Optimizing Tuna Fish Quality through a Science-Based Sustainable Partnership Approach and Ecological Management in Boneoge Village, Central Sulawesi

The potential of tuna resources is quite large, but to achieve export quality, fishermen and Fish Processing Units (UPI) must implement a strict quality assurance system, and government involvement is needed so that the tuna export process from Boneoge Village can be realized soon. This study aims to analyze partnership strategies that can be applied to improve the quality of tuna in Boneoge Village. Data collection method was carried out by purposive sampling. Basically, the data in this study were obtained and collected through triangulation (multi-method). The respondents selected in this study were ten people consisting of four fishermen, Quality Control and employees of the Fish Processing Unit (UPI), four related institutions. The data analysis used was SWOT analysis followed by QSPM analysis. Based on the SWOT analysis, there are 7 strategies that can improve the quality of partnership-based tuna in Boneoge Village, Donggala Regency. Based on the QSPM analysis, the first priority strategy is the strategy of Building Partnerships through Empowerment between the Government, UPI and Fishermen with a TAS value of 7.24, the second priority is Training in Fishermen and UPI Skills and Bureaucratic Efficiency with a TAS value of 6.27, the third priority is Improving Product Quality and Safety with a TAS value of 5.89.

Peluang pertumbuhan ekonomi di Kabupaten Majene Provinsi Sulawesi Barat

Background: The high production of capture fisheries in Majene Regency is not balanced by a marketing system and infrastructure in the form of adequate fishing ports and fish processing units. Findings: It is recorded that currently Majene Regency only has 2 (two) fishing port units, namely PPI Palipi and PPP Banggae with a total of 30,887 fishermen, the largest in West Sulawesi out of a total of 57,318 people. With these conditions, the catch of Majene Regency fishermen is mostly sold in the middle of the sea. Methods: This paper uses a literature review method sourced from literature, such as scientific articles, books, journals, and online media. Conclusion: The number of fishing port infrastructure in Majene Regency is still relatively low when viewed from the amount of production in other regencies/cities in West Sulawesi Province. So a government policy step is needed as a form of support for economic growth that is in accordance with the potential in Majene Regency, one of which is fisheries. Thus, it is hoped that fishery products which are superior commodities can be distributed to areas that do not have the potential for capture fisheries resources or the exchange of commodities through a buying and selling system.

Processing feasibility study of canning teaching factory (TEFA) fish processing unit in Politeknik Negeri Jember as a medium-large-scale industry

Fisheries are sector with great potential to meet food needs. Teaching Factory Canning Politeknik Negeri Jember (Polije) is one of the Fish Processing Units (UPI) engaged in canning seasoned sardines. Teaching Factory Canning Polije is a UPI included in the medium-large category. This research aims to determine the processing feasibility of canning teaching factory. Data were collected by interview and checklist analysis referring to the Ministry of Marine Affairs, namely the Decree of the Minister of Marine Affairs and Fisheries No.Kep.01/MEN/2007. The application of basic eligibility requirements is carried out by analyzing whether there is a discrepancy with existing regulations or deviations, which are then synchronized with the value of the eligibility criteria. The production process of Teaching Factory Canning has followed the processing feasibility certification set by KKP No.Kep.01/MEN/2007 with good eligibility criteria. The assessment is based on 6 minor deviations, 7 significant deviations, and 1 serious deviation. In addition, the GAP Analysis of the UPI TEFA Canning Polije Processing Feasibility Certification showed that the basic feasibility had met the basic requirements and 1 general requirement by correcting the deviations found

Financial Feasibility Analysis of llisha elongata Cracker Processing Businesses at Fish Processing Unit in Bengkalis, Riau

This study analyzes the financial feasibility of fish cracker processing trades in Bengkalis Regency, Riau Province. The short-term and long-term feasibility analysis were used to determine the business feasibility. The data collected consists of primary and secondary data obtained through interviews, observations, and documentation. The analysis showed that the fish crackers processing business is profitable with an average monthly profit of Rp. 9,599,700. Therefore, the llisha elongata crackers processing business at the fish processing unit in Bengkalis is worth continuing.

Emergence and Distribution of Diverse Serovars of Non-Typhoidal Salmonellae in Mangalore, Coastal Karnataka: A 12-year Experience

Background and Aim: Non-Typhoidal Salmonellae (NTS) is emerging as a major health problem globally. They cause foodborne infections, especially gastroenteritis as well as extraintestinal manifestations. As this is a zoonotic disease, certain animal sources such as poultry, egg, meat and dairy products are implicated. Fruits and vegetables too contaminated by manure of infected animal excreta are possible vehicles of transmission of this disease. The present report analyzes the spectrum of NTS with seroprofiling, isolated in our institute for the last 12 years. Materials and Methods: Fresh fecal samples from patients with acute gastroenteritis and blood samples from cases of bacteremia were processed according to the standard protocol. Nonlactose fermenting colonies resembling Salmonella were subjected to biochemical characterization and antimicrobial susceptibility testing followed by serotyping. Results: One hundred fifty-two NTS strains were isolated from feces and 13 from blood. Serotyping of these strains revealed that the most common NTS species was Salmonella Typhimurium (44.8%), followed by Salmonella Oslo (15.2%) and Salmonella Weltevreden (11.5%). Many rare strains were also encountered in our study. Conclusion: As many of the NTS species are biochemically similar, serotyping of NTS should be made mandatory to know the burden of the disease and to detect the emergence of new serovars. Emergence of multidrug resistance in NTS strains is a major concern nowadays. It is very essential to adopt strict quality measures in poultry, fish, dairy, and meat processing units as they are widely distributed in animals. In addition, strategies should be formulated by health education and public awareness programs to sensitize the population regarding this menace.

Supply Chain and Quality Analysis of Frozen Scad Mackerel (Decapterus spp.) As Raw Material for Pindang Processing in Pekalongan Regency, Indonesia

Scad mackerel (Decapterus spp.) has a high nutritional content but is susceptible to spoilage. As the main raw material for Indonesian salted-boiled fish (Pindang) processing, the quality of frozen Scad mackerel (Decapterus spp.) plays an important role that will affect product quality and customer acceptance. Low-temperature storage treatment still has the potential for deterioration of fish quality. This research is a descriptive study conducted in Pekalongan Regency and City during May 2023 to identify the supply chain structure and the quality and safety of frozen mackerel (Decapterus spp.) as raw material for pindang production. The results showed that the parties that play a role in the supply chain of fish raw materials in the pindang processing business in Pekalongan Regency are fishermen, Pekalongan Municipal Fish Auction Center, Fish Middlemen, retailers and pindang processors. At the level of Fish Middlemen up to the pindang fish processing unit, no documentation can describe the handling and origin of the fish. The quality and safety testing of frozen scad mackerel (Decapterus spp.) includes the Sensory Test, TVB-N Test, Total Plate Count (TPC) Test and Escherichia coli Test. The sensory test results showed that all samples were above 7, the average value of TVB-N test results was 17.84 mgN/100mg, the average value of TPC test results was 5x103 colonies/g, and the average value of Escherichia coli test results was <3 MPN/g. Tests of frozen Scad mackerel samples showed that the fish was of good quality and free from harmful preservatives (formalin), making it safe to use as raw material in the pindang processing.

This research is a causal research. The sample of this study were 135 employees of the MSME Fish Processing Unit in West Sumatra who were engaged in the MSME fish processing business. The sampling technique was carried out using purposive sampling. Collecting data using a questionnaire with a Likert scale. The analysis technique used is the SmartPLS 4 software. The results of this study indicate that: (1) entrepreneurial leadership has a significant positive effect on the innovative behavior of SMEs in the West Sumatra Fish Processing Unit (2) entrepreneurial leadership has a significant positive effect on the Behavior of the MSME Organizational Citizens of the Fish Processing Unit in West Sumatra (3) Organizational Citizen Behavior has a significant positive effect on the innovative behavior of MSME Fish Processing Units in West Sumatra (4) Entrepreneurial Leadership has a positive and significant effect on the innovative behavior of MSME Fish Processing Units in West Sumatra through Organizational Citizens Behavior.

Documenting and Analyzing Targeted Interventions of State Fishery Department of Andhra Pradesh, India

Aims: Though Andhra Pradesh acts as an aquaculture hub, several targeted interventions were implemented by the State Fishery Department of Andhra Pradesh for the benefit of farmers. But lack of awareness among the fish farmers about these interventions leads to severe economic loss. Hence, this study aims to document and describe the interventions implemented by the Andhra Pradesh Fisheries Department which helps the fish farmers to make well-informed decisions.
 Study Design: Descriptive study design was used to describe the purpose of documented interventions
 Place and Duration of Study: Interventions provided by State Fishery Department of Andhra Pradesh for fish farmers were documented from Fish Development Officers during March 2023.
 Methodology: The study collects data from various sources, including fish development officers, government reports, and other publications to document the interventions provided by Fisheries department of Andhra Pradesh. Focus Group Discussion was conducted with the fish development officers to critically analyze these interventions.
 Results: The interventions can be categorized into five broad categories; which were, fisheries inputs, infrastructure, capacity-building programs, financial assistance, and others/ miscellaneous. Under fisheries inputs; fish seed, fish feed and aerators were given. Infrastructural interventions such as feed analysis, water analysis, soil analysis, microbial analysis, PCR, fish hatchery units, fish processing units, mobile aqua labs, fish kiosks, Fish Andhra Fit Andhra, Traditional fish farming implements were provided. Simultaneously, capacity building programmes like training, demonstration, workshops, FFPO, extensive awareness programmes, training for other interns and other professionals were also conducted. Financial assistance was provided through KCC, YSR pension kanuka scheme, Electricity subsidy, Matya Kara Barosa and other facilities like licensing, assistance to new fish farmers were also carried out.
 Conclusion: Interventions of State Fisheries department was classified into five categories for better understanding and to make effective use of the interventions by the farmers. Lack of awareness about the interventions lead to severe economic loss among fish farmers. Hence, this study aims to address the information gap and empower the stakeholder through proper documentation of fisheries interventions by State Government which enables the fish farmers to make well-informed decisions.

Compliance Analysis of Indonesian Field Standard Classification (KBLI 10293) in the Freezing Shrimp Industry in Banjarmasin City

The current compliance condition of the Fish Processing Unit in the City of Banjarmasin was reviewed for 3 shrimp freezing companies based on the Indonesian Business Field Standard Classification standard (KBLI 10293). The aim of the study was to analyze the compliance level of the frozen shrimp industry in Banjarmasin City, South Kalimantan compared with the Indonesian field standard classification (KBLI 10293). This research was conducted in three shrimp freezing industries in the City of Banjarmasin, South Kalimantan, namely: PT. Kalimantan Fisheries, PT. Wirontono Baru and PT. Yubel Utama Seafood Indonesia (YUSI). To answer the research objectives, the data analysis technique was used a percentage descriptive analysis whose assessment refers to the Marine Fisheries Government Number 6 of 2021, which is to systematically describe facts or characteristics of the field population specifically and factually from the data that has been collected. Descriptive analysis of percentages was carried out by measuring research variables using the Likert's scale for measuring data in the form of social or individual characteristics when conducting questions and answers in the field presented in the form of a questionnaire. The compliance level of the frozen shrimp industry in Banjarmasin City, South Kalimantan based on the Likert't scale criteria. Also, the total compliance level of the frozen shrimp industry in Banjarmasin City, South Kalimantan was very obedient (83-86%) based on the KBLI, 10293 Compliance assessment criteria.

Enhancing Fishing Port Services Quality to Support Fish Supply Chains of the Island Fisheries at the Belitung Island

Fishing ports are crucial to the sustainable management of fisheries resources and enterprises that depend on the fishery. The objective of this study was to analyze the levels of facilities availability and service quality of fishing ports in the islands through a case study of Tanjungpandan Islands Fishing Port in Belitung Island. This study was conducted by combining survey methods, observation, as well as in-depth interviews with the port users and managers. Due to Covid-19 pandemic, field research was conducted in two periods: from September to October 2020 and from January to February 2022. Respondents were selected by applying the snowball sampling method and resulted in 70 selected respondents, consisting of fishermen, skippers, traders, factory managers or fish processing units, and port managers. Structured questionnaires were used for data collection. It proceeded into descriptive-qualitative analysis and combined with SERVQUAL and IPA (Importance Performance Analysis) methods. The study demonstrated that six port facilities failed to meet the Nusantara (inter-island) fishing port standards as outlined in the Minister of Marine Affairs and Fisheries' Regulation No. 8, year 2012. Eight port services that were considered important indicated low performance to support the island’s fish supply chain. The total score of basic, functional, and supporting facilities was 60.46% (within 0 – 100% scale) and considered as relative “good”. Therefore, given that the port is the main hub of marine fisheries activities on Belitung island, it is crucial to increase the accessibility, quality, and services of fishing port facilities in order to support the fish supply chain in the islands.

Strategic Entrepreneurship and the Performance of Women-Owned Fish Processing Units in Cibinong District, Bogor Regency

Strategic entrepreneurship refers to the ability of an MSME to investigate potential entrepreneurial ventures while exploiting its current competitive advantages. Academics and practitioners have offered models to deconstruct strategic entrepreneurship; however, there are few distinctive strategic entrepreneurship models appropriate for certain business circumstances. Culinary businesses in Cibinong District, Bogor Regency face several challenges, including low-quality human resources, inadequate capital and technology, and poor entrepreneurial spirit. This study aims to learn how the performance of women-owned fish processing MSMEs under COVID-19 conditions connects to several strategic entrepreneurship components, such as environmental factors, individual resources, resource orchestration, and competitive advantage. Research data taken from 30 women-owned fish processing businesses were processed using SMART-PLS 3.0, followed by a quantitative descriptive method analysis. The outcome was that the components of the environment, specific resources, and orchestration of those resources could generate performance and value for the customer, leading to competitive advantages. This research provides a current understanding of attitudes to businesswomen’s activities throughout the pandemic period, particularly in relation to entrepreneurship chances and MSME performance. Strategic entrepreneurship is necessary to improve performance in dynamic environments.

Implementation of a HACCP management plan in a marinated fish processing unit

Fish is considered a valuable food product, due to its content rich in lipids, proteins, vitamins, minerals, and especially in omega 3, which has a digestibility coefficient of about 97%. Nutritionists believe this type of meat should not be missing from the consumer’s daily diet, especially for children and the elderly, as it constitutes a third and a half of the daily protein requirement. Consumers prefer eating fish meat instead of other types of meat. Nowadays, fresh fish is preferred, followed by frozen fish, and then fish products are preserved by salting and smoking. To obtain marinated fish, frozen fish is used, especially mackerel. The purpose of this work is to identify and monitor the critical points in the technological flow in a fish processing unit and to identify pathogens with the potential risk that can affect the final product, implicitly the health of the consumer (E.coli, L.monocytogenes, Salmonella, Staphylococci, coagulase-positive, Anisakis). Implementing a HACCP plan in the units obtaining fish products has proven to be beneficial, both for the economic operator and the final consumers (4,5). By applying this food safety system, the consumer’s trust in products in this category increases, considering the fact that fish is a perishable product with a risk of contamination during the technological flow, regardless of the way it is marketed.

Application of Business Model Canvas (BMC) in the Fish Processing Unit of CV. Brightfood Riung Gunung, Bandung City

Fish is one of the foods that are favored and consumed by the community. However, fish is a perishable food commodity that requires processing in order to minimize this problem. The fish processing unit of CV. Brightfood Riung Gunung is a small-scale fish processing unit that produces various kinds of processed products using tuna (Thunnus sp) and mackerel (Scomberomorus sp). Tuna and mackerel are fish commodities that easily found many markets business so carry out processing activities using these fish. The data analysis used a business model canvas. The application of business models in the early stages of business management development makes it clear what business managers can do about what will be done with the business to be carried out. This study aims to analyze the business model canvas on the fish processing unit of CV Brightfood Riung Gunung Bandung City. This study uses case study method, which is a study that includes an assessment that aims to provide a detailed description of the background, nature and character of a case. In other words, a case study focuses attention, intensive in one case and detailed. The sampling technique used a purposive sampling. The purposive sampling method is a sampling technique with certain considerations. The selected sample of this study is the owner of the company. The results of this study indicate that the fish processing unit of CV. Brightfood Riung Gunung, Bandung City, has implemented 9 elements of the business model canvas well compared to other similar industries.

Non Typhoidal Salmonellae and its aetiological spectrum-An overview with Indian perspective

Non Typhoidal Salmonellae (NTS) is emerging as a major health problem. NTS serovars have a wide variety of host range varying from domestic animals, aquatic fauna, reptiles, arthropods, leafy vegetables and many more. This zoonotic infection manifests as self limited gastroenteritis associated with food poisoning to fatal extra intestinal invasive infections. In this overview, an attempt is made to compile the documented reports due to NTS from Indian subcontinent for the last 5 decades, searching the available databases. These reports emphasizes the role of NTS in diverse clinical infections and the possible links of transmission. Prophylactic measures such as adoption of quality measures in fish and meat processing units, vaccination of farm animals, serotyping of all NTS strains, above all health education and public awareness program should be made mandatory to minimize the incidence of NTS in our country.

Dynamic Strategy and Contingency Power of SMEs Fish Processing Units In Achieving Sustainability Levels (Case Study: SMEs of Boneless Milkfish Processing Units in Pinrang Regency, Indonesia)

Increased competition has demanded the adaptation of SMEs to environmental changes and challenges for the success of companies in Indonesia. The purpose of this study is to analyze the strategy and contingency power of SMEs of fish processing units in reaching the level of sustainability. The object of the research is the SMEs of fish processing units in Pinrang Regency, South Sulawesi. This type of research is qualitative, which is descriptive by using case study techniques. Data collection techniques through field observations, in-depth interviews, and related documents. The results of this study indicate that the sustainability level of SMEs of the boneless milkfish processing unit in Pinrang Regency is proactive towards the continuity of production, continuity of sales, and continuity of raw material procurement. The sustainability of SMEs of fish processing units is shown by its ability to surf in chaotic dynamics. SMEs of fish processing units which have a high level of sustainability has been able to build an input process-output system dynamically so that it has contingency power and appropriate strategies in dealing with environmental dynamics. The contributing factor to the unsustainability of SMEs of fish processing units is the low ability to; build systems to be able to establish contingencies with the external environment. To improve and maintain its level of sustainability, the SMEs of fish processing units are improving the input-process-output system dynamically, optimizing contingency power with the task environment as well as with the political, economic, social, cultural, technological and natural environment.

Analysis of the performance of air blast freezer by using hydrofluorocarbon and hydrocarbon refrigerants

The air blast freezer has been used as a freezing method in the fish processing units before being frozen for a long time in cold storage. For this reason, the use of hydrocarbon refrigerants that are more environmental friendly has become a demand and a central issue in the future. This paper presents a performance analysis of using R290 and R600a as a drop-in replacement to R404A and R507A. The system performance analysis is based on the evaporation temperature variation using CYCLE_D-HX software with the condensation temperature maintained constant. The important quantities analyzed are mass flow rate, pressure ratio, temperature discharge, heat released, power consumption, coefficient of performance and refrigeration efficiency. The results show that at minimum evaporation temperature, system performance using R290 and R600a is on average ±14% higher compared to R404A and R507A. R290 has characteristics that are closer to R404A and R507A so it is more suitable to replace the two refrigerants compared to R600a. However, this is a performance analysis that can lead to higher performance than normal conditions.

MANAGEMENT STRATEGY FOR FISH PROCESSING UNIT (UPI) IN SIHENE'ASI VILLAGE LAHEWA SUBDISTRICT, NORTH NIAS REGENCY

This study aims to formulate a management strategy for the fish processing unit in Sihene'asi Village, Lahewa District, North Nias Regency. The research was conducted from 21 December 2020 to 23 January 2021. The research was conducted using a qualitative approach through survey methods and direct observation in the field. Primary data collection was carried out through observation and in-depth interviews with a structured questionnaire instrument. Secondary data were obtained from related agencies in this study. The analysis used in this research is descriptive analysis method and SWOT analysis to determine the appropriate management strategy. The results of the SWOT analysis show that the priority strategy related to the management of the fish processing unit is to support an aggressive strategy, a strategy that is made by utilizing all strengths to seize and take advantage of the greatest possible opportunities. The management strategies of the fish processing unit in Sihene'asi Village are: 1) Maximizing the use of raw materials in meeting market demand through cooperation between UPI managers, 2) Maximizing traditional processing technology appropriately in order to maintain the taste image of fishery products and 3) Developing a group institutional system. fish processing by cooperating with the government / private sector.

The study was conducted using a qualitative approach to survey methods and direct observation in the field. Data collection was carried out through observation and in-depth interviews with a structured questionnaire instrument. Secondary data were obtained from related agencies in this study. The analysis used in this research is descriptive analysis method and SWOT analysis to determine the appropriate management strategy. The results of the SWOT analysis show that the priority strategy related to the management of fish processing units is to support aggressive strategies, namely strategies that are carried out by utilizing all strengths to seize and take advantage of the greatest opportunities. The strategies for managing fishery product businesses in Teluk Kabung Utara Village are: 1) Maximizing the use of a wide range of markets in high demand for products by conducting good coordination among fishery product business owners, 2) Maximizing the use of capital assistance provided by the government by Right in order to develop a fishery product business.

MODEL PEMBERDAYAAN KOMUNITAS NELAYAN BERBASIS UMKM UNIT PENGOLAHAN IKAN MELALUI BMT IAIN BENGKULU

As one of the strategic steps that can be taken is to empower fishermen to not only utilize marine and fishery products for consumption, but how these products can be of use value that is more competitive and contributes to the economy in a sustainable manner. One of them is the fish processing-based MSME program. At present, BMT as a form of microfinance institution has two advantages. First, BMT is a baitul maal which one of the activities is in the form of raising and utilizing Zakat, Infaq and Shadaqah (ZIS) funds. The results of this research are in the Prosperous Fishermen Village of Bai Island, Bengkulu City, where most of the livelihoods of the community are fishermen, there is no management of marine products that have added value, such as making fish crackers, making fish shredded, or processed fish food such as nuget, fish balls or fish. the like. Seafood is directly sold at fish auctions or in traditional markets. This potential is very large to be developed through the assistance program of BMT Al-Muawannah IAIN Bengkulu to establish MSME Fish Processing Units so that they can provide added economic value that can help improve community welfare and develop maritime potential in Bengkulu.

The tropical fish are a food source rich in nutrients, including proteins of high biological value. The fish is present in society's eating habits due to its numerous benefits. Therefore, it is important to know the nutritional components present in the musculature of the fish, this will promote its commercialization and reach more demanding markets, in addition to promoting public health and well-being through its regular consumption. The aimed of this study was to evaluate the chemical composition of commercial cuts of pirarucu (Arapaima gigas) processed in different weight classes. The sample collections were carried out in fish processing units in the state of Rondônia, Brazil. The data were obtained from 77 fish in five weight classes and their commercial cuts evaluated for chemical composition. The Kruskal-Wallis test (α=0.05) was used to compare the averages. The crude protein content of filet mignon increased (p<0.05) with increasing weight. However, the highest lipid content, 6.04%, was in Class 3. The tail filet showed no difference (p>0.05) between the weight classes for mineral content and total lipids. The total lipid levels did not vary between weight classes (p>0.05). The moisture content decreased with increasing body weight. Among the weight ranges with good commercialization, class 4 stands out (14.1 to 18 kg).
