Abstract

The factors affecting potato tuber weight loss were studied by suspending individual tubers of Kennebec, Red Pontiac, and Norgold Russet potatoes in chambers where temperature, relative humidity, and air flow past the tubers could be controlled. The results of a regression analysis indicated that the age of the tubers closely followed by temperature was most highly correlated to weight loss. Tuber weight and relative humidity were next and about equally correlated with weight loss. Air velocity had the lowest correlation coefficient
