Abstract
Both neutral lactase partially purified from yeast and acid lactase prepared from fungi were immobilized to weakly basic anion exchange resin (Duolite A 7) chemically modified by a bifunctional reagent, 2-carboxymethylamino-4, 6-dichloro-s-triazine. These immobilized enzymes could carry out a continuous hydrolysis of lactose in milk and whey, respectively, at appreciably high flow rates. The immobilized enzymes obtained were stable over broad ranges of pH and temperature and were protected from the attack by protease and bacteria.
