DNA-binding protein-A: a multitool in tubular epithelial cells

Acute kidney injury is still associated with high morbidity and mortality. Reichardt etal. investigated DNA-binding protein-A (Ybx3) in acute kidney injury induced by ischemia-reperfusion injury and found that mice lacking Ybx3 have altered mitochondrial function and increased antioxidant activity, making them more resistant to ischemia-reperfusion injury-acute kidney injury. The study highlights a new role of the multifaceted protein DNA-binding protein-A, which could be potentially therapeutically exploited.

Antioxidant Properties of Lippia alba Essential Oil: A Potential Treatment for Oxidative Stress-Related Conditions in Plants and Cancer Cells

Lippia alba (Mill.) N.E.Br. ex Britton and P. Wilson is used in folk medicine of Central and South America for its biological activities: i.e., antifungal, antibacterial, antiviral, and anti-inflammatory. Based on ethnopharmacological information and the increasing interest in this species, this work aimed to test a possible wide use of its essential oil (EO) in pharmaceutical and horticultural applications. Therefore, we focused the attention on the antioxidant activity of the oil as a possible tool to overcome the oxidative stress in both applications. For this purpose, we have chosen three aggressive breast cancer cell lines and two horticultural species (Solanum lycopersicum L. and Phaseolus acutifolius L.) that are very sensitive to salt stress. We determined the antioxidant activity of L. alba EO through the quantification of phenols and flavonoids. Regarding tomato and bean plants under salt stress, L. alba EO was used for the first time as a seed priming agent to enhance plant salt tolerance. In this case, the seed treatment enhanced the content of phenolic compounds, reduced power and scavenger activity, and decreased membrane lipid peroxidation, thus mitigating the oxidative stress induced by salt. While in breast cancer cells the EO treatment showed different responses according to the cell lines, i.e., in SUM149 and MDA-MB-231 the EO decreased proliferation and increased antioxidant activity and lipid peroxidation, showing high cytotoxic effects associated with the release of lactate dehydrogenase, vice versa no effect was observed in MDA-MB-468. Such antioxidant activity opens a new perspective about this essential oil as a possible tool to counteract proliferation in some cancer cell lines and in horticulture as a seed priming agent to protect from oxidative damage in crops sensitive to salinity.

Biochar & fly ash amendments lower mortality and increase antioxidant activity in chlorpyrifos-exposed earthworms

The investigation presented a novel finding regarding mitigating stress induced by chlorpyrifos in Eisenia fetida by incorporating biochar derived from rice straw and fly ash as soil amendments. It was observed that phenolic compounds exhibit solubility in methanol, and the methanolic fraction exhibited notable inhibitory effects on lipid peroxidation and displayed antioxidant properties. The defence mechanism of E. fetida, comprising catalase (CAT), peroxidase (POD), ascorbate peroxidase (APX), and various other enzymes, remained effective in neutralizing stressors without disruption when the earthworm was subjected to diverse chemical agents or stressful conditions. These enzymes served as indicative markers of toxicity induced by pesticide exposure, even at sublethal concentrations. The scavenging of free radicals by these enzymes ultimately safeguarded the organism. Fly ash and biochar emerged as two organic alternatives capable of alleviating stress by providing a protective mechanism. In this context, the study examined the impact of biochar and fly ash amendments on earthworm biomarkers. The mortality rate at the median lethal concentration of chlorpyrifos was reduced to less than 50% through 3% and 5% modifications. In contrast to the non-amendment group exposed to sublethal doses, the amendment group exhibited higher levels of oxidative stress and lower protein content. This observation indicated the presence of stress induced by the accumulation of free radicals, which increased in number with higher doses of chlorpyrifos. Moreover, the study highlighted the interconnected nature of total antioxidant capacity and total phenolic capacity values, with a decrease in these parameters signifying a shift in earthworm biomarkers.Graphical abstract

Nutritional, antioxidant and biological activity characterization of orange peel flour to produce nutraceutical gluten-free muffins.

Celiac disease - a prevalent food intolerance - requires strict adherence to a lifelong gluten-free (GF) diet as the only effective treatment. However, GF products often lack soluble fibre and have a high glycaemic index. Consequently, there is a pressing need in the food industry to develop GF products with improved nutritional profiles. In this context, the impact of incorporating orange peel flour (OPF) into muffins undergoing sourdough fermentation was examined, focusing on their technological, antioxidant, and nutritional characteristics. The functional properties of OPF were investigated using human colon carcinoma HCT8 cells as a model system. Treatment with OPF extract demonstrated a notable reduction in malignant cell viability and intracellular ROS levels, indicating potent antioxidant capabilities. Western blot analysis revealed significant alterations in key signalling pathways, including increased phosphorylation of NF-kB at serine 536 and reduced intracellular levels of caspase-3, alongside increased phosphorylation of RIPK3 and MLKL, suggesting potential involvement in necroptosis. OPF incorporation in muffins with sourdough increased antioxidant activity, reduced glycaemic index, and affected the volatile profile. Furthermore, based on simulated colonic fermentation, muffins with OPF showed a slight prebiotic effect, supported by the significant increase in bacillus-shaped lactic acid bacteria and Clostridia population. Overall, OPF-enriched muffins demonstrated considerable antioxidant effects and impacts on cell viability, underscoring their potential as functional ingredients in GF products. These findings signify the prospect of OPF enhancing the nutritional profiles and conferring health benefits of GF muffins.

Elderberry Hydrolate: Exploring Chemical Profile, Antioxidant Potency and Antigenotoxicity for Cosmetic Applications

Elderberry (Sambucus nigra L.) hydrolate, derived from domestic steam distillation, holds promise as a multifunctional ingredient for skincare and cosmetic applications. This study investigates the chemical composition and biological activities of elderberry hydrolate obtained through steam distillation. Despite the growing interest in elderberry hydrolate, there has been a lack of comprehensive studies elucidating its chemical composition and potential bioactive constituents. To address this gap, we conducted a detailed analysis of elderberry hydrolate’s composition, antioxidant activity, and antigenotoxicity. Genotoxic evaluation and antioxidant assays (ABTS, DPPH) were conducted to assess its biological properties. We obtained elderberry hydrolate with a notable transfer of aromatic compounds through the steam distillation process, highlighting its efficacy and sustainability. The chemical characterization identified vital compounds, including phenylacetaldehyde, 2-acetyl-pyrrole, and an unidentified major component, collectively contributing to the hydrolate’s aromatic and biological properties. The genotoxic evaluation using the Comet assay demonstrated the hydrolate’s protective effects against DNA damage induced by hydrogen peroxide and streptonigrin. The optimal DNA protection was observed at 10% (w/v), attributed to the antioxidant activity of the identified compounds. The hydrolate exhibited significant antioxidant potential, demonstrating concentration-dependent responses and correlating higher concentrations with increased antioxidant activity. These findings underscore the multifaceted attributes of elderberry hydrolate, positioning it as a promising natural ingredient for skincare. This study supports elderberry hydrolate as a valuable natural and sustainable product development resource.

Fortification of bread with mango peel and pulp as a source of bioactive compounds: A comparison with plain bread

In this study, fortified bread was prepared with the incorporation of mango peel powder (MPP), and mango pulp powder (MPuP). Different concentrations of MPP (2.5 %, 5.0 %, and 7.5 %) and MPuP (7.5 %) were added to improve the functional and bioactive properties of bread. Pieces of bread incorporated with MPP demonstrated a significant improvement in bioactive properties over control and MPuP-fortified bread, where total phenol content elevated from 5.08 ± 0.99 to 54.29 ± 2.34 mM GAE/100 g DM and total flavonoid content raised from 5.7 ± 0.45 to 50.72 ± 3.40 mM QE/100 g DM. The inclusion of MPP increased antioxidant activity, with a range of 0.585 ± 0.12 to 18.20 ± 0.87 mM TE/100 g DM in DPPH assay and 10.75 ± 0.98 to 30.24 ± 2.12 μM Fe (II) E/g DM in FRAP assay, at the highest (7.5 %) level of MPP incorporation. However, the specific volume and weight loss percentage of breads were decreased with the incorporation of MPP. The whiteness index (WI) dropped, and the brownness index (BI) improved with the degree of MPP integration. Bread volume and aroma drop considerably at the level of 7.5 % MPP incorporation, however, a slight mango flavor was noticed with the incorporation of 7.5 % MPuP in breads. Thus, 5 % MPP inclusion in wheat bread was deemed an optimum amount without compromising the sensory and physical characteristics along with national properties.

SNP alleviates mitochondrial homeostasis dysregulation-mediated developmental toxicity in diabetic zebrafish larvae

The incidence of diabetes is increasing annually, and the disease is uncurable due to its complex pathogenesis. Therefore, understanding diabetes pathogenesis and developing new treatments are crucial. This study showed that the NO donor SNP (8 µM) significantly alleviated high glucose-induced developmental toxicity in zebrafish larvae. High glucose levels caused hyperglycemia, leading to oxidative stress and mitochondrial damage from excessive ROS accumulation. This promoted mitochondrial-dependent apoptosis and lipid peroxidation (LPO)-induced ferroptosis, along with immune inflammatory reactions that decreased mitochondrial function and altered intracellular grid morphology, causing imbalanced kinetics and autophagy. After SNP treatment, zebrafish larvae showed improved developmental toxicity and glucose utilization, reduced ROS accumulation, and increased antioxidant activity. The NO-sGC-cGMP signaling pathway, inhibited by high glucose, was significantly activated by SNP, improving mitochondrial homeostasis, increasing mitochondrial count, and enhancing mitochondrial function. It's worth noting that apoptosis, ferroptosis and immune inflammation were effectively alleviated. In summary, SNP improved high glucose-induced developmental toxicity by activating the NO-sGC-cGMP signaling pathway to reduce toxic effects such as apoptosis, ferroptosis and inflammation resulting from mitochondrial homeostasis imbalance.

The Potential of Co-Fermentation of Whole-Plant Cassava with Piper sarmentosum: A Comprehensive Study of Fermentation Quality, Antioxidant Activity, Bacterial Community Structure, and Microbial Ecological Networks in Novel Foods.

The objective of this study was to explore the preservation of food products through the co-fermentation of whole-plant cassava and Piper sarmentosum (PS) without additives. We assessed fermentation quality, antioxidant activity, bacterial community structure, function profile, and microbial ecological network features. Our results demonstrate that co-fermentation of whole-plant cassava with 10% PS significantly improves food quality. The co-fermented samples exhibited enhanced lactic acid concentrations and increased antioxidant activity, with reduced pH values and concentrations of acetic acid, butyric acid, and ammonia-N(NH3-N) compared to whole-plant cassava fermented alone. In addition, PS addition also optimized microbial community structure by elevating the total abundance of lactic acid bacteria and influenced bacterial predicted functions. Furthermore, our analysis of co-occurrence networks reveals that co-fermentation impacts microbial network features, including module numbers and bacterial relative abundances, leading to altered complexity and stability of the networks. Moreover, out study also highlights the impact of ferment undesirable bacteria like Pseudomonas aeruginosa and unclassified_Muribaculaceae playing crucial roles in microbial network complexity and stability. These findings provide valuable insights into the anaerobic fermentation process and offers strategies for regulating food fermentation quality.

Role of Pre-Harvest Sorbitol–Calcium Treatments in Controlling Berry Drop in Bagged Table Grapes of the “Doña María” Variety

Cv ‘Doña María’ table grape is a high-quality table grape variety included in the Protected Designation of Origin (PDO) of the European Union “The bagged grape of the Vinalopó”. The PDO stipulates that grape clusters must be protected with paper bags from inclement weather and insects, which helps enhance the final grape quality. However, ‘Doña María’ is a variety prone to high shattering in the late stages of ripening on the vine and during postharvest. Inorganic calcium treatments are one of the most commonly used tools to reduce this disorder, but the translocation of this mineral from veraison onward has been questioned. In this study, five applications were performed, from veraison to harvest, using sorbitol-chelated calcium (0.7% + 1.0%), Ca(NO3)2 (Ca) at 0.7% and sorbitol at 1%. It was observed that bagged grapes (not wetted with the solutions) only increased the concentration of total and bound calcium when treated with sorbitol–Ca. This resulted in reduced berry drop during cultivation and postharvest and improved fruit firmness. Additionally, it reduced grape metabolism indicators such as respiration rate, weight loss, malic acid degradation, prevented abscisic acid (ABA) and malondialdehyde (MDA) accumulation, and favored the accumulation of secondary metabolites such as total polyphenols, increased antioxidant activity, and sugar content. The application of sorbitol-chelated calcium is an effective and safe tool that enhances fruit quality and prevents losses due to shattering during postharvest.

A meta‐analysis of the effects of ultrasonic pretreatment on the characteristics of dried fruits and vegetables

AbstractParameter selection in ultrasonic pretreatment is closely related to the quality of dried fruits and vegetables, so it is essential to investigate the impact of various parameters of ultrasonic pretreatment on the product quality. In this paper, data from 67 relevant literatures were collected to evaluate the effects of ultrasonic pretreatment on dried fruits and vegetables through meta‐analysis. Overall, the findings indicated that ultrasonic pretreatment could shorten drying time, reduce hardness and improve color appearance of dried products. Subgroup analysis showed that high power ultrasound (P ≥ 300 W) could increase total phenol content and antioxidant activity of dried fruits and vegetables. Additionally, applying short‐duration ultrasound (t < 15 min) increased antioxidant activity, while medium‐duration ultrasound (15 min < t < 30 min) simultaneously enhanced flavonoid content and antioxidant activity. In summary, the application of ultrasonic pretreatment has a positive impact on processing high quality dried fruits and vegetables and obtains better‐quality products in a shorter time compared to direct drying technology.Practical applicationsObtaining higher quality dried fruit and vegetable products in a shorter time has always been a research hotspot in the food industry. This study emphasized the positive effects of ultrasonic pretreatment on fruit and vegetable drying, and provided a theoretical basis for the selection of ultrasonic pretreatment parameters.

Exploring the antioxidant potential of Moringa oleifera leaf extracts mitigating doxorubicin-induced cardiotoxicity in male rats

Doxorubicin (DOX) is a commonly used drug in chemotherapy for cancer treatment. However, it can cause the threatening side effect of cardiotoxicity. This study investigates whether the hydro-alcoholic leaves of Moringa oleifera have any protective potential against DOX-induced cardiotoxicity. The phytochemical analysis showed that the plant extracts contained bioactive compounds with antioxidant activities. The DOX-treated group confirmed a significant increment in cardiac troponin I (cTnI) and proinflammatory cytokine interleukin-6 (IL-6) levels, which indicates damage to the cardiomyocytes and also inflammation. However, treatment with the M. oleifera extracts significantly inhibited DOX-induced cardiomyocyte damage, as indicated by the significantly low cTnI release. Furthermore, treatment with M. oleifera extracts further increased antioxidant activities, thereby decreasing oxidative stress and lipid peroxidation. Moreover, DOX was found to increase the IL-6 level, and treatment with M. oleifera extracts had a significant impact on the inhibition of IL-6 levels. These results indicate that the M. oleifera extracts have a cardioprotective effect and can play a role as an adjunct drug in mitigating DOX-induced cardiotoxicity, thus providing new prospects for the improvement of safety and efficacy in the treatment of cancer.

Inclusion of the Cistus ladanifer L. plant and its condensed tannin extract in lamb diets - Effects on animal antioxidant status and oxidative stability of meat

This study evaluated whether the incorporation of condensed tannin (CT) extract from Cistus ladanifer in lamb diets induces the same antioxidant protection as the C. ladanifer plant. How dietary CT can enhance the antioxidant status of animals and the oxidative stability of their products was also explored. Thirty-six lambs were used to evaluate the effect of three levels of C. ladanifer CT (without CT enrichment, medium, and high level of CT) and two ways of CT supply (C. ladanifer plant or C. ladanifer CT extract) on meat lipid and colour stability, and antioxidant status of muscle, rumen, abomasum, and faeces. The presence of CT monomers in muscle and CT content in digestive contents and faeces was evaluated. Cistus ladanifer plant and CT extract did not improve the lipid stability and antioxidant status of meat, but both CT sources enhanced the meat colour stability over storage time. Condensed tannin monomers were not identified in muscle. Intake of α-tocopherol decreased with inclusion of CT sources in diets. However, muscle α-tocopherol content was not affected by diets, suggesting that CT increase the α-tocopherol availability in muscle. Both CT sources increased antioxidant activity in the digestive contents, although, in the abomasum, C. ladanifer plant resulted in higher antioxidant activity than CT extract for the same CT level in the diet. No CT as detected in the faeces and both CT sources had a minor effect on the antioxidant activity, which could indicate the CT transformation in the gastrointestinal tract.

Influence of Replacing Soybean Meal with Nigella sativa Seed Meal on Feed Intake, Digestibility, Growth Performance, Blood Metabolites, and Antioxidant Activity of Growing Lambs.

The present experiment aimed to evaluate the partial or complete substitution of soybean meal (SBM) with Nigella sativa seed meal (NSM) on chemical composition, in vitro ruminal fermentation, and the growth performance and economic efficiency of growing lambs. Thirty-two male Ossimi lambs weighing 41 ± 0.4 kg at 195 ± 5 d were divided randomly into four experimental groups of eight lambs each. Lambs were fed four diets containing 40% berseem clover and 60% concentrate feed mixture. Soybean meal was replaced with NSM at 0% (NSM0; control), 50% (NSM50), 75% (NSM75), or 100% (NSM100). The experiment lasted for 105 d, consisting of 15 d for adaptation and 90 days for measurements. Higher concentrations of crude protein (CP) and nonstructural carbohydrates were observed with SBM; however, NSM contained more fibers and gross energy. Moreover, SBM contained higher concentrations of individual amino acids and lower concentrations of polyphenols. The replacement did not affect in vitro gas production and decreased (p < 0.05) methane production and CP degradability. Treatments did not affect feed intake, nutrient digestibility, and diet's nutritive value measured as starch value, total digestible nutrient, digestible energy, and apparent digestible crude protein. The NSM50 and NSM75 treatments increased (p < 0.001) total weight gain and daily gain compared to the control treatment, with lower feed conversion values associated with the NSM75 treatment. Treatments decreased cholesterol (p = 0.028) and high-density lipoprotein (p = 0.029) and increased antioxidant activity. Higher economic efficiencies were observed with the NSM75 followed by NSM50 and then NSM100 treatments. It is concluded that replacing 75% of SBM with NSM enhanced feed conversion and economic efficiency.

Ternary nanoparticles of sodium caseinate-zein-hexaglycerol monooleate: Fabrication, characterization, and curcumin encapsulation

To overcome the instability of sodium caseinate (NaCas) and zein binary nanoparticles in gastric digestion, and to improve the encapsulation of curcumin (Cur), hexaglycerol monooleate (HGMO) was employed as an anti-pepsin component to form ternary nanoparticles. The NaCas-Zein-HGMO nanoparticles were prepared using a self-assembly method that only required mixing at room temperature, and the optimal mass ratio for the components was determined to be 2:2:1. At a mass ratio of 1:20 between curcumin and zein, the NaCas-Zein-HGMO nanoparticles showed high encapsulation efficiency (91.18%) and provided effective chemical protection for curcumin. The Cur-NaCas-Zein-HGMO nanoparticles exhibited nanoscale dispersion, with a particle size about 236 nm, and demonstrated remarkable stability. In addition, the Cur-NaCas-Zein-HGMO nanoparticles exhibited improved resistance to simulated gastric fluid (SGF) digestion, increased antioxidant activity, sustained release profile, and exceptional rehydration capability. The results clearly showed that HGMO plays a crucial role in improving the physicochemical properties and encapsulation of curcumin of NaCas-Zein-HGMO nanoparticle. Hence, the novel ternary nanoparticles, NaCas-Zein-HGMO, have the potential to serve as an excellent delivery carrier for hydrophobic bioactive compounds, thereby mitigating their susceptibility to degradation by gastric digestion.

Mechanistic understanding of the improved drying characteristics and quality attributes of lily (Lilium lancifolium Thunb.) by modified microstructure after pulsed electric field (PEF) pretreatment

The effects of the non-thermal (pulsed electric field, PEF) and thermal pretreatment (vacuum steam pulsed blanching, VSPB) on the drying kinetics, quality attributes, and multi-dimensional microstructure of lily scales were investigated. The results indicate that both PEF and VSPB pretreatments improved the drying rate compared to untreated lily scales. Specifically, PEF pretreatment reduced the drying time by 29.58 % − 43.60 %, while VSPB achieved a 46.91 % reduction in drying time. PEF treatment facilitated the enhanced leaching of phenols and flavonoids compared to VSPB treated samples, thereby increasing antioxidant activity. The rehydration ratio of the dried lilies was improved with PEF and VSPB treatment, which closely related to the microstructure. Weibull distribution and Page model demonstrated excellent fit for the drying and rehydration kinetics of lily scales, respectively (R2 > 0.993). The analysis of multi-dimensional microstructure and ultrastructure confirmed the variations in moisture migration and phytochemical contents among different treatments. Consequently, this study offers insights into the technological support for the potential of non-thermal pretreatment in fruits and vegetables.

Cloning and overexpression of the DREB30 gene enhances drought and osmotic stress tolerance in transgenic potato

ABSTRACT Potato is an extremely important food crop due to its high nutritional and economic value; however, this crop suffers losses due to water-deficient conditions. The aim of the study was to analyze the expression profiles of the StDREB30 gene and to study the enzymatic antioxidant system of transgenic potatoes under water-deficient situations. The results depicted that following drought and 20% polyethylene glycol 6000 stresses, transgenic plants showed vigorous growth, increased antioxidant activities, low malondialdehyde, and enhanced differential expression of StDREB30 in transgenics compared to control plants. Results suggest that StDREB30 overexpression mitigated the negative effects of water-deficit treatments by reducing oxidative damage in plants. Hence, the StDREB30 gene retains extensive potential for crop bioengineering to generate highly tolerant crop plants.

Understanding the nutritional profile of Vigna trilobata: A lesser-known, underexplored grain legume

Vigna trilobata (L.) Verdc. is a potential neo-domesticated legume species of section Aconitifoliae. The seeds are edible, and local communities often cultivate it primarily for pasture but occasionally as a food source. Vigna trilobata is native to Indian subcontinent and frequently distributed in the Southern part of India. In present study, we conducted an evaluation of the proximate composition and phytochemical analysis of Vigna trilobata. The proximate composition and mineral content were determined using AOAC methods. Additionally, we performed phytochemical analysis, antioxidant activity, GC-MS analysis, and FTIR profiling using the methanolic extract of seed powder. Our findings revealed that the seeds of Vigna trilobata are a rich source of crude proteins (17.51 g/100 g) compared to total carbohydrates and free amino acids. They also exhibited high levels of magnesium, followed by sulphur, potassium, sodium, and calcium content. The seed extracts showed elevated levels of total phenolic content (32.23 to 50.12 mg/GAE/100 g), total tannin content (24.91 to 32.15 mg/TTC/100 g), and total alkaloid content (24.66–27.28 mg/CoE/100 g), with relatively lower levels of total flavonoid content (20.83–23.17 mg/RE/100 g). The higher levels of total phenolic content and total tannin content correlated with increased antioxidant activity, as assessed by DPPH and phosphomolybdenum assays. FTIR profiling provided insights into the presence of various functional groups of chemical compounds, while Gas Chromatography-Mass Spectrometry (GC-MS) analysis revealed that the presence of diverse photochemical in seeds incudes Octanoic acid, Decanoic acid, Eicosanal etc. with with antibacterial and anti-inflammatory activity. The results obtained in our investigation provide valuable insights into the nutritional and phytochemical composition of Vigna trilobata seeds. This knowledge could be harnessed in the utilization of Vigna trilobata functional foods and in crop improvement programs aimed at enhancing the nutritional content and health-promoting properties.

Safflower cake as an ingredient for a composite flour development towards a circular economy: extrusion versus conventional mixing

Food waste is responsible for the loss of 1.3 billion tons of food, some of which are related to by-products with great nutritional and energy potential that are still underexplored, such as safflower cake derived from the oil extraction industry. Therefore, the aim of this study was to evaluate the effects of incorporating safflower cake (Carthamus tinctorius) and the mixing method used to produce composite wheat-based flour in order to develop a new ingredient. The results were analyzed using ANOVA, and the Tukey test was applied at a significance level of 5 %. The composite flours obtained by the conventional mixing method showed, when compared to wheat flour, a higher concentration of proteins (+5g 100 g−1), minerals (+86 mg kg−1 of Fe, +30 mg kg−1 of Zn), phenolic compounds (15 mg GAE g−1), flavonoids (0.3 mg QE g−1), and lower oil absorption (−0.5 g oil g sample-1), making them suitable for hot flour-based sauces, salad dressings, frozen desserts, cookies and fried products. While extruded composite flours presented better homogenization, reduction of moisture (1 g 100 g−1), lipids (3 g 100 g−1), and mycotoxin concentrations, increased antioxidant activity (DPPH −0.07 IC50 mg/L and ORAC +9 µmol Trolox Eq/g), water absorption and solubility indexes, and oil absorption index, making it suitable for bakery products, meat, and dairy sausages. The developed composite flour proved to be a good nutritional ingredient; thus, its consumption can represent an important nutritional strategy with low production costs, as well as a sustainable solution, reducing food waste and, therefore, toward the concepts of the circular economy.

Comprehensive analysis of oxidative stability and nutritional values of germinated linseed and sunflower seed oil

Germination of seeds is known to affect the nutritional composition of cold-pressed oils. This study focused on the effects of germination on the antioxidants and oxidative stability of linseed and sunflower seed oil. As hypothesized, germination led to increased antioxidant activities and tocopherol, chlorophyll and carotenoid content. Analysis revealed a 37.2 ± 3.5-fold and 11.6 ± 1.5-fold increase in polyphenol content in linseed and sunflower seed oil from germinated seeds, respectively. Using LC-HRMS/MS, profiles with up to 69 polyphenolic substances were identified in germinated seed oils for the first time. Germination promoted lipid hydrolysis, as evidenced by NMR, with overall significant decreases in triacylglycerol content leading to increased diacylglycerol and free fatty acid values. Rancimat measurements predicted a 4.10 ± 0.52-fold longer shelf-life for germinated linseed oil. This study successfully demonstrated the potential of germination to develop PUFA-rich oils with enhanced antioxidant capacity and oxidative stability.

Resveratrol-Enriched Rice Callus Extract Inhibits Oxidative and Cellular Melanogenic Activities in Melan-A Cells.

The excessive production of melanin can cause skin diseases and hyperpigmentation. In this study, resveratrol contained in Dongjin rice seed (DJ526) was increased through callus induction. The antioxidant capacity of resveratrol-enriched rice callus was evaluated using the ABTS radical scavenging method and was equivalent to that of vitamin C. DJ526 rice callus extract significantly increased antioxidant activities in a concentration-dependent manner. The anti-melanogenesis effects of DJ526 rice callus extract were also evaluated in melan-a cells. Resveratrol-enriched rice callus extract significantly (i) decreased the size and number of melanin-containing cells, (ii) suppressed the activity of cellular tyrosinase and melanin content, (iii) downregulated the expression of microphthalmia-associated transcription factor, tyrosinase, tyrosinase-related protein-1, and tyrosinase-related protein-2, (iv) increased the expression of phosphorylated extracellular signal-regulated kinase 1/2 and protein kinase B, and (v) inhibited the activation of phosphorylated p38 in melan-a cells. From the above observations, DJ526 rice callus extract showed strong antioxidant and anti-melanogenesis activity at the concentration test. These findings indicate the potential of resveratrol-enriched rice callus as a novel agent for controlling hyperpigmentation.
