Nutrient and salinity stress induced biodiesel production from a green alga, Monoraphidium neglectum

The potential of a green alga as a versatile and sustainable feedstock for biodiesel production was assessed. Molecular identification revealed the alga to be Monoraphidium neglectum. Under diverse growth conditions, including nutrient deficiency and salinity stress, the microalga showed robust adaptability. Under nitrate deficiency (N-, the lipid content peaked (30.67 %), with a notable increase in monounsaturated fatty acids (MUFA), reaching 50.72 % in the stressed sample. Additionally, the highest polyunsaturated fatty acid (PUFA) content (24.55 %) was observed at a salinity level of 0.12 M. At 0.01 M salinity, the highest total carbohydrate content was observed. A significant fatty acid methyl ester (FAME) yield of 85.08 % was obtained under nitrate deficiency (N-) emphasizing its biodiesel production potential. The as-obtained biodiesel exhibited low viscosity, superior low-temperature performance and enhanced oxidation stability rendering the alga as an ideal candidate for eco-friendly, sustainable biodiesel production.

Olive Oil and Vegetable Extract in Modified Hospital Enteral Formula Improves Glycemic Variability in Critically-Ill Diabetic Ketoacidosis Obese Patient: A Case Report

Background: Severe hyperglycemia in diabetic ketoacidosis may elevate pro inflammatory cytokines, oxidative stress, and metabolic disruptions, impacting the nutritional status of critically ill patients. Diabetes-specific formula (DSF) administration is linked to favorable glycemic control, but research on the role of modified hospital enteral formulas in diabetic critical illness is lacking.
 Case Description: An obese 29-year-old male at risk of malnutrition, presented to the emergency room with decreased level of consciousness due to metabolic encephalopathy, diabetic ketoacidosis due to suspected type 1 diabetes mellitus, hypertension, and acute kidney injury. Medical nutritional therapy was provided via enteral route according to recent ESPEN, ASPEN and ADA recommendation. The administered enteral formula was a modified hospital-based enteral formula, consisting of a special kidney hospital-based enteral formula mixed with olive oil as source of monounsaturated fatty acid (MUFA) and vegetables as source of fibers. During the first week of hospitalization, the patient’s coefficient of variation (%CoV) of glycemic variability ranged between 17–61%, in addition, at the beginning of the second week of treatment there was also an increase in glycemic variability to 53%. This could be influenced by several factors. However, improvement in glycemic variability was observed in the following days. This improvement was in line with the gradual increase in MUFA and fiber intake, which reached its highest intake during the second week of hospitalization.
 Conclusion: Hospital-based enteral formula modified with olive oil and vegetable extract can be made to resemble the nutrients composition of diabetes specific formula and has a favorable effect on glycemic variability.

Effect of conduction drying on nutrient and fatty acid profiles: a comparative analysis of hazelnuts and walnuts

The objective of this study was to investigate the changes in the nutrient and fatty acid profiles of hazelnuts (Corylus avellana) and walnuts (Juglans regia) subjected to continuous drying. Samples from two consecutive years (2020 and 2021) were analyzed for nutritional value both before and after conduction drying. Thermal conduction drying was performed at 60 and 80°C at intervals of 15, 30, 45, and 60 min. The results showed that hazelnuts had increased ash, protein (from 16.4 to 18.7%), carbohydrate and starch content, while walnuts had a higher pH and fat content (from 60.97 to 71.02%). After drying, increasing temperatures resulted in significant changes in nutrient concentrations for both nuts, including changes in ash, protein, fat (hazelnuts from 58.69 to 71.48% at 60°C for 60 min), carbohydrate and starch content, and pH. Monounsaturated and polyunsaturated fatty acid content varied by sample and year, with notable trends such as the increase in oleic acid in walnuts from 82.26 to 83.67%. Longer drying times and higher temperatures correlated with an increase in monounsaturated fatty acids and a decrease in polyunsaturated fatty acids in both nut types. In conclusion, conduction drying, especially at higher temperatures and longer durations, significantly affects the nutrient and fatty acid profiles of hazelnuts and walnuts. The study provides new insights into the effects of drying conditions on the nutrient composition and fatty acid profiles of hazelnuts and walnuts and reveals significant changes that warrant further investigation. It sets the stage for future research to extend these findings to other nut species and alternative drying processes and highlights the importance of optimizing processing parameters for improved health benefits and sustainability.

Enhancing milk quality and modulating rectal microbiota of dairy goats in starch-rich diet: the role of bile acid supplementation.

Diets rich in starch have been shown to increase a risk of reducing milk fat content in dairy goats. While bile acids (BAs) have been used as a lipid emulsifier in monogastric and aquatic animals, their effect on ruminants is not well understood. This study aimed to investigate the impact of BAs supplementation on various aspects of dairy goat physiology, including milk composition, rumen fermentation, gut microbiota, and BA metabolism. We randomly divided eighteen healthy primiparity lactating dairy goats (days in milk = 100 ± 6 d) into two groups and supplemented them with 0 or 4g/d of BAs undergoing 5weeks of feeding on a starch-rich diet. The results showed that BAs supplementation positively influenced milk yield and improved the quality of fatty acids in goat milk. BAs supplementation led to a reduction in saturated fatty acids (C16:0) and an increase in monounsaturated fatty acids (cis-9 C18:1), resulting in a healthier milk fatty acid profile. We observed a significant increase in plasma total bile acid concentration while the proportion of rumen short-chain fatty acids was not affected. Furthermore, BAs supplementation induced significant changes in the composition of the gut microbiota, favoring the enrichment of specific bacterial groups and altering the balance of microbial populations. Correlation analysis revealed associations between specific bacterial groups (Bacillus and ChristensenellaceaeR-7group) and BA types, suggesting a role for the gut microbiota in BA metabolism. Functional prediction analysis revealed notable changes in pathways associated with lipid metabolism, suggesting that BAs supplementation has the potential to modulate lipid-related processes. These findings highlight the potential benefits of BAs supplementation in enhancing milk production, improving milk quality, and influencing metabolic pathways in dairy goats. Further research is warranted to elucidate the underlying mechanisms and explore the broader implications of these findings.

Effect of Boiling on Chemical Composition of Small Brown Snail (Cornu aspersum aspersum) Meat

Abstract The aim of this study was to assess the changes occurring as a result of boiling (100°C, 1 h) small brown snail (Cornu aspersum aspersum) meat in relation to its proximate composition, calcium, phosphorus and cholesterol content, as well as the profile of fatty acids and nutritional quality indices of the lipids. This species of snail was selected for research because it is currently of the greatest economic importance among edible terrestrial snails. It was hypothesized that the cooking effect may be different for foot and visceral sac. Samples for the research were collected from 6 populations bred on experimental fields of the National Research Institute of Animal Production in balice (Poland). The foot and the visceral sac, the edible parts of the snail species under investigation, were analysed separately, raw and boiled in water. The results were then compared to analogous studies carried out by other authors on beef, pork and poultry. It was found that in the visceral sac of Cornu aspersum aspersum the shares of dry matter, crude protein, fat, ash, calcium and phosphorus were greater than those in the foot (P<0.05), both in the raw and boiled material, whereas the cholesterol content was higher in the foot (P<0.05). Generally, especially in the foot, the heat treatment elevated the levels of the afore-mentioned quantities, yet the increases were not always statistically significant. Boiling the snail meat caused moderate changes in the fatty acid composition. The profile of the fatty acids and the nutritional quality indices of the foot fat were more advantageous than those in the visceral sac. In both parts of the snail carcass, the polyunsaturated fatty acids/saturated fatty acids (PUFA/SFA) ratio substantially exceeded the minimum value of 0.45 recommended by the British Department of Health. However, the n-6/n-3 ratio was too high, exceeding the maximum recommended level of 4.0 twofold and as much as threefold in the case of the foot and the visceral sac, respectively. In the foot, due to boiling, an increase of the share of sfa and monounsaturated fatty acids (MUFA) was observed, while PUFA, n-6 and n-3 decreased. In the visceral sac, the changes were less pronounced with a slight decrease of the share of sfa and PUFA, and an increase of MUFA. Therefore, in the foot, boiling worsened the PUFA/SFA ratio, the nutritive value index (NVI = (C18:0 + C18:1) / C16:0) and dietary fatty acids having a desirable neutral and hypocholesterolemic effect in humans (DFA = Σ MUFA + Σ PUFA + C18:0), but in the visceral sac these indices practically did not change. On the whole, the trends of the changes in terms of chemical composition due to boiling found in the small brown snail meat are similar to those after heat treatment of meat from popular farm animals, but the ranges of the changes differ.

Chronic dietary exposure to a glyphosate-based herbicide in broiler hens has long-term impacts on the progeny metabolism

Glyphosate-based herbicides (GBH) are the most commonly used herbicides in agriculture. Several studies reported possible adverse effects on human and animal models after a GBH exposure. However, the effects of a temporary maternal exposure on the progeny have been poorly documented, especially in avian models. We investigated the effects of a hen chronic dietary exposure to a GBH on the progeny, obtained during the period following the withdrawal of GBH from the diet. Hens were exposed to a GBH via their food for 6 wk, after which the GBH was removed from their food. Eggs from these hens were collected 3 wk after the GBH was withdrawn for 1 wk. We monitored the growth performances, metabolic parameters, and behavior from the progeny of the hens (Ex-GBH chicks, n=186) and compared them with those of unexposed control-hen progeny (CT chicks, n=213). Ex-GBH chicks were more likely to explore their new environment than CT chicks during the open-field test. In addition, they had an increased fattening and blood triglycerides level, whereas their food consumption was similar to CT chicks. Quantitative PCR on the chemerin system and FASN in chicks livers indicate a transcriptional activity in favor of fatty acid synthesis, and lipidomic analysis on chicks abdominal adipose tissue reveal a global increase in monounsaturated fatty acid and a global decrease in polyunsaturated fatty acids. Seven genes involved in the synthesis of fatty acids were identified with the open access LIPIDMAP software, and their disturbance in Ex-GBH chicks was confirmed via qPCR. Taken together, these results suggest that the progeny of hens temporarily exposed to a GBH are more likely to fatten, even with a balanced diet. The removal of GBH from their contaminated environment would therefore not be sufficient to completely restore their health, has it could induce transgenerational effects.

Dual oxidative stress and fatty acid profile impacts in Paracentrotus lividus exposed to lambda-cyhalothrin: biochemical and histopathological responses.

Lambda-cyhalothrin (λ-cyh) is a potential pyrethroid insecticide widely used in pest control. The presence of pyrethroids in the aquatic ecosystem may induce adverse effects on non-target organisms such as the sea urchin. This study was conducted to assess the toxic effects of λ-cyh on the fatty acid profiles, redox status, and histopathological aspects of Paracentrotus lividus gonads following exposure to three concentrations of λ-cyh (100, 250 and 500µg/L) for 72h. The results showed a significant decrease in saturated fatty acid (SFAs) with an increase in monounsaturated fatty acid (MUFAs) and polyunsaturated fatty acid (PUFAs) levels in λ-cyh treated sea urchins. The highest levels in PUFAs were recorded in the eicosapentaenoic acids (C20:5n-3), docosahexaenoic acids (C22:6n-3) and arachidonic acids (C20:4n-6) levels. The λ-cyh intoxication promoted oxidative stress with an increase in hydrogen peroxide (H2O2), malondialdehyde (MDA) and advanced oxidation protein products (AOPP) levels. Furthermore, the enzymatic activities and non-enzymatic antioxidants levels were enhanced in all exposed sea urchins, while the vitamin C levels were decreased in 100 and 500µg/L treated groups. Our biochemical results have been confirmed by the histopathological observations. Collectively, our findings offered valuable insights into the importance of assessing fatty acids' profiles as a relevant tool in aquatic ecotoxicological studies.

Composition, Organoleptic Characteristics, Fatty Acid Profile and Oxidative Status of Cow's Milk and White Cheese after Dietary Partial Replacement of Soybean Meal with Flaxseed and Lupin.

The effect of partial substitution of soybean meal by equal quantities of flaxseed and lupins in diets of Holstein dairy cows and heifers was investigated. A total of 6 animals (30 multiparous and 30 primiparous) were allocated into two equal groups in a randomised block design and fed control (group CO) or modified (group FL) TMR diets from three weeks prior to calving until day 40 postpartum. The TMR of group CO contained corn, barley, soybean meal, rapeseed cake, corn silage, and Lucerne hay, whereas in group FL equal quantities of whole flaxseed and lupins were used to replace 50% of the soybean meal in the TMR. All animals were fed twice daily with a daily allowance of 24 kg dry matter intake per animal. Milking was carried out three times daily and milk yield was recorded during every milking. Milk samples were analysed for chemical composition and SCC content. White cheeses were manufactured from bulk milk of each group at industrial level. Bulk milk and white cheese were analysed for chemical composition and fatty acid profile; cheese was also assessed for its organoleptic properties. Results indicate that milk yield did not differ among groups. Lipid oxidation values were similar among the groups, for both milk and cheese. However, FL inclusion resulted in lower (p < 0.05) protein carbonyls and higher (p < 0.05) phenolic compounds in both milk and cheese samples. Milk from the FL group had decreased palmitic (p < 0.05) and myristic (p < 0.05) and increased oleic (p < 0.05) and linolenic acid (p < 0.05) when compared to group CO. White cheese from group FL showed a decrease in saturated fatty acids (SFA) (p < 0.05), an increase in monounsaturated fatty acids (MUFA) (p < 0.05), and a higher increase in polyunsaturated fatty acids (PUFA) (p < 0.05) when compared with that of group CO. The white cheese of cows fed diets with flaxseed and lupins showed compositional and organoleptic properties quite similar to control group cheese; aroma, texture, and color were acceptable and desirable in both cheeses. However, increased levels of n-3 polyunsaturated fatty acids were found in the cheese of FL fed animals. The substitution of soybean meal by flaxseed and lupins in diets of Holstein cows warrants further investigation, especially towards the production of cheese that meet the consumers' demand for novel and healthier dairy products.

Minor Variety of Campania Olive Germplasm (“Racioppella”): Effects of Kaolin on Production and Bioactive Components of Drupes and Oil

The effects of climate change have a great impact on the Mediterranean regions which are experiencing an increase in drought periods with extreme temperatures. Among the various solutions reported to reduce the damage caused by extreme environmental conditions on olive plants, the application of anti-transpirant products is widespread. In an increasingly current scenario of climate change, this study was designed to evaluate the effect of kaolin on the quantitative and qualitative parameters of drupes and oil in a little-known olive cultivar known as "Racioppella", belonging to the autochthonous germplasm of Campania (Southern Italy). To this purpose, the determination of maturation index, olive yield/plant, and bioactive components analysis (anthocyanins, carotenoids, total polyphenols, antioxidant activity, and fatty acids) were carried out. Kaolin applications showed no statistically significant differences in terms of production/plant while a significant increase in the drupe oil content was observed. Kaolin treatments resulted in increased anthocyanins (+24%) and total polyphenols (+60%) content and at the same time a significant increase in the antioxidant activity (+41%) of drupes was recorded. As far as oil is concerned, the results showed an increase in monounsaturated fatty acids, oleic and linoleic acids, and total polyphenols (+11%). On the basis of the results obtained, we can conclude that kaolin treatment can be considered as a sustainable solution to improve qualitative parameters in olive drupes and oil.

Abstract 15134: Joint Associations of Fatty Acids With Inflammation and Lipid Profiles: A Mixture Analysis Approach

Introduction: The human diet consists of a complex mixture of fatty acids with differential effects on cardiovascular health. Saturated fatty acids have been shown to exert a hypercholesterolemic effect, while omega-3 polyunsaturated fatty acids have anti-inflammatory properties. Advanced statistical approaches are needed however to address whether their covarying relationships may contribute to varying outcomes on cardiovascular health. Methods: We used data on adult participants from the 2003-2004 and 2011-2012 National Health and Nutrition Examination Survey. Blood lipid levels were measured in 2,926 participants, and C-reactive protein (CRP) was measured in 1,339 participants. Fatty acids were measured in serum or plasma and analyzed as the percentage of total fatty acids. We used covariate-adjusted quantile g-computation to assess the joint effects of 6 saturated, 6 monounsaturated, and 11 polyunsaturated fatty acids on log-transformed outcomes, as well as examine the relative contribution of each fatty acid to the joint mixture effect. Results: We estimated positive associations between the mixture of saturated fatty acids with total cholesterol and LDL, which was primarily driven by myristic acid and docosanoic acid. The mixture of monounsaturated fatty acids was associated with lower total cholesterol and LDL, but higher CRP with a quartile increase in monounsaturated fatty acids associated with 21.1% (95% CI: 7.9, 35.9) higher CRP. The mixture of omega-6 polyunsaturated fatty acids was positively associated with both total cholesterol and LDL. We found that the mixture of omega-3 polyunsaturated fatty acids was negatively associated with CRP and LDL. A quartile increase in omega-3 fatty acids was associated with -11.6% (95% CI: -18.8, -3.7) lower CRP, and -2.1% (95% CI: -3.6, -0.4) lower LDL. The relationship with CRP was primarily driven by docosapentaenoic n-3 acid and eicosapentaenoic acid, while the relationship with LDL was driven by docosapentaenoic n-3 acid and docosahexaenoic acid. Conclusions: Assessing the complex mixture of fatty acids, we found distinct beneficial relationships between omega-3 fatty acids with inflammation and lipid profiles, with an important role of docosapentaenoic n-3 acid.

Nutritional Properties of Milk from Dairy Ewes Fed with a Diet Containing Grape Pomace.

The aim of the present study was to evaluate the effects of a diet containing a 10% of grape pomace (GP) on the milk yield, chemical-nutritional characteristics, total phenolic compounds (TPCs), antioxidant activity (AOA), fatty acids and proteins profile of dairy ewe’s milk. Forty-six ewes were dived into two groups: a control group (Ctrl), fed a standard diet, and an experimental group (GP+), whose diet was supplemented with 10% of GP on dry matter. The trial lasted 60 days and milk samples were collected and analyzed at the beginning (T0) and after 60 (T60) days. Dietary enrichment with GP did not affect the yield and the chemical composition of the milk. TPCs and AOA were not affected by the diet. After 60 days, the diet induced an increase in monounsaturated fatty acids (MUFA) and a decrease in medium chain saturated fatty acids (MCSFA), but the total saturated fatty acids (SFA), polyunsaturated fatty acids (PUFA), short chain saturated fatty acids (SCSFA) and long chain saturated fatty acids (LCSFA) were not modified. A decrease in the C14 desaturation index and an increase in the C18 index were also detected. Total caseins and whey protein were not affected by GP, even if a lower content of k-casein in GP+ milk compared to Ctrl milk was observed on the 60th day. The results of the present study suggest that 10% of GP can be included in the diet of lactating ewes without modifying milk gross composition but inducing significantly changes the fatty acid profile.

Abscisic acid improves the safflower seed oil content for biodiesel production via CtDof2 gene regulation

Biodiesel, an alternative to fossil fuel, is an important sustainable energy source and has thus received considerable attention under global energy crisis scenarios. Safflower seed oil is a good substrate for biodiesel production, however, the poor oxidative stability of safflower seed oil is one of the factors limiting the quality of biodiesel. This study aimed to optimize the safflower seed oil-based biodiesel production process and attempted to regulate the expression of the CtDof2 gene through abscisic acid to affect the safflower seed oil content, thereby improving biodiesel yield. This research optimized the preparation conditions: catalyst concentration 0.56%, molar ratio of oil to alcohol 1:6.4 and temperature 105 ℃ using response surface methodology, and the highest yield of biodiesel was 95.7 ± 0.2%. To test hypothesis that the application of abscisic acid alters safflower seed oil content via CtDof gene regulation, we expressed CtDof2 in yeast, which increased yeast oleic acid content by 27.3% and decreased stearic acid content by 20.6%. The increase in monounsaturated fatty acids predicts the improvement of biodiesel quality. Meanwhile, abscisic acid altered the fatty acid composition of safflower seed oil by regulating CtDof2, leading to an increase in the antioxidant capacity of biodiesel. This study provides new ideas for the improvement of biodiesel feedstock and the improvement of biodiesel quality in the future.

Valorization of macroalgae digestate into aromatic rich bio-oil and lipid rich microalgal biomass for enhanced algal biorefinery performance

The valorization of macroalgae digestate as a secondary resource for high value chemicals and nutrients will promote the sustainability and circularity of anaerobic digestion based biorefinery. In this study, three digestates from A. nodosum C.linum and L. digitata were separated into liquid and solid fractions to investigate the production of high value added chemicals through pyrolysis using Pyrolysis Gas Chromatography Mass Spectroscopy (Py-GC/MS) while the filtered liquid fractions were tested as an alternative culture media to grow C. sorokiniana under mixotrophic conditions. The digestates showed different thermal degradation and an improvement of bio-oil profiles compared to the starter material. Pyrolyzates from raw macroalgae were characterized by a high anhydrosugar content in contrast to high aromatics observed in the case of their digestates. Toluene, benzofuran and vinylphenol, base chemicals for many industries, represented together 30–37% of the total chemicals produced during pyrolysis of the three macroalgae digestate. On the other hand, C. sorokiniana cultured on digestate-based media showed a higher lipid content with an increase in monounsaturated fatty acids and a lower polyunsaturated fatty acid content in comparison to microalgae grown in standard tris-acetate-phosphate media. Thus, the acyl composition was shifted in a direction more suitable for biodiesel production by this process. In addition, the increase of Chemical Oxygen Demand and Volatile Fatty Acids concentration in the digestate was found to reduce ammonium toxicity. Finally, 94% of Chemical Oxygen Demand and 83% of ammonium were removed by microalgae from the digestate-based media which will reduce the pollution risk of the biorefinery. Overall, the results indicate that using macroalgae solid digestates can generate improvements in the quality of products obtained by pyrolysis and the liquid digestate can positively influence microalgae growth and its products.

Combined effect of olive pruning residues and spent coffee grounds on Pleurotus ostreatus production, composition, and nutritional value.

No previous study assessed the combined effect of olive pruning residues (OLPR) and spent coffee grounds (SCG) on P. ostreatus production and nutritional value. The aim of this study was to determine the capacity of P. ostreatus to degrade lignocellulosic nature of combined OLPR and SCG as well as their resultant nutrient composition. A complete randomized design was adopted with five treatments: S1:100%wheat straw (WS) (control), S2:33%WS+33%SCG+33%OLPR,S3:66%WS+17%SCG+17%OLPR,S4:17%WS+66%SCG+17%OLPR, and S5:17%WS+17%SCG+66%OLPR, and ten replicates per treatment. Substrate’s and mushroom’s composition were analyzed on chemical scale, including fatty acids and heavy metals profiles, following international standards. Only S1, S2, and S3 were productive, with comparable biological yield, economical yield, and biological efficiency. Organic matter loss decreased with increasing proportions of OLPR and SCG. Percentage lignin loss was higher in S1 than in S2 and S3 (53.51, 26.25, and 46.15% respectively). Mushrooms of S3 had some enhanced nutritional attributes compared to control: decrease in fat, increase in protein, increase in monounsaturated fatty acids, and lower zinc accumulation. Lead was less accumulated in S2 than S1 mushrooms. Sodium content of mushroom decreased in S2 and S3. The latter substrates yielded mushrooms with lower polyunsaturated fatty acids (PUFA) and higher saturated fatty acids (SFA) contents. All mushrooms had a valuable PUFA/SFA. This study suggests using OLPR and SCG in low proportions as nutritional supplements to the commercial wheat straw.

Effect of Production System (Intensive and Free-Range), Slaughter Age and Gender on Nutrient and Fatty Acid Composition of Meat in Partridges (Alectoris chukar)

This study was conducted to determine the effect of production system, slaughter age, and gender on the nutrient composition, fatty acids profile, and index values of breast and thigh meat in Alectoris chukar partridges. Partridges were slaughtered at 14, 16, and 18 weeks of age and skinless breast and thigh meat of male and female were used in the study (a total of 96 samples in 2 replicates). The production system affected only the crude fat level of the thigh meat in terms of nutrient composition and it was found higher in the intensive system compared to the free-range system. Age and gender did not significantly affect the composition of breast and thigh meat. In terms of fatty acid profile, erucic acid (C22:1n9) level in breast meat was higher in intensive system, while it was higher in thigh meat in free-range. While the percentage of docosahexaenoic acid (C22:6n3) increased with age in breast meat, it decreased in thigh meat with age. While eicosenoic acid (C20:1) percentage was higher in breast meat of male birds compared to females, only stearic acid (C18:0) was found to be higher in thigh meat. Saturated fatty acids (SFA), linolenic acid (n3), thrombogenic index (TI) and atherogenic index (AI) values were higher in thigh meat produced in free-range system, while polyunsaturated fatty acids (PUFA), total unsaturated fatty acids (UFA), linoleic acid (n6) and hypocholesterolaemic / hypercholesterolaemic ratio (h/H) were significantly higher in intensive system. While SFA and TI levels in thigh meat decreased with age, monounsaturated fatty acids (MUFA), UFA and oleic acid (n9) percentages increased. MUFA / SFA in thigh meat of females was higher than males, other indexes were found insignificant. The results shows that partridges had desirable fatty acid composition. Especially, the increase in MUFA and UFA values with age in thigh meat compared to breast indicates that thigh meat is enriched in terms of unsaturated fatty acids. However, the higher SFA and AI values obtained in the free-range system could be considered a negative outcome for alternative production systems that prioritize bird welfare and consumer demands.

Effect of harvesting month and proximity to fish farm sea cages on the lipid profile of cultivated Saccharina latissima

Macroalgae aquaculture is thriving, and kelps such as Saccharina latissima, are now farmed over different production sites across Europe. Macroalgae production in integrated multi-trophic aquaculture setups is gaining relevance due to increased biomass yield and bioremediation potential. Nevertheless, there is a substantiated need to understand how this type of production shapes biomass composition. The present study evaluated the influence of time of harvesting and proximity to nutrient source (fish farm sea cages) on the elemental and biochemical composition of S. latissima, with special emphasis on its lipid content. Overall, the differences recorded for elemental, biochemical and lipid composition of S. latissima occurred consistently with harvesting period rather than with the distance to fish farm sea cages, evidencing that farming kelp in integrated multi-trophic aquaculture setups does not compromise nutritional quality while promoting increased biomass yield. Elemental and biochemical composition differed between kelp biomass harvested in April and those harvested in May and June, with lower C, H and carbohydrates, and higher ash contents in the later. Fatty acid profile analysis revealed an increase in monounsaturated fatty acids along the harvesting period, as well as a decrease in n-3 fatty acids with a concomitant increase of the n-6/n-3 ratio from April to May. Statistical analysis of the polar lipidome identified by liquid chromatography-mass spectrometry revealed differences in specific lipid signatures, displaying a perfect discrimination between harvesting periods. The discrimination between samples from reference and integrated multi-trophic aquaculture sites was only observed for kelp biomass harvested in June. Contributing particularly to these differences are betaine lipids, more abundant in the two later time points, and some lysolipid species, especially abundant in June. These findings will allow a more integrated look at macroalgae production under integrated multi-trophic aquaculture framework, thus promoting the systematization of farming practices that may enhance yield with biochemical quality to match the increasing demands by the food industry and sustainable biorefinary pipeline.

Enhancing PUFA-rich polar lipids in Tisochrysis lutea using adaptive laboratory evolution (ALE) with oscillating thermal stress.

Adaptive laboratory evolution is a powerful tool for microorganism improvement likely to produce enhanced microalgae better tailored to their industrial uses. In this work, 12 wild-type strains of Tisochrysis lutea were co-cultivated under increasing thermal stress for 6 months. Indeed, temperature was oscillating daily between a high and a low temperature, with increasing amplitude along the experiment. The goal was to enhance the polyunsaturated fatty acid content of the polar lipids. Samples were taken throughout the evolution experiment and cultivated in standardized conditions to analyze the evolution of the lipid profile. Genomic analysis of the final population shows that two strains survived. The lipid content doubled, impacting all lipid classes. The fatty acid analyses show a decrease in SFAs correlated with an increase in monounsaturated fatty acids (MUFAs), while changes in polyunsaturated fatty acid (PUFAs) vary between both photobioreactors. Hence, the proportion of C18-MUFAs (18:1 n-9) and most C18-PUFAs (18:2 n-6, 18:3 n-3, and 18:4 n-3) increased, suggesting their potential role in adjusting membrane fluidity to temperature shifts. Of particular interest, DHA in polar lipids tripled in the final population while the growth rate was not affected. A new inverse olive oil emulsion plus carrot powder to replace animal fat in model meat batters

This study entails the usage of an inverse (W/O) emulsion system with olive oil to replace beef fat (BF) in model meat batters with carrot powder (CP) to improve quality. Nine different formulations were prepared by the replacement of 0, 50, and 100% BF with W/O emulsion plus 0, 2, and 4 g/100 g CP. Total fat reduction up to 35% could be obtained in samples having inverse emulsions. Total replacement of BF with inverse emulsions yielded a reduction in saturated fatty acids from 46 to 17.5, while yielding an increase in mono-unsaturated fatty acids from 51.2 to 72.5, as well as an increase in poly-unsaturated fatty acids from 2.2 to 9.7 g/100 g lipid, thus improving the nutritional ratios of lipid composition. Use of inverse emulsion yielded batters with increased lightness, while CP was implicated in increased redness and yellowness. Hardness, gumminess, and chewiness were lower, while cohesiveness was higher in W/O emulsion batters than in control. Oxidative and technological quality could be ensured through the utilization of CP in inverse emulsion samples. The incorporation of inverse emulsions and CP promises to convey healthier oils and natural ingredients, as well as to maintain the quality of emulsified meat systems.

Physicochemical Composition and Nutritional Properties of Deer Burger Enhanced with Healthier Oils.

Deer meat is characterized by low fat and cholesterol contents and high amounts of protein and polyunsaturated fatty acids. In this regard, the aim of this work was to assess the influence of pork backfat substitution by healthier oils on chemical composition, fatty acid profile, texture profile and sensory analysis of deer burger. In addition, pH, color parameters and lipid oxidation were evaluated at 0, 6, 12 and 18 days of storage. For this study, four different treatments of deer burgers—100% pork backfat, 100% tiger nut oil, 100% chia oil, and 100% linseed oil—were elaborated. The fat replacement reduced fat and protein contents and increased moisture amounts, whereas ashes and texture parameters of deer burgers were not affected. Fatty acid profile was significantly improved with the animal fat replacement. In this regard, a significant decrease in saturated fatty acids was found in all reformulated batches, whereas in chia and linseed burger samples a dramatic increase in polyunsaturated fatty acids, omega-3 content and a reduction of n-3/n-6 ratio was observed. In the deer burger prepared with tiger nut oil a significant increase in monounsaturated fatty acids was found. Another important aspect is that the replacement of animal fat by tiger nut or linseed oil emulsion did not affect the global acceptance of deer burgers. Regarding color parameters, redness was the most affected during the whole display presenting a reduction around 50% after 18 days of storage. On the other hand, thiobarbituric acid reactive substances (TBARS) values were also affected by fat replacement and storage time, observing the highest values (2.43 mg MDA/kg) in deer burgers prepared with chia at the end of refrigerated period. Finally, from a commercial point of view, the possibility of making claims such as “low fat burgers”, “reduced saturated fat” or “high content of omega-3” makes the reformulated burgers more attractive to the consumer.
