Evaluation of passive samplers as a cost-effective method to predict the impact of wildfire smoke in grapes and wines

Wildfire smoke exposure alters grape composition, potentially resulting in “smoke tainted” wines. This has been correlated with elevated levels of smoke-derived volatile phenols (VPs) in grapes and wines. This work sought to create a predictive tool that could correlate levels of VPs in smoke with concentrations in grapes and wines. Therefore, passive samplers and Cabernet Sauvignon grapes were intentionally exposed to various smoke intensities, and wines were made thereafter. As expected, concentrations of VPs in grapes and wines were positively associated with the intensity of smoke exposure. Interestingly, levels of guaiacol in the passive samplers had a strong positive correlation with concentrations in grapes (R2 = 0.9999) and wines (R2 = 0.9998). The passive samplers were able to accurately predict guaiacol levels in smoke exposed grapes and wines with percent errors ranging from 0.08 to 11.3 %. These results suggest the capability of passive samplers to act as a monitoring system in vineyards during smoke events.

Evaluating the Susceptibility of Different Crops to Smoke Taint

The potential for grapes and wine to be tainted following vineyard exposure to wildfire smoke is well established, with recent studies suggesting hops and apples (and thus beer and cider) can be similarly affected. However, the susceptibility of other crops to ‘smoke taint’ has not yet been investigated. Smoke was applied to a selection of fruits and vegetables, as well as potted lavender plants, and their volatile phenol composition determined by gas chromatography–mass spectrometry to evaluate their susceptibility to contamination by smoke. Volatile phenols were observed in control (unsmoked) capsicum, cherry, lavender, lemon, spinach and tomato samples, typically at ≤18 µg/kg, but 52 µg/kg of guaiacol and 83–416 µg/kg of o- and m-cresol and 4-methylsyringol were detected in tomato and lavender samples, respectively. However, significant increases in volatile phenol concentrations were observed as a consequence of smoke exposure; with the highest volatile phenol levels occurring in smoke-exposed strawberry and lavender samples. Variation in the uptake of volatile phenols by different crops was attributed to differences in their physical properties, i.e., their surface area, texture and/or cuticle composition, while the peel of banana, lemon, and to a lesser extent apple samples, mitigated the permeation of smoke-derived volatile phenols into pulp. Results provide valuable insight into the susceptibility of different crops to smoke contamination.

Impact of Smoke from Wheat, Oat, and Clover Stubble Burning on Cabernet Sauvignon Grapes and Wine

Background and Aims. Stubble burning is an agricultural practice employed by some grain growers to prepare farmland for sowing and/or to control weeds and pests. Grapegrowers and winemakers have questioned whether the resulting smoke can contaminate grapes in nearby vineyards. This study therefore sought to determine the potential for smoke from three different stubble burns to taint grapes and wine. Methods and Results. Excised bunches of mature Cabernet Sauvignon grapes were exposed to smoke from prescribed burning of wheat, oat, and Balansa clover stubble windrows. Environmental sensors monitored the concentration of particulate matter as a measure of smoke density, while chemical and sensory analysis established the extent to which grapes and wine were tainted by smoke. Only grapes that were positioned among the burning wheat windrows or downwind, but in close proximity (∼200 m) to the oat stubble burn, were exposed to sufficient quantities of smoke to result in a detectable concentration of volatile phenols (up to 12 µg/kg), as chemical markers of smoke taint. These grapes yielded wines with two to threefold higher volatile phenol concentrations (up to 18 µg/L) than other wines, including the control wine, and low intensity, but perceptible smoke-related sensory attributes, indicative of low-level smoke taint. Conclusions. Chemical and sensory analyses suggest the risk of smoke taint from stubble burning is low, except where vineyards are immediately downwind and/or prolonged or repeated smoke exposure occurs. However, stubble moisture content and prevailing weather conditions affect smoke density and dispersion, and will therefore affect the potential for smoke contamination by grapes. Significance of the Study. This study will assist colocated grain growers and grape and wine producers to undertake commercial operations, without negatively impacting one another.

Contaminated Perry in Patagonia Argentina: A Case Study.

Perry is a beverage obtained by fermentation of pear juice, popular in the North Hemisphere. In Argentina it is an emerging market, particularly in the Patagonian region. The aim of this work is to describe and to evaluate the spoilage yeasts associated to six perry samples showing signs of microbiological contamination from a local craft perry company in North Patagonian region. Eighteen yeasts were isolated from four of the six perry samples where Brettanomyces custersianus, Brettanomyces bruxellensis and Zygosaccharomyces parabailii were identified. The growth capacity of these isolates in the presence of antimicrobial agents (sulfite and potassium sorbate) was analyzed in solid media. Growth parameters in sterile perry must was evaluated and the production of undesirable compounds were evaluated, products were characterized in terms of their aromatic and physicochemical features. The yeasts Z. parabailii NPCC1791 was able to grow on plates containing sulfite concentrations of up to 4mM and produced high methanol concentrations in perry. Additionally, B. bruxellensis NPPC1792 was able to produce methanol as well as high concentrations of volatile phenols including 4-ethylphenol and 4-ethylguaiacol. These results demonstrate the potential of these species as perry contaminants. Given the lack of studies describing the contaminating yeasts in perry production, this work represents the first report about perry spoilage yeasts in Argentina, with this knowledge, control strategies can be developed to prevent microbiological contamination and minimize product loss.

Consumer response to wine made from smoke-affected grapes

When vineyards and grapes are exposed to smoke from wildfires or controlled burns, this can result in wines with smoky, burnt or ashy attributes that have been linked to the presence of elevated concentrations of volatile phenols and phenolic glycosides. These smoky flavours are considered undesirable by winemakers, but there is little information about how consumers respond to smoke-affected wines. To investigate whether consumers respond negatively to smoky attributes when wine is tasted blind, three studies assessing sets of Pinot noir rosé, Chardonnay and unoaked Shiraz wines with varied smoke flavour were conducted. Overall, wines rated high in smoke flavour were less liked compared to non-smoke-affected wines. Independent of wine type, there was a strong negative correlation between smoky flavour and overall consumer liking. Detailed data analysis revealed that consumers who are wine drinkers fell into one of three categories: highly responsive to smoke, moderately responsive, or a smaller group of non-responders. This consumer-based information is essential for guiding the assessment of risk from smoke exposure of grapes and potential for quality defects in wine, as well as identifying and benchmarking management options for wine producers, not only in Australia, but globally.

Modelling Smoke Flavour in Wine from Chemical Composition of Smoke-Exposed Grapes and Wine

Wine grapes exposed to smoke and wine made from grapes exposed to smoke can robustly be identified through their elevated concentrations of volatile phenols and phenolic glycosides serving as smoke markers, compared to concentrations typically found in non-smoke-exposed samples. Smoke-affected wines with high concentrations of volatile phenols and glycosides can have smoky flavours, but the relationship between concentrations of specific smoke markers in grapes and the intensity of smoky sensory attributes in the resulting wine has not been established. This study sought to determine whether volatile phenols and glycoside concentration in grapes and wine are suited to predict smoke flavour, to identify the key drivers of smoke flavour in both matrices. The study aimed to determine what concentrations of volatiles and glycosides in grapes impart an unacceptable smoke flavour in the resulting wine, to provide a guide for producers assessing suitability of smoke-exposed grapes for wine production. During vintage 2020, a total of 65 grape samples were collected from vineyards exposed to bushfire smoke, as well as unaffected vineyards. Chardonnay, Pinot Noir, and Shiraz grapes were harvested from vineyards in New South Wales, South Australia, and Victoria. Unoaked wines (50 kg scale) were produced under controlled conditions. The wines had a wide range of smoke flavour intensities rated by a trained sensory panel. Statistical models based on guaiacol, o-cresol, m-cresol, p-cresol, and some glycosides gave good predictions of smoke flavour intensity, with a slightly different optimal model for each cultivar. Subsequently, critical concentrations for quality defects were estimated to provide a guide for producers. A subset of smoke exposure markers in wine grapes affected by smoke from bushfires can be used to predict the degree of smoke flavour in wine. This information provides a first guide for assessing the risk of producing smoke tainted wine from smoke-exposed grapes.

A combination of thiophenols and volatile phenols cause the ashy flavor of smoke taint in wine

Grapes exposed to wildfire smoke can develop reduce wine quality, imparting unpleasant smokey and ashy flavors. Research has primarily focused on the increased concentration of volatile phenols (VPs) in grapes and wine acquired from smoke. This study was undertaken to determine the chemical compounds that cause the ashy flavor in wines produced from smoke exposed grapes. The chemical composition of a tasting standard produced from charred leeks was determined using UPLC-QToF/MS. Several thiol derivatives were identified. Analyses of smoke-impacted wines and grapes revealed the presence of thiophenols, napthalene thiols, and additional thiol-derived compounds. LC-MS/MS of wines produced from smoke-exposed grapes showed higher concentrations of thioguaiacol and thiocresols. Chemical causation of smoky and ashy flavors by these compounds was investigated using sensory descriptive analysis. Wines with both thiophenols and VPs were described as ashy and smokey, contributing to more than 90% total variance for each wine.

The Effect of Pre-Veraison Smoke Exposure of Grapes on Phenolic Compounds and Smoky Flavour in Wine

Background and Aims. Smoke exposure occurred in the Adelaide Hills region in December 2019 due to a wildfire, when wine grapes were peppercorn-size green berries. Previously, pre-veraison smoke exposure had been identified through model experiments as unlikely to affect grape composition, whereas smoke exposure after veraison can have a major effect on wine flavour. Hence the effects of pre-veraison smoke on grape and wine composition, and smoky sensory properties of wine were investigated. Methods and Results. Chardonnay, Pinot Noir and Shiraz were investigated and eight blocks with varied smoke exposure were selected for each cultivar. Berries were sampled initially four weeks after the fire and at harvest, and mature grapes were made into unoaked wines. Established smoke exposure markers, phenolic glycosides, were found in berries at pre-veraison and at harvest from the high smoke exposure sites, with concentrations well above those found in non-smoke exposed fruit. Volatile phenols were also elevated in grapes at harvest. The resulting red wines from some exposure vineyards were high in volatile phenols, glycosides and smoky flavours. However, most of the Chardonnay wines expressed much less smoky flavours, despite similar levels of smoke exposure of grapes. Conclusions. Pre-veraison smoke exposure can result in elevated concentrations of volatile phenols and their glycosidic metabolites in grape berries and wine and cause strong smoky flavour in wine. Significance. The wine sector and land management agencies responsible for controlled burns need to consider the effect of smoke from fires near vineyards even very early in the growing season.

Evaluation of Spinning Cone Column Distillation as a Strategy for Remediation of Smoke Taint in Juice and Wine.

Where vineyard exposure to bushfire smoke cannot be avoided or prevented, grape and wine producers need strategies to transform smoke-affected juice and wine into saleable product. This study evaluated the potential for spinning cone column (SCC) distillation to be used for the remediation of 'smoke taint'. Compositional analysis of 'stripped wine' and condensate collected during SCC treatment of two smoke-tainted red wines indicated limited, if any, removal of volatile phenols, while their non-volatile glycoconjugates were concentrated due to water and ethanol removal. Together with the removal of desirable volatile aroma compounds, this enhanced the perception of smoke-related sensory attributes; i.e., smoke taint intensified. Stripped wines also became increasingly sour and salty as ethanol (and water) were progressively removed. A preliminary juice remediation trial yielded more promising results. While clarification, heating, evaporation, deionization and fermentation processes applied to smoke-tainted white juice gave ≤3 µg/L changes in volatile phenol concentrations, SCC distillation of smoke-tainted red juice increased the volatile phenol content of condensate (in some cases by 3- to 4-fold). Deionization of the resulting condensate removed 75 µg/L of volatile phenols, but fermentation of reconstituted juice increased volatile phenol concentrations again, presumably due to yeast metabolism of glycoconjugate precursors. Research findings suggest SCC distillation alone cannot remediate smoke taint, but used in combination with adsorbents, SCC may offer a novel remediation strategy, especially for tainted juice.

Novel use of activated carbon fabric to mitigate smoke taint in grapes and wine

Background and Aims Grapegrowers and winemakers, around the world, are searching for strategies to mitigate the compositional and sensory consequences of grapevine exposure to smoke from wildfires. This study evaluated the use of activated carbon fabrics as protective coverings to mitigate the uptake of smoke-derived volatile phenols by grapes, and accordingly, the intensity of smoky, ashy characters in wine. Methods and Results Smoke was applied to Mataro grapes, with and without individual bunches being enclosed in bags made from three activated carbon fabrics (felt, light cloth and heavy cloth). Wine made from smoke-exposed grapes had an elevated concentration of volatile phenols, but the composition of wines made from grapes protected by activated carbon fabric was comparable to that of the Control wine; the difference in concentration of guaiacol, o- and m-cresol and/or syringol was only 1 μg/L. Wine made from smoke-exposed grapes had diminished fruit and prominent smoke characters, whereas the sensory profile of the wines corresponding to activated carbon fabric treatments could not be differentiated from that of the Control wine. Analysis by GC/MS of the activated carbon fabrics following repeated smoke exposure confirmed their adsorption of smoke volatiles. Conclusions The activated carbon fabrics successfully protected Mataro grapes and wine from being tainted by smoke exposure. Significance of the Study This study demonstrates a promising new technology for overcoming smoke taint, an issue of major concern for grape and wine producers worldwide.

Development and Utilization of a Model System to Evaluate the Potential of Surface Coatings for Protecting Grapes from Volatile Phenols Implicated in Smoke Taint

Due to the increasing frequency of wildfires in recent years, there is a strong need for developing mitigation strategies to manage the impact of smoke exposure of vines and occurrence of ‘smoke taint’ in wine. One plausible approach would be to prevent or inhibit the uptake of volatile phenols from smoke into grape berries in the vineyard. In this study we describe a model system we developed for evaluating under controlled conditions the effectiveness of a range of surface coatings (including existing horticultural sprays) for reducing/preventing the uptake of volatile phenols and their subsequent conversion to phenolic glycosides. Grapes were coated with the materials to be tested and then exposed to gaseous phenols, via evaporation from an aqueous solution, in a semi-closed glass container. Analysis of volatile phenols and their glycosidic grape metabolites demonstrated that the treatments typically did not provide any significant protection; in fact, some resulted in higher concentrations of these compounds in the grapes. The highest concentrations of volatile phenols and their glycosides were observed after application of oily, hydrophobic materials, suggesting that these materials may enhance the adsorption or transfer of volatile phenols into grape berries. Therefore, it is important to consider the types of sprays that are being applied in the vineyard before and during smoke events to prevent the potential of exacerbating the uptake of smoke compounds by grape berries.

Large-Scale Reassessment of In-Vineyard Smoke-Taint Grapevine Protection Strategies and the Development of Predictive Off-Vine Models.

Smoke taint in wine is thought to be caused by smoke-derived volatile phenols (VPs) that are absorbed into grape tissues, trapped as conjugates that are imperceptible by smell, and subsequently released into wines as their free odor-active forms via metabolism by yeasts during fermentation. Blocking VP uptake into grapes would, therefore, be an effective way for vineyards to protect ripening grape crops exposed to smoke. Here, we re-evaluated a biofilm that had previously shown promise in pilot studies in reducing levels of smoke-derived VPs. A suite of nine free and acid-labile VPs were quantitated in Pinot Noir grapes that had been exposed to smoke after being coated with the biofilm one, seven or 14 days earlier. In contrast with earlier studies, our results demonstrated that in all cases, the biofilm treatments led to increased concentrations of both free and total VPs in smoke-exposed grapes, with earlier applications elevating concentrations of some VPs more than the later time points. Tracking VP concentrations through the grape ripening process demonstrated that some (phenol, p/m-cresol, and guaiacol) were not entirely sequestered in grapes as acid-labile conjugates, suggesting the presence of VP storage forms beyond simple glycosides. Free VPs in grapes, though a minor portion of the total, most clearly correlated with concentrations present in the resulting wines. Finally, red table grapes, available year round, were observed to replicate the effects of the biofilm treatments and were capable of transforming most VPs into acid-labile conjugates in under 24 h, indicating that they might be an effective model for rapidly assessing smoke-taint prophylactic products in the laboratory.

Effect of malolactic fermentation and ageing on the concentration ofρ‐coumaric acid of Pinot Noir wine and the consequence for volatile phenol production byBrettanomyces

Background and Aims This study compared changes in the concentration of ρ-coumaric acid in wine because of enzymatic hydrolysis of ρ-coutaric acid by Oenocococcus oeni with that of chemical hydrolysis during ageing. Methods and Results Malolactic fermentation of a Pinot Noir wine with a cinnamoyl esterase-positive (CE+) O. oeni strain resulted in a significant increase in ρ-coumaric acid concentration. No significant change in ρ-coumaric acid concentration occurred during ageing regardless of wine pH, ethanol concentration or storage temperature. Brettanomyces bruxellensis produced a significantly higher concentration of volatile phenols in wines that underwent malolactic fermentation with the CE (+) O. oeni strain than with the CE (−) strain. Conclusions The O. oeni strain had significantly more impact on wine ρ-coumaric acid concentration than chemical hydrolysis during ageing. Significance of the Study The use of CE (+) O. oeni strains should be avoided in wines at risk of Brettanomyces spoilage because of an increase in the concentration of the volatile phenol precursor, ρ-coumaric acid.

Uptake and Glycosylation of Smoke-Derived Volatile Phenols by Cabernet Sauvignon Grapes and Their Subsequent Fate during Winemaking.

Wine made from grapes exposed to bushfire smoke can exhibit unpleasant smoky, ashy characters, which have been attributed to the presence of smoke-derived volatile phenols, in free or glycosylated forms. Here we report the uptake and glycosylation of volatile phenols by grapes following exposure of Cabernet Sauvignon vines to smoke, and their fate during winemaking. A significant delay was observed in the conversion of volatile phenols to their corresponding glycoconjugates, which suggests sequestration, the presence of intermediates within the glycosylation pathway and/or other volatile phenol storage forms. This finding has implications for industry in terms of detecting smoke-affected grapes following vineyard smoke exposure. The potential for an in-canopy sprinkler system to mitigate the uptake of smoke-derived volatile phenols by grapes, by spraying grapevines with water during smoke exposure, was also evaluated. While “misting” appeared to partially mitigate the uptake of volatile phenols by grapes during grapevine exposure to smoke, it did not readily influence the concentration of volatile phenols or the sensory perception of smoke taint in wine. Commercial sensors were used to monitor the concentration of smoke particulate matter (PM) during grapevine exposure to low and high density smoke. Similar PM profiles were observed, irrespective of smoke density, such that PM concentrations did not reflect the extent of smoke exposure by grapes or risk of taint in wine. The sensors could nevertheless be used to monitor the presence of smoke in vineyards during bushfires, and hence, the need for compositional analysis of grapes to quantify smoke taint marker compounds.

Characterization of odor-active compounds in the head, heart, and tail fractions of freshly distilled spirit from Spine grape (Vitis davidii Foex) wine by gas chromatography-olfactometry and gas chromatography-mass spectrometry

Differences in key odor-active volatile compounds among the head, heart, and tail fractions of freshly distilled spirits from Spine grape (Vitis davidii Foex) wine were identified for the first time by gas chromatography–olfactometry and gas chromatography-mass spectrometry. Results from aroma extract dilution analysis (AEDA) showed that there were 34, 45, and 37 odor-active compounds in the head, heart and tail fractions, respectively. Besides, 20, 22, and 17 quantified compounds, respectively, showed odor activity values (OAVs) > 1. The head fraction was characterized by fruity, fusel/solvent notes owing to higher concentrations of higher alcohols and esters, while the tail fraction had more intense smoky/animal, sweaty/fatty attributes due to higher concentrations of volatile phenols and fatty acids. Finally, the heart fraction was characterized by ethyl octanoate, ethyl hexanoate, ethyl 3-phenylpropanoate, ethyl cinnamate, isoamyl alcohol, guaiacol, 4-ethylguaiacol, 4-vinylguaiacol, 2,3-butanedione, and (E)-β-damascenone. Furthermore, observation of the distillation progress indicated that different volatiles with various boiling points and solubilities followed diverse distillation patterns: concentrations of most esters, higher alcohols, terpenes and C13-norisoprenoids decreased, while concentrations of volatile phenols, fatty acids and some aromatic compounds increased during distillation. As a result, their final concentrations in the three distillate fractions varied significantly.

Potentially Smoke Tainted Red Wines: Volatile Phenols and Aroma Attributes

Malodourous compounds, including volatile phenols (VPs) are frequently found at concentrations below their odour thresholds in wine, and may therefore be considered to present no threat to wine quality. Most investigations into smoke taint quantify compounds by chemical/analytical means, or investigate sensory effects of supra- and peri-threshold contamination in model wine. In this project, twelve wines (submitted by the South African industry as potentially smoke tainted) were screened for VPs using GC-MS, and characterized using descriptive analysis (DA) by a sensory panel highly trained in smoke taint evaluation. Results were compared statistically to elucidate relationships between chemical and sensory characteristics. It was demonstrated, using the combined dataset that concentration and composition of VPs in the wines correlated well with certain sensory attributes. Guaiacol was present in most samples at peri- or suprathreshold levels, but was not correlated with taint unless in combination with other phenols, in which case it was associated with ‘smoky’, ‘ashy’ and ‘herbaceous’ attributes. Wines with supra-threshold levels of VPs showed negative attributes (‘chemical / plastic’, ‘tar / BR’ and ‘medicinal / Elastoplast™’). In some cases, sensory effects (‘earthy / dusty / potato skin’, ‘mouldy / musty’ and ‘cooked vegetables (veg.)’) could not be attributed to supra-threshold VP contamination, and therefore seemed to be due to combinations of VPs at subthreshold levels. Associations between negative attributes and historical bushfire events prior to harvest were found for a number of the wines. This study emphasizes the importance of understanding effects of VPs on wine aroma, and escalating awareness and sensitivity to these issues in the wine industry.

Characterization and differentiation of key odor-active compounds of ‘Beibinghong’ icewine and dry wine by gas chromatography-olfactometry and aroma reconstitution

Freezing-thawing events contribute to the unique aroma profile of icewines. Differences in key odor-active volatile compounds between ‘Beibinghong’ (Vitis amurensis × V. vinifera) icewines and dry wines were investigated by gas chromatography-olfactometry and gas chromatography-mass spectrometry. Acceptable agreement between the olfactometric and quantitative results was obtained. ‘Beibinghong’ icewine was characterized by high concentrations of volatile phenols, lactones, (E)-β-damascenone, and phenylacetaldehyde, which were associated with on-vine freezing-thawing events in grape. Low concentrations of higher alcohol acetates and ethyl esters of fatty acids were attributed to hyperosmotic stress during fermentation. The overall aroma of icewine could be mimicked by reconstitution containing 44 identified volatiles. Partial least squares regression analysis demonstrated that the concentrations of these volatile compounds determined the distinct sensory profiles of icewines, which have higher intensities of honey/sweet, smoky, caramel, dried fruit, apricot/peach, and floral aromas, and lower intensities of fresh fruity and herbaceous notes in comparison with dry wines.

Influence of water regime on yield components, must composition and wine volatile compounds ofVitis viniferacv. Verdejo

Background and Aims Available soil water is an important factor determining grapevine yield and grape composition. The aim of this study was to determine the impact of water availability on the yield components and the composition of must and wine of Vitis vinifera L. cv. Verdejo. Methods and Results The irrigation strategies [rainfed (R0), drip irrigated at 25% ETo (R25) and 50% ETo (R50) applied weekly from the end of the vegetative main shoot growth until harvest] were imposed on white Verdejo grapevines over three consecutive seasons (2012–2014). The 50% ETo treatment resulted in the highest yield. Increasing water availability also reduced the concentration of volatile phenols in all seasons, and of the C6 compounds in 2014 alone. The highest concentration of five individual volatile compounds was associated with the lowest water availability (R0). Conclusions High water availability increased yield and its components, mainly in the wettest season. Volatile compounds in wine were modified by water regime, with their concentration increased by the most severe deficit irrigation regime (R0). The effect of the year on must and wine composition was greater than the in-season effects of water availability treatment. Significance of the Study This study has described the effect of soil water availability on yield and its components and the composition of must and wine of Verdejo.

Impact of grapevine exposure to smoke on vine physiology and the composition and sensory properties of wine

Smoke was applied to seven different grapevine cultivars (Chardonnay, Sauvignon Blanc, Pinot Gris, Pinot Noir, Shiraz, Cabernet Sauvignon and Merlot) for 1 h at approximately 7 days post-veraison. A range of viticultural measurements were subsequently performed to evaluate any effects on crop yield, vegetative growth and vine physiology. Few significant differences in berry growth or maturation (as sugar accumulation), yield or vine growth were observed between control and smoke-affected grapevines; but the photosynthetic capacity of some varieties, Merlot and Cabernet Sauvignon in particular, decreased significantly following smoke exposure. The extent of smoke taint in the resultant wines was then determined by quantification of volatile phenols and guaiacol glycoconjugates, and by descriptive sensory analysis. Elevated concentrations of volatile phenols and guaiacol glycoconjugates were observed in wines made from smoke-affected grapes; with smoke-affected Pinot Gris and Cabernet Sauvignon wines found to exhibit the most intense smoke-related sensory attributes. The physiological, compositional and sensory consequences of grapevine exposure to smoke were found to vary amongst cultivars, suggesting some grape varieties might be more susceptible to the effects of smoke exposure than others. Further research into the impact of smoke exposure by different cultivars might inform varietal selection in smoke-prone wine regions, in order to mitigate the risk of smoke exposure.

Analysis of volatile phenols in alcoholic beverage by ethylene glycol-polydimethylsiloxane based stir bar sorptive extraction and gas chromatography–mass spectrometry

An ethylene glycol (EG)/polydimethylsiloxane (PDMS) copolymer based stir bar sorptive extraction (SBSE)-GC–MS method was developed for the analysis of volatile phenols (4-ethylphenol, 4-vinylphenol, 4-ethylguaiacol, and 4-vinylguaiacol) in alcoholic beverages. The beverage samples were diluted with phosphate buffer (1M, pH 7) and extracted with an EG/PDMS stir bar. Volatile phenols were thermally desorbed and analyzed by GC–MS. Parameters affecting extraction efficiency were studied including ionic strength, pH, extraction time, ethanol content and nonvolatile matrix. Good correlation coefficients with R2 in the range of 0.994–0.999 were obtained for volatile phenol concentration of 5–500μg/L. Recovery for all phenols were from 95.7% to 104.4% in a beer matrix and 81.4% to 97.6% in a wine matrix. The method had a standard deviation less than 5.8% for all volatile phenols. The limit of quantification (LOQs) in beer samples was lower than 3μg/L. The method was further applied to analyze the concentrations of volatile phenols in beer, wine and other alcoholic beverage samples.
