The article presents current information on trends in the consumption of organic food products in the world, information from foreign studies on their impact on public health. The market for these food products has grown significantly since the late 20th century and today represents a multi-billion dollar industry with distinct production, processing, distribution and retail systems. The relevance of studying the prevalence of consumption of organic food products among the population of various countries is increasing due to the increase in the modern world of demand and motivation among social groups of the population, especially among adherents of a healthy lifestyle. The purpose of the study is to review and analyze modern scientific foreign literature on the development of the organic food market from the standpoint of health conservation and medical and social perspectives. As a result of the review, it was revealed that the understanding currently clearly manifested in various social circles of the need to improve the level of quality of health of the individual and the population as a whole, the demand for the production of safe, micronutrient-rich, healthy food products, especially products of plant origin, actualize the expansion of production organic food products. In many countries around the world, there is an increase in consumer demand for organic food products; their regular consumers are people, mainly women, who care about their health, are physically active, have a higher level of education and income, and live mainly in high-income countries. The certain high cost of organic food products, depending on labor-intensive production methods and certification costs, often leads to unequal access to organic food products. The positive impact of organic foods on health status and the risk of developing chronic diseases is associated with a higher content of biologically active compounds and a lower content of substances harmful to health. Overall, large intervention and population-based studies are needed on the health effects of organic foods, comparing the quality, safety, bioactive compounds, nutritional and phytochemical value of foods in conventional and organic production systems using new research methods.

Analysing Factors Driving Purchase and Consumption Behaviour Towards Organic Food

Personal health, food safety and environmental concerns significantly contribute to the purchase and consumption of organic food. Several countries, including India, are turning their attention to encouraging organic food farming and purchasing to comply with sustainable development goals. This research identifies and analyses the motivational factors critical to the purchase and consumption of organic food and also extends a roadmap to the food industries for sustainable growth. A list of factors driving the purchase and consumption of organic food was extracted from the literature. Fuzzy Technique for Order of Preference by Similarity to Ideal Solution (Fuzzy TOPSIS), Fuzzy Simple Additive Weighting (Fuzzy SAW) and Borda method are used to prioritize the identified motivational factors followed by the sensitivity analysis to simulate dynamic various market requirements and challenges. The findings substantiate that chemical free, no artificial ingredients, good for body, healthy and awareness about health significantly influence the purchase and consumption of organic food products. To ensure sustainable production and consumption of organic food, it is vital for government policymakers, organizations involved in production, marketing and distribution of the organic food to understand and critically evaluate various factors affecting the purchase and consumption intensions of the consumers.

Trust, convenience and environmental concern in consumer purchase intention for organic food

Purpose The customers are demanding the products which are not only healthy but also clean and environment friendly i.e. call for sustainable consumption products. Therefore, this study aims to identify the important drivers of organic food purchase intention. Design/methodology/approach A cross-sectional research design involving the collection of primary data from 234 respondents was adopted in this study. Responses were gathered from the consumers of organic food representative of the Indian population. Structural equation modelling was applied to analyze data and validate the research model. Findings The findings of the study would help practitioners understand the factors leading to the purchase intention of organic food products in a growing consumer market. This knowledge would help them devise marketing and communication strategies to increase the consumption of organic food products. Originality/value The present study advances existing literature on organic food consumption by extending the theory of planned behaviour with factors, namely, environmental concern, convenience and trust, and establishing their role in developing the purchase intention for organic food products.

The Relationship between Perceived Value, Attitude and Behaviour towards Purchasing Organic Products (Case Study in Indonesia)

Purpose: This research work attempts to review the effect of determinants like perceived uniqueness and perceived healthiness as well as attitude amongst the consumers towards their purchase intention of organic food, which subsequently results in the actual purchase.
 Design/Method/Approach: Quantitative approaches and explanatory research are used in this study. This research data was collected by means of a questionnaire distributed across a sample of consumers living in Indonesia. An online survey was used and conducted in November 2022 in Indonesia to measure this research. The sample, which was collected through the online survey using Google Form, consisted of 780 participants and was representative of gender, age, and region. Actually 800 participants were contacted to participate in the survey, but only 780 participants responded to the online survey.
 Findings: The first objective of this study was to test the ability of the extended Value Attitude Behaviour (VAB) model to explain the consumption of organic food products by Indonesian consumers. The results show a good fit of the data. The third hypothesis was confirmed because attitudes are closely related to organic food consumption. Organic food products were considered and perceived as something unique and natural; therefore, they provided a favorable attitude among the part of the respondents.
 Theoretical Implications: The study contributes to existing literature on organic food products especially about variables used in this study. In addition, in this study, consumers' perception of organic food products as unique, natural, healthy and sustainable was positively related to their overall attitudes.
 Practical Implications: Given the high production costs and limited quantities of organic food products, marketers should present and promote (through packaging and stores) organic food products as the ones of unique quality and should emphasize their natural character.
 Originality/Value: This paper provides a comprehensive overview and links the literature on organic food consumption to Value Theory and the Theory of Planned Behaviour, including the role of perceived uniqueness and healthiness. The proposed integration of perceived uniqueness and healthiness in an organic food consumption model leads to interesting hypotheses and recommendations for policy makers, researchers and stakeholders involved in the organic food market.
 Research Limitations/Future Research: This study provides a good indication regarding consumers’ attitudes, perceived naturalness, and perceived uniqueness of organic food products. However, as only 55% of the respondents had consumed organic food products, the attitude and beliefs of 45% of the respondents were not based on actual experience, but on expectations and beliefs. We believe consumers’ attitudes and beliefs may differ after trying organic food. Therefore, it would be interesting to study eventual variations in attitudes and beliefs before and after trying organic food products.

Comparative Study about the Consumption of Organic Food Products on Samples of Portuguese and Turkish Consumers under the COVID-19 Pandemic Context

This research aimed to study consumers’ trends and the consumption of foods obtained through organic farming in two different countries, Portugal and Turkey. A questionnaire survey was used, applied through internet tools as a result of COVID-19 pandemic restrictions. For the treatment of data, we used basic statistics complemented with a tree classification, aimed at evaluating the influence of sociodemographic factors on the knowledge about this type of food. The results showed that the consumption patterns are relatively similar in both countries, with many participants consuming organic foods, especially vegetables and fruits, consuming them mostly two or three meals per week. The strongest motivations to consume organic foods include benefits for human health and lower environmental impacts, while the most substantial reason not to consume is the higher price. It was also found that in both countries, people have good knowledge about the advantages of organic foods over conventional ones. Finally, the perception of the value attributed by society to organic foods was considerably higher in Portugal. These results confirm the apparent trend of making more sustainable food choices, which is motivated by the perceived negative impact of conventional agriculture on ecosystems and health.

The Connections between Ecological Values and Organic Food: Bibliometric Analysis and Systematic Review at the Start of the 21st Century

This paper addresses the field of study relating to ecological values and the production, distribution, and consumption of organic food products, aiming to contribute to the consolidation of scientific knowledge in this area of study. This article refers to a bibliographic review in the Web of Science database. It also involves bibliometric analysis of the results of this bibliographic review using the NVivo program. The main results classify the number of articles published on the basis of the methodology used, the number of countries in the analysis units, the central themes of the study, and the type of organic food considered in the bibliography analyzed. It also classifies the articles with the greatest impact in relation to the number of bibliographic references, in addition to detailing the universities, institutions, and journals with the largest number of contributions in the field of study. The research concludes by identifying that most of the articles apply a quantitative methodology and address generic aspects of organic food. This study identifies a need for further research in relation to specific organic foods, and for articles that introduce comparative analysis at the international level.

Impact of price on consumption of organic food products: A pragmatic study

Organic food product market is been growing consistently over a decade worldwide. Healthinsecurity among consumers is the major factor that shifted consumers interest towards organic productfrom conventional products. Irrespective of the growth, organic food market has grown as nichemarket, in order to enter the main stream the biggest barrier is the price of the product. At this backdrop,the present study aims to understand whether consumers are really keen to pay higher price for organicproducts bearing in mind the various benefits of it. The essential data for the present study has beengathered through primary source. A sample of 105 respondents were selected using conveniencesampling technique. A structured questionnaire had been used to determine respondents over allopinion towards the pricing of organic food items. The study results revealed that customers inclinationto pay higher premium price for organic product is due to less chemical & fertilizers usage, healthbenefit enjoyed, less environmental impact created and the quality maintained in the products.

Purchase Intention for Organic Food Products in Mexico: The Mediation of Consumer Desire.

Socially responsible consumption benefits the environment, the consumer, and the producer. In Mexico, smallholder farmers are vulnerable, and the consumption of organic food products is low. Analysing the purchase intention of organic food products contributes towards generating the most appropriate marketing strategies. Previous models provide evidence that the attitude of the consumer is the biggest predictor of purchase intention. However, little is known about the results of the mediating effect of desire on said relationship. The objective of the study is to analyse the mediating effect of desire on the relationship between attitude and purchase intention. 204 consumers of organic food products were surveyed using a structured, self-administrated questionnaire or through face-to-face interviews, in established retail stores, alternative street markets, and via the web. It was found that when the benefits of organic food products to the consumer, environment, and smallholder farmers are evaluated favourably, then consumer desire is higher, and thus also purchase intention. Consumers have the highest purchase intention for organic food products when their desire to buy them to achieve a goal related with social, personal, and environmental benefits intervenes.

There is no data on the use of organic food by athletes and sports trainers in Lithuania. This determined the purpose of our study ‒ to examine and describe the peculiarities of the consumption of organic food products between Lithuanian high performance athletes and sports trainers. To assess the use of organic food, 158 Lithuanian high-skilled athletes and 135 sports coaches were surveyed. The results of the survey showed that the number of organic food users in the groups of athletes and coaches is high, accounting for 97% and 88.1%. Regardless of this, eco-friendly foods are too rarely used by athletes and coaches. Only 27.9% of athletes and only 36.5% of sports coaches use organic food daily. Athletes and sports trainers usually use organic fruits and berries, vegetables, eggs, and meat products. However, the use of organic products is determined by the gender and age of athletes and coaches. Information on organic nutrition is lacking in 44.3% of athletes and 54.8% of sports coaches. The use of organic food depends on the incomes of the athletes, but incomes is not a limiting factor for ecologic nutrition. Meanwhile, the use of organic food among sports trainers has no link with their incomes. The results of our research justify the need for the development of organic food products and assortment. It would be advisable for manufacturers to focus on the segment of high performance athletes and their sports coaches in shaping the organic food market. Tunisian consumers perception and behavior towards organic food products

Organic agriculture production in Tunisia is relatively recent and was mainly oriented to the export market. However, local market demand is growing for such products. The objective of the current study is to assess consumers’ awareness and consumption of organic food products. A survey was implemented and included 250 respondents from the capital city Tunis. We used descriptive statistics, factor and cluster analysis to analyze the data. The results indicated that respondents’ perceptions towards organic food are positive. Four groups of consumers were identified with respondents from the main three groups have good understanding about organic food products characteristics. However, the proportion of consumers who purchase organic food on a regular basis is quite low (16%). Improving availability and access to organic products through the integration in mainstream sales channels and lower price premiums will help narrowing the gap between the intention to purchase organic products and the actual purchase. Generational Differences toward Organic Food Behavior: Insights from Five Generational Cohorts

One of the pathways to sustainable food consumption behaviour is the purchase and consumption of organic food products. This paper offers insights into the behaviour exercised by five generational cohorts toward organic products, i.e., Generation Z, Generation Y, Generation X, Baby Boomers, and the Silent Generation. A qualitative and quantitative research methodology is implemented, with the field research providing 1562 valid questionnaires over a nine-month period. Generational differences are explored in terms of purchasing behaviour, attitudes, and the effect of the economic crisis on the purchasing of organic food. Results unveil that all generational cohorts demonstrate a favourable attitude toward organic food, and they identify the economic crisis as an effect of low purchase behaviour. Additionally, findings reveal that in all cases, generational cohort differences do exist. Government policy through marketing communications can be adapted to determine the advantages of organic food compared to conventional ones, persuade consumers about the benefits, and, thus, reinforce favourable attitudes in association with economic crisis conditions.

Consumption of Organic Food Products in Latin America: Role of Knowledge and Emotions among Women Consumers

The purpose of this study is to examine the effects of knowledge and emotions among women on the consumption of organic food products. A research survey has been conducted in four supermarkets in Mexico City. In all, 276 observations were analysed in the study during the fall of 2018. Data was collected on 11 variables influencing women consumers towards developing organic products buying behaviour. The study reveals that social media updates potential women consumers on pricing, availability, quality, and in-store promotions on the organic food products. The price of organic foods plays a critical role in determining the buying behaviour of women consumers despite food safety, health consciousness, and family wellness as strong mediating factors. Proximity of outlets, quality, and family-led decision-making process builds consumption behaviour of organic products. This research contributes to the debate on organic food buying practices of women consumers in reference to health and sustainability concerns in emerging markets.

Consumer Motivation for Organic Product Consumption with Special Reference to West Bengal

Indian consumers are living in a dynamic world these days. They are continuously facing array of new products and services, including food products. Organic food is one such new phenomenon that is widely talked about but rarely understood. However, compared to the European level, the consumption of organic food products is quite low in India. The market for organic food is extremely nascent in India, with very few active brands and low penetration even among urban consumers. In India, of the total 180 million hectares of total agricultural land, land under certified organic production is a negligible 0.0015 per cent. In comparison, organic farmland in the European Union (EU) constitutes 5.7 per cent of the total agricultural land. Growth of organic agricultural land in EU, however, has been substantial over the last decade, having increased by approximately 60 per cent since 2005. Gracia and Magistris (2008) professed that “the future of organic agriculture will depend, to a large extent, on consumer demand.” On this context, this paper tries to investigate the perception and attitudes of the organic food consumers from West Bengal. In order to provide information related to consumer motivation in purchasing organic products, 50 respondents were interviewed using face-to-face approach by adopting a survey. Perception, knowledge and behaviour of the consumers (respondents) towards organic foods are studied and the results are presented in this paper.

Influence of Socio-Psychological Factors on Consumer Willingness to Pay (WTP) for Organic Food Products

This study evaluates consumers’ willingness to pay (WTP) a premium for organic vegetables and fruits in Pietermaritzburg metropolis, KwaZulu-Natal province, South Africa, using data collected from 210 consumers approached during their food shopping. The standard economic approach to valuation was extended by including psychological factors. The results from the empirical model show that psychological factors (behavioural control, attitude and subjective norms) exerted more influence on consumers’ WTP for organic products. In addition, socio-demographic factors such as gender, education, number of children in a household, high income and race, are statistically significant in explaining consumers’ WTP for organic food. Policy implications for advancement and improved promotion, sales and consumption of organic food products were discussed.

Are green consumers really green? Exploring the factors behind the actual consumption of organic food products

AbstractThe increasing interest in sustainable consumption has lead several scholars to investigate the determinants that drive the consumption of organic food. Most of this research is based on consumers' self‐reports of their purchasing behavior by exploring declared behavioral intentions. There is a lack of understanding concerning the determinants of organic food consumption based on actual purchasing behavior. To fill this gap, this study is based on a combination of actual purchasing data and self‐reported data from a sample of 79 Italian consumers. The determinants of organic food consumption are explored by analyzing the effects of subjective norms, attitude, perceived behavioral control, intention to buy, organic knowledge, and health consciousness on actual purchasing behavior. Our results suggest that actual purchasing behavior is positively influenced by intention to buy and negatively by subjective norms. Although attitude towards buying organics is positively affected by health consciousness and perceived behavioral control, consumer knowledge about organics is found to influence purchase intentions. Theoretical and managerial implications, along with avenues for future research, are discussed.

RECENT EVOLUTION OF THE CONSUMPTION OF ORGANIC FOOD PRODUCTS IN BELGIUM

The consumption of organic food products in Belgium increased significantly andcontinuously between 2008 and 2016, growing from 1.5 % to 3.2% of the totalconsumers’ expenses for fresh food products. Nine percent of Belgian families buyorganic food products at least once per week and represent 60% of the totalexpenses. The total expenses per capita reached nearly 33€ in 2015. The mainexpenses concerned dairy products (6.72 €/capita), vegetables (5.57) and fruits(4.40). These expenses have been globally increasing. The market share of organicproducts considerably varies from one type of food products to another: it is thehighest for meat substitutes (24.6% in 2016) and eggs (14.0%), while it reaches3.0% for dairy products, 6.6% for vegetables and 4.3% for fruits. Thesepercentages have been globally increasing during the last years. Vegetable productshave been proportionally more sold than animal products compared to the situationin the conventional market. Supermarkets and specialized shops are the mostcommon distribution channels, direct sales on farms and open markets remainingmarginal. Families with high income and children and retired people with highincome are those who spend the most on organic food products. This evolution issupported by the Walloon government through the organic farming developmentplan.

Demographic characteristics of consumers in consumption of organic food products: Case study: Serbia

The purpose of the paper is to determine the differences between demographic characteristics of consumers in relation to discouraging and motivating factors of consuming organic food products in Serbia. An empirical research was conducted in Serbia on a sample of 833 respondents, using e-questionnaire. T-test for independent samples was used. The results indicate that in relation to discouraging factors for consumption of organic food products there are differences in the demographic characteristics of consumers, exception is age. Also, in relation to motivation factors, differences exist in majority of consumers’ demographic characteristics, except the level of education and place of residence. Practical application of the results enables adequately managed consumption of organic food products which directly affects the reduction of ecological, social, health and economic problems. On the other side, the theoretical application of the results enables the creation of a consumers’ profile for organic food products.

Trends in demand on the organic food market in the European countries

The sector of organic agriculture is attractive for investment, and the organic food market demonstrates a dynamic growth. The article suggests methodological approaches to the analysis of demand trends on the organic food market based on the use of growth curves. The dynamics of changes in the consumption of organic products per capita is characterized by a sequential single passage of the stages of development (growth), the achievement of maximum indicators (saturation), recessions, and cessation of existence. As the main factors determining the rate of development and the potential consumption of organic food products per capita, the level of incomes and life of the population was considered. The potential consumption of organic food products per capita in different countries is grounded, taking into account these factors. Based on the analysis of the functions of the growth rates of the per capita demand for organic food products derived from the estimated demand growth curves, the stages of the life cycle of organic food products on the European markets were analyzed, and the exhaustion of the potential demand for organic products in all considered countries except Britain was identified. It is expected that the further expansion of organic food production in the European producer countries will be facilitated by the reorientation to new markets actively importing this product (China, Russia, Japan, and Singapore).
