Abstract

The consumption of the water footprint under food consumption is great along the whole supply chain. On the basic of the water footprint data of products and China Health and Nutrition Survey, the study focuses on the constitution of three color-coded components: the green, the blue and the grey water footprint and the differences of generated water footprint between crops and animals in the Heilongjiang northernmost province of China. The result reveals a strong correlation amount three footprint components of blue, green and grey water, with correlation coefficients of 0.76, 0.86 and 0.85. The household income has a great influence on the water footprint generation of food consumption. The study intends to provide an insight in future diet optimization to lower diet-associated water consumption.
