Developmental toxicity and estrogenic activity of antimicrobial phenolic-branched fatty acids using in silico simulations and in vivo and in vitro bioassay.

Due to the growing safety and environmental concerns associated with biocides, phenolic-soy branched chain fatty acids (phenolic-soy BCFAs) are synthesized as new bio-based antimicrobial agents. Safety evaluation is essential before the wide adoption of these new antimicrobial products. This study was initiated to evaluate the safety of four phenolic-soy BCFAs (with phenol, thymol, carvacrol, or creosote branches). Methyl-branched iso-oleic acid, phenol, and creosote were included in the study as controls. In silico toxicity simulation tools predicted that the phenolic BCFAs had much higher toxicities to aquatic organisms than free phenolics did, while the opposite was predicted for rats. The developmental toxicity of four phenolic-soy BCFAs was assessed using an in vivo chicken embryonic assay. Results showed that creosote-soy BCFA had much lower mortality rates than creosote at the same dosages. Additionally, creosote-soy BCFA and methyl-branched iso-oleic acid induced minimal estrogenic activity in the concentration range of 10nM - 1µM. Carvacrol-soy BCFA treatments significantly increased (p < 0.05) oxidative stress levels with higher thiobarbituric acid reactive substances in the livers of chicken embryos. Altogether, the phenolic-soy BCFAs, especially creosote-soy BCFA, reported in this study are potentially promising and safer bio-based antimicrobial products.

Evaluation of physicochemical and flavor characteristics and primary on lipid oxidation of crucian carp under different cooking methods

This study aimed to reveal the effects of steaming, frying and boiling on the sensory and quality of the cooked crucian carp. 46, 27 and 37 volatiles were detected in the steamed fish, fried fish (FF) and boiled fish (BF), respectively, of which 7 were identified as the key volatiles. Compared with the BF and FF, the SF was richer in esters, aldehydes, alkenes and the kinds and contents of the key volatiles. The contents of moisture and crude protein were the highest in the SF. The FF exhibited the most distinctive aroma profile, much possibly associated with the highest thiobarbituric acid reactive substances (TBARS) value observed in the FF. The content of total free amino acid in the BF was the lowest while the content of umami amino acid content in the SF was the highest (p < 0.05). The nutrition of fatty acids was highest in the SF due to its highest ƩUFA/ƩSFA ratio. PLS-DA analysis showed that SF was positively correlated with the most key volatiles and several free fatty acids. These results indicated that the flavor and nutrition of SF were the highest, providing appropriate cooking methods of crucian carp for the standardized production of bean paste fish.

Evaluation of physicochemical, textural, and sensory properties of reduced-fat chicken patties produced with chia flour and κ-carrageenan

The effects of chia flour and κ-carrageenan on the physicochemical, textural, and sensory properties of reduced-fat chicken patties were investigated. Usage of chia flour decreased pH, while addition of κ-carrageenan increased it. Chicken patties with chia flour had higher thiobarbituric acid reactive substances (TBARS) and lower L*, a*, and b* values. Production stages significantly affected pH, TBARS, and color of the samples (p &lt; 0.01); while pH, TBARS, a*, and b* values increased and L* value decreased after cooking. Adding chia flour and Kappa-carrageenan (κ-carrageenan) to reduced-fat chicken patties increased cooking yield and moisture retention while decreasing the shrinkage. Chia flour and κ-carrageenan increased hardness of samples and the highest mean value was found to be 68.70 ± 1.40 N in the group containing 8% beef fat + 4% chia flour + 5% breadcrumbs + 1% κ-carrageenan. However, adhesiveness and cohesiveness decreased by addition of chia flour and κ-carrageenan. Among the sensory properties, flavor, texture, and general acceptability were significantly affected by the addition of chia flour and κ-carrageenan (p &lt; 0.01). Sensory properties were studied by panelist, and it was found that usage of 2% chia flour and 1% κ-carrageenan in reduced-fat chicken patties could be effective regarding product quality, health benefits, and consumer acceptance.

Characterization of the Non-Volatiles and Volatiles in Correlation with Flavor Development of Cooked Goat Meat as Affected by Different Cooking Methods.

Thai-Native×Anglo-Nubian goat meat cooked by grilling (GR), sous vide (SV), and microwave (MW), was compared to fresh meat (Raw) in terms of flavor development. Non-volatile [i.e., free amino acids, nucleotide-related compounds, taste active values (TAVs) and umami equivalency, sugars, lipid oxidation, Maillard reaction products] and volatile compounds, were investigated. Notably, inosine monophosphate and Glu/Gln were the major compounds contributing to umami taste, as indicated by the highest TAVs in all samples. Raw had higher TAVs than cooked ones, indicating that heat-cooking removes these desirable flavor and taste compounds. This could be proportionally associated with the increase in aldehyde, ketone, and nitrogen-containing volatiles in all cooked samples. GR showed the highest thiobarbituric acid reactive substances (1.46 mg malonaldehyde/kg sample) and browning intensity (0.73), indicating the greatest lipid oxidation and Maillard reaction due to the higher temperature among all cooked samples (p<0.05). In contrast, SV and Raw exhibited similar profiles, indicating that low cooking temperatures preserved natural goat meat flavor, particularly the goaty odor. The principal component analysis biplot linked volatiles and non-volatiles dominant for each cooked sample to their unique flavor and taste. Therefore, these findings shed light on cooking method selection based on desirable flavor and preferences.

Pathogens inactivation and preservation of Pacific white shrimp by atmospheric cold plasma treatment

Atmospheric cold plasma (ACP) efficacy in inactivating Listeria monocytogenes and Vibrio parahaemolyticus was investigated on fresh and frozen shrimp. ACP inactivation efficacy increased with treatment time (5–20 min) and treatment voltages (60–80 kV) due to increased reactive gas species. ACP yielded stronger pathogen inactivation on frozen versus fresh shrimp. ACP treatment at 80 kV for 30 min maximally reduced L. monocytogenes and V. parahaemolyticus by 0.94 and 1.26 log CFU/g on fresh shrimp and by 1.68 and 2.0 log CFU/g on frozen shrimp. During storage at 4 °C, ACP-treated shrimp exhibited slightly higher thiobarbituric acid reactive substances (TBARS) levels but overall improved quality attributes, including lower total viable count, total volatile basic nitrogen, and pH, as well as higher sensory scores compared to the controls. ACP also extended shrimp shelf-life by 2 days. Therefore, ACP holds significant potential for seafood disinfection and preservation. Industrial relevanceACP effectively reduced levels of Listeria monocytogenes and Vibrio parahaemolyticus on both fresh and frozen shrimp with greater inactivation effects on frozen shrimp. In addition to enhancing microbial safety, ACP also improved shrimp quality and extended shelf-life. ACP could readily be coupled with packaging technology and bio preservatives to enhance its efficacy. This research provides a foundation for the eventual industrial adoption of ACP technology to benefit both consumers through reduced pathogen risks, and seafood processors through improved product safety, quality, and shelf-life.

Compensatory effect of lipase on the flavor of lightly-salted large yellow croaker: Integration of flavoromics and lipidomics

Flavor is one of the important sensory attributes of foods. This research explored the effect of lipase on flavor, lipid composition, lipase activity, lipid oxidation, and sensory evaluation of lightly salted large yellow croaker. Results exhibited that the addition of lipase improved the reduced-salt product's flavor. The content of 1-octen-3-ol, nonanal, 2,5-octanedione, hexanal, heptanal, and octanal were key aromas and were increased by the addition of lipase. Through adding the lipase, triacylglycerol (TG) and phosphatidylethanolamine (PE) and could be decompose into fatty acids. Products marinated in 4% NaCl coupled with lipase exhibited higher thiobarbituric acid reactive substance (TBARS) values, acid values, and lipase activity compared with those marinated in 4% NaCl. Moderate promotion of lipid oxidation is beneficial for improving product flavor. Lipase addition had a positive influence on saltiness, aroma, and over-acceptability of reduced-salt products by multi-sensory synergy perception. Especially, addition of 0.2% or 0.4% lipase to reduced-salt products is closest to the flavor profile of normal-salt products. These results provide a new insight into improving reduced-salt foods.

The protective effects of nerol to prevent the toxicity of carbon tetrachloride to the liver in Sprague-Dawley rats

IntroductionCarbon-tetrachloride (CCl4) is well-known to cause liver damage due to severe oxidative stress. Nerol, on the other hand, is a monoterpene that is antioxidant, antiviral, antibacterial, anti-inflammatory, and anxiolytic. This study set out to determine if nerol may be used as a prophylactic measure against the oxidative stress mediated hepatic injury caused by CCl4. Materials and methodsFor the aim of this experiment, 35 male Sprague-Dawley rats ranging in body weight (BW) from 140 to 180 g were split into five separate groups. With the exception of vehicle control group 1, all experimental rats were subjected to carbon tetrachloride exposure through intra-peritoneal injection at a 0.7 mL/kg body weight dose once a week for 4 weeks (28 days). The treatment groups 3 and 4 received oral administration of nerol at 50 and 100 mg/kg BW for 28 days. In the same time period, the standard control group received 100 mg/kg BW silymarin. ResultsSerum hepatic markers, lipid profiles, albumin, globulin, bilirubin, and total protein were all substantially improved in nerol-treated rats in a dose-dependent manner that had been exposed to CCl4 compared to the only CCl4-treated group. Carbon tetrachloride-exposed rats had lower glutathione, superoxide dismutase, and catalase levels and higher thio-barbituric acid reactive substances (TBARS) levels than normal rats. In contrast, administration of nerol shown a significant augmentation in the concentrations of these antioxidant compounds, while concurrently inducing a decline in the levels of TBARS in the hepatic tissue. In a similar vein, the histo-pathological examination yielded further evidence indicating that nerol offered protection to the hepatocyte against damage generated by CCl4. ConclusionAccording to the findings of our investigation, nerol has potential as a functional element to shield the liver from harm brought on by ROS that are caused by CCL4.

Fat composition of milk replacer influences postprandial and oxidative metabolisms in dairy calves fed twice daily

Milk replacers (MR) for calves contain alternative fat sources as substitute for milk fat. This substitution leads to differences in fat properties, such as the fatty acid profile and the triglyceride structure. This study evaluated how fat composition in MR affects gastrointestinal health, blood redox parameters, and postprandial metabolism in calves fed twice daily. Forty-five individually housed male Holstein-Friesian calves (2.3 ± 0.85 d of age) were assigned to 1 of 15 blocks based on the age and the day of arrival. Within each block, calves were randomly assigned to 1 of 3 experimental diets and received their respective diet from arrival until 35 d after arrival. The 3 experimental diets (n = 15 per treatment group) consisted of an MR with a blend of vegetable fats containing rapeseed and coconut (VG), an MR with only animal fats from lard and dairy cream (AN), and an MR containing a mixture of animal and vegetable fats including lard and coconut (MX). The fatty acid profile of each MR was formulated to resemble that of bovine milk fat while using only 2 fat sources. All MR were isoenergetic, with 30% fat (% DM), 24% crude protein, and 36% lactose. Chopped straw and water were available ad libitum from arrival onward but no starter feed was provided. Daily milk allowances were 6.0 L from d 1 to 5, 7.0 L from d 6 to 9, and 8.0 L from d 10 to 35, divided into 2 equal meals and prepared at 135 g/L (13.5% solids). Fecal appearance was scored daily; calves were weighed and blood was drawn on arrival and weekly thereafter. Urine and feces were collected over a 24-h period at wk 3 and 5 to determine apparent total-tract digestibility and assess gastrointestinal permeability using indigestible markers. Postprandial metabolism was evaluated at wk 4 by sequential blood sampling over 7.5 h, and the abomasal emptying rate was determined by acetaminophen appearance in blood. Fat composition in MR did not affect growth, MR intake, gastrointestinal permeability, nor nutrient digestibility. The percentage of calves with abnormal fecal scores was lower at wk 2 after arrival in calves fed VG than MX, whereas AN did not differ from the other treatments. Calves fed AN and MX had higher thiobarbituric acid reactive substances measured in serum than VG, whereas plasma ferric-reducing ability was greater in calves fed MX than VG. Postprandial acetaminophen concentrations did not differ across treatment groups, but the area under the curve was smaller in calves fed VG than in the other 2 treatments, which is indicative of a slower abomasal emptying. Postprandial serum triglyceride concentration was greater in calves fed AN than VG, whereas MX did not differ from the other treatments. Based on these outcomes, all 3 fat blends can be considered suitable for inclusion in MR for calves.

Physiochemical Properties and Oxidation Status of Pork from Three Rearing Systems

The consumer’s interest in his/her health and the quality of his/her food has increased as well as in environmental issues such as animal welfare. Consumers believe that organic and similar (traditional) production systems are more advantageous for consumers (providing healthier food) and animals (providing better welfare). The aim of the study was to evaluate the impact of different rearing systems (organic, conventional and traditional) on the physicochemical properties and oxidation states of pork meat. The meat samples were obtained from three different rearing systems of pigs: organic, conventional and traditional. The samples (M. biceps femoris) were obtained from producers directly 3 days after slaughtering for analysis. The following physical and chemical parameters were analyzed: color (according to the CIE L * a * b * system), pH, dry matter, protein, collagen, fat and ash. The oxidation state of the meat samples was measured by thiobarbituric acid reactive substances (TBARSs), free fatty acid (FFA) and antioxidant capacity (2,2-diphenyl-1-picrylhydrazyl). The results indicated that the rearing system affects most of the evaluated parameters. A significant difference (p &lt; 0.05) was observed in color parameters L* and b*, where the conventional pork samples were darker and the organic pork yellower. Total protein content in meat of pigs raised in a conventional system was higher (22.23%) than for organic (20.36%) and traditional (21.21%). The fat content in the meat of organically reared pigs was higher (2.81%) than in pork from conventional and traditional systems (1.43% and 0.37%, respectively). Organic pork was more susceptible to oxidation processes due to its higher TBARS (1.24 mg/kg) and FFA (1.15% fat as oleic acid) values and lower antioxidant capacity (26.42% inhibition), which may result in inferior technological properties of meat.

Comparative Quality Traits, Flavor Compounds, and Metabolite Profile of Korean Native Black Goat Meat.

Although goat meat has several health benefits than other red meats but comsumers reluctant it due to its unpleasant flavor. This study aimed to investigate the odorant of goat meat as well as compare the quality traits of meat regarding sex status. The loin meats [non-castrated male (NCM), castrated male (CM), and female (FM)] were collected and stored at 4°C in a laboratory refrigerator and analyzed on the 1st, 5th, and 8th consecutive days. The moisture content was the lowest and the protein content was highest in FM (p<0.05). Fat and ash content in NCM and FM were similar while lowest in CM. The CIE L* was significantly higher in NCM, but there were no significant differences of CIE a* and CIE b* within groups at initial day. The color intensity increased on the 5th storage day and decreased again after the 8th storage day, except in NCM. NCM displayed the highest thiobarbituric acid reactive substances value (p<0.05), whereas CM displayed a higher pH value than other groups throughout the storage period. Indole levels were the highest in NCM (0.031 mg/kg); however, skatole levels were not significant differences across all treatments (p>0.05). No significant difference was observed in the fatty acid composition between NCM and CM (p>0.05), whereas a significant difference was observed in FM (p<0.05). Most of the water-soluble metabolites showed significant differences between sexes. Overall, sex status effects on quality properties of meat and castration can improve the overall sensory acceptance by reducing goaty flavor of Korean native black goat meat.

Effect of Seawater Curing Agent on the Flavor Profile of Dry-Cured Bacon Determined by Sensory Evaluation, Electronic Nose, and Fatty Composition Analysis.

The purpose of this study was to check the applicability of seawater as a natural curing agent by analyzing the difference it causes in the flavor of dry-aged bacon. Pork belly was cured for seven days, and dried and aged for twenty-one days. The curing methods included the following: wet curing with salt in water, dry curing with sea salt, brine curing with brine solution, and bittern curing with bittern solution. The seawater-treated groups showed a lower volatile basic nitrogen value than the sea-salt-treated groups (p < 0.05); dry curing showed a higher thiobarbituric acid reactive substance value than other treatments (p < 0.05). Methyl- and butane- volatile compounds and polyunsaturated fatty acids such as g-linolenic and eicosapentaenoic were the highest in the bittern-cured group, lending it superior results compared to those of the control and other treatments in sensory flavor analyses (cheesy and milky). Therefore, bittern is considered to have significant potential as a food-curing agent.

Effects of dry‐curing salt content on flavour formation in different production steps during the processing of water‐boiled salted duck

SummaryThis study evaluated the effects of dry‐curing salt content [4% low salt (LS), 6% medium salt (MS), 8% high salt (HS)] on volatile compounds, lipid oxidation and lipolysis during the processing of water‐boiled salted duck (WSD). After dry‐curing, the varieties and content of volatile compounds increased significantly. The total content of volatile compounds tended to increase at dry‐curing, brining and early and middle air‐drying stages, and then decrease. The thiobarbituric acid reactive substances (TBARS) values increased during the whole process. The free fatty acids (FFAs) content increased at dry‐curing, brining and early air‐drying stages, and decreased after air‐drying for 1 day. Compared with LS, HS and MS had higher content of characteristic flavour substances and FFAs, especially unsaturated fatty acids (UFA), and higher TBARS during the processing of WSD. It showed that 6% dry‐curing salt content (MS) was applicable to practical production of WSD for flavour formation and salt reduction in dry‐cured meat products.

Effect of three culture patterns on quality changes of crayfish meats during partial freezing storage

The quality changes and main metabolites of rice-crayfish (DT), intensive crayfish (JY), and lotus pond crayfish (OT) under three culture patterns during partial freezing were studied. Compared with the DT and JY groups, the OT samples had higher thiobarbituric acid reactive substances (TBARS), K values and color values. The microstructure of the OT samples deteriorated most obviously during storage, and they had the lowest water-holding capacity and the worst texture. Furthermore, differential metabolites of crayfish under different culture patterns were identified by UHPLC–MS, and the most abundant differential metabolites of the OT groups were found. The main differential metabolites include alcohols polyols and carbonyl compounds; amines; amino acids, peptides, and analogues; carbohydrates and carbohydrate conjugates; fatty acids and conjugates. In conclusion, based on the analysis of existing data, the OT groups were considered to be the most serious deterioration during partial freezing compared with the other two culture patterns.

Assessment of flavor characteristics in snakehead (Ophiocephalus argus Cantor) surimi gels affected by atmospheric cold plasma treatment using GC-IMS.

The gel formation ability of freshwater surimi is weak, resulting in its poor flavor and quality. Atmospheric cold plasma (ACP), a widely developed non-thermal processing technology in the food industry, is considered to have potential applications in maintaining and improving the flavor characteristics of surimi gels. In this study, the effect of ACP on snakehead surimi gels flavor at different treatment times was investigated by sensory evaluation and gas chromatography-ion mobility spectrometry (GC-IMS) analysis. The results showed that ACP could better maintain and improve the original appearance and tissue state characteristics of surimi gels, scoring about 1-2 points higher than the ACP-untreated group. GC-IMS analysis demonstrated the obvious difference in the volatile organic compounds (VOCs) among the treatment groups. Specifically, the samples treated for 120 s with ACP exhibited the most unique aroma characteristics, which probably related to the highest thiobarbituric acid reactive substances values (73.28 μmol MDA/kg sample). Meanwhile, the reduced TCA-soluble peptides content indicated that ACP could inhibit protein degradation to maintaining the tissue state and flavor characteristics of the surimi gels. In conclusion, the advantages of ACP treatment, such as little damage to nutrients, and maximum retention of original sensory properties, provide new ideas for its application in the flavor characteristics of the snakehead surimi gels.

Effect of temperature fluctuation during superchilling storage on the microstructure and quality of raw pork

The effect of different temperature fluctuations on the microstructure and quality of pork loins during superchilling storage was investigated. Based on the dynamic monitoring of ice crystal formation and melting in pork through cryomicroscope, the changes of ice crystals in pork were observed at different temperature points, and there was no obvious phase transition in pork at −3 °C for a short period of time, but the freeze-thaw cycles were obviously found in the samples of −3 ± 3 °C and −3 ± 5 °C groups. Results of microstructure observation showed that temperature fluctuations resulted in muscle fiber fracture and the decrease of water holding capacity of superchilling pork, where stronger temperature fluctuation showed more significant changes. The temperature fluctuation groups exhibited higher thiobarbituric acid reactive substances (TBARS) values after 20 days of storage, and contributed to the reduction of immobilized water and the increase of free water in raw pork, and had more serious drip loss. These indicated that increased temperature fluctuation promoted lipid oxidation and drip loss of pork during storage. This study provided supports to precise temperature control in cold chain logistics of raw meat.

In vitro antioxidant activity of Lippia adoensis Var. Koseret, Thymus schimperi Ronniger and Rosmarinus officinalis Leaf extracts and their effects on oxidative stability of ground raw beef meat during refrigeration storage

Rosmarinus officinalis,Thymus schimperi Ronniger, and Lippia adoensis var. koseret, locally known as Rosemary, Tosign, and Koseret respectively are widely used dietary herbs in Ethiopia. In this study, the antioxidant activity and effect of Rosemary, Tosign, and Koseretethanol (80% v/v) extract on lipid oxidation of ground beef during storage were studied. Folin-Ciocalteu and aluminium chloride were used to determine total phenolic content (TPC) and total flavonoid content (TFC), respectively. Antioxidant activities of herbs were evaluated using 2, 2-diphenyl-1-picrylhydrazyl (DPPH) scavenging, ferric reducing power and iron chelating activities. The peroxide and thiobarbituric acid reactive substances assays were used to evaluate the ability of the extracts to prevent lipid peroxidation in ground beef stored at 4°C. Tosign extract had highest TPC (70.93±1.53 mg GAE/g) and TFC (16.94±0.12 mg CE/g). Also, Tosign had the strongest effect of DPPH scavenging (IC50 = 33.35±1.56µg/mL) and ferric reducing power (IC50 = 175.71±1.03 µg/mL). But the strongest iron-chelating activity was observed in Rosemary extract (IC50 = 160.24±2.55 µg/mL). Minimum peroxide value (0.185±0.09 milli equivalent peroxide/kg of beef) and the highest thiobarbituric acid reactive substances (80.20±20%) were recorded for ground beef treated with Rosemary at the end of storage days. In conclusion, these herbs are very effective antioxidants comparable to butylated hydroxytoluene. Thus, they could be a good substitution to synthetic antioxidants used in food preservation.

Oxidized Palm Oil Diet Affects Fatty Acid Profiles, Apparent Digestibility Coefficients and Liver of Hybrid Grouper Juvenile (Epinephelus fuscoguttatus × Epinephelus lanceolatus)

Vegetable oil is progressively replacing fish oil (FO) in aquafeed production. However, the effect of oxidized vegetable oil is less reported. This study was done to investigate the effects of oxidized refined palm oil (RPO) on the growth performance, feed utilization, proximate and fatty acid profiles, apparent digestibility coefficients and oxidative stress of hybrid grouper juvenile (Epinephelus fuscoguttatus × E. lanceolatus). RPO was force-oxidized and introduced into diets at three oxidative levels to replace 50% of FO. Diets with FO and fresh RPO were served as controls. The peroxide value of the oxidized diets was measured as 14.73, 24.50, and 36.10 meq/kg for diets OxL, OxM, and OxH, respectively. These diets were fed to triplicate groups of hybrid grouper (initial body weight 9.91 ± 0.01 g) for 8 weeks. There was no significant difference in terms of growth performance, survival, feed utilization, and whole-body protein proximate composition in all treatments (p &amp;gt; 0.05). However, different dietary treatments affected the body fatty acids profile and fish-fed OxM diet achieved the highest body weight gain without significant difference (p &amp;gt; 0.05). In terms of hepaticsomatic index (HSI), fish-fed OxH showed a significantly lower value compared to other treatments. Similarly, the lowest apparent digestibility coefficients (ADC) of nutrients were observed in fish fed OxH diet. The oxidized diets caused significant lower blood cholesterol and high-density lipoprotein cholesterol (HDL) (p &amp;lt; 0.05). The oxidative stress in the liver as indicated by the significantly higher thiobarbituric acid-reactive substance (TBARS) value in fish fed all the oxidized diets while no significant changes on the muscle TBARS values. In conclusion, the oxidized RPO diets significantly affected the liver, the nutrient digestibility, and the blood total cholesterol and HDL. Furthermore, hybrid grouper can tolerate up to 20 meq/kg of oxidized RPO in the diet without compromising the growth.

Ultraviolet B (UV-B) radiation is a potent environmental stressor and it severely affects the survival, growth, and physiology of aquatic organisms. The UV-B protective properties of three herbal ingredients enriched diets were evaluated in pre-exposedCatla catla. Fish (70.38 ± 1.18 g) were divided into five sets with three replicates each. Four sets were exposed to UV-B (80 µW/cm2) for an initial 10 days (20 min/day), and the fifth one remained unexposed (control). On day 11, feeding with enriched diets started. These diets were: diet 1 (D1) containingWithania somnifera(0.5%) root powder, diet 2 (D2) containingEmblica officinalis(1.25%) fruit powder, diet 3 (D3) containing seeds ofAchyranthes aspera(0.5%), and diet 4 (D4) control. There were two batches of D4 diet-fed fish, D4a, UV-B exposed, and D4b unexposed. Blood and tissue samples were collected on days 0, 7, 14, and 21 of feeding. The average weight reduced 26.32% in UV-B exposed catla compared to the unexposed one on day 0. Among the exposed fish, average weight was significantly higher in D3 compared to others throughout the study period. Significantly lower nitric oxide synthase (NOS) and higher thiobarbituric acid reactive substances (TBARS), carbonyl protein, superoxide dismutase (SOD), and heat shock proteins (Hsp) 70 and 90 were observed in D4a compared to the enriched diet fed catla. The NOS level was significantly higher in D3 on day 21. The TBARS level was significantly lower in D3 on days 7 and 14 and in D2 and D3 on day 21. The carbonyl protein, SOD, and Hsp70 levels were always significantly lower in D3 compared to others, and D2 followed D3 treatment. Hsp 90 was significantly lower in D2 compared to others on day 7 and in D3 on days 14 and 21. All three enriched diets helped the fish overcome the harmful effect of UV-B radiation, and the D3 diet-fed fish showed the best performance.

Effects of Pumpkin (Cucurbita pepo L.) Seed Protein on Blood Pressure, Plasma Lipids, Leptin, Adiponectin, and Oxidative Stress in Rats with Fructose-Induced Metabolic Syndrome

This study evaluates the potential effects of pumpkin seeds protein on blood pressure (BP), plasma adiponectin, leptin levels, and oxidative stress in rats with fructose-induced metabolic syndrome. Twenty four male Wistar albino rats were divided into four groups and fed a 20% casein diet, 20% casein diet supplemented with pumpkin protein, 20% casein diet with 64% D-fructose, or 20% casein diet with pumpkin protein and 64% D-fructose for 8 weeks. Contin-uous fructose feeding induced an increase in plasma insulin/glucose ratio, BP, insulin and glucose, aspartate aminotrans-ferase, alanine aminotransferase (ALT), alkaline phosphatase (ALP), creatinine, urea, and uric acid levels, and a decrease in the liver and muscle glycogen stores. In addition, elevated levels of total cholesterol (TC), triglycerides (TG), and leptin and lowered adiponectin levels were observed in rats fed a fructose-enriched diet. These groups also exhibited lower plasma levels of ascorbic acid and glutathione, higher thiobarbituric acid-reactive substances, hydroperoxide, carbonyl, and nitric oxide in both the liver and kidneys than rats fed the control diet. Interestingly, pumpkin seed protein treatment significantly counteracted alterations induced by fructose improving glucose, insulin, BP, TG, TC, ALT, and ALP levels, increasing liver and muscle glycogen stores, adiponectin level, and adiponectin/leptin ratio, and reducing plasma leptin lev-els. In addition, rats fed pumpkin protein with a high-fructose diet improved oxidative stress in the liver and kidneys. In conclusion, proteins from Cucurbita pepo L. seeds effectively improve metabolic parameters and protect against oxidative stress induced by a high-fructose diet.

Quality changes and deterioration mechanisms in three parts (belly, dorsal and tail muscle) of tilapia fillets during partial freezing storage

The quality changes in tilapia belly muscle (BM), dorsal muscle (DM) and tail muscle (TM) were studied and the hypothesis of browning of the fillets was revealed during partial freezing. Compared with DM and TM groups, BM samples had higher thiobarbituric acid reactive substances (TBARS) (0.41 mg malondialdehyde eq/kg at 49 d) and K values (61.81% at 42 d) (P < 0.05). The microstructure of the BM group deteriorated most obviously during storage. Therefore, the BM group was considered to be the fastest to oxidize and deteriorate. In addition, 54 different micromolecular metabolites were identified from tilapia fillets by UHPLC-Q-TOF-MS analysis, and there were significant differences in the micromolecular metabolites in the three parts of tilapia. Therefore, proteins and lipids were degraded by the action of enzymes and microorganisms to produce some amines and small molecular acids, leading to the deterioration of the quality of tilapia fillets.
