Potentially functional lactose-free ice cream with Lacticaseibacillus casei CSL3, ginger, and honey.

To develop and characterize a functional lactose-free ice cream with added ginger and honey, evaluate the survival of Lacticaseibacillus casei CSL3 under frozen storage and the simulated gastrointestinal tract (GIT), as well as antioxidant activity and product acceptability. The survival of Lacticaseibacillus casei CSL3 was evaluated for 180 days, under frozen storage, and GIT at 60 days. At 15 days of storage, proximal composition, antioxidant activity, color, pH, acidity, fusion, density, overrun, and sensory analysis were performed. Ice cream was an effective food matrix for maintaining the viability of CSL3, with concentrations > 7 log CFU g- 1 during storage and GIT. In addition, the analysis showed overrun and prebiotic characteristics through high values of antioxidant activity and phenolic compounds, good acceptability, and purchase intention. The product has satisfactory market potential (acceptance rate of 95.19% and purchase intention rate > 96%), and it could become another means of inserting probiotics in food.

Hydrothermal Hydrolysis of Cocoa Bean Shell to Obtain Bioactive Compounds

Cocoa bean shell (CBS), a by-product from the chocolate industry, is an interesting source of bioactive compounds. In this work, the effects of time and pH on the hydrothermal hydrolysis of CBS were evaluated with the aim of maximizing the extraction of antioxidant and functional compounds from this biomass. In general, all treatments tested led to improvements in the extraction of bioactive compounds compared to untreated samples. The maximum values for antioxidant activity (187 µmol TE/g CBS dw) and phenolic compounds (14.5 mg GAE/g CBS dw) were obtained when CBS was treated at pH 4 for 10 min. In addition, maximum amounts of flavonoids (10.1 mg CE/g CBS dw), tannins (6.5 mg CE/g CBS dw) and methylxanthines (9 mg/g CBS dw) were obtained under mild pH conditions (4–5). It is noteworthy that these values are higher than those reported in the literature for other vegetable substrates, highlighting the potential of CBS to be valorized as a source of different value-adding products.

Characterization of differences in physicochemical properties, volatile organic compounds and non-volatile metabolites of prune wine by inoculation of different lactic acid bacteria during malolactic fermentation

To investigate the effects of inoculating with three strains of lactic acid bacteria on prune wine quality during malolactic fermentation, this study determined its antioxidant activity, phenolic compounds, organic acids, and volatile/non-volatile metabolites. The results showed that inoculation with Lactobacillus paracasei SMN-LBK improved the antioxidant activity and phenolic compounds of prune wine. 73 VOCs were detected in prune wine by HS-SPME-GC–MS, and VOC content increased by 4.3% and 9.1% in MLFS and MLFB, respectively. Lactobacillus delbrueckii subsp. Bulgaricus showed better potential for winemaking, and citral and 5-nonanol, were detected in the MLF samples. 39 shared differential metabolites were screened and their metabolic pathways were investigated based on nontargeted metabolomics. Differences in amino acid and flavonoid content between strains reflected their specificity in flavonoid biosynthesis and amino acid biosynthesis. These findings will provide useful information for the biochemical study and processing of prune wine.

Physicochemical, Nutritional, and Antioxidant Properties of Two Iranian Lentil Cultivars: A Comparative Study of Cooking and Germination Effects

Background: Lentils are one of the most important rainfed legumes in the world. They are an excellent source of minerals, vitamins, and amino acids. Methods: Proximate composition (moisture, total ash, total fat, protein, fiber, and carbohydrate), mineral content, antioxidant activity (DPPH IC50), and total phenolic compounds (TPC) were determined in the raw, germinated, and cooked samples of two cultivars of Iranian lentils. Results: Cooking and germination showed a significant effect on TPC, antioxidant activity, and minerals. The highest amount of phenolic compounds was obtained in raw black lentil, followed by raw green and germinated lentils. The black cultivar showed a higher quantity of K, Cu, Ca, and Zn and treatments decreased the concentrations of mineral elements in the investigated samples. Moreover, losses of the minerals in the cooked samples were higher than the germinated ones. Conclusions: Cooking and germination brought about a significant reduction in the phenolic compounds and antioxidant activity. Meaningful reductions were also recognized in the mineral content during cooking and germination.

Fermentation of Orange Peels by Lactic Acid Bacteria: Impact on Phenolic Composition and Antioxidant Activity.

Orange processing generates peel by-products rich in phenolic compounds, particularly flavanones like hesperidin and narirutin, offering potential health benefits. Utilizing these by-products is of significant interest in supporting Spain's circular bioeconomy. Therefore, the aim of this study was to investigate the fermentation of orange peels by different lactic acid bacteria (LAB) strains and its impact on phenolic composition and antioxidant activity. Three different LAB strains, two Lactiplantibacillus plantarum, and one Levilactobacillus brevis were utilized. The phenolic compounds were measured by HPLC-ESI-TOF-MS, and antioxidant activity was assessed using DPPH and ABTS methods. The growth of the LAB strains varied, showing initial increases followed by gradual declines, with strain-specific patterns observed. Medium acidification occurred during fermentation. A phenolic analysis revealed an 11% increase in phenolic acids in peels fermented by La. plantarum CECT 9567-C4 after 24 h, attributed to glycosylation by LAB enzymes. The flavonoid content exhibited diverse trends, with Le. brevis showing an 8% increase. The antioxidant assays demonstrated strain- and time-dependent variations. Positive correlations were found between antioxidant activity and total phenolic compounds. The results underscore the importance of bacterial selection and fermentation time for tailored phenolic composition and antioxidant activity in orange peel extracts. LAB fermentation, particularly with La. plantarum CECT 9567 and Le. brevis, holds promise for enhancing the recovery of phenolic compounds and augmenting antioxidant activity in orange peels, suggesting potential applications in food and beverage processing.

Sustainable Processes and Physico-Chemical Characterization of Artisanal Spontaneous Gluten Free Sourdough (Quinoa, Amaranth and Brown Rice) Compared to Wheat Sourdough

The industry predominantly depends on synthetic or artificial additives, occasionally permitting the inclusion of natural molecules sourced from plants or replicated from their original counterparts. The production of bakery products increasingly uses sourdough to improve the quality of bread or to obtain “clean label” products (free of artificial additives). The additive production sector contributes to this concern through the synthesis of potentially harmful compounds, the utilization of hazardous chemicals and solvents, the management of resulting by-products, and reliance on non-renewable resources for manufacturing. One percent of the world’s population suffers from celiac disease. Celiac disease is treated by excluding gluten from the diet. Most gluten-free bakery products have low nutritional and sensory quality. Therefore, sourdough is being used to replace chemical yeast to improve the sensory and nutritional quality and increase the shelf life of gluten-free bakery products. Three gluten-free sourdoughs were prepared with different flours: brown rice, quinoa and amaranth, in order to compare them with traditional sourdough (wheat) and optimize the most suitable temperature for the conservation of sourdoughs. Physicochemical analysis (pH, titratable acidity and color), antioxidant activity (FRAP, ORAC and ABTS), total phenolic compound content (Folin–Ciocalteu), total aflatoxin content, lactic and acetic acid content and microbiological analysis (mold and yeast content and bacterial and fungal composition (microbiota composition)) were carried out during the elaboration process and at different storage temperatures. A higher microbiological quantity of molds and yeasts (7.97 log CFU/mL), non-Saccharomyces yeasts (7.78 log CFU/mL) and lactic acid bacteria (8.10 log CFU/mL) and fungal composition were observed in the amaranth sourdough. The wheat sourdough obtained a higher total content of phenolic compounds (33.03 mg GAE g−1) and antioxidant capacity in ABTS and FRAP, but the quinoa sourdough had the highest ORAC content. In addition, it was observed that the adequate temperature for the conservation of the doughs is 25 °C, due to the predominance of Lactobacillus spp. and Pediococcus spp. bacteria in the sourdough. Therefore, pseudocereal sourdoughs (quinoa and amaranth) could be an alternative to incorporate into the preparation of gluten-free bread, since their microbial composition, physicochemical composition, antioxidant activity and total phenolic compounds would contribute to gluten-free bread and thus produce health benefits for people with celiac disease.

Effects of Torulaspora delbrueckii and Saccharomyces cerevisiae Co-Fermentation on the Physicochemical and Flavor Compounds of Huaniu Apple Cider.

The effects of different fermentation methods utilizing Torulaspora delbrueckii 1004 and Saccharomyces cerevisiae 32169 on the physicochemical properties, organic acid content, polyphenol and flavonoid concentrations, antioxidant activity, and volatile aroma compounds of Huaniu apple cider were investigated in this study. Employing methods of single inoculation, co-inoculation, and sequential inoculation, it was found that sequential fermentation exhibited strong fermentative power in the initial stages, effectively reducing the content of soluble solids and achieving a balanced composition of malic, succinic, and citric acids while maintaining a lower titratable acidity. Sequential inoculation was observed to significantly enhance the total polyphenols and flavonoids, as well as the antioxidant capacity (p < 0.05). Specifically, in the synthesis of volatile aroma compounds, sequential inoculation significantly enhanced the richness and diversity of the Huaniu apple cider's aromas, particularly in terms of the concentration of ester compounds (p < 0.05). Principal component analysis further confirmed the superiority of sequential inoculation in terms of aroma component diversity and richness. The findings of this study suggest that sequential inoculation of fermentation with non-Saccharomyces and S. cerevisiae is an effective strategy for optimizing the flavor characteristics of Huaniu apple cider, offering valuable theoretical support and practical guidance for enhancing cider quality and fostering the development of new products.

Removal of Cu (II) by ion exchange resin and its re-utilization of the residual solution from the distilled Lycium barbarum wine

In order to re-utilize the residual from the distillation of the Chinese wolfberry wine and reduce the environmental pollution, the residual is firstly filtered by the ceramic membrane of 50 nm, then the Cu (II) has transferred from the distillation is removed using the ion exchange resin, and the treated solution is recombined with the distilled liquor to make the Chinese wolfberry brandy and the comparison has conducted on the physicochemical properties, antioxidant activity and flavor compounds between the recombined brandy and the finished brandy. The results indicate that the Cu (II) was effectively removed by ceramic membrane combined with the D401 resin. Compared with finished brandy, the recombined brandy contains high contents of polysaccharides, phenols and flavonoids, thus contributing to the improvement of antioxidant capacity. The gas chromatography-ion mobility spectrometry (GC-IMS) reveals that 25 volatile compounds like esters and alcohols have identified in the brandy samples, and the differences are significant between the recombined and the finished brandy. In summary, the distilled residual from the Chinese wolfberry wine might be re-used after the appropriate treatment so as to reduce the discharge and environmental pollution.

Comparative Phytoprofiling of Achillea millefolium Morphotypes: Assessing Antioxidant Activity, Phenolic and Triterpenic Compounds Variation across Different Plant Parts.

Achillea millefolium L., commonly known as yarrow, is a versatile and widely distributed plant species with a rich history of ethnopharmacological significance. This study aimed to evaluate the comparative differences of A. millefolium inflorescence morphotypes. The phytochemical profile of white and pink inflorescence morphotypes was characterised by a complex of thirty-four phenolic and triterpene compounds. The species has distinct morphotypes of white and pink inflorescence. Phenolic and triterpenic profiles were determined, and individual compounds were quantified in inflorescence, leaf, and stem samples of two morphotypes tested. The antioxidant activity of plant extracts was evaluated by free radical scavenging (ABTS) and ferric-reducing antioxidant power (FRAP) assays. Caffeoylquinic acids predominated in all parts of the plant tested. Chlorogenic acid and 3,5-dicaffeoylquinic acid were the principal compounds in the phenolic profile. Betulin, betulinic acid, and α-amyrin were the prevailing triterpenic components in the triterpenic profiles of Achillea millefolium morphotypes. The predominant flavonoids in inflorescences were flavones, while in leaves, flavonols were the organ-specific compounds. The quantitative differences were observed between plant parts of morphotypes. Leaves consistently displayed the highest amounts of identified compounds and have been testified as the main source of antioxidant activity. Overall, white inflorescences accumulated a higher total amount of compounds compared to pink ones. The observed differences between morphotypes derived from the same population reflect the differences in specialised metabolites and their chemotypes. This study addresses gaps in knowledge, particularly in phenolic and triterpenic profiling of coloured inflorescence morphotypes, enhancing our understanding of chemotypes and morphotypes within the species.

Distribution of antioxidants and phenolic compounds in flour milling fractions from hard red winter wheat

Mature wheat kernels contain three main parts: endosperm, bran, and germ. Flour milling results in multiple streams that are chemically different; however, the distribution of antioxidants and phenolic compounds has not been well documented in terms of conventional milling by-product streams. In this study, multiple analytical methods were used to investigate antioxidant activity and phenolic compound compositions of hard red winter wheat (whole ground wheat), the parts of a wheat kernel (bran, flour, germ), and wheat by-product streams (mill feed, red dog, shorts) for the first time. For each mill stream, phenolic compounds (total, flavonoid, and anthocyanin contents) were determined and antioxidant activities were evaluated with 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activity, ferric reducing/antioxidant power (FRAP), and total antioxidant capacity assays. Significant differences (P < 0.05) were observed in phenolic concentrations among fractions of bran, flour, and germ milled from the same kernels and noted that germ accounts for the majority of antioxidant properties, whereas bran contains a substantial portion of phenolic compounds and anthocyanins. Mill feed was high in phenolic content (5.29 mg FAE/g), total antioxidant capacity (866 mg/g), and antioxidant activity (up to 75% DPPH inhibition and 20.26 μmol FeSO4/g). The comprehensive information on distribution of antioxidants and phenolic compounds provides insights for future human consumption of commonly produced co-products from flour milling, and for selecting and using different milling fractions to make foods with improved nutritional properties.

Role of infrared-assisted extraction of antioxidant phytochemicals in enhancing antimicrobial activity of Phaeodactylumtricornutum

Microalgae are a sustainable source of highly bioactive and nutritious biomolecules such as polyphenols, and carotenoids. The efficiency of a novel infrared (IR) technology in terms of optimization of phytochemical (phenolic compounds, chlorophylls and carotenoids) recovery from P. tricornutum was studied using Response Surface Methodology (RSM). Optimized antioxidant activity (870 ± 22 μg TE/mL) and phenolic compound concentration (562 ± 7 mg GAE/100 g DM) were obtained using IR at 33 °C for 12 min at pH 7. In addition, chlorophyll A (26.54 ± 2.78 mg/100 g DM) and carotenoids (9.61 ± 0.40 mg/100 g DM) were recovered at the simultaneous optimal IR conditions: 56 °C, 36 min, pH 9.5. Compared to conventional aqueous extraction, IR enhanced by 10.06% the recovery of phenolic compounds and ameliorated their biological activities by 36.24% for DPPH, 17.24% for CUPRAC, 14.50% for TEAC, and 4.60% for FRAP. Finally, IR bioactive extracts also exhibited antibacterial effects against S. aureus. In conclusion, the richness of P. tricornutum in phytochemicals makes it a valuable alternative food source. IR technology proved to be an efficient method for the recovery of high-added value compounds from microalgae. Antioxidant and pigment-rich microalgae extracts can be used as dietary supplements.

Essential oil production, chemical composition, bioactive compounds, and antioxidant activity of Thymus vulgaris as affected by harvesting season and drying conditions

In this study, the effects of seven distinct were assessed in two harvesting seasons (spring and autumn) on the essential oil (EO) content, total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity, and volatile compounds of thyme (Thymus vulgaris L.). The drying methods tested included sun-drying, shade-drying, freeze-drying (FD), oven drying at 40 °C (OV40) and 70 °C (OV70), and microwave 360 W (MW360) and 720 W (MW720). The analysis of essential oils facilitated the identification of numerous compounds, 18 of which accounted for approximately 64.94% to 67.84% of the total thyme EO compounds. Six significant compounds were investigated, including thymol, p-cymene, γ-terpinene, carvacrol, linalool, and borneol. The results demonstrated that the thyme samples harvested in spring possessed higher amounts of γ-terpinene, thymol, carvacrol, EO content, and TFC, while samples harvested in autumn exhibited the highest amounts of borneol, p-cymene, TPC, and higher antioxidant activity. Principal component analysis (PCA) findings revealed that thyme samples harvested in spring, dried in the sun, shade, and FD conditions were rich in EO content, γ-terpinene. The samples dried in MW720, OV40, and FD conditions possessed the highest amounts of thymol, carvacrol, and TFC. Drying the samples under MW360, OV40, and FD indicated significantly higher TPC and linalool. Drying the autumn-harvested samples under the sun and shade also exhibited higher linalool and TFC than other methods. Overall, the results conclusively indicated that the harvesting season and drying conditions significantly affected bioactive compounds, antioxidant activity, and EO production and quality. Such findings may add value to the product at the producers’ levels to produce more quality thyme depending on the harvesting season.

Green Extraction Approach for Isolation of Bioactive Compounds in Wild Thyme (Thymus serpyllum L.) Herbal Dust-Chemical Profile, Antioxidant and Antimicrobial Activity and Comparison with Conventional Techniques.

The aim of this study was to provide a chemical profile and determine the antioxidant and antimicrobial activity of the essential oil (EO) and lipid extracts of Thymus serpyllum L. herbal dust obtained via conventional (hydrodistillation (HD) and Soxhlet extraction (SOX)) and novel extraction techniques (supercritical fluid extraction (SFE)). In addition, a comparative analysis of the chemical profiles of the obtained EO and extracts was carried out, as well as the determination of antioxidant, antibacterial and antifungal activity of the lipid extracts. According to the aforementioned antioxidant and antimicrobial activities and the monoterpene yield and selectivity, SFE provided significant advantages compared to the traditional techniques. In addition, SFE extracts could be considered to have great potential in terms of their utilization in the pharmaceutical and cosmetic industries, as well as appropriate replacements for synthetic additives in the food industry.

Nutritional and Functional Properties of Quinoa (Chenopodium quinoa Willd.) Chimborazo Ecotype: Insights into Chemical Composition

Quinoa is known for its high nutritional value and adaptability; however, there is a lack of data about the chemical composition of quinoa produced in Ecuador, especially the Chimborazo ecotype. Our research aims to evaluate the nutritional components of Chimborazo quinoa. This knowledge (chemical composition) can help to improve cultivation and farmers’ understanding. Samples were collected from 49 plots at four altitude ranges (3000–3200; 3201–3300; 3301–3400; 3401–3533) m.a.s.l. Each sample of 2 kg quinoa was cleaned, dried (32 °C/15 h), and stored at −20 °C before analyzing water activity, proximate composition, mineral content, antioxidant activity, and functional compounds. The data were analyzed using ANOVA and mean comparison, Pearson correlation, and principal component analysis. The Chimborazo ecotype shows protein content comparable to or exceeding other global quinoa cultivars. Statistical analysis revealed that altitude had a minimal influence on quinoa’s chemical composition, resulting in overlapping altitude-based clusters. Complex relationships between quinoa variables were identified, which varied with altitude. These findings suggest that cultivation of high-quality quinoa across a range of altitudes is feasible without compromising its intrinsic quality. Moreover, the extensive and diverse results from our study provide a solid foundation for further plant breeding and the development of specialized quinoa varieties.

Enhancing antioxidant activity and modulating FODMAPs levels in inoculated sourdough rye bread

Rye plays a significant role in the nutritional culture of Europe however rye-based products are high in FODMAP (fermentable oligosaccharides, disaccharides, monosaccharides, and polyols). Tailored fermentation during sourdough production seems to be a viable option for FODMAP decrease while increasing bioactive profile. This study aimed to investigate the influence impact of fermentation time and bacterial strains on the antioxidative activity, FODMAPs, and quality attributes of rye bread. The novelty of this research lies in its comprehensive approach to optimizing the fermentation process for enhanced nutritional value and consumer acceptability of rye bread.Rye flour, Lacticaseibacillus casei and Lactiplantibacillus plantarum were utilized. Flour quality, including rheological properties, was assessed using AACC methods. Bacterial cultures were propagated, leavens and sourdoughs were produced using bacterial starters, and bread baked. And used for breadmaking. Sourdough pH, bread volume, color, polyphenol content, antioxidative activity, and FODMAP compounds and consumer acceptance were evaluated.Results showed that the longer fermentation times both bacterial strains inoculums had significant impact on rye bread. Longer fermentation led to increased antioxidative activity and reduced FODMAP compounds. Controlled fermentation, especially inoculated with L. casei and L. plantarum, enhanced antioxidative activity and reduced FODMAP compounds in rye bread, while maintaining quality.

Isolation of Phenolic Acids from Land Kale (Ipomoea reptans Poir) and Antioxidant Activity

Land kale or Ipomoea reptans Poir is widely consumed by Indonesian people. Land kale plants can be used as natural antioxidants because they contain polyphenolic compounds, one of which is phenolic acid. This research was carried out to determine the antioxidant activity and isolate phenolic acid compounds contained in land kale plants (Ipomoea reptans Poir). The sample used was an ethanol extract of land kale. The total phenolics were determined using the Folin-Ciocalteu method. Phenolic acids were isolated using alkaline hydrolysis and acid hydrolysis and without hydrolysis methods. Separation of isolates was carried out using the TLC method. The structure was identified using UV-Vis spectrophotometry and LC-MS/MS. Antioxidant activity was measured using the DPPH method. The total phenolics of land kale ethanol extract were 71.2420 ± 0.0791 mg/g GAE. TLC showed that the HB, HA, and TH fractions contained caffeic acid and ferulic acid compounds. Separation of the (HB) fraction produced three isolates: B2 with a yellow color, B3 with a slightly yellowish color, and B4 which is colorless. Isolate B2 was identified as potentially containing caffeic acid, while isolate B3 was indicated to potentially contain ferulic acid through analysis using a UV-Vis spectrophotometer. Isolate B4 was thought to have a hydroxybenzoic acid framework after being determined using LC-MS/MS. The ethanol extract of land kale has strong antioxidant activity because it produces an IC50 value of 94.83 mg/L.

Effects of Particle Size on Physicochemical and Nutritional Properties and Antioxidant Activity of Apple and Carrot Pomaces.

The food processing industry is growing rapidly and producing large amounts of by-products, such as pomaces, which are considered as no-value waste and cause significant environmental pollution. The main by-products of fruit juice processing companies are apple and carrot pomaces, which can be used to create new functional food products. In the present study, the effects of particle size (PS) on the proximate composition, nutritional properties, and antioxidant activity of apple pomace flour (APF) and carrot pomace flour (CPF) were determined. Four different PS fractions, PS > 1 mm, 1 > PS > 0.71 mm, 0.71 > PS > 0.18 mm, and 0.18 > PS > 0.075 mm were used for the present study. Their vitamin, carotenoid, organic acid, and reducing sugar contents were determined using HPLC. The proximate compositions of each PS fraction of the AP and CP flours were determined using recommended international standard methods. DPPH, FRAP, and Folin-Ciocalteu methods were used to measure their antioxidant activity and total phenolic compounds, respectively. The moisture content (around 12.1 mg/100 g) was similar in all PS fractions and in both flours. The APF had lower protein (4.3-4.6 g/100 g dw) and ash (1.7-2.0 g/100 g dw) contents compared to the CPF, with protein contents ranging from 6.4-6.8 g/100 g dw and ash contents ranging from 5.8-6.1 g/100 g dw. Smaller particles, regardless of flour type, exhibited higher sugar and phenolic contents and antioxidant activity, while vitamins were more abundant in particles larger than 1 mm. In the APF, larger particles had a higher fiber content than smaller particles, while their fat content was the lowest. PS also had an impact on the results of the carotenoid contents. This study underscores the direct impact of PS on the distribution of sugars, crude fiber, fat, carotenoids, vitamins, total phenolic compounds, and antioxidant activity in pomaces.

Determination of mineral elements, antioxidant activity and bio-active compounds of Allium prezewalskianum regel, an underutilized plant of Ladakh, India using ICP-AES, AAS and GC-MS

Allium prezewalskianum also known as wild garlic, is a wild aromatic herbaceous plant that has been used as substitute for garlic in both food and medicine for treating various remedies since traditional times. Despite the traditional importance of this plant in Ladakh, there is no report available about the nutritional and phytochemical composition of this plant till date. Keeping in view the ethanobotanical importance of this plant, present study was aimed to assess and quantify the mineral elements, bioactive compounds and the antioxidant property of aerial parts of A. prezewalskianum. ICP-AES, AAS and flame photometer were used to analyze the mineral profile which indicated that K (47,080 ± 250 mg/kg) has highest content followed by Ca (17,770 ± 200 mg/kg) and Fe (135 mg/kg). Total phenol (34.6 ± 0.48 mg/g) and flavonoid content (46.25 ± 0.01 mg/g) along with the antioxidant activity using DPPH (127.01 ± 0.19 µg/mL) and FRAP (43.019 ± 1.735 mg/g) assay was also evaluated that showed high phenols and antioxidant activity compared to some cultivated species like A. porrum and A. ampeloprasum. Characterization of phytochemical profile by GCMS revealed 33 compounds from which 9-octadecenoic acid (z)-, methyl ester (10.45%), Hexadecanoic acid, methyl ester (9.01%), Hexadecanoic acid, 2‑hydroxy-1-(hydroxymethyl) ethyl ester (8.96%), 3,7,11,15-tetramethylhexadec-2-en-1-ol (8.84%) and Stigmast-5-en-3-ol, (3.beta.,24 s) (5.53%) are the major compounds identified. These bioactive compounds are known to have anticancer, antioxidant, antidiabetic, anti-microbial and anti-inflammatory properties. Biochemical knowledge is essential to assess the health benefits and physiological effects of wild plants and to develop clinical studies on its mechanism of action, safety and efficacy. The findings indicated that A. prezewalskianum possesses health promoting minerals and are rich in phytochemicals which make it a treasured source to be utilized in food supplements, pharmaceutical and nutraceutical preparations.

Modern and traditional cooking methods affect the antioxidant activity and phenolic compounds content of Trachystemon Orientalis (L.) G. Don.

Trachystemon orientalis (L.) G. Don is a medicinal plant with beneficial effects on human health. Its antioxidant and phenolic compound content is higher than most natural plants. This is the first study on the cooking of this consumed plant. This study investigated how different cooking methods and times affect the antioxidant activity and phenolic compound content of Trachystemon orientalis (L.) G. Don. The Folin-Ciocalteu method (FCR), ferric-reducing antioxidant power (FRAP), copper-reducing antioxidant capacity (CUPRAC), and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity were used to evaluate the antioxidant activity and total phenolic content (TPC). Phenolic compounds were also determined by high-performance liquid chromatography (HPLC). Microwave cooking, stir-frying and sous vide increased TPC and antioxidant activity (p<0.05). Steaming decreased TPC and antioxidant activity (p<0.05). It was determined that the best cooking method and time was stir-frying for 15 minutes (TPC, CUPRAC and FRAP values 45.18±3.91 mg GAE/g DW, 15559.39±106.90 mmol Troloks/g DW and 555.10±24.05 μmol Fe (II)/g DW, respectively). Raw Trachystemon orientalis (L.) G. Don was detected with caffeic acid (31.53±0.25 mg/100 g DW). New phenolic compounds (protocatechuic acid and p-coumaric acid) were formed by boiling, stir-frying, microwaving, and sous vide methods. In conclusion, regarding antioxidant activity and phenolic compounds of Trachystemon orientalis (L.) G. Don; the best cooking methods are microwave, stir-frying, and sous vide (p<0.05). The most wrong cooking method is steaming (p<0.05).

Riceberry bran as a potential source of anti-diabetic agents and its Riceberry bran powder

This study evaluated the anti-a-glucosidase effect, antioxidant activity, and total phenolic compounds of Riceberry bran extracts prepared by the extraction of Riceberry bran with distilled water, ethanol, or hexane using a maceration technique. The ethanolic extract resulted in the significantly highest a-glucosidase inhibitory activity, at 64.13±1.09%. The highest levels of antioxidant activity against 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) radicals were found in the aqueous extract with a half-maximal inhibitory concentration (IC50) of 0.26±0.001 and 0.13±0.001 mg/mL, respectively. Likewise, the total phenolic compounds of the aqueous extract were the highest at 36.20±1.80 mg GAE/g of extract. The Riceberry bran powder obtained by double drum drying was also examined for its physical and chemical properties. It was found that the Riceberry bran powder was of good quality and provided high levels of a-glucosidase inhibition (20.24±0.47%), antioxidant activities (IC50 for DPPH = 4.19±0.08 mg/mL, IC50 for ABTS = 1.57±0.07 mg/mL), and total phenolic compounds (31.25±1.32 mg GAE/g of powder). The overall results indicated the potential of Riceberry bran to provide a-glucosidase inhibitors, antioxidants, and phenolic compounds, which can be used as useful health promoters and nutraceuticals to combat diabetes, and its powder also had potential in the functional food industry.
