Abstract
SUMMARYThe yeast flora of wheat and flour from six geographical areas was examined. Cryptococcus albidus was the most commonly found species on wheat from all six areas, but it was not present in the flours. Additional species from wheat were Cryptococcus laurentii, Rhodotorula glutinis, Pichia fermentans, and Pichia burtonii; while species from flour were Hansenula anomala, Pichia farinosa, P. burtonii, Saccharomyces microellipsodes, and an unidentified species of Candida. The yeastlike mold Aureobasidium pullulans was common to both wheat and flour.
