg GAE/g and 0.02 to 1.28 mg QE/g, respectively. Increasing CSP proportions led to a significant decrease in diameter, thickness, spread factor, volume, and density of fortified cookies. Furthermore, the L* value exhibited a substantial decline from 65.48 to 51.12 as the amount of CSP substitution increased from 5% to 20%. The sensory evaluation characteristics of the cookie samples indicated that the sample with 15% CSP had the highest overall acceptability score. Therefore, this study demonstrates that adding 15% CSP can effectively yield functional cookies without compromising their sensory acceptability.

Morphological Evaluation and Phenolic Content of Wild Prunus cerasifera Ehrh. Fruits from Slovenia

Wild fruit species offer significant nutritional, environmental, and economic benefits. Among them, Prunus cerasifera Ehrh. (myrobalan) stands out for its resilience and nutrient-rich fruits, traditionally consumed fresh or dried. This study aimed to assess the morphological and biochemical diversity of 21 wild P. cerasifera accessions from Slovenia, focusing on 18 fruit and stone traits, including size, shape, color, and phenolic compounds such as total monomeric anthocyanins and total phenolic content (TPC). The objective was to identify genotypes with potential for cultivation and food production or as parental components in breeding programs. The results showed variability in fruit length (2.19–2.82 cm), width (2.18–2.99 cm), weight (67.98–150.30 g), firmness, and juiciness, with notable differences in stone characteristics. Phytochemical analysis revealed a wide range of TPC (277–1756 mg/100 g) and anthocyanin levels (0–710 mg/100 g), with higher concentrations in darker fruits. Statistical analysis compared PAM and AGNES clustering methods, finding that PAM with five clusters and AGNES with two clusters provided similar insights. The study emphasized variability in morphological and chemical traits among clusters, with specific accessions showing particularly valuable traits, such as accession RK13, which had high TPC and anthocyanins and a non-adherent stone.

Relationships between freezing resistance and biochemicals in grapevine buds and canes: Different soluble carbohydrates accumulate in several cultivars during cold acclimation

Owing to recent warming trends during the growing season, wine grapevine (Vitis vinifera) production has increased in subarctic areas such as Hokkaido. However, high freezing resistance remains essential for grapevines due to the severe winter temperatures in these regions. Here, we investigated the seasonal variation in freezing resistance, as well as the water, soluble carbohydrate, proline, and total phenolic content (TPC) in the buds and canes of two V. vinifera cultivars and a Vitis riparia hybrid, Maeve. We found that freezing resistance in the buds and canes increased from fall to winter, with Maeve exhibiting higher freezing resistance than the V. vinifera cultivars during both seasons. Maeve experienced a faster rate of deacclimation, leading to comparable spring freezing resistance among all cultivars. The water content in the buds and canes of all three cultivars decreased during the fall, with Maeve showing an earlier reduction compared to the others. Most soluble carbohydrates increased in winter and decreased in spring. Notably, Maeve, which had higher winter freezing resistance, accumulated more sucrose in its buds and a higher concentration of soluble carbohydrates, particularly monosaccharides, in its canes compared to the other two cultivars. Proline and TPC levels were not linked to freezing resistance. Grapevine buds and canes appeared to accumulate soluble carbohydrates, especially monosaccharides, during winter, while reducing water content in fall to enhance freezing resistance. This study suggests that grapevine cultivars in Hokkaido may utilize different types of soluble carbohydrates to improve the freezing resistance of their buds and canes.

Physicochemical Marker for Determination of Value-Adding Component in Over-Ripe Thai Mango Peels

Thailand is a prominent global producer of mangoes, providing a wide range of mango cultivars and dealing with the challenge of managing biomass. Thus, biorefining mango peel to extract valuable components has the potential to reduce organic waste and create a new revenue source for the mango processing sector. This study aims to examine the physiology, physiochemical, and chemical characteristics in peel of nine Thai mango cultivars, along with the relationship between their characteristics. The Thai mango cultivars Mahachanok, Chok anan, and Rad exhibited a yellow appearance, while the other six cultivars appeared yellow-green. However, the firmness of the fruit was directly correlated with the firmness of the pulp. A proximate composition study revealed that the predominant constituent of mango peel was carbohydrates, comprising up to 75% of its composition. This was followed by fibre, which accounted for up to 13%. The Nga mango had the highest levels of total phenolic content (220 mgGAE/g) and total flavonoid content (5.5 mgCE/g). The primary phenolic acids identified in Thai mango peel were epicatechin, caffeic acid, catechin, and gallic acid. The Mahachanok cultivar exhibited the highest antioxidant activity, as determined by the ABTS and DPPH assays, with values of 85.67% and 85.78%, respectively. This study demonstrated the connections between the physiochemical characteristics of mangoes and their chemical compositions in different cultivars, indicating the possibility of choosing particular cultivars for extracting targeted bioactive compounds. The multivariate analyses revealed that there was no correlation between the physiochemical and chemical profiles of mangoes. This study highlights the significance of mango peel as a valuable by-product that has significant environmental and economic ramifications for the mango processing industry.

Comparative Evaluation of Chemical Compositions and Antioxidant Activity in Fruiting Bodies and Mycelia of Volvariella volvacea and Pleurotus sajor-caju Extracts.

Mushrooms, recognized for their rich medicinal and nutritional content, have garnered significant interest due to their potent antioxidant properties. This study investigates the fruiting bodies and mycelia of straw mushrooms (Volvariella volvacea) and grey oyster mushrooms (Pleurotus sajor-caju). The mushrooms were extracted using distilled water at ratios of 1:25, 1:30, and 1:35 g/mL by soaking in a temperature-regulated shaking bath set at 50°C. The aqueous extracts were analyzed for their bioactive components, including polysaccharides, proteins, GABA, total phenolic content (TPC), and total flavonoid content (TFC), along with their antioxidant capacities using DPPH and ABTS assays. The results indicated that the straw mushroom exhibited higher levels of polysaccharides, GABA, TPC, and TFC compared to the grey oyster mushroom, which contained higher protein levels. Specifically, the fruiting bodies extract of the straw mushroom demonstrated the highest levels of polysaccharides (416.94 mg/g extract), GABA (12.86 mg/g extract), TPC (33.27 mg GAE/g extract), and TFC (9.39 mg CE/g extract). Furthermore, the fruiting bodies extract showed a greater capacity to scavenge free radicals than the mycelia extract of both straw mushroom and grey oyster mushroom, with DPPH assay values of 0.65 and 0.47 mg TE/g extract and ABTS assay values of 2.26 and 1.74 mg TE/g extract, respectively. These results suggest that the fruiting bodies possess higher free radical scavenging potential as an outcome of their high levels of bioactive compounds. Consequently, these extracts indicate promise as natural antioxidative agents and could be effectively utilized as ingredients in the culinary industry.

The effect of Lactiplantibacillus plantarum fermentation and blanching on microbial population, nutrients, anti-nutrients and antioxidant properties of fresh and dried mature Moringa oleifera leaves

Moringa oleifera is an excellent source of nutrients and functional ingredients of human health significance. This study was conducted to determine the role of lactic acid fermentation and blanching in improving nutritional attributes and functional properties of M. oleifera leaves. Submerged lactic acid fermentation of M. oleifera was carried out for 24 h by using a Lactiplantibacillus plantarum strain. The results showed that fermentation resulted in a microbial population of M. oleifera leaves dominated with higher count of L. plantarum i.e., 4.06 log10 CFU/g after 24 h fermentation. L. plantarum count was reduced from 4.06 to 1.61 log10 CFU/g in fermented M.oleifera leaves powder after cabinet dehydration. Higher levels of protein (29.87 %), and fiber (32.26 %) were observed in fermented M. oleifera leaves while the levels of carbohydrates (10.74 %), fat (7.72 %), and energy (232.06 kcal) were lower than the levels observed in raw and blanched leaves. Lactic acid fermentation also anticipated reduction in anthocyanin (14.50–10.37 mg/100g), chlorophyll A (52.64–45.35 mg/100g), and lycopene (11.94–9.13 mg/100g) content of M. oleifera leaves. Fermentation significantly (p ≤ 0.05) increased level of total phenolic content i.e., 55.48 mg gallic acid equivalents (GAE)/g, total flavonoid contents i.e., 70.81 mg quercetin equivalent (QE)/g and flavonols i.e., 36.97 mg QE/g. Lactic acid fermentation reduced the levels of intrinsic nutrient inhibitors such as alkaloids (2.74–1.94 g/100g; 29 % ↓), saponins (3.80–2.98 g/100g: 20 % ↓), oxalates (2.43–1.85 g/100g; 24 % ↓), tannin (0.83–0.44 g/100g; 47 % ↓), and phytic acid (1.94–1.02 g/100g; 47 % ↓) compared with the raw leaves. The results suggest lactic acid fermentation is a cost-effective technique to improve nutritional and health perspectives of M. oleifera leaves.

Impact of different pre-treatments and drying methods on the physicochemical properties, bioactive compounds and antioxidant activity of different tomato (Solanum lycopersicum) cultivars

A green pre-treatment approach, microwave (MW) and ultrasound (US), along with drying methods [hot air (HA) and freeze-drying (FD)], was assessed for colour properties, phenolics, carotenoid components and antioxidant activity DPPH, ABTS, FRAP assays of three tomato cultivars (Zzx171, Zzx162 and Zzx65). All three cultivars showed a reduced colour difference (ΔE) after US-FD. The US-FD method retained higher levels of total carotenoids, lutein, β-carotene, lycopene and antioxidant activity in all cultivars than other methods. While US-HA drying retained the highest level of total phenolic content, chlorogenic acid, 4-O-caffeoylquinic acid, rutin, protocatechuic acid and ABTS•+ scavenging activity in powders of all cultivars. ‘Zzx162’ is best suited for US-FD to produce tomato carotenoids-rich functional powder. Powders of ‘Zzx162’ showed the highest lycopene (14.40 mg/g), β-carotene (6.13 mg/g), and ABTS•+ scavenging activity (8.37 SC50 mg/mL). While ‘Zzx162’ with US-HA produced powders rich in chlorogenic acid (58.48 mg/100 g) and rutin (50.33 mg/100 g). These findings suggest that ultrasound pre-treatment is the preferred technology for developing functional tomato powder.

Comprehensive structural analysis of anthocyanins in blue honeysuckle (Lonicera caerulea L.), bilberry (Vaccinium uliginosum L.), cranberry (Vaccinium macrocarpon Ait.), and antioxidant capacity comparison

The objectives of this research were to analyze anthocyanins in blue honeysuckle (Lonicera caerulea L.), bilberry (Vaccinium vitis-idaea L), and cranberry (Vaccinium macrocarpon Ait.), using HPLC-ESI-QTOF-MS2, Fourteen, fifteen, and eight anthocyanins were identified in blue honeysuckle, bilberry, and cranberry, respectively. Cyanidin-3-glucoside (C3G) and peonidin-3-glucoside were detected in all three types of berries, with blue honeysuckle showing the highest C3G content at 5686.28 mg/100 g DW. Total phenolic content (TPC) and total flavonoid content (TFC), along with ABTS, DPPH, and FRAP assays, were measured. Blue honeysuckle exhibited the highest levels of TPC and TFC. The SOD, POD, and CAT activities in blue honeysuckle were 1761.17 U/g, 45,525.65 U/g, and 1043.24 U/g, respectively, which were significantly superior to those in bilberry and cranberry. The antioxidant mechanisms of these enzymes were investigated by molecular docking, C3G showed a higher affinity for POD, confirming the effectiveness of C3G as an antioxidant.

Evaluation of Chemical Compounds in Local Garlic Genotypes from Southwestern Romania

Garlic (Allium sativum L.) is one of the most esteemed plants due to its medicinal properties. Its health benefits for humans are attributed to its chemical compounds. Few studies characterize garlic genotypes cultivated in Romania concerning their chemical composition. In this context, this study aimed to determine the chemical compounds for 16 local garlic genotypes cultivated under the same climatic and technological conditions. The chemical characteristics studied were the total phenolic content (TPC), total flavonoid content (TFC), reducing sugar content, antioxidant activity (AO), vitamin C, and acidity level. Chemical composition varied significantly among genotypes: TPC ranged from 656.07 to 1317.32 µg GAE/g FW; TFC ranged from 427.08 to 1447.90 µg QE/g FW; vitamin C ranged from 3.24 to 5.37 mg/g FW; reducing sugar content ranged from 3.24 to 5.37 mg/g FW; and the acidity level for the control was 6 meq/100 g. Among the selected genotypes, differences were observed between 3.48 and 11.02 meq/100 g. Significant correlations were noted between different compounds, specifically between TPC and AO, as well as between TPC and acidity level. In conclusion, this study highlights significant variability in terms of chemical composition of local garlic genotypes, which indicates notable differences between them and suggests that the genotypes may have different potential in medicinal and nutritional uses due to their distinctive chemical compositions.

Chemical Composition, Fatty Acids, Total Phenolics and Antioxidant Activity of the Desert Truffle Terfezia Boudieri Chatin in the Northern Region of Saudi Arabia

Terfezia boudieri Chatin (T. boudieri), which belongs to the Terfeziaceae family, is a desert truffle growing naturally from mycorrhizal relationships with plants that inhabit the slightly moist sandy soils of some desert or semi-desert regions. The chemical examination of the methanolic extract of T. boudieri led to the isolation of a new ketone and the known compound mannitol. The structures of the 2 isolated compounds were resolved using spectroscopic analysis including 1D and 2D Nuclear Magnetic Resonance (NMR), Infrared (IR) spectroscopy and were supported by literature data. The GC-MS analysis of the Fatty Acids (FAs) of T. boudieri oils showed high Unsaturated FA (UFA) profile (78.72%). The major FAs were linoleic acid (62.36%) and oleic acid (14.7%). Comparing the extracts obtained, the methanolic extract revealed the highest levels of Total Phenolic Content (TPC) of 185.56 mg GAE/100 g of truffle, thus the same extract showed the best results for antioxidant activity.

Evaluation of banana peel extract (Musa sapientum L.) as a natural antimicrobial for livestock farming

AbstractIntroductionOne of the primary objectives of managing microbial content in livestock farming is to control diseases in the respective animals. Nevertheless, the pervasive development of drug‐resistant bacteria is a consequence of the high levels of antibiotic use that are necessary to achieve this objective. This situation exacerbates animal disease and poses a threat to human health. The purpose of this study was to investigate alternative microbial control methods in livestock farming using banana peel extract.Materials &amp; MethodsThe antioxidant and antimicrobial activities of peel extracts from unripe and ripe cultivated bananas were examined and compared.ResultsThe results are notable because they show that the unripe banana peel extracts exhibited significantly better antioxidant activity than the ripe banana peel extracts in 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH), 2,2′‐azino‐bis(3‐ethylbenzothiazoline‐6‐sulfonic acid (ABTS), and ferric reducing antioxidant power (FRAP) tests. Furthermore, the unripe banana peels showed significant antimicrobial activity in vitro against four bacteria that are commonly found in swine and poultry houses, including Staphylococcus epidermidis, Exiguobacterium indicum, Bacillus cereus, Bacillus siamensis, Bacillus altitudinis, Pantoea ananatis, and Bacillus megaterium. This activity was probably due to their high levels of total phenolic content and total flavonoid content. Then, the spray formulation loaded with the concentrated unripe banana peel extract that was five times higher than the minimum bactericidal concentration was developed and tested. Ethanol, sodium benzoate, tween 80, and glycerine were applied as additives in the spray formulation to increase the extract's solubility and stability. It was found that the developed spray formulation effectively inhibited the growth of S. epidermidis.ConclusionThese research outcomes show that the possible application of banana peel extract is an excellent approach because it is an eco‐friendly alternative to control microorganisms undesired microbial growth in farm animals.

Integrated approach of ultrasound with mild heat treatment on the quality characteristics of yacon (Smallanthus sonchifolius) tuber juice

AbstractThe research delved into the ascendancy of thermosonication (TS) on elevating the alimentary components of yacon (Smallanthus sonchifolius) tuber juice, derived from the yacon plant. This investigation introduces an innovative approach utilizing artificial neural networks (ANNs) coupled with genetic algorithm (GA) for the multifaceted optimization of extraction procedures. It aims to pinpoint the most effective processing parameters for TS, including variations in amplitudes: X1 (40, 50, and 60%) and temperatures: X2 (30, 40, and 50°C) over sonication times: X3 (15, 30, 45, and 60 min). Further, the approach is focused to amplify quality of yacon juice (YJ) and microbial attributes by enhancing certain quality characteristics such as anti‐oxidant activity (AOA), ascorbic acid (AA), total phenolic content (TPC), total carotenoid content (TCC), total flavonoid content (TFC), yeast and mold count (YMC) and total viable count (TVC). The maximum levels of AOA (33.73 ± 2.21%), AA (25.82 ± 2.03 mg/100 ml), TPC (85.08 ± 3.67 mg GAE/ml), TCC (115.82 ± 2.46 βCE μg/ml), TFC (22.52 ± 2.11 mg QE/ml), TVC, and YMC (not detected) were achieved in thermosonicated YJs under optimal conditions using ANN coupled with GA.Practical ApplicationsYacon tuber juice (YJ) treated with thermosonication (TS) showed improved nutritional characteristics, making them a valuable source of functional compounds for nutraceuticals and food industries. Research emphasizes the effectiveness of artificial neural network in predicting the extraction efficiency of YJ and proposes TS as a potential replacement for traditional thermal pasteurization to maintain or enhance YJ quality and functionality. TS provides cost‐effective and sustainable solutions to the food industry by reducing processing time and energy consumption when compared to pasteurization.

From Herb to Dessert: Unveiling Swertia chirata's Impact on Orange Jelly Dynamics

Background: Foods had a distinctive medicinal role as a remedy for illness for many centuries. The threat of Antimicrobial Resistance (AMR) in all over the world is growing extremely due to the reason that any use of antimicrobials, however appropriate and justified, results in accumulation of resistance. Thus, researchers all over the world are toiling hard to introduce foods that possess therapeutic effects as medicine. Citrus fruits were the first foods to provide a true cure of any illness. The present study was undertaken to develop a value- added product that was hypothesized to bestow numerous dietary properties, to meet the ever growing demands of the consumers. Methods: A strategy was developed to formulate good quality jelly from Orange &amp; Swertia chirata. To develop the jelly different proportions of orange juice &amp; S. chirata namely T1 (95:05), T2 (90:10), T3 (85:15) was formulated and T0 was utilized as control (100% orange jelly). In addition to microbial analysis, phytochemical analysis, physicochemical properties, and sensory evaluation were conducted. Results: The physico-chemical properties of the formulated jellies were in alignment with previous studies. The results of the microbiological analysis were excellent. As, there were no detectable levels of E. coli and Salmonella in the formulation for a period of up to 2 months. The sample T3 exhibited maximum level of total phenolic content (168.3 mg GAE/gm), total flavonoid content (49.1 mg QE/gm) and antioxidant activity (135.63 mg/100gm). Therefore, the bioactive compounds had a high precedence on the sample T3 than the control one. Conclusion: After evaluating all the factors, it can be concluded that creating a value-added product will make it easier to market a product that not only attracts consumers but also possesses concealed medicinal properties.

Understanding the nutritional profile of Vigna trilobata: A lesser-known, underexplored grain legume

Vigna trilobata (L.) Verdc. is a potential neo-domesticated legume species of section Aconitifoliae. The seeds are edible, and local communities often cultivate it primarily for pasture but occasionally as a food source. Vigna trilobata is native to Indian subcontinent and frequently distributed in the Southern part of India. In present study, we conducted an evaluation of the proximate composition and phytochemical analysis of Vigna trilobata. The proximate composition and mineral content were determined using AOAC methods. Additionally, we performed phytochemical analysis, antioxidant activity, GC-MS analysis, and FTIR profiling using the methanolic extract of seed powder. Our findings revealed that the seeds of Vigna trilobata are a rich source of crude proteins (17.51 g/100 g) compared to total carbohydrates and free amino acids. They also exhibited high levels of magnesium, followed by sulphur, potassium, sodium, and calcium content. The seed extracts showed elevated levels of total phenolic content (32.23 to 50.12 mg/GAE/100 g), total tannin content (24.91 to 32.15 mg/TTC/100 g), and total alkaloid content (24.66–27.28 mg/CoE/100 g), with relatively lower levels of total flavonoid content (20.83–23.17 mg/RE/100 g). The higher levels of total phenolic content and total tannin content correlated with increased antioxidant activity, as assessed by DPPH and phosphomolybdenum assays. FTIR profiling provided insights into the presence of various functional groups of chemical compounds, while Gas Chromatography-Mass Spectrometry (GC-MS) analysis revealed that the presence of diverse photochemical in seeds incudes Octanoic acid, Decanoic acid, Eicosanal etc. with with antibacterial and anti-inflammatory activity. The results obtained in our investigation provide valuable insights into the nutritional and phytochemical composition of Vigna trilobata seeds. This knowledge could be harnessed in the utilization of Vigna trilobata functional foods and in crop improvement programs aimed at enhancing the nutritional content and health-promoting properties.

Preliminary Investigation of Astragalus arpilobus subsp. hauarensis: LC-MS/MS Chemical Profiling, In Vitro Evaluation of Antioxidant, Anti-Inflammatory Properties, Cytotoxicity, and In Silico Analysis against COX-2.

The search results offer comprehensive insights into the phenolic compounds, antioxidant, anti-inflammatory, cytotoxic effects, LC-MS/MS analysis, molecular docking, and MD simulation of the identified phenolic compounds in the Astragalus arpilobus subsp. hauarensis extract (AAH). The analysis revealed substantial levels of total phenolic content (TPC), with a measured value of 191 ± 0.03 mg GAE/g DM. This high TPC was primarily attributed to two key phenolic compounds: total flavonoid content (TFC) and total tannin content (TTC), quantified at 80.82 ± 0.02 mg QE/g DM and 51.91 ± 0.01 mg CE/g DM, respectively. LC-MS/MS analysis identified 28 phenolic compounds, with gallic acid, protocatechuic acid, catechin, and others. In the DPPH scavenging assay, the IC50 value for the extract was determined to be 19.44 ± 0.04 μg/mL, comparable to standard antioxidants like BHA, BHT, ascorbic acid, and α-tocopherol. Regarding anti-inflammatory activity, the extract demonstrated a notably lower IC50 value compared to both diclofenac and ketoprofen, with values of 35.73 µg/mL, 63.78 µg/mL, and 164.79 µg/mL, respectively. Cytotoxicity analysis revealed significant cytotoxicity of the A. arpilobus extract, with an LC50 value of 28.84 µg/mL, which exceeded that of potassium dichromate (15.73 µg/mL), indicating its potential as a safer alternative for various applications. Molecular docking studies have highlighted chrysin as a promising COX-2 inhibitor, with favorable binding energies and interactions. Molecular dynamic simulations further support chrysin's potential, showing stable interactions with COX-2, comparable to the reference ligand S58. Overall, the study underscores the pharmacological potential of A. arpilobus extract, particularly chrysin, as a source of bioactive compounds with antioxidant and anti-inflammatory properties. Further research is warranted to elucidate the therapeutic mechanisms and clinical implications of these natural compounds.

Exposure of Caralluma tuberculata to biogenic selenium nanoparticlesas in vitro rooting agent: Stimulates morpho-physiological and antioxidant defense system.

The commercial-scale production of Caralluma tuberculata faces significant challenges due to lower seed viability and sluggish rate of root growth in natural conditions. To overcome these obstacles, using phyto-mediated selenium nanomaterials as an in vitro rooting agent in plant in vitro cultures is a promising approach to facilitate rapid propagation and enhance the production of valuable therapeutic compounds. This study aimed to investigate the impact of phytosynthesized selenium nanoparticles (SeNPs) on the morphological growth attributes, physiological status, and secondary metabolite fabrication in in vitro propagated Caralluma tuberculata. The results demonstrated that a lower dose of SeNPs (100 μg/L) along with plant growth regulators (IBA 1 mg/L) had an affirmative effect on growth parameters and promoted earliest root initiation (4.6±0.98 days), highest rooting frequency (68.21±5.12%), number of roots (6.3±1.8), maximum fresh weight (710±6.01 mg) and dry weight (549.89±6.77 mg). However, higher levels of SeNPs (200 and 400 μg/L) in the growth media proved detrimental to growth and development. Further, stress caused by SeNPs at 100 μg/L along with PGRs (IBA 1 mg/L) produced a higher level of total chlorophyll contents (32.66± 4.36 μg/ml), while cultures exposed to 200 μg/L SeNPs alone exhibited the maximum amount of proline contents (10.5± 1.32 μg/ml). Interestingly, exposure to 400 μg/L SeNPs induced a stress response in the cultures, leading to increased levels of total phenolic content (3.4 ± 0.052), total flavonoid content (1.8 ± 0.034), and antioxidant activity 82 ± 4.8%). Furthermore, the combination of 100 μg/L SeNPs and plant growth regulators (1 mg/L IBA) led to accelerated enzymatic antioxidant activities, including superoxide dismutase (SOD = 4.4 ± 0.067 U/mg), peroxidase dismutase (POD = 3.3 ± 0.043 U/mg), catalase (CAT = 2.8 ± 0.048 U/mg), and ascorbate peroxidase (APx = 1.6 ± 0.082 U/mg). This is the first report that highlights the efficacy of SeNPs in culture media and presents a promising approach for the commercial propagation of C. tuberculata with a strong antioxidant defense system in vitro.
