The impact of human capital on the provision of agricultural products in the context of import substitution

Vegetable growing is an important sub-sector of agriculture. The provision of the region's population with vegetable products depends on its successful functioning. Vegetables contain vitamins, minerals, and fiber necessary for humans, which makes them an irreplaceable food product. The authors analyzed the current state of production and consumption of vegetable products in the region and made a forecast of the need for vegetable products until 2035, gave a number of recommendations to fully provide the population of the region with vegetable products. The transition of vegetable growing to a new level of technology development requires improvement, strengthening of human capital in the rural sector. Since in modern conditions the quality and quantity of products produced by the agro-industrial complex depends on the main characteristics of workers, therefore, special attention should be paid to changing the paradigm of agrarian education.

Review: use of fruits and vegetables in processed foods: consumption trends and technological impacts.

According to FAO information, during the last decades great efforts have been made by authorities and specialists for the development of public policy and to spread the benefits of adopting healthy diets and physical activities, aiming to reduce the incidence of non-transmissible chronic diseases, which are the main cause of death worldwide. In spite of its healthy status, the consumption of vegetable products (fruits, vegetables, grains, and plants) has been staying below the expected level in most countries, forcing the public policy makers to implement ways to encourage consumers to include more vegetable products in their diets. Aware of this reality, the food industry continuously seeks for innovative ways of contributing to increase the consumption of fruits and vegetables. This review proposes to show the consequences of functionality and nutrition macrotrends for fruit and vegetable consumption, and the technological challenges and alternatives found for the development of processed products containing such raw materials.

An Adenosine Triphosphate Bioluminescence Method for Evaluating the Microbial Contamination of the Salad-Preparing Tables and Salad-Serving Dishes in Restaurants of Mashhad City, Iran

Introduction: Consumption of vegetable products is increasing commonly in the world because they are recognized as an important source of nutrients, vitamins, and fiber for humans. Salads are among the most widely used foods that are also known as the most contaminated foods in restaurants. This study was conducted to determine the microbial contamination of salad-preparing tables and salad-serving dishes. Materials and Methods: This study was conducted at 39 restaurants in Mashhad City in Iran during 2017. In this regard, 78 samples were determined from the salad preparing tables and serving dishes. Samples were tested for cleanliness status using Adenosine Triphosphate (ATP)-bioluminescence method as a rapid test. Results: According to the ATP bioluminescence device, 43.6% of the assessed dishes were clean, 38.5 % were dirty, and 17.9 % were not adequately clean. According to the results of ATP bioluminescence device for tables, 23.1 % of the tested tables passed the test, 15.4 % were classified in the caution status, and 61.5% failed. Conclusion: The ATP method has been widely used, especially in the food industry, as a rapid method for measuring general levels of cleanliness. However, this method is not a reliable replacement for measuring the microbial contamination. The ATP bioluminescence should not be used as a substitute for quantitation of microbial load.

The purpose of the study is to study the impact of human capital on the provision of vegetable products to the population of the region and to identify areas for improvement. Vegetable growing is an important sub-sector of agriculture. Providing the region’s population with vegetable products depends on its successful operation. Vegetables contain essential vitamins, minerals, and fiber, which make them an essential food. The authors analyzed the current situation in production and consumption of vegetable products in the region and made a forecast of the need for vegetable products until 2035. The authors give a number of recommendations to ensure that the population of the region is fully provided with vegetable products. The main production of vegetables is concentrated in private farms of the population, while commodity production is concentrated in large agricultural organizations and greenhouse complexes. In recent years, the region has seen an increase in the production of protected ground vegetables, which is associated with the launch of large modern greenhouse plants. Despite this, the volume and range of production of open and protected ground vegetables do not fully meet the needs of the region’s population in local vegetable products. Part of the demand for vegetable products is met by importing vegetables. Studies have shown that the population of the region consumes vegetables still below the rational medical standards, which requires changes. To fully meet the needs of the region’s population for vegetable products, it is necessary to transfer the region’s vegetable production to a new level of development. The transition of vegetable production to a new level of technology development also requires the development of human capital in the agricultural sector. In our opinion, the main indicator that characterizes the quality of human capital is the number of employees with higher professional education, so there is a need to transfer agricultural education to a new level of professional training

Food Safety in the Sphere of Production and Consumption of Vegetable Products

The aim of the study is to develop theoretical provisions and practical recommendations for solving the problem of food security in the production and consumption of vegetable products. During the research, the following methods were used: statistical-economic, monographic, economic-mathematical, computational-constructive. The article considers the problem of providing the Russian population with vegetable products, especially during the off-season. The actual consumption of vegetables is 112 kg per capita per year with a rational diet of 140 kg. In the food basket of Russians, imported vegetable products occupy a significant share. Analysis of the state and trends of development of vegetable growing in the open and sheltered ground is given. For 2000-2016, the gross harvest of vegetables increased from 10.8 to 16.3 mln. tons because of higher yields while decreasing the area of vegetable crops. In vegetable production structure, production of sheltered ground occupies 9.6%. The households of the population are the main producers of vegetables. They accounted for 66.5% of the gross harvest of vegetables. The volume of vegetable production and the main directions of its increase are justified. To ensure food security, it is necessary to increase the production of vegetables and food melon crops from 18.1 to 22.5 mln. tons, including vegetables from 16.3 to 20.3 mln. tons, food melon crops – 1.8 to 2.2 mln. tons. The increase in production of vegetable products will be facilitated by improvement of state support for vegetable growing and its increase in size, its concentration in specialized farms, intensification of the industry, the revival of Russian seed production of vegetable crops, construction of modern energy-saving greenhouses and modernization of the old ones, development of agro-industrial integration.

Risk assessment and monitoring programme of nitrates through vegetables in the Region of Valencia (Spain)

This study was carried out to determine current levels of nitrate in vegetables marketed in the Region of Valencia (Spain) and to estimate the toxicological risk associated with their intake. A total of 533 samples of seven vegetable species were studied. Nitrate levels were derived from the Valencia Region monitoring programme carried out from 2009 to 2013 and food consumption levels were taken from the first Valencia Food Consumption Survey, conducted in 2010. The exposure was estimated using a probabilistic approach and two scenarios were assumed for left-censored data: the lower-bound scenario, in which unquantified results (below the limit of quantification) were set to zero and the upper-bound scenario, in which unquantified results were set to the limit of quantification value. The exposure of the Valencia consumers to nitrate through the consumption of vegetable products appears to be relatively low. In the adult population (16–95 years) the P99.9 was 3.13 mg kg−1 body weight day−1 and 3.15 mg kg−1 body weight day−1 in the lower bound and upper bound scenario, respectively. On the other hand, for young people (6–15 years) the P99.9 of the exposure was 4.20 mg kg−1 body weight day−1 and 4.40 mg kg−1 body weight day−1 in the lower bound and upper bound scenario, respectively. The risk characterisation indicates that, under the upper bound scenario, 0.79% of adults and 1.39% of young people can exceed the Acceptable Daily Intake of nitrate. This percentage could join the vegetable extreme consumers (such as vegetarians) of vegetables. Overall, the estimated exposures to nitrate from vegetables are unlikely to result in appreciable health risks.

A Multi-country Ecological Study of Dietary Risk and Risk-reduction Factors for Prostate Cancer

Purpose: To investigate dietary factors for prostate cancer mortality (PrCM). Design: An ecological analysis was performed using age-stratified multi-country PrCM rates and dietary supply data. Materials and Methods: The PrCM rate data were obtained from the World Health Organization. The dietary supply data were obtained from the Food and Agriculture Organization of the United Nations. Multivariate regression analyses were performed with groupings of countries based on geopolitical associations. A time lag between diet and mortality of up to 19 years was used. Results: The consumption of vegetable protein was found to be an important risk-reduction factor for PrCM as one factor in a multivariate regression analysis. In addition, a high consumption of vegetable products as a fraction of total energy was inversely correlated with PrCM. The use of meat extenders and substitutes is not a new development; it predates the dawn of civilization. According to Burnett (1951), the people of the Orient have subsisted largely on soybean products for well over 2,000 years. These products substitute for animal products such as milk, cheese, eggs, and meat. Nevertheless, it is well recognized that as disposable income rises, there is a proportionately larger demand for animal products and a decline in consumption of vegetable products (FAO 1970).
